Whether you have a pool already or not, one thing is for sure – you'll want to make sure your A/C is functioning efficiently ahead of the hottest days in North Carolina. That's why we worked with our friends at Acosta Heating & Cooling to bring you an article about just that. Be sure to contact them for a cooling check-up. During July we hope you make great memories as we get back to a somewhat more normal summer. Enjoy this beautiful season with concerts at various venues around town, fireworks on Independence Day, scrumptious cocktails and dinner on the patios of great restaurants or invite your loved ones over to grill out. Be sure to find within these pages our favorite food consultant, Melissa Latin's, recipe for a delicious and healthy grilled chicken dish to share with family and friends.

GRILLING SEASON HAS OFFICIALLY BEGUN! During the heat of the summer, most of us are longing for lighter, healthier meals that are full of flavor. This recipe for Cilantro Lime Grilled Chicken will surely fit the bill. It was adapted from Recipe Tin Eats. At only 300 calories per chicken breast, there is zero guilt.

ARTICLE AND PHOTOGRAPHY MELISSA LATIN

South Charlotte Lifestyle | July 2021

CILANTRO LIME GRILLED CHICKEN

+ Trim the chicken breasts of any excess fat. Pound down the thickest part of the breast. In a sealable bag, mix together the ingredients for the marinade. + Add the chicken to the bag. Close bag and squeeze to coat the chicken. Allow to marinate for at least an hour in the fridge. + Fire up the grill on low. Place the marinated chicken on the grill. + 5 boneless chicken breasts (can substitute with boneless thighs)

ingredient s

+ 1 lime, sliced + 1 jalapeno, diced (optional) + 1 tablespoon fresh chopped cilantro, for garnish For the marinade: + 3/4 cup light olive oil + zest and juice of two limes + 2 tablespoons brown sugar + 1 tablespoon soy sauce

Allow to cook through. Once the chicken breasts have reached an internal temperature of 160°, turn up the heat to sear on both sides. Searing will increase the acceptable serving temperature to 165°. + Place finished chicken on a platter. Garnish with the fresh lime slices, diced jalapeño and chopped cilantro. Serve and ENJOY with your favorite summer salad! + Alternatively, make the Cilantro Lime Grilled Chicken as kabobs. Cut the chicken into skewer-sized pieces prior to placing in the marinade. Be sure to soak the skewers for at least fifteen minutes to an hour prior to grilling!

+ 4 to 5 cloves garlic, chopped + 1/2 bunch cilantro + 1 teaspoon kosher salt + 1 teaspoon black pepper

Soon, more calls followed requesting Tommy and his wife, Patty, provide similar help to other veterans. The Normans reached out to the Charlotte business community and received an outpouring of generous support, which enabled the founding of VBH in July 2011. Getting the organization off the ground proved to be an ambitious task. To establish a baseline for the organization’s work, The Foundation for the Carolinas Center for Civic Leadership funded research for a report that identified the key challenges returning veterans face. VBH works with best-in-class providers across the Charlotte region to coordinate a network of public, private and non-profit organizations that collaborate to provide an array of services to meet the specific needs of the Charlotte-area Veteran community.
