You Are What You Eat Somerset Hills, this month it’s all about food, glorious food. It’s our tastiest issue of the year, that will be sure to leave you licking your chops. As my grandfather used to say, “You can call me anything you want. Just don’t call me late for dinner!” My grandfather was a foodie and was always mentally planning his next meal before his current one was finished. Food is the great equalizer. It is the glue that brings friends and family together. I was recently attending a birthday party and I heard my friend’s son ask his mother, “Is there going to be cake?” She replied to him, “You know what I always say, ‘A party without cake is only a meeting.’” That quote resonated with me. Cake is the main attraction at every celebration. Or at least any celebration that I want to be part of! When my oldest daughter was a baby and I was in the throes of new motherhood I was frequently asked, “When are you having another baby?” I wasn’t really sure. Having just one child seemed so difficult at the time. Then I received a solid piece of advice that I’ve passed on many times over the years. When deciding how many children you want, don’t just think of right now. These times will pass. Picture your life 30 years from now. How many people do you envision sitting around the Thanksgiving table? I realized my vision was of a full table, and so now, we have a full family. October brings Halloween and all of the fall fun associated with it. Looking for ways to fill up your weekends? Check out our Events department on page 50. Last month, I reported that we still had a lack of available homes to sell, and that was keeping demand high with only 56 homes available, vs. 150-200 pre-pandemic. Today, the number of available homes is down even further to 47, demonstrating that supply is still not keeping up with demand. In our area, through the second quarter, decreasing sales (-21%) are still tied to a decreasing number of homes coming to market (-35%) vs. lack of buyer interest. That's keeping local demand above supply as noted above. Seller uncertainty exists around: fears of finding their next home, delayed plans due to upcoming milestones in the future such as graduations, and hesitancy to pay higher interest rates than they currently have. On the plus side, today's sellers have solid equity. If you're thinking of selling your home, whether now or next year, it's a good time to start preparing. If you're waiting for your next home to hit the market, or that milestone date, it's an even better time to start preparing, so that you are ready when the time comes. As shown on the back cover, selling your home does NOT have to be a frightening experience. Getting it ready is a great first step. Please call me if you'd like to discuss, with no strings attached! Atlantic Health System Hospitals Receive Five-Star Rating Three Atlantic Health System hospitals earned a five-star rating from the Centers for Medicare & Medicaid Services, the highest ranking offered by the federal agency. Morristown Medical Center, Overlook Medical Center and Newton Medical Center account for three of New Jersey’s only four hospitals to achieve this designation. Somerset County Funds Open Space Grants in the Somerset Hills The Somerset County Board of County Commissioners has awarded Open Space funding to two Somerset Hills towns. Bernardsville was awarded $250,000 to install pickleball courts at the Polo Grounds and Bedminster was awarded $300,000 to build a community garden at River Road Park. The grants are part of a commitment by the Commissioners to ensure every Somerset County resident can benefit from the county Open Space funds.

Bistro Seven Three opened its doors in 2003 and shows no signs of slowing down anytime soon. The restaurant is easily identified by the beautiful outdoor space and its inviting decor. Located in the heart of Bernardsville, this popular spot is known for its trendy and welcoming atmosphere and eclectic seasonal menu. Over the years, they have become a neighborhood gathering spot for generations of residents.
“I’m now serving the children and grandchildren of my original customers,” says Afrim Berisha, who co-owns the restaurant with Vinny Astudillo and Ross Rivas. With recent new additions, including a European-inspired glass atrium, Bistro Seven Three has also become a happening place for guests from across the state. CONTINUED >

In honor of Bistro Seven Three’s milestone 20th anniversary, Berisha gives us a taste of the restaurant business that has kept him captivated all these years.
KEEPING A RESTAURANT OPEN FOR 20 YEARS IS QUITE AN ACCOMPLISHMENT. WHAT ARE YOU DOING TO CELEBRATE THE ANNIVERSARY? We don’t have specific plans because we celebrate every year by reinventing ourselves. Five years ago, we added a patio. Last year, we put in a glass atrium with a retracting roof and ceiling that we imported from France. Now, we’re changing our menu again because if I’m getting bored with it, so are my customers. I’m also opening another restaurant—my sixth. Toca Vez, the former Vine restaurant in Basking Ridge, is a Mexican-California concept.
WHAT’S THE SECRET TO YOUR SUCCESS? It comes easy to me because I really love what I do. I think that’s the secret. I look at every customer as a guest and as a friend, not as another number. I personally greet everyone who walks through our doors because forming and fostering those relationships is crucial for me.
WHAT FUELS YOUR PASSION? It comes from my roots, my Albanian culture. I’m a first-generation American. We are very hospitable people. I grew up in the Bronx and was born into the business. I learned everything I know from my uncle Benito [the owner of Da Benito in Union] when I started washing dishes for him at 12. I also attribute a lot of my success to my brother, Tony. He helped shape who I am as a businessman.
WHAT ADVICE WOULD YOU GIVE TO SOMEONE WHO’S THINKING OF OPENING A RESTAURANT? Forget about it. Don’t do it. I’m just kidding. Seriously, you have to be dedicated and devoted and willing to work six days a week. It truly is all about consistency.
WHAT DO YOU HOPE YOUR GUESTS EXPERIENCE WHEN DINING AT ONE OF YOUR RESTAURANTS? I want to deliver an overall memorable experience. From my guests’ first interaction to their last sip of espresso, I want them to enjoy themselves in a relaxed and upbeat atmosphere. Orecchiette Pasta with Italian Sausage, Roasted Butternut Squash & Kale • 2 tbsp olive oil • 8 oz crumbled Italian sweet sausage • 1 large butternut squash, cut into small cubes • 1/4 tsp nutmeg • 1 shallot, chopped • 2 large cloves of garlic, minced • 1 c chicken broth
• 1/2 lb orecchiette • 1 bunch kale • 1/2 c white wine • 1/2 c heavy cream • 1 tbsp Calabrian chiles, minced • 1 tbsp chopped sage • Parmesan cheese, to serve • Salt and pepper, for seasoning
Heat 2 tablespoons olive oil in a medium saucepan over medium heat. Place crumbled sausage in hot oil for two minutes. Add nutmeg and finely diced butternut squash for three minutes. Add in chopped shallots and garlic until lightly browned. Add 1/2 cup of the chicken broth and cook until broth is almost completely absorbed. Heat a pot of water over high heat until boiling. Salt water generously. Cook orecchiette until al dente. Reserve ¼ cup pasta water and drain. Remove the middle stems from the kale and roughly chop the leaves. Add kale to sausage and butternut squash and stir until kale has softened. Add white wine and cook for 2 minutes. Add remaining chicken broth and reduce about 7 minutes. Turn heat to low and add the heavy cream. When the pasta is al dente, add it to the pan with the sausage and butternut squash. Add 1/4 cup of pasta water. Add Calabrian chiles to pasta and toss. Sprinkle with sage and Parmesan cheese.

The standard variety of items are cheeses with different textures, cured meats, fruit and crackers. “Beyond that, you can decide if you want to lean more toward the savory or the sweet,” she says. “You can incorporate a variety of chocolate, which is a great combination with cheese, or go the route of olives or spreads as an accompaniment. There is really no right or wrong. It’s just placing the food on the board until it is aesthetically pleasing.”
Step 1 Select three kinds of cheese of varying textures: soft (like brie or mozzarella), semi-hard (Manchego or Gouda) and hard (aged cheddar or Parmesan). Quarter the soft cheese until you have eight or 16 slices to create pinwheels on the board. Slice the semi-hard cheese into triangles. Crumble or slice the hard cheese into cubes. Step 2 Cut a log of hard salami into circles and use the edges of the board or of the cheese to create a design with the hard salami. Place the circles on top of each other in a line to make a pattern. Create “ribbons” with the thin salami: fold 10 to 12 circular pieces in half and then in half again. Position them against the cheeses and face them upward with the closed portion facing down toward the board. Step 3 Fill in the gaps with seasonal fruit like berries in the summer, figs during the holidays or candied cranberries in the winter. Grapes are standard. Put all the grapes in one place and the berries together. Step 4 Add garnishes like chocolate, olives, nuts and fresh herbs, like rosemary, or fresh flowers. When adding food, Raho recommends positioning some items, like the cheese triangles, off the side to give the board some texture. “This is a great, easy recipe if you want to impress people at a dinner party. You can change up the ingredients with whatever vegetables are in season, and scallops are so effortless to cook,” says Michael England, executive chef at 22 West Tap & Grill in Bridgewater. “The dish always looks perfect. Slice the red onion and bell pepper into strips and cook on medium heat for about 4 minutes. Mince garlic and add it to the peppers and onions. After another 2 to 3 minutes, remove from the heat and transfer to the mixing bowl with the squash, potato and bacon. Chop parsley and thinly slice scallions, adding them to the hash along with the drained and rinsed blackeyed peas, turning it into an herbaceous warm salad.
INGREDIENTS
Searing the Scallops: Season scallops with salt and pepper. Set a large sauté pan on high heat for 2 to 3 minutes to allow the pan to expand and seal small scratches that would make the scallops stick. Add 4 to 5 tbsp of oil to the pan. Add scallops and allow them to sit until they turn golden brown on the edges. After 3 to 4 minutes, flip scallops and add 3 tbsp butter. Reduce heat to low for 2 minutes. Top scallops on the warm hash.
• 20 pieces U-10 scallops (U-10 means under 10 in a pound) • 4 Yukon Gold potatoes • ½ lb bacon • 1 butternut squash • 1 small red onion • 1 red bell pepper • 4 garlic cloves • 1 bunch parsley • 4 scallions • 2 8 oz cans of black-eyed peas, drained and rinsed • 3 tbs butter • 12 tbsp oil (approximate) • Salt and pepper
METHOD Remove the small abductor muscle on the sides of the scallops, if not already removed, and clean the scallops. Pat dry and set aside. For the Hash: Set oven to 400° F. Cut potatoes into small cubes, about ½ inch thick. Put in a pot and cover with cold water. Boil potatoes until a fork goes in and comes out smooth. Drain potatoes and let cool slightly. Cut bacon into thin strips and slowly render in a sauté pan until crispy. Drain the bacon and set aside in a large mixing bowl. Once potatoes are slightly cooled, sauté them in about 4 tbsp of oil to get crispy, roughly 5 minutes, stirring occasionally. After the potatoes turn a golden brown color, add them to the mixing bowl with the bacon. Peel and cube the butternut squash, toss in approximately 3 tbsp of oil and lightly season with salt and pepper. Put the squash on a sheet pan and roast in the oven at 400° F for about 20 minutes until the squash is fork-tender. Add squash to the bacon and potatoes.

Celebrating Cynthia Wynant, Who Has Been Helping Seniors Make Memories with New Friends for Almost 40 Years ARTICLE BY NANCY A. RUHLING PHOTOGRAPHY BY SAMANTHA ANDERSON PHOTOGRAPHY
Nearly 40 years ago, Cynthia Wynant came up with what was at the time a novel idea. She didn’t realize that it would dramatically change the lives of hundreds of seniors in the Somerset Hills. Wynant, a geriatric nurse who had recently resigned from Morristown Hospital, was having lunch with a friend who was mourning the death of her mother, who had been in her family’s care for 13 years. “She finally had to put her in a nursing home,” Wynant says, “and she felt guilty because she had died two days later.” Wynant, who had lived in Europe when her husband, Ted, was a senior executive at ExxonMobile, told her friend about the adultcare day centers that were common abroad. “I suggested starting one, and she looked at me across the table and said, ‘Let’s do it,’” Wynant says. In 1985, the Somerset Hills Adult Day Center opened its doors at the Somerset Hills Baptist Church. Five days a week, the center, which since 2019 has been run by Atlantic Health, provides social activities, food and routine services such as hairdressing and foot care for seniors in the community. “We offer social care, not medical care,” says Wynant, adding that the center is meant to give families a respite. “The fees are on a sliding scale and depend on the number of days the person comes.” Since the beginning, Wynant has supported the center and has dedicated her life to it and other community services. “I’m 89, but I draw lines through the numbers and tell people I’m 33,” she says. “I don’t act my age, but I do look my age.” In addition to serving on the advisory board of Atlantic Health, Wynant is a Stephen Minister at Basking Ridge Presbyterian Church. She also volunteers at the Far Hills Rummage Sale, where she works in the popular boutique tent. She still lives in the same Basking Ridge house she and Ted—who has been “with the angels” for eight years—bought in 1960 and raised their son and daughter, who now have four grown children. She tends its gardens as well as the ones at the Somerset Hills Adult Day Center. She drives around town to her various commitments in a beige Audi, which she says thankfully doesn’t have fancy gear like GPS. “Most people get ailments when they are 70, but I don’t have any,” she says. “So I don’t need to go to the Adult Day Center—at least not yet. But I do have a chair picked out, and I’ve told them that when they spray it gold, I’ll go.” CONTINUED >

Given Wynant’s energy and enthusiasm, it doesn’t look like anyone will be picking up a can of spray paint any time soon. Wynant has spent so much time doing things for others that she was “shocked and embarrassed” when she found out, via an email invitation that went to her and the general public simultaneously, that she is the honoree at A Taste of the Hills, the annual fundraiser she established 30 years ago to benefit the Adult Day Center. The event, held on November 6 at the Spring Brook Country Club in Morristown, will feature culinary tastings from some two dozen restaurants, fine wines and a silent auction with items donated by community members. “I should not be standing there all alone because I didn’t do it alone,” she says. “I had an idea—and training—that’s all I had. Add tomato herb compote and pasta. Stir in butter and salt to taste. Serve on a warm plate. Add fresh ground pepper and top with parsley and a spoon or two of Parmesan.

The Somerset Hills in northern Somerset County is a quiet, majestic area that includes Bedminster, Bernards Township, Bernardsville, Far Hills, Peapack and Gladstone. Finding history is quite easy as the area played a prominent role during the Revolutionary War, serving as what historians call the “cockpit of the American Revolution.” Today, however, we’re on a new history trail in the Somerset Hills. While Basking Ridge and Bedminster formed their communities quietly as immigrants migrated from Scotland and Amsterdam in the 1600s, it remained a quiet place until the railroad brought the masses to the area in the 1870s. Bernardsville quickly became known as the place for the rich and famous, rivaling Lenox, Massachusetts, and Newport, Rhode Island. Known prominently in the area with the Basking Ridge church that bears his name, Bishop Edmund Janes’ story actually began in Bernardsville in the 1850s when the mountain area was known as Mine Mount. In addition to preaching, Janes was also a mining prospector in search of iron ore. Janes decided to build his home and began prospecting along the Mine Brook just off today’s Mendham Road. Janes is often referred to as the “Father of the Bernardsville Mountain” as he was one of the first to colonize what became known as the “Mountain Colony” during the gilded age of the late 1800s. As Bishop Janes’ religious obligations took priority in nearby Basking Ridge, he sold his home on the mountain in 1870 to Francis Oliver, the founder of Brooks Brothers clothiers. Francis Oliver turned his home into an Airbnblike summer boarding house where wealthy New Yorkers would come via the 5 o’clock train—later coined the “Millionaire’s Express”—to enjoy the cooler summer
atmosphere and country living. Some of his early guests included banker George Ingraham Seney and renowned architect George Post, who would later build grand estates nearby. Seney liked the area so much that he made Francis Oliver a generous offer and purchased Oliver’s guest house. As president of the Metropolitan Bank in New York City, Seney financed railroads. Bernardsville grew quickly starting in 1870 when the Bernardsville train station opened. A little-known fact is the wealthy often purchased large tracts of land around the last train destination. This is why Bernardsville started growing in 1870 and the Peapack/ Gladstone area expanded in the 1890s. Seney redesigned the former Janes/Oliver estate, constructing the glorious Somerset Inn—one of the grandest hotels on the eastern seaboard. At the turn of the century, the Inn served as the unofficial tourist bureau for New Jersey as the wealthy came to Bernardsville—the perfect destination without having to travel to Newport, Rhode Island, or the Hamptons. With plenty of space for equestrian activities and golf, the Bernardsville mountain and the Somerset Inn quickly became a favorite as a natural fit for activities with ties to those from nearby Llewelyn Park (Oranges). The Essex Hunt Club had recently been purchased by Charles Pfizer, who relocated the club adjacent to the Inn. Seney was also instrumental in the creation of the nearby Somerset Hills Country Club and the equestrian Somerset Hills Bridal Path Association. Then, sadly on May 6, 1908, at about 1:30 a.m., the Somerset Inn burnt to the ground. It was never rebuilt. The only remnants today are the stone pillars along Mendham Road. Now you know a little more about the grand history of the Somerset Hills. CONTINUED >

Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
