A Whole Year! Gahhhhh... Our May issue is our 1 year Anniversary issue! It is also dedicated to celebrating the women in our lives. As I reflect on the past twelve months of inspiring issues, I am thankful for our community, our amazing and loyal advertising partners, our small business friends, and all the impact they have made. I hope you enjoy our year-in-review and highlights, as much as we enjoyed going down memory lane. From the bottom of my heart, THANK YOU! As a woman business owner myself, I can’t help but connect with our focus this month! Women celebrating women and encouraging each other to succeed rather than competing with each other is so beautiful and rewarding. We all want to be seen, and when we share encouragement and consideration to those around us, barriers break down and warmth follows. My mother could not be a more perfect model of all these traits and sentiments. The woman you see by my side is loyal, resilient, powerful, creative, talented beyond her imagination, nurturing, and so very human! She is imperfect, yet so perfect for me and our family and friends. She gives herself unselfishly and hugs people’s hearts with her warm smile! She is such and inspiration and my forever raving fan. I could not possibly yet imagine living my life without her in my corner, and wish for her nothing but forever blessings. Thank you mom! In this month’s issue we are sharing stories of women who have made their mark in our community in one way or another. Women I can lift my gaze to, call on, lean on, and LEARN from! Thank you to the women who spoke reflections to me this month, and who vulnerably shared themselves with me for you. You have to read, Dear Younger Me! I am thankful... to Gea Gomez for your strength, Kim Clark for the brightness in your world, and to Yanira Suarez for the jolt of life! In a world that thrives on competition, let’s take time to encourage each other, appreciate the beauty in everyone and lift each other up, perhaps even a stranger. I also encourage you to take time to reflect on the inspirational women in your own life and reach out to them to thank them for their impact on your life! AMARETTO & ORANGE FRENCH TOAST CASSEROLE Baked French Toast

ingredients: • • • • • • • • • • • • • •

1 cup brown sugar (packed) 1/3 cup butter, melted 2 tbsp light corn syrup 1/3 cup chopped almonds 1 tsp grated orange rind 1 cup orange juice 1/2 cup milk 1 tsp of Amaretto or Grand Marnier 3 tbsp sugar 1 tsp ground cinnamon 1 tsp vanilla extract 3 large egg whites 2 large eggs 12 one-inch thick french bread slices

makes:

directions: 1. Spray a 9x13 inch baking dish with no-stick cooking spray. 2. Combine brown sugar, butter and corn syrup - pour into baking dish. 3. Sprinkle chopped sliced almonds evenly. 4. Combine orange rind, liquor suggested, OJ, milk, sugar, cinnamon, vanilla, egg whites and eggs - whip with whisk. 5. Arrange bread slices over almonds in dish and pour egg mixture over bread. 6. Cover and refrigerate for at least 1 hr. 7. Carefully turn bread slices over to absorb excess egg mixture.

8. Let stand at room temp for 20 minutes. Preheat oven to 350 degrees.

3 skinless, boneless chicken breasts 2 (8 oz) packages cream cheese 4 cloves garlic, crushed 1 tbsp ground cumin 2 tsp salt 1 tsp ground black pepper 1 (15oz) can petite diced tomatoes, drained 8 green onions, chopped 1 (7 oz) can diced green chiles 1/2 cup chopped fresh cilantro 1/4 cup lime juice 2 cups shredded cheddar cheese 10 large flour tortillas 1 (15 oz) can green enchilada sauce

directions: 1. Preheat oven 350 degrees F, grease a baking dish. Enough green chile at bottom of dish, so enchiladas don’t stick. 2. Boil chicken to cook for about 10 minutes - set aside on cutting board. 3. Beat cream cheese, garlic, cumin, salt and pepper together in a bowl. Stir in tomatoes, green onion, green chiles, cilantro, and lime juice into cream cheese mixture. Add 1 cup cheddar cheese and fold to integrate. 4. Shred cooled chicken with a pair of forks into strands. Stir into the cream cheese mixture. Spoon about 1/2 cup chicken mixture into the center of each tortilla and fold tortilla around the filling. Arrange into the prepared baking dish.

directions: 1. Fill shaker with ice. 2. Add all ingredients except Prosecco. 3. Shake well until chilled. 4. Strain into champagne glass. 5. Top with Prosecco. 6. Garnish with a lemon twist Italian 75 with Lavender Limoncello

Hey my little girl, I see you and hear those thoughts coming to your head while you run for your life. I know it’s late and everyone is watching novelas on TV, meanwhile you and your family hide to embark on that raft. Remember, be still, it’s going to be okay, as God will come through. He is about to turn a risky voyage into your miracle - the one mark you will use for all your life decisions. The best thing that has ever happened to us was fighting for that freedom, with the same fire today burning inside us. The true meaning of “no regrets” will be your motto for all the amazing challenges and journey in which you will flourish. Guess what? Many didn’t understand you, and now all that intensity for life and wanting more, they call it vision. I’m so proud of you. Your essence is still the same, just more defined and stronger than ever. I’m glad you never allowed anyone to define us, and when they tried, we ran for our life. Like running for air. The best choice was listening to our God and choosing that boy for a husband. He has become the most amazing life and business partner, friend, and adventure companion. Even in our darkest moments, we have learned to believe again and put our goals into full gear since we both understood we only have one life. My main advice is to try even more risks, because at the end, they are so worth it- even when you fail. It makes you unbeatable and invisible to your fears. No matter in which stage of life, the one and only true love and friend has been your King and Savior Jesus. The One that makes a way where there is none, and the One that keeps us inside his palm in the darkest storms. So, the quicker you manage the skills of “stillness,” the more He will show up. He has given you a strong next generation that follows the same fighter spirit our parents transmitted during the raft journey from Cuba to USA. The next 20 years will be extremely hard, and everything you thought you knew will drastically change. Things and people will be removed and reveal your true self. Don’t ever hold back your opinions or change yourself to please others. People will always create their own opinion of you regardless of the true intentions of your heart. You will learn to be strong and stand in your boldness, wisdom, and beauty, with a confidence that will inspire others. You will learn that making mistakes help build your strength. Being vulnerable will create your greatest and most valuable friendships. The opinions of others will no longer affect who you are and what you do. {I PROMISE, THEY ARE} FAUX-REAL BOUQUETS I have a secret! More than half of the flowers in my Spring tablescape are faux. Can you tell which ones are which? I’ll reveal one of them... all of my white tulips are faux! I am sure I’ve made all Florists cringe but in my humble opinion, when you mix faux flowers with real ones it really does something magical. Not only do faux look real next to real flowers but the whole bouquet lasts so much longer (I mean, half of them aren’t going to die anyway so I guess that’s pretty obvious). Mixing faux-real does a trick on the eye and I promise that you cannot tell the difference. There are, however, a lot of really bad obviously-faux flowers out there so follow these simple tips to get the best looking ones. FAUX FLOWER TIP #1: When hunting for the best faux flowers, look for the colors that you would see in nature. For example, in the natural world, flowers are often brightly colored but never, ever neon (save that for an outfit at your next 80’s party). FAUX FLOWER TIP #2: Choose faux flowers that have a natural looking shape as real flowers are rarely perfect and never identical. Stay away from faux flowers that are totally perfect. Perfect is not real life. FAUX FLOWER TIP #3: When choosing faux florals don’t forget to keep an eye on the stems and leaves. Go for a finish that is textured and never high gloss or smooth. FAUX FLOWER TIP #4: Unlike real flowers where you can use a floral frog to secure stems into place, faux flowers work much better if you use chicken wire inside your vase. Using chicken wire lets you place flowers exactly where you want them and they stay put. FAUX FLOWER TIP #5: When arranging faux flowers (even if you aren’t mixing with real flowers), always, always add water to the vase.
