I

've written my fair share of brewery articles. I've interviewed maverick brewers in San Diego and old hands in Asheville. I've toured operations in Portland and Maui and Memphis. I've sipped and nodded along as dozens of brewers practiced their rehearsed speeches about their IPAs and lagers and ESBs. What I'm saying is, I'm a bit jaded when it comes to the beer bubble, and I thought maybe it was on the verge of bursting.

Until I spoke with Ben Dolphens of Charlotte's newest brewery, Divine Barrel Brewing. Ben reminded me that this strange animal called the beer industry is still exciting; he reignited my belief in good beer brewed well. Then I spoke with Brian Beauchemin and Kevin Martin of GoodRoad CiderWorks, and then Carol Waggener of Bold Missy Brewery, and I was reinspired all over again. That beer bubble? It's still growing—as it should be.

There are amazing things happening in Charlotte, in the beer we drink, the food we eat and the wine we sip. And at the core of those amazing things are amazing, passionate souls. I hope their stories reignite your palate and passion as they did mine.

Charlotteans have been into VBGB to grab a brew. With 30 taps, 29 of which feature craft beer from around the country (that 30th tap? the classic PBR), it’s the perfect place for pints. But what many locals don’t realize is that many of those bubbly beers also make it into the snacks and dishes that are slung out of the beer hall’s kitchen. Infusing your cooking with your favorite beer may seem intimidating, but Emily Horwath, Kitchen Manager at VBGB, assures us it’s not. “It’s fun to know that it’s easy to cook with beer—it’s much less complex than wine,” she promises. The beer cooking connoisseur poured out her tips and recipes just for us. Cheers!

e’re standing in a lofty, gutted warehouse on the corner of Anderson and North Davidson, a vast space filled with clusters of dirtpiles, the clang and shuffle of con-

struction, and hot June air. It’s easier to imagine the space as it was—most recently a roller derby rink, heralded by the telltale chips of purple paint on the cement floor—than what it will be—Charlotte’s newest brewery. But with a glance at Ben Dolphens’ grin, a whiff of his freshly poured beer, and one savored sip, the whole concept comes into focus.

WHAT’S ON TAP ?

Dolphens Shares Tasting Notes On A Few Of Divine Barrel’s Initial Offerings. • Gratzer/Grodziskie - A revived Polish style brewed with 100% oak-smoked wheat malt. This variant sat on Peruvian Aji Limon peppers before kegging. Pale straw with a bright white foam, this beer is mildly sweet and bready with a clean and pleasant oak smoke that is surprisingly refreshing with a noticeable but not over-the-top heat. • Brett Saison - A classic Belgian farmhouse ale that we’ve taken a few liberties with that will be one of our first foeder offerings. Brewed with Belgian pilsner malt, pale malt, pale wheat, spelt, Belgian and American hops and fermented with a mixed culture of Belgian saison yeast and Brettanomyces. Hazy and effervescent, this beer is slightly tart with black pepper and citrus notes, has a restrained Brett funk and finishes super dry. • Imperial Stout - A huge and complex imperial stout that was aged on Evan Williams single barrel oak spirals. Brewed with Maris Otter, Munich, Chocolate malt, debittered Chocolate malt and black malt and aged on bourbon soaked oak spirals. Pitch black with an espresso-like foam, this beer is layered with notes of chocolate, licorice, molasses, vanilla and toasted marshmallows and has a slightly tannic and pleasantly dry finish from the American oak.

TO BREW, DIVINE (CON TI N U ED)

NEW BREWS Fresh Concepts—and Apples—Liven Up The Queen City’s Brew Scene GOODROAD CIDERWORKS

Let’s get one thing straight: these are not the sickly sweet ciders you’ll find on the shelves of your local grocery store. The dry, crisp ciders at GoodRoad are refreshing, yes, but as delicately complex in variety as any brew. Many of the ciders on tap are single varietals, meaning they’re made from one kind of apple (most of which com from Taylorsville's Perry Lowe Orchards), but even that small difference allows a vastness of flavor. “You’ll notice completely different characteristics from each of these ciders, and the only difference is the apples that were pressed,” explains Brian Beauchemin, head cider maker and co-owner of GoodRoad. Beauchemin, a native New Englander, has threaded the cidery with the charm of his homeplace—wood beams and high ceilings make the space feel like a modern, homey hayloft—as well as the cider itself. “We also have a relationship with an orchard in New Hampshire and they have true cider apples, what the industry calls ‘spitters—bite into ‘em, spit ‘em right,” Beauchemin says with a laugh. “That’ll be a completely different characteristic, even compared to what we have here.” You’ll find even more unique characteristics in GoodRoad’s other bev: mead. Kevin Martin, head mead maker and co-owner, points out that just as there are dozens of varietals of apples, so there are dozens of varietals of blossoms and, hence, varietals of honey. “Our most popular right now is Avogadro’s Trail, which is actually sourced from avocado blossoms,” he notes. It’s a thick, soft blend of florals and caramel that makes your palate swoon. BOLD MISSY BREWERY

Bold women of history are the inspiration for this modern brewpub, located just across the street from the future Divine Barrel. After a decade in the corporate beer industry and a few years out, owner Carol Waggener found inspiration while on a pub crawl in South End and decided to open a brewery of her own. The result is the new, female-centric Bold Missy, a bold departure from the rustic, industrial motifs popularized by the masculine industry. The bright space houses a modern aesthetic and a lineup of classic beers named for equally classic women. Git Yer Gun Golden, for example, was named in honor of Annie Oakley while And YOU Get a Lager is a tribute, of course, to Oprah. “We really wanted to make it a celebration of famous bold missies,” says Waggener. “There are so many things going on in the world to feel crummy about, and it’s great to take a minute to celebrate the accomplishments women have achieved over the years.” Now that’s something we can cheers to.

Road Trip

A Vintage Story

Love

I

t’s a love story. Boy meets girl, they fall in love, start a business and a family. But it’s another kind of love story, too. A love for

wine, and for the mountains of North Carolina. It was in those mountains that Steve and Sally Tatum met and married almost 40 years ago. The duo opened furniture and interior design business Tatum Galleries in Banner Elk and planted their own seeds of community in the town. Years later, in 2003, they planted a new kind of seed on a large parcel of property behind their home: vineyards. Steve’s interest in wine inspired the idea, and the vines took root on their sprawling, mountainous lands. What began as a hobby for the family soon turned into a viable business opportunity. Son Dylan pursued winemaking at Surry Community College (the only program in Enology in the state), and equipped with a bevy of winemaking knowledge, the family decided to open Grandfather Vineyards. Within a few years it became not only the first producing winery in Watauga County pressing world-class wines, but also a destination for locals and tourists alike to relax and unwind with a glass of their favorite vino. The name hails from the sight that defines their property. Situated along the Watauga River with spectacular views of Grandfather Mountain, the vineyard and its tasting room sit in the shadow of one of the state’s most beloved landmarks. The wines that come from the rich mountain soil of Grandfather Vineyards are multifarious in varietal and flavor, from dry whites and reds to semi-sweets and dessert wines, including perennially popular favorites Pinot Gris, Chardonnay, Pinot Noir and Cabernet Sauvignon. All of the grapes are crushed, pressed, fermented and bottled on property, and poured by knowledgeable staff whose passion is also for the grape-made nectar. The tasting room, as one might expect, offers tasting flights, as well as wines by the glass and bottle, perfect for a relaxing afternoon amongst the grapes. The winery also hosts live music every Sunday from 1 to 4 pm from May through October, a boisterous shindig that draws visitors from around the county and even as far as our own Charlotte (see the schedule for August on page 27!). The love story continues at Grandfather Vineyards. Dylan and Tasting Room Manager Nicole married this summer, bringing a new generation to the tale. And love for the wine continues too, seeping into the local community and the new wine country of our mountains. CONTINUED >

rystal turquoise waters, perfect temperatures year-round, white and black sand beaches, towering waterfalls, rugged

volcanic hillsides, lush tropical foliage, over-the-water bungalows… it’s no wonder that the islands of French Polynesia are an idyllic dream vacation for many. While there are 100 islands in this area of the South Pacific, most visitors are familiar with the popular destinations of Tahiti, Mo'orea and Bora Bora. They are often considered the most beautiful places on earth and attract beach lovers, nature aficionados, honeymooners and adventurers alike. The incredible natural beauty of these islands is often what draws vacationers, but most are happy to report that, just like the year-round sunshine, the people of the islands are also warm and welcoming. Locals are happy to help tourists navigate their way with helpful directions, restaurant recommendations and language tips. Along with the friendliness of the locals, the celebrated culture of French Polynesia is also an overlooked advantage of such a vacation. The history and traditions date back 3,000 years and delight travelers with unusual song, dance and craftsmanship. Musical performance is widely practiced, and a favorite activity is to sing old classic ballads as a group, accompanied by ukulele, guitar and spoons. Traditional drumming is also widely practiced, often as an accompaniment to dance performances. Most dining choices on these tropical islands involve fresh seafood. After all, dinner is usually caught just feet away from where you are dining on the beach. Tahiti’s popular national dish

HOPS & VINES ON ISLAND TIME

CHARLOTTE’S

LARGEST

FLOORING SHOWROOM

LACCC SUMMER FIESTA FUNDRAISER

Prior to arriving at Hughes Floor Covering, we visited four different flooring stores. No one was able to adequately assist us. The sales associate at Hughes was more than accommodating. He was not only knowledgeable about our options, he gave suggestions, had personal experience in installing the flooring system and provided us with samples to take home. On our installation day, our order was on time and the installers were friendly and very competent. They ensured we were completely satisfied, respected our property and left the work area clean. They did what they said they would do in every phase of the process.” – Recent Customer

ver wonder how chefs and sommeliers craft that perfect wine pairing menu? According to Mark at Petit Philippe, some of it is science, but much of it is art. He

believes there are fundamentally two ways to approach the task. Here’s his approachable guide for your own wine pairing.

MARRIAGE

JUXTAPOSE

Think of this as the perfect marriage in

Here you might think of a pairing as a juxtapo-

which each partner has a similar personal-

sition. Using the marital example above, this

ity profile, contributing to the same aromas,

scenario is more along the lines of opposites

fruit and taste nuances to create a harmonic

attract! This methodology might be less ortho-

taste. An example here is a chocolate truf-

dox, but the idea is that both players bring their

fle infused with Chambord. The raspberry

own attributes to the table. Our example is a

liqueur perfectly balances the delightful

rich white chocolate ganache with Japanese

red primary fruit in an off-dry Italian des-

matcha green tea and lemongrass perfume

sert wine, Brachetto, from Italy’s Piemonte

paired with a Premier Cru grower Champagne

region. The frizzanté (or slightly sparkling)

from Rilly-la-Montagne. The clean, dry style of

light red wine is not cloyingly sweet and full

sparkling wine comes from its high percentage

of lush aromas, fragrance and aromatics,

of Chardonnay grape, which offers notes of

with intense red fruit—a lot like the choco-

fresh apple, mint and tarragon with salinity and

late truffle. The pairing profile here marries

subtle chalkiness. The pairing objective here is

two symbiotic styles. It’s a conservative

grounded by the idea that bright acidity offsets

approach, but makes for a seamless, ele-

cocoa butter fat, and savory bubbles lift exotic

gant outcome where the collective whole

Asian spices. It’s not an obvious assemblage,

lifts the individual components.

but makes for a lively ensemble.
