April is the month when nature bursts forth with beautiful gifts for the senses to enjoy and appreciate. My amaryllis, shown on our City Scenes page and a gift from a friend more than 30 years ago, blooms in celebration of Spring every few years. SHRIMP CREOLE SERVES: 4 | PREP TIME: 30 minutes

Sauté Ingredients • 2 tablespoons butter • 2 tablespoons bacon drippings • ½ cup chopped onion • ½ cup chopped green pepper • ½ cup sliced celery Thickening ingredients • 3 ½ tablespoons flour • 1/3 cup water • 2 teaspoons sugar • Salt, Tabasco Sauce, garlic powder, chili powder (to taste) Add • 1 pound can diced tomatoes • 2 tablespoons tomato paste • 2 bay leaves • 2 tablespoons chopped parsley • 1 pound freshly cooked shrimp • 4 cups cooked rice or grits

DIRECTIONS 1. Melt the butter with bacon drippings in a large Dutch oven or saucepan. Sauté the onion, green pepper and celery for 2 minutes. 2. Whisk together the thickening ingredients in a small bowl and set aside. 3. Add the tomatoes, tomato paste, bay leaves and parsley to the sautéed mixture and stir well. 4. In a small bowl combine the ingredients for thickening the sauce and stir until blended well. Add to the creole blend in the Dutch oven and stir well. Lower heat and simmer until thickened, approximately 10 minutes.

This year, the Queen’s Cup Steeplechase, one of the most highly anticipated social events of the Charlotte season, will be celebrating its silver jubilee, with the 2022 festivities set for Saturday, April 30 at Brooklandwood Race Course in Mineral Springs. Founded by Bill and Carrington Price in 1995, The Queen’s Cup Steeplechase has evolved into an annual rite of passage where Charlotteans welcome each new spring, enjoy the natural beauty of the lush landscape and come together to experience the excitement of a full day of horse racing, competition on and off the track as attendees vie to win the traditional hat and tailgating contests and many more activities for all ages. Commitment to the Community At its core, the Queen’s Cup is firmly rooted in community and philanthropic endeavors. Since 2014, the Queen’s Cup and the Western Carolina Chapter of the Alzheimer’s Association have partnered to raise awareness about how to detect early signs of the disease. Katherine Lambert, CEO of the local Alzheimer’s Association chapter, credits the exposure the nonprofit organization receives through the Queen’s Cup with allowing it to inform the community about the numerous educational and support programs it offers for those diagnosed with the condition as well as family and friends searching for the best ways to provide care and support

Katherine points out statistics show that 180,000 North Carolinians are among the six million Americans living with Alzheimer’s.
