When selecting asparagus from your local farmers market or grocer, choose firm, bright green spears that have tightly closed tips. Be sure to avoid any stalks that are dry and woody. As with most fresh produce, enjoy asparagus as quickly as possible to take advantage of its natural goodness. Georgiagrown Vidalia onions or any other sweet onion variety make this even more seasonal if they are available in your market. I am a big fan of fresh lemon zest; feel free to sprinkle baked flatbread with a pinch of zest to add that extra pop of flavor to the flatbread before serving.

ASPARAGUS AND CARAMELIZED ONION FLATBREAD SERVES 4

+ 2 plain naan flatbreads* + 3 tablespoons olive oil, plus 1 teaspoon + 1 medium sweet onion, thinly sliced + ¼ teaspoon kosher salt + 1/8 teaspoon freshly ground black pepper + 1 tablespoon balsamic vinegar + 10 stalks fresh asparagus, cut into 2-inch pieces + 4 ounces crumbled goat cheese + Olive oil for drizzling + Kosher salt and freshly ground black pepper + Optional: fresh lemon zest for garnish 1 | Preheat oven to 400°F. Line a baking sheet with parchment paper. Arrange the naan on the baking sheet. Lightly brush each naan evenly with 1 teaspoon olive oil. Set aside. 2 | Heat oil in a heavy skillet over medium heat. 3 | Add the onion and sprinkle with salt and pepper. Cook onions until soft, about 8 minutes. Stir in the balsamic vinegar and continue to cook onions 5 to 8 minutes until golden brown, stirring often. Do not let onions burn. Remove from heat and set aside. 4 | Divide the onions evenly over the naan breads. 5 | Top each naan evenly with asparagus pieces. 6 | Sprinkle goat cheese evenly over the naan. Drizzle generously with olive oil. Sprinkle with kosher salt and pepper. 7 | Bake for about 8 to 10 minutes or until naan is lightly browned around the edges. n recent years, terms like "going green" and "eco-friendly" have become buzzwords on social media, blogs, commercials, and product packaging. And like me, you have even probably seen them on those little signs in your hotel room. With the growing concern of global warming, the environmentally friendly, consciousness is taking firm hold in our lives and choices. The term eco-friendly describes product use and consumption that help preserve the environment by significantly reducing the pollution they produce. It basically focuses on depleting the amount of greenhouse gases we put out. Greenhouse gases trap heat (radiation) in the atmosphere, keeping the Earth's surface warmer than it should be, which in turn, is creating climate change. Carbon is the biggest greenhouse gas culprit, and carbon footprints reveal the amount of greenhouse gas emissions a household puts out. According to the United States Environmental Protection Agency (EPA), many of our daily activities - such as using electricity, driving a car, or disposing of waste - cause greenhouse gas emissions. Together, these emissions make up a household's carbon footprint. You can calculate your household’s carbon footprint by going to www.epa.gov/carbon-footprint-calculator. But as a physician, I can say that simply changing the way you eat can have the best impact on helping the environment. Moving away from our meat-based, American diet to a more plant-based one can additionally have major benefits on our health and overall well-being. Many studies have informed us that agriculture and food production creates about 25 percent of all greenhouse gases globally, and 80 percent comes from animal agriculture. Animal agriculture produces more greenhouse gases than the entire transportation sector. Because producing meat is more taxing on our environment than growing vegetables and other plant foods, it is proposed that transitioning towards a more plant-based diet could reduce these food-related greenhouse gas emissions by up to 70 percent. The health benefits of platn-based diets include lowering your risk of obesity, heart disease, diabetes, and cancer. Additionally, the Mediterranean diet is the cornerstone of the “Anti-Inflammatory Diet,” which for my chronic pain patients can be of great help for managing pain from arthritis in the back and peripheral joints. So, “going green” now has double meaning; it’s not only good for the planet, but good for you as well.

THE TITANIC FASHION COMES TO BILTMORE THE FIRST LARGE-SCALE EXHIBITION OF FASHIONS FROM “TITANIC,” THE OSCAR-WINNING FILM THAT CELEBRATES ITS 20TH ANNIVERSARY THIS YEAR, LAUNCHED AT BILTMORE HOUSE IN FEBRUARY. “Glamour on Board: Fashion from Titanic the Movie” is on display through May 13, and represents the extensive wardrobes preferred by transatlantic travelers like George and Edith Vanderbilt in the early 1900s. Guests will learn more about the Vanderbilts’ extensive travels while viewing these award-winning costumes. “Titanic,” starring Leonardo DiCaprio and Kate Winslet, won a record 11 Oscars, including Best Picture and Best Costume Design. The exhibition’s 45 costumes will be displayed in Biltmore House, evoking the lifestyle of the era when voyages on great ocean liners of the early 20th century offered luxury on ships known as “floating palaces.” First-class passengers took every opportunity to see and be seen in the fashions of the time, from strolling the promenade deck to dining at elegant formal dinners. And, just like in “Titanic,” the days at sea fostered friendships and romances, including George Vanderbilt’s courtship of Edith Stuyvesant Dresser, who met while sailing on a transatlantic voyage, a veritable “floating palace,” just like when Jack met Rose in the movie. LeAnn Donnelly, Biltmore's Senior PR manager, recently shared about the wardrobe from the iconic film with the public, especially breathtaking in the Biltmore House. Donnelly noted that the Vanderbilts were initially booked to sail aboard the Titanic, though as fate would have it, they cancelled the trip and scheduled a voyage on the Titanic’s sister ship for a later date. The clothing in the film matches up with the time perfectly. When the Vanderbilts entertained, their guests—who would visit for weeks at a time—would have been adorned in similar attire. The elaborate outfits truly come alive in the space! “Having the fashion from the era really helps you imagine the timeframe,” says Donnelly. The fancy formalwear is what they would have worn for dinner. In fact, the second floor living hall where guests would have gathered to mingle before dinner is the setting for six costumes. They are displayed throughout the house in groupings of one to seven. This is the fourth costume exhibit at Biltmore, Donnelly says, gushing about the popularity of the first one, based on the wardrobe of Downton Abbey. 28
