A Fresh Start for South Orlando As a journalism student at Southern Illinois University-Edwardsville, I spent some time as an intern at the Belleville News-Democrat. I was so excited to get the assignment because it meant I’d be working as a real newspaper reporter. Sure, it was a small-town newspaper, but my stories would end up in print… with my byline! It was exciting because this was exactly the kind of entry-level job I’d get out of college – writing for a small paper making very little money in a town like Enid, Oklahoma or DeWitt, Arkansas. After a semester reporting on local school board and city council meetings, however, I started to realize that this may not be the path for me. While Enid, Oklahoma and DeWitt, Arkansas may be fine communities, I was a city boy from St. Louis. So after finishing my degree, I moved to Orlando with the goal of starting a career in advertising, which I did, working in ad agencies, corporate advertising departments, and owning my own business as a content writer. I met our publisher, Brenda Torres, in December 2020, and by last September, she was looking for a new Editorial Coordinator. The more we talked, the more I realized that I could do – and would really enjoy doing – everything she needed from that role. So here I am, having come full circle to my original roots. I have to say, it’s one of the best decisions I’ve ever made. And I’m so glad that all of you have been part of the journey. This issue, we want to focus on our health, your health, and South Orlando’s health. We all thrive when we work together and hold each other accountable. Make a point to check on your friends more often this month. Instead of doing happy hour, offer to meet up for a fitness class. It’s January in Central Florida, which means the weather is beautiful most of the time, perfect for taking walks around your neighborhood. Whatever the next step for you is, we want to be a part of it. If your heart has been pounding with desire to help children live in a healthy environment, you get a very special opportunity this month! GiveLight Foundation Orlando has just the right person at the helm of an amazing operation to raise funds to benefit orphans in Egypt: Laila Maali. Laila is a South Orlando resident and by day, a fashion stylist. By grace, a spirit of service, leadership, and giving, GiveLight's work is driven by the love and desire to help orphans around the world. GiveLight builds safe homes and establishes a foundation for a prosperous future in areas of the world most affected by natural disasters, poverty, and war. While GiveLight is a global organization, the Orlando chapter has carved pinnacle milestones in just four yearly events to date. With their 5th event slated for January 30, Laila and the volunteer Orlando committee are hoping to make this event the biggest one yet! In a rapidly growing region like Central Florida, new schools seem to open every year. For students who are zoned into a new school, separated from many of their friends, the thought of transferring can leave them feeling sad, even resistant to the whole idea. Not for Natalie Kaufman, a junior at Lake Buena Vista High School, which first opened its doors this school year. “I could have stayed at Dr. Phillips,” said Natalie, who runs cross country and track at her new school. “But I got excited about being part of something new, being part of the first class at a new school.” Because there are no seniors at Lake Buena Vista, Natalie is one of the few cross-country runners with previous competitive experience at the high school level. According to her coach, Roger Raymond, she has embraced her leadership role on the team. “In 25 years of coaching, Natalie is one of the hardest working kids I’ve ever been around,” he said. “She’s been a real leader,
which has made a big difference getting the program going in our first year. She’s always the first one at practice and puts in the effort every day.” Naturally, an important part of being a competitive runner is overall fitness, so in addition to her training regimen, Natalie pays close attention to nutrition, sticking to a strict vegan diet. “Sometimes, people think that being vegan could be a hindrance to your athletic performance,” she said. “But there are a lot of ways to be vegan and get all your nutrients and protein. So, yes, it’s healthier, but also, I love animals and I think about the environment. It’s just part of who I am and what I believe in.” While she doesn’t cook very often, Natalie really enjoys going out to eat at local vegan restaurants. “One of my favorites is Ethos Vegan Kitchen in Winter Park. Most non-vegan restaurants only have one or two options, so I love going to a place like Ethos because the entire menu is vegan and it’s really good!” JANUARY 2 0 2 2 | C I TYL I FE STYL E . THE CUCUMBER ROLL INGREDIENTS • Cucumber • Salmon • Krab sticks • Boston Lettuce • Cream Cheese • Avocado • Sushi Rolling Mat
DIRECTIONS 1. In a pan, sear the salmon in coconut oil + a pinch of salt until fully cooked. 2. Cut the ends of an English cucumber, then cut in half lengthwise. With a sushi knife, shave the skin thick enough to create a cucumber sheet. 3. Place a sushi rolling mat on a cutting board. 4. Place your cucumber sheet on top of the mat. 5. Spread krab sticks on cucumber sheet. Add thin slices of avocado on top. 6. Add a bed of lettuce. 7. Add salmon down the middle. Add cream cheese strips next to the salmon. 8. With the mat, start rolling, and tighten the roll using the mat as you go along. 9. Cut into 5 even pieces. Place on dish, and add your favorite sauce drizzles.

Whether it’s an illness or injury, even the most health-conscious people eventually need health care. Even people who have never had serious health issues have seen friends and family suffer from COVID-19, often ending up in the hospital. “With health insurance, for most of your life, you don’t need it because you’re healthy,” said Carrie Roberts, owner of American Trustee of Florida, which offers health, life, and supplemental policies to individuals and employers. “Then, one day, when you suddenly need it, you can’t get it because you’re sick and many insurance companies don’t cover pre-existing conditions.” Unfortunately, when a patient is hospitalized without adequate health insurance, the result is often overwhelming debt. In 2020, health care spending in the U.S. exceeded $4 trillion, more than 30% of which was for hospital care. That’s an average of over $2,600 per day. This is also why many people take out a supplemental policy: to cover those out-of-pocket expenses.

Are you ready to take the plunge? It’s a question you may not have asked yourself before but will now. So what is “The Cold Plunge?” In short, it’s a brisk, three-minute immersion into a cold tub that triggers the body into a state of regulation, greatly improving levels of energy, mental and physical strength and blood circulation. Co-founded by two entrepreneurs who bonded over their love for health and business, Ryan Duey and Mike Garrett found a friendship and created a vision to rejuvenate people. Two to three minutes a day of plunging into 39-55 degrees of cold water stimulates the mind, body and soul and sets your day into optimistic motion. Mike and Ryan both previously owned their own flotation therapy centers. Early pioneers in that space, they discovered they shared many of the same values, business practices and interests. Therefore, the formulation of a business together became inevitable. With finding himself feeling sick on a consistent basis, Ryan found solace in cold plunging. With an engineering background and having built his own chest freezer, Mike found cold plunging tubs on the market unattainable. Together, they set out to create a more realistic solution for half the price. “Everything else on the market was $10k, and it’s not really achievable for a lot of people,” they say. But as the business began to set in, so did the 2020 pandemic, forcing both to shut down their primary businesses, which turned out to be a blessing. It offered time for Mike to begin designing the product that would look, feel and cost significantly different. In a short 12 months, The Cold Plunge quickly garnered attention as a result of organic growth, wellness influencers who embraced the product, and a pandemic that forced people to focus on their health and added time at home. It’s also worth noting that the likes of Tony Hawk and Kerri Walsh Jennings swear by their cold plunges for their athletic recovery. Everyone from homeowners to commercial businesses are hopping on the train to add these beautiful accessories into their space. Right now the cold plunge is “kind of trendy, it’s kind of cool, but it’s effective. Two to three minutes, or even 60 seconds a day—there are very few things out there that give you the return you get from this.” The goal with the cold water is to lower your core body temperature, and it takes time to do that. “Water cools your body at 25 times what cold air does. Cold water is the quickest activation to do it.” Ryan shares his sentiment on doing something uncomfortable first thing in the morning to make the biggest, most positive impact on your day. What you can expect to feel is, “I did something first thing in the morning that I didn’t want to do, but I know it is good for me.” Ryan also knows over the next one to two years they are going to learn so much about cold plunging. As more people do it, there will be more anecdotal data and validity to the practice.

Cold plunging can be done daily or multiple times a day. It’s all about getting people to explore what works for them. They may offer up recommendations, but ultimately it’s you building a relationship with your cold plunge. Many like the morning plunge, others enjoy nighttime. For some, it cools the body down resulting in better sleep. The Cold Plunge offers four different models, all the same size, all cold at 39-55 degrees, and one that can turn into a hot tub at 103 degrees.
