The Food & Drink issue may be my favorite yet. We all know that each year Las Vegas has become more and more of a destination dining town with world-class restaurants and chefs popping up on the Strip. In addition to Martha Stewart’s The Bedford opening up just a few weeks back, I recently read on Eater.com about a $10,000 per person dining experience at The Wynn. The options in our town are endless. However, few tourists venture off-Strip to find the hidden gems that lie within our community right here. Which is just one of the reasons we are so lucky to live here. If you’re not familiar with the James Beard Foundation, they recognize top-tier chefs and restaurants across the country. From their website, “The James Beard Awards recognize exceptional talent and achievement in the culinary arts, hospitality, media, and broader food system, as well as a demonstrated commitment to racial and gender equity, community, sustainability, and a culture where all can thrive.” This issue highlights two spots that have been recognized for such a distinction. Additionally, we’ve spotlighted a couple of local food trucks that you can find out and about in the area — they frequent places such as HOA events to First Friday in the Arts District in Downtown Las Vegas. Speaking of the Arts District, it’s also home to Garagiste Wine Bar, which brings in world-class wines with a recently expanded wine club and cellar program — if you have any wine storage in your home, this place is a must-visit. If you’re more of a home-body, we also have a feature on a great remodeler to make your own kitchen foodie-approved. Las Vegas Restaurant Week Supported FoodInsecure Southern Nevadans Three Square Food Bank announced a total of 625,848 meals will be provided to the nearly 364,000 food-insecure valley residents, thanks to the efforts of the culinary community, residents, and visitors during Las Vegas Restaurant Week. This year, the 12-day epicurean event had a record-breaking 78 first-time participants, bringing the total number of participating restaurants and foodservice businesses to 211. One in six locals struggles with hunger, including more than 131,000 children (or one in four).

HEAVENLY PIES BRINGS AN ANGELIC TOUCH TO THE LAS VEGAS CULINARY SCENE. Regarding great food, James Beard AwardWinning Chef Luciano Pellegrini appears to possess divine inspiration and culinary skills while preparing, innovating, and creating impeccable Italian food for more than three decades. Pellegrini’s relentless drive for culinary mastery continued while working alongside the best Italian chefs in acclaimed kitchens in Los Angeles and then in his present home of Las Vegas, Nevada. Pellegrini spent 17 years as the executive chef and partner of restaurateur Piero Selvaggio’s Valentino Las Vegas — formerly located within the Venetian Resort. He earned the prestigious Best Chef Southwest Award by the James Beard Foundation in 2004. After the restaurant closed its doors, Pellegrino focused on Dolcevita Gelato, a manufacturing company producing his artisanal gelato for wholesale distribution and consulting for various restaurants in Las Vegas, California, and Minnesota. He opened Heavenly Pies with his cousin Chef David Brister who has since moved to Texas. The concept of Heavenly Pies focuses on Romanstyle pizzas, a trattoria-style menu, and family meal packages offering pasta, salads, appetizers, entrees, and desserts. Looking over the menu and after tasting many of the offerings, we have

to say that every item we sampled was authentic, made with the finest ingredients (many of them imported), which certainly pays homage to Pellegrini’s years of award-winning expertise with every bite. This James Beard award winner never stops creating. “I have a few new concepts I am working on,” he said. “I plan to expand Heavenly Pies with additional seating and make it more of a restaurant instead of a pizzeria. Additionally, I am growing my wholesale gelato concept and planning a retail outlet for it as well,” he added. Pellegrini is also designing a members-only private Yacht Club featuring a fine-dining Seafood menu slated to open Summer of 2023.

CHEF JAMIE TRAN'S JOURNEY FROM RELUCTANT CHEF TO JAMES BEARD FINALIST "My Food. My Journey." is Chef Jamie Tran's moniker in just four words. Sitting with Tran at her renowned The Black Sheep restaurant off the Strip in Las Vegas is fun. We could not help being captivated by her smile and effervescent personality. The description above the door reads “Kitchen-Wine-Cocktails,” which is an accurate look inside The Black Sheep's vibe. Tran's sojourn to culinary stardom is as unique as she is. It started relatively typically. She was a young, energetic 14-year-old when she joined her father in the kitchen of a Mandarin restaurant where he worked. Her main job was to wash dishes and earn money for sports gear. Being naturally curious, she would jump on the line to discover what the "cooking thing" was about for herself. Her father made it clear he did not want his daughter to be a chef. The ironic thing was that she didn't want to be a chef! Being very motivated, she jumped right into college life to become a physical therapist. Tran had a knee injury in high school that required attention and piqued her interest in the occupation. She was also interested in careers as an orthopedic surgeon, optometrist, and CPA. She received her bachelor's degree in business and decided it was time to seek a career for herself. But the kitchen kept calling, and all came together when her sister said you might as well "face your destiny," just like her father.
“Truthfully, a friend told me, and I thought it was an April Fool’s joke. I started getting text messages from others and thought, ‘Oh My God, it is true. 18

As a former Le Cordon Bleu culinary school graduate, Tran was well on her way to working at some of the finest kitchens in Las Vegas, such as Aureole and DB Brasserie. It was then that she met her mentor Chef Vincent Pouessel. Being naturally creative, independent, and ambitious, she decided to take the reins and build her restaurant, The Black Sheep, with partners. This small suburbia restaurant became an instant hit with locals and visitors alike within a short time. During the COVID-19 lock, Bravo TV and TOP Chef Portland came calling. She never really wanted to be in competitions. "I am kind of shy; I was the only one in the competition that had not done one," she said with her distinctive laugh. She decided to go and beat 11 other chefs to make it to the top four.
The recently named James Beard finalist was also an added surprise; “I didn't believe it. It must be some other Black Sheep," she said with a giggle. "Truthfully, a friend told me, and I thought it was an April Fool’s joke. I started getting text messages from others and thought, ‘Oh My God, it is true.’” Just as true as her recent Chef notoriety has taken place globally, her food reflects the same culinary quality of some of the best restaurants on the Strip. Garagiste Wine Room dwells on a corner in the heart of Las Vegas Downtown Arts District where avid wine drinkers and newcomers alike celebrate and explore all that wine has to offer. Its owner, Eric Prato, uses his 24 years of hospitality experience and advanced certification through the Court of Master Sommeliers to ensure you’re in safe hands on your wine journey. Much of their wines are produced in France, being the most prominent in their selection. Cooking Up a Dream Kitchen LOCAL DESIGN COMPANY BRINGS CLIENTS’ DREAMS TO REALITY

People often fall in love with homes upon seeing an exceptionally spectacular kitchen; they spend hours imagining the time they will spend in their dream kitchen preparing food to enjoy with friends and family. From evolving technology to popular colors, to the materials and shape of the counters and cabinetry, great kitchen design has many moving parts to take into account, which is why it's best to leave it to the professionals — no matter how easy someone made it look online. Las Vegas-based design firm, Designer Kitchens & Baths, has been helping valley residents create the kitchen of their dreams since 1999. “Mistakes made in this industry are very expensive,” said Aaron Vry, principal of Designer Kitchens & Baths, “not to mention the long-term effects on your home’s value.” Vry got his start in the industry at a custom

cabinet shop — giving him a bit of inside knowledge when it comes to that particular aspect of a remodel. Remodeling or renovating a kitchen can increase functionality, improve energy consumption by upgrading aging appliances to more energy-efficient models, and increase the overall value of the home—kitchen remodels are among the most lucrative home improvement strategies. While a gorgeous and well-equipped kitchen can add value and functionality, an outdated or poorly designed kitchen can also yield just as much power, instantly dating a home and decreasing its value. In partnering with Designer Kitchens & Baths, homeowners are able to work with Vry and his team from start to finish throughout the process, minimizing downtime and maximizing results.
“Planning is everything,” said Vry, who emphasized how important it is that homeowners “do not start the remodel without a clearly defined design, scope of work, and schedule.” A typical kitchen renovation project takes approximately two months, give or take, depending on the size and scope of the project, as well as how many iterations the design process goes through. Still, the results are well worth the wait. These days, combining functionality with style often means marrying technology with art and design, a combination perhaps most apparent in the induction cooking trend — a personal favorite of Vry’s. Induction cooking uses electric currents to heat pots and pans directly rather than the traditional method of thermal conduction, which transfers

heat from the surface – or the hot stove. Because the heat is conveyed directly to the pot or pan, the surface itself remains cool to the touch making for a safer, faster cooking process. But for designers, the fun comes from being able to incorporate “invisible” options, allowing for a cleaner, more seamless aesthetic in the kitchen while also improving the functionality of the kitchen. And from the homeowner's perspective? Vry said that lately, his clients are looking to “evoke nature with natural elements” in their kitchen by incorporating different natural textures and materials, including various stone, textile, and wood

elements, into their kitchen design. By bringing elements traditionally found in nature, the feel of the kitchen is warmed up. Whether it’s an induction cooktop or wood cabinetry, Designer Kitchens & Baths, whose motto is “we design with you in mind,” will expertly guide clients through the design, selection, and installation process, serving as a project manager and advising on technical elements. Mouthwatering Must-Try Food Trucks “What do you want for lunch?” This question might be tough for you to answer with all the mouthwatering options around town. Restaurants and buffets featuring food from around the world span across the valley at various price points. Satisfying all your dining needs is possible in a city like Las Vegas, from a quick bite to a five-course meal. A satisfying meal or snack is likely to find you by rolling up on wheels. South Vegas City Lifestyle discovered two top food trucks that are a must-try — Custom Pizza and Slidin’ Thru.
CUSTOM PIZZA Chef and Co-Owner Bart Wawrzyszak says he has grown Custom Pizza to the largest mobile pizzeria in the United States. And it isn’t your average food truck - it’s a custom kitchen on wheels imported from Europe. Custom Pizza is based in Las Vegas, serving locals on the move and private and public event bookings. The mobile pizzeria sticks to the basics by offering four crowd-pleasing pizza flavors: cheese, pepperoni, Margherita, and spicy beef. “Though simple in theory, it’s complex to ensure the quality and taste are noticeably delivered with every bite as we work to make every pizza perfect,” said Chef Bart. Custom Pizza has been serving the Las Vegas Valley for three years, but the business originally started in 2014 with Chef Bart’s brother, Pawel, across the Atlantic in Poland. Pawel set out on a mission to build “the most extraordinary food truck in Central Europe.” Pawel enlisted the help of his brother to accomplish his ambitious goal. Chef Bart was a college student at the time his brother asked him to buy an American truck in the U.S. and have it shipped to Poland. Bart
found the perfect truck - a freight liner with a Mercedes Benz engine and manual transmission. After receiving the vehicle, Pawel and his team spent ten months building what would one day become the Custom Pizza Truck. The team did not use a shipping container; instead, they custom welded a frame and built everything from scratch, including the oven and glass walls. In 2015, the food truck was ready for business and started operating in Poland. Custom Pizza Truck eventually made its way back to the States, making it “the only food truck that has traveled across the Atlantic Ocean twice,” said Chef Bart. The secret of the Custom Pizza Truck lies in the details of the handmade craft. “We were very successful thanks to phenomenal private and corporate customers that appreciate the greatness and simplicity,” said Chef Bart. “We make everything from scratch, stick to the methods we worked on for years, and use the best local distributors that provide honest and genuine products to our customers.”

SLIDIN’ THRU If you are craving the freshest gourmet sliders, look no further. Slidin’ Thru is known for propelling the food truck scene in Las Vegas to new heights as one of the most sought-after food vendors in the valley. The slider-slinging food truck has been featured in multiple television shows and magazines and has won numerous awards. Owner and Operator Edward Tallman says that Slidin’ Thru’s most popular sliders are its Pep Pep and Barby. The Pep Pep includes Angus beef, American cheese, lettuce, tomato, sautéed onions, a pickle, and homemade super sauce. While the Barby features Angus beef, American cheese, caramelized jalapenos, barbeque sauce, and crispy onion strips. But you won’t want to ignore the Caprese, Buffalo Soldier, Mediterranean-style Yaya, or Porky. And then pair your favorite slider with regular or sweet potato fries.

Tallman discovered his love of food trucks after working on one after he moved to Las Vegas. He enjoyed the freedom and atmosphere of the industry and began learning everything he could about food trucks and how to make quality fast food. Soon, he started managing two food trucks, which later expanded to five. With word on the street of Tallman’s success, he was contacted by the Food Network and gained notoriety with his nine-season stint on The Great Food Truck Race. In 2019, Tallman bought the company he was working for, making him the proud owner of The Food Factory LV with five food trucks, including Sincity Wings, Sincity Pizza, Bens BBQ , El Queso Guero, and, of course, Slidin’ Thru. While Slidin’ Thru food truck satisfies customers at Downtown Las Vegas’ First Friday and other local events and large festivals, it also offers catering services for parties, wedding events, and more.
