SAVANNAH, GA In honor of our May issue celebrating women, we are featuring fun destination trips recently enjoyed by women from Charlotte. Rising COVID cases caused many travelers to avoid locations requiring air travel in favor of destinations within driving distance. The Queen City is in the central part of North Carolina, which means it is ideally located for taking trips to the mountains or the coast. In this article, we explore trips to Savannah, Georgia, and North Carolina’s own Grandfather Mountain. Looking to get away to celebrate a birthday, friends Carol Long and Kathy Taylor decided to plan an extended weekend girls’ trip. Just under four hours from Charlotte by car, Savannah is a coastal city. It is a beautiful area with a rich history and is a premier Georgia municipality separated from South Carolina by the Savannah River. Savannah is known for its manicured parks, horse-drawn carriages and Antebellum architecture. Its historic district is filled with cobblestoned squares and parks, such as Forsyth Park, shaded by oak trees covered with Spanish moss. At the center of this picturesque district is the Gothic-Revival Cathedral of Saint John the Baptist, a local landmark. Savannah is the embodiment of the new South, offering something to intrigue travelers with a variety of interests. Thanks to the pleasant climate the South enjoys, even in the winter months, an excursion to Savannah in January of this year proved to be the perfect, drivable getaway for reinvigoration, relaxation and a taste of Southern charm in an inviting atmosphere. Temperatures were in the seventies, making outdoor excursions especially inviting. Carol and Kathy chose the Perry Lane Hotel, a destination hotel in the heart of Savannah’s thriving historic district.

Walking Tours If you are looking to get your daily steps in, Savannah is the place to be, with numerous opportunities to stroll through lush gardens filled with native flowers and plants. The historic district offers ample spaces to walk or get a run in while you enjoy the charming architecture and ornamental fountains on display. Interested in history? There are many historic homes you can tour to get a glimpse of the city’s past. Telfair Museums One of the best spots to visit while in Savannah are the historical Telfair Museums. This exquisite site offers compelling expressions of visual culture, embracing three unique buildings housing three distinct collections that bridge three centuries of art and architecture. The museum develops awareness, understanding and appreciation of the arts. It also serves as a dynamic cultural center connecting people of all ages and backgrounds. Fine Dining – Southern Style If you are a foodie, restaurants throughout the city will tempt your taste buds with dining that features a distinctive Southern flair. Dining options in Savannah include fresh seafood and flavorful French-style cafés that allude to the Huguenots and Acadians who migrated to the region in colonial times and have left a lasting impression on the city’s culture and cuisine. After experiencing the exquisite southern cuisine, the two friends were so impressed they extended their departure time the following day in order to enjoy lunch before the drive home.

A Shopper’s Delight For ladies who love to shop, Savannah offers several indie boutiques where you can find and purchase one-of-a-kind items. For instance, at Satchel, you can watch luxury leather goods being made and even collaborate with a designer to create a custom bag or other leather goods of your choice! A visit to the Savannah College of Art and Design (SCAD) allows you to view and buy original artworks. There are also plenty of opportunities to shop for local products, so you can bring a bit of Savannah’s distinct culture home with you. Unique Experiences Savannah and the surrounding area offer several unique experiences visitors can enjoy. The Savannah Bee Company’s flagship store is located a short drive from the city’s historic district. The company specializes in the production of artisanal honey-based gourmet foods and beauty items as well as apparel, garden and home decor. Tours of the facility educate visitors about bees, how honey is made, the need to preserve bee populations and the commitment to making sustainable products. Guests are also invited to partake in honey tastings and treated to samples of mead created from fermented honey. Savannah has so much to offer that a long weekend trip can easily be extended to a week-long vacation. Other popular destinations, including Hilton Head and Tybee Island, are within easy driving distance. If you’re up for venturing farther, consider a day trip to Jekyll and St. Simons islands.

GRANDFATHER MOUNTAIN STATE PARK While the trip to Savannah was planned and booked in advance, friends Melissa Latin and Tiffany Carpenter decided to take a spontaneous day trip to Grandfather Mountain State Park. A short two-hour drive (each way), admission to the park is just $22 per person. Once there, the duo hiked the Bridge Trail 0.4 miles to Grandfather Mountain’s famous mile-high swinging bridge. The climb is a moderate one with plenty of rock formations, flora and fauna along the way. As you exit the trail, you pass underneath the mile-high swinging bridge. Their efforts were rewarded by panoramic mountain views. After hiking back down, they drove the short distance to the historic town of Boone to experience authentic Southern homecooked food at the renowned Daniel Boone Inn. This restaurant regularly makes the list of top eateries, not only in

in South Charlotte and Upstate South Carolina

the South but in the United States. Food is served in a family-style setting at all tables. The menu is prefixed at a cost of $21.95 per person. Extra servings of everything but the Inn’s specialty, ham biscuits, are included in the set price. A walk through historic downtown Boone with its streets filled with antique stores, arts and crafts galleries, restaurants and shops completed this adventure-packed day trip. For under $100 total, the two enjoyed a great day! Melissa offers the following tips for others considering taking this day trip: • Bring plenty of water and energy bars. • Be sure to bring your camera as you will want to take lots of photos and videos of the awe-inspiring Blue Ridge Mountains.

Beautiful Weddings at Camelot Meadows

Located on 33 acres in the center of Belmont, NC, less than 30 minutes from Charlotte, Camelot Meadows is a picturesque event venue with a distinct quality owner Deborah Baxa felt from the moment she saw it. That first time was one evening at dusk, when she and her husband, Dr. Mark Baxa, walked through the bamboo forest and up to the pastures and were surrounded by the gentle rescue horses. Deborah turned to her husband and said, “This place is magical.”

A LASTING LEGACY Deborah confides that although, “A lot of blood, sweat and tears went into maintaining the property and the bamboo forest,” the site became a special place that she and her husband treasured. Dr. Mark Baxa passed away five years ago after a battle with brain cancer. He had spent his life dedicated to the service and aid of others, both as a trauma surgeon and a flight surgeon in the Air Force. Deborah notes, “His whole life was focused on helping to support his country and those in need.” After his death, Deborah became focused on preserving the property, as well as seeking a means to share it with others. Thus, the idea of “Camelot Meadows Event Venue” was born, along with her nonprofit, “The Sanctuary at Camelot Meadows.” Both are meant to be a lasting legacy to Dr. Baxa’s love of the land, commitment to the conservation of the community’s history and desire to provide educational opportunities to youth. A DESTINATION WITH A PURPOSE

THE BAMBOO FOREST

Deborah has steadfastly carried on with his mission, and today, Camelot Meadows is a popular venue for a host of events ranging from engagement parties and weddings to private parties, fundraisers, photo shoots, corporate events, family reunions, celebrations of life and pet memorials. The unspoiled beauty of the magical bamboo forest, lakefront and pastureland make it the perfect location to celebrate all of life’s milestones. Camelot Meadows is the manifestation of Deborah Baxa’s commitment to giving back to her community and sharing this special place through educational programs, her support of other women-owned businesses and the support of local merchants and artisans. According to Deborah, the rapid growth of the Charlotte Metro region has come at a high cost including the loss of open spaces and historic buildings. She stands firm in her conviction that “It is important to preserve this land and local history for the education of our youth.” Visitors to the site can take in the scenic views, and families can enjoy interacting with the animals who call Camelot Meadows home. At present, there are six horses and eight goats on the property, along with three beehives that began producing honey last year. The horses on the property are host to children’s horseback riding lessons.

The history of the bamboo forest at Camelot Meadows can be traced back to the late 1800s through research of old property maps and historical documents regarding the introduction of bamboo in North Carolina. At first, Deborah was unfamiliar with the nutritional value of the bamboo shoots and did not know how the crop should be cultivated. To learn more, she reached out to the Asian Chamber of Commerce and the Bhutanese community in Charlotte. Deborah credits the Bhutanese with helping her understand the value of the bamboo shoots and how to harvest them. She also donates the shoots to them.

A LABOR OF LOVE Camelot Meadows is not your average business. Deborah explains, “I don’t take a dime of the business for myself.” All proceeds go to preserving and maintaining the land, and her work there is inspired by her late husband’s generous nature and his love of the land, children and the horses. Deborah emphasizes that Camelot Meadows is an all-inclusive venue where all are welcome and members of the LGBTQ+ community will find a friendly space. AVO-CAPRESE BITES ingredients: • • • • • •

1-2 ripe avocadoes Sea salt, to taste One lime, or bottled lime juice Mini salted rice cake rounds Cherry tomatoes, quartered Small basil leaves, or torn basil leaves, if you only have large leaves • Mini mozzarella balls • Balsamic vinegar

directions: 1. Prepare right before serving. 2. In a small bowl, use a fork to mash the avocado with a pinch of sea salt and a splash of lime juice. 3. Spread a layer of avocado mixture on each rice cake. 4. Top each rice cake with a quartered cherry tomato, a piece of basil leaf and a mini mozzarella ball. 5. Once all topped rice cake rounds are on your serving tray, drizzle with balsamic vinegar.

SIMPLE MINTY SPRING PEA SOUP

ingredients: • • • • • • • •

4 Cups vegetable broth, divided 6 Cups thawed frozen peas 1/2 Cup fresh mint leaves 1 Tbsp lemon juice Salt and pepper, to taste 1/4 Cup Greek yogurt or sour cream 2 Tbsp milk or water Fresh chives

directions: 1. Start with 2 Cups of the vegetable broth in a medium stockpot. Bring to a boil. 2. Add in the peas and simmer two minutes. 3. Remove from the heat and add in the remainder of the broth, fresh mint and lemon juice. 4. Carefully transfer the mixture to a blender and puree (in batches, if necessary) until smooth. 5. Season to taste with salt and pepper. 6. Soup can be served cold, warm or at room temp. 7. When ready to serve, combine yogurt or sour cream with milk or water to thin. 8. TUNA NICOISE PROTEIN NOODLES ingredients: • • • • • • • • • • •

1 box edamame spaghetti 1 jar Italian tuna in oil, oil reserved 1 Tbsp fresh lemon juice 1 Tbsp white balsamic 1/2 tsp Dijon mustard 1/2 tsp miso 1 Tbsp fresh chopped chives 1/2 Cup cherry tomatoes, halved 2 Cups fresh arugula leaves 1/4 Cup briny black olives lemon zest

directions: 1. Cook the pasta per box directions in chicken or vegetable broth for added flavor. 2. Drain and rinse with cold water. 3. In a small bowl, whisk to combine tuna oil through chives to make the dressing. 4. Toss the pasta with dressing. 5. Gently add in chunked tuna, tomatoes, arugula and olives. 6. Top with fresh lemon zest.

MINI PIES FOR MOM ingredients: • • • • • •

Frozen mini phyllo shells, thawed per box directions Greek yogurt - strawberry, mixed berry, vanilla, lemon nonfat whipped cream sprinkles chopped fresh fruit raw coconut flakes

directions: 1. Spoon Greek yogurt of your choice into the thawed shell. 2. Top with your choice of toppings. 3. Cute, calorie-friendly and delicious!
