fter seemingly endless weeks of beating sun and bursting storm clouds and humid air, autumn is finally here. The first signs of this most welcome season show up in color: in the yellow-tinged leaves of late summer, in the golden light of early evenings and, more importantly, in the swaths of creamy cashmere and dark wool that suddenly fill the racks of our favorite stores. We're grateful for the cooler temps and gentler days, but we're even more grateful for this season of fashion.
Fall is the time for fashion (it's the reason why that alliterative phrase, "fall fashion," jumps off the tongue so well). From tiny tykes decked in back-to-school duds (page 24) to timelessly elegant fashionistas swathed in sumptuous furs (page 26), fall brings new fashion to all our closets. But as every gentleman (and lady) knows, the foundation of fashion isn't even fashion itself—it's what lies underneath. A fresh cut and shave delineates the stylish from the frumpy. Even stripped of his accessories, a well-groomed man is a fashionable icon. No one knows this better than sports stars, those athletic celebrities who dominate news headlines and social media; they need to look good, and in Charlotte, that means they need to go to Freshen Up (page 20). ocally-sourced. Seasonal. Made-from-scratch. Chef Chris Coleman of Stoke recognizes
these are buzz words in Charlotte’s ever-expanding culinary scene. And though he’s certainly embraced such adjectives, the Charlotte native is intentionally doing things differently. “Stoke is similar to a lot of great Charlotte restaurants,” he says. “We source locally, we rely on the seasons to dictate the menu, we’re focused on scratch cooking and an eye for detail. What sets us apart is our immersive kitchen concept.” “Immersive” is putting it lightly. This a kitchen without walls—literally. Guests are privy to all the goings on of the kitchens; they can watch every one of Chef Coleman’s rustic dishes take colorful form, bathed in the red light of flames from the wood burning oven (the heart of the restaurant and the menu). Coleman’s latest venture comes on the tail end of inconceivable success. “I grew up cooking with my Mom and have always had an interest in food… mainly because I like to eat,” Coleman says of his beginnings. “I would spend summers on my grandparents’ farm in Mississippi, picking figs and blueberries, chasing cows in the pasture, and trading for fresh eggs with the neighbors. It was during these summers that I unknowingly gained a deep respect for where our food comes from.” Inspired by the promise of a car, a 14-yearold Coleman grabbed a gig as a bus boy at a fish camp. “It was here, watching the busy kitchen pump out 300 covers a night, moving in a sort of synchronized chaos, that I fell in love with the restaurant life,” he remembers. At just 21, Coleman took the helm of local fine dining restaurant McNinch House as Executive Chef. Following a successful pop-up dinner series using only locally-sourced ingredients and his own The Asbury, a 40-seat farm-to-fork restaurant at The Dunhill Hotel, Coleman was ready for his next challenge. Easily his most ambitious endeavor to date, Stoke’s menu has all those buzzwords Coleman promised, served up in American dishes with a rustic twang. Coleman may already be a dominating force on the Carolina culinary scene, but he’s still one of us. “Charlotte is my home,” says the chef. “I was born and raised here. I’m proud to live here. And I’ve enjoyed watching the city grow as I’ve grown.”

ESQUITES MEXICAN STREET CORN SALAD
A traditional Mexican snack, Esquites is often called Mexican Street Corn Salad. The popular off-the-cob treat is roasted and slathered in mayonnaise or crema and cheese. Serves 4-6 5 ears of corn, husk and silk removed ½ c sour cream ¼ c Duke’s mayonnaise 2 limes, zest removed and saved 1 T cilantro, minced ¼ c Cotija cheese, crumbled 1 T Aleppo chile flakes Remove kernels from the cob. Spread the corn kernels on a sheet tray or cast iron skillet and place in a very hot oven or grill until corn starts to char, shaking the kernels around every few minutes. Reserve. Make the dressing by combining sour cream, Duke’s mayonnaise, lime juice and cilantro. Season to taste with salt. Combine the charred corn and dressing. Spoon into serving bowls. Top with crumbled cheese, a pinch of Aleppo and a pinch of lime zest. Serve warm.
SOUTH BY SOUTHWEST Stoke’s cocktail program is one of innovation, guided by the same local principles of Chef Coleman’s creations. This unique take on the classic margarita combines fresh fruits and herbs in an uncommon vessel: a french press. 3 oz Lunazul Reposado 2 oz lime juice 2 oz agave nectar 5-6 blueberries 3-4 basil leaf 4 dashes grapefruit bitters 6 dashes habanero shrub Garnish 1 basil leaf/sprig Add blueberries and basil to french press carafe. Muddle lightly, then add all other ingredients. Fill to brass lining with water. Press three times to infuse flavor. Serve in tea mug with basil leaf inside. 18

hese days, professional athletes aren’t just known for their phys-
ical abilities. It’s not just about how high they can jump or how fast they can run, and their fame isn’t limited to courts and fields. Today’s professional athletes are something much more: trendsetters. On magazine covers and gossip blogs, in reality television and social media stories, these new-age celebrities are constantly being scrutinized and idolized, meaning they have to look their best, always. As every man knows, looking good begins not with your clothes, but with your grooming. And in Charlotte, there’s one place these athletes know their shave and cut will be flawless: Freshen Up. Freshen Up’s Mario Askew is bar-
ber to the stars. Part of what endears Askew to his celebrity clients is his own style, which is immaculate. There’s not a hair out of place or wrinkle in sight when he leans in to shake hands over the prostrate, relaxed client currently seated in his chair. His suit is tailored and his cut is fresh. I believe if you treat the business as a business, you’ll earn the reputation and the clients you want.” Like the celebrities who sit in his chair, Askew’s style has to be 100%, 100% of the time. First rule of thumb: do not pack more than will fit in cruise cabins. While they are efficiently designed for maximum storage, there is still a limit to what these cabins can hold. Be judicious when choosing what to pack and consider items that have multiple uses. This law of prudent packing is actually getting easier to follow as most cruise lines
