As December arrives and the normally bright Sandusky Bay skies turn to frosty, our community seems to move a little slower, breathe a little deeper, and come together in the ways that make this season so special. The holidays are a time for reflection, giving and gratitude — a chance to pause and appreciate the people and places that fill our days with meaning.

At home, our family is embracing all the tradi tions that make this time of year magical including evenings spent baking cookies to weekend drives to admire the holiday lights in our neighborhoods. There’s something about the familiar rhythm of these rituals that reminds us how deeply rooted we are in this community. Whether it’s stopping by a local shop for a last-minute gift, supporting a holiday fundraiser, or simply sharing laughter around the dinner table, the season seems to highlight what truly matters: connection.

Across the Sandusky Bay area, that same spirit of giving shines bright. You’ll find it in local businesses sponsoring toy drives, in volunteers serving warm meals or ringing bells, and in neighbors helping neighbors through small acts of kindness. Second-generation family businesses are our favorite becasue at the root of each story is this: they are founded, grounded and passed down with pride. What began in 1988 with Don Rhine has grown into a trusted name across North Central Ohio — and today, under the leadership of his son Tom Rhine, the legacy continues.

Don started Chim-Cheroo after leaving factory work behind, determined to build something more meaningful for his family. He earned certifications, learned the trade, and built a company rooted in service, integrity and care.  Tom, one of three sons, grew up watching his father — and eventually stepped into his role, refining the business, expanding its services to include chimney rebuilds and restoration, and bringing fresh energy to the family tradition.

At the heart of Chim-Cheroo is the idea that home matters. The hearth, the chimney, the fireplace — they anchor family life, comfort, safety. This business is more than service: it is about keeping families warm, protected and confident in moving through seasons. Pear & Brie Cheese Salad Skewers

INGREDIENTS

• 2 pears (or substitute green apple)

• 8 ounces of brie cheese

• 2 cups baby arugula

• 1/4 cup raw walnuts, chopped

• Balsamic glaze

INSTRUCTIONS

• Cut pear and brie into 1/2-inch cubes. Leaving the rind makes skewers less sticky to handle!

• Take (4-inch) skewer, add pear, arugula, and cheese.

• Gently press chopped walnuts onto brie cheese to stick.

• Drizzle balsamic glaze overtop.

Cranberry & Pecan Cheese Crostini

INGREDIENTS

• 1 (8 oz.) container light cream cheese spread

• ½ cup chopped cranberries

• 1 Tbsp. grated orange peel

• ½ cup coarsely chopped pecans, toasted

• Rosemary and olive oil crostinis

INSTRUCTIONS

• Top crostinis with a dollop of cream cheese.

• Add cranberries and pecans.

• Garnish with grated orange peel.

FILL YOUR HOME WITH THE COZY SCENTS OF TART CRANBERRIES, BRIGHT CITRUS, AND WARMING SPICES

Creating stovetop potpourri is a delightful way to indulge in the scents of the festive season. This Cranberry Orange Potpourri combines sparkling notes of fresh citrus and cranberries with nostalgic spices and woodsy herbs to create a welcoming atmosphere.

INGREDIENTS:

• 1 cup fresh cranberries

• 1 orange, sliced

• 2 cinnamon sticks

• 1 teaspoon whole cloves

• 3 star anise

• 2 sprigs fresh rosemary

• 2-3 cups water (plus more as needed)

INSTRUCTIONS:

Combine cranberries, sliced orange, cinnamon sticks, cloves, star anise, and rosemary in a pot. Add 2-3 cups of water, ensuring the ingredients are submerged. Simmer on low heat, allowing the aromas to release. Check the water level, adding more as needed to prevent drying out. Simmer for several hours to fill your home with the scents of the season.

HOLIDAY COCKTAILS & COZY CREATIONS

SPICED CINNAMON RUM FLIP

A luscious holiday cocktail with warming spices, rich texture, and a beautiful cinnamon garnish.

INGREDIENTS:

• 2 oz dark or spiced rum

• 3/4 oz cinnamon simple syrup

• 1 oz heavy cream

• 1 whole egg

• Dash of ground nutmeg

• Dash of vanilla extract

Garnish: cinnamon stick and a light dusting of nutmeg or cinnamon

Make Cinnamon Simple Syrup:

Combine 1/2 cup sugar, 1/2 cup water, and 2 cinnamon sticks in a saucepan. Simmer for 10 mins, let cool, and strain. Store in the fridge.

Add rum, cinnamon syrup, cream, egg, vanilla, and a pinch of nutmeg to a shaker. Shake vigorously for 15–20 seconds to emulsify the egg. Strain into a coupe or stemmed glass like the one in your photo. Top with a cinnamon stick across the rim and a dusting of nutmeg or cinnamon. Optional: Add 1/2 oz chilled espresso for a coffee kick.

INSTRUCTIONS:

INGREDIENTS:

• 2 oz gin

• 1 oz cranberry juice

• 3/4 oz lemon juice

• 1/2 oz simple syrup

• 1 egg white

Optional: splash of sparkling water or club soda

Garnish: fresh rosemary or thyme sprig

INSTRUCTIONS:

In a cocktail shaker, combine gin, cranberry juice, lemon juice, simple syrup, and egg white. Shake vigorously for about 20 seconds to create the frothy top. Double strain into a chilled coupe glass to get that smooth, foamy top. Add a small splash of sparkling water if you’d like a bit of fizz. Gently place a sprig of rosemary or thyme on top of the foam.

BOURBON VANILLA

BEAN HOT CHOCOLATE

An ultra-creamy, chocolatey holiday drink with a hit of warm bourbon and a vanilla bean twist.

• 2 cups whole milk

• 1/2 cup heavy cream

INGREDIENTS:

• 1/2 cup high-quality dark chocolate (chopped or chips)

• 2 tbsp unsweetened cocoa powder

• 2 tbsp sugar or maple syrup

• 1/2 tsp pure vanilla extract

• Pinch of sea salt

• 2 oz bourbon

Topping: 4 large marshmallows

Optional garnish: grated dark chocolate, whipped cream, cinnamon

INSTRUCTIONS:

In a small saucepan over medium heat, combine milk, cream, cocoa powder, sugar, vanilla, and salt. Whisk until smooth and heated through. Add chopped dark chocolate and stir constantly until melted and silky. Lower heat if needed to avoid scorching. Remove from heat, then stir in bourbon. Taste and adjust sweetness or strength to your liking. Top with marshmallows. Add whipped cream, a sprinkle of cinnamon or nutmeg, and shaved chocolate.

Optional: Add a pinch of cinnamon and cayenne for spicy depth.

Kid-friendly version: Omit bourbon and add peppermint extract or caramel syrup instead.

HOLIDAY SPICED GINGERBREAD LATTE

A warm, frothy, and festively spiced drink perfect for winter nights.

INGREDIENTS:

For the latte:

• 1 shot of espresso (or 1/2 cup strong brewed coffee)

• 3/4 cup milk

• 2 tbsp gingerbread syrup

• Whipped cream

For the gingerbread syrup:

• 1/2 cup water

• 1/2 cup brown sugar

• 1 tbsp molasses

• 1/2 tsp ground ginger

• 1/2 tsp ground cinnamon

• 1/4 tsp nutmeg

• 1/8 tsp ground cloves

• 1/2 tsp vanilla extract

Optional toppings:

• Ground cinnamon or nutmeg for dusting

• Marshmallow

• Crushed gingerbread cookie around the rim or on top

INSTRUCTIONS:

Make the gingerbread syrup:

In a small saucepan, combine water, brown sugar, molasses, and spices. Bring to a gentle boil, then reduce heat and simmer for 2–3 minutes until slightly thickened. Remove from heat, stir in vanilla extract, and let cool. Store in the fridge for up to 2 weeks. Prepare the drink:

Brew your espresso or strong coffee. Heat and froth your milk. In your glass, add 2 tablespoons of the gingerbread syrup. Pour in the espresso, then the steamed milk, stirring gently to combine. Spoon frothed milk or whipped cream on top. Dust with cinnamon or nutmeg.

Optional: Rim the glass with crushed gingerbread cookie crumbs for extra flair.

We took a leap of faith and bought what would become a masterpiece of problem solving.

We own a windmill.” It still sounds unbelievable.

We are Paul and Ashley Brandich, and four years ago, we took a leap of faith and bought what would become a masterpiece of problem-solving, patience, and passion. We remember the first time we stepped inside— the air thick with dust and history—and a hundred thoughts of “wow, this is going to take a lot of work for whoever buys it” came flooding through our minds. Little did we know, that “whoever” would be us. It was during COVID when life slowed down and priorities shifted, that we decided we needed a change of pace for our family. In the spring of 2021, we had just moved to Amherst from Lakewood, Ohio, in search of more land, more space, and a more sustainable lifestyle. Having grown up in Huron, Amherst felt like the perfect fit—closer to family, living on a wooded property, a place where our children could adventure and live outside the box.

When Paul heard about the windmill in Lorain, just down the street from our new home, curiosity quickly turned into fascination. The structure was unlike anything we had ever seen as it was a towering relic with character, history, and endless potential.

The original gristmill was built in 1950 by Joseph Ule, a true Renaissance man known for his ingenuity and craftsmanship. Ule’s design was both functional and beautiful, standing 67 feet tall and once surrounded by a 47-acre homestead complete with an orchard, vineyard, compost digester, and goat barn. When the property hit the market that summer, the wheels of change went into motion. By fall, we had

made the decision to purchase it. Paul left his job to dedicate himself full-time to bringing the windmill back to life. It was a bold move, one that combined our love for restoration with our shared belief that meaningful work comes from the heart, but we did it.

Over the past four years, this project has tested every skill we’ve learned—and taught us countless new ones. We’ve tackled curved walls, sloped masonry, and steep heights, often relying on creativity, determination, and a good sense of humor to get through the toughest days. Each step has been a balance of practicality and vision, finding solutions that honor the structure’s history while adapting it for modern comfort.

Today, as we reach the finish line, we are filled with gratitude, exhaustion and excitement. The windmill stands tall once again - strong, beautiful, and ready for new stories to unfold within its walls. We are thrilled to announce that we’ll be opening for bookings this winter, marking not only the start of a new chapter for our family but also the 75th anniversary of the windmill itself.

Looking ahead, our dream doesn’t end here. We plan to expand the property into a working farm as a tribute to the Ule family’s legacy of sustainability and innovation. To us, this project is more than a renovation; it’s a celebration of history, hard work, and hope for the future.

The time has come, we can finally say with pride and a huge smile on our faces: “Welcome to Windmill in the Willows.”
