Hello to Exploration We live in an efficiency and productivity-obsessed age. And I admit - I fall into the trap sometimes too of believing the only things worth doing are those I can make an exact calculation of the time, effort, and investment. But the truth is - that is really a sad and unfulfilling way to go through life. We must leave some room for exploring, trying new places and things, being a beginner, and even for getting lost. It is those times that are unstructured and open-ended where the space exists for connections to be made, friendships to be fostered and trust to be built. I love reading about where people choose to travel and the adventures they share with those they love around them. What a gift we can give ourselves and others by exploring more. I've noticed that "adventures" and “exploration” doesn't even have to be something big and crazy. It can be playing games on the patio, walking a new trail, or going out to find a fun bakery like Christy's Kitchen we share on page 58. Our hope is that this issue encourages you to make room for exploration. To prioritize time away from the regular schedule of life. To lose yourself possibly in a book that can take you far away. We feel proud to create a resource that is valued in our community and strive every month to deliver the value you expect. Thanks for letting us be a part of your home. Go ahead and book that trip you’ve been thinking about or flipping through our pages reading about, to make time for the things that matter most to you, but often come last on the calendar. If April showers bring May flowers, make time to play in the rain! Magda and Corey Cooper are constantly working. And playing. For the founders of superstar standup paddle board company BOTE, research and development for their boards starts in their hometown of Destin where they live with their three kids. “We are the consumer and our kids product test and inspire new ideas. We can do R&D in our backyard, try out new ideas with the kids and watch them interact with products and do our photoshoots at favorite parks nearby,” says Magda, a three-time collegiate National Champion swimmer at Auburn University and former financial advisor before partnering (in marriage and business) with Corey.

Corey and Magda moved to Florida after graduating from Auburn University and soon saw an opportunity to improve the design of the paddle boards they were using on weekends. The Coopers chose to stay put in Destin, a small town where the outdoor lifestyle reigns, and have grown BOTE’s fleet to more than a dozen boards for fishing, paddling and family leisure. “We love the small town of Destin, the ease of access and all the nature surrounding us. For the brand, there are challenges - which is true for any business home - but we find that all our employees are into the same lifestyle, which benefits BOTE and makes our jobs more fun,” says Magda.

For many of us, Destin is a favorite vacation spot. For the crew at BOTE, the area feeds their passion. “We moved here because we like the water. We spend a majority of our time fishing and hanging out with friends. This is the DNA that is in the brand,” says Magda. They have found unending Southern hospitality and support from a welcoming community that cheers their business on, fueling growth and creativity. “Destin is not your typical ‘Florida,’” says Corey. “It’s a smaller town, more connected to Alabama than Miami and with a slower pace. boats, kayaking, water-skiing, surfing -- water is the epicenter of the Destin lifestyle, which fits us perfectly.” While the original shape of their first board is still around, the brand has expanded. Exploded, really. They have always taken design seriously, with an end goal of function and beautiful design. “I wanted a board that was stable enough to fish from, yet paddled efficiently,” says Corey. “A board that could hold a cooler for my beer. A board that was simple, fresh and fit our lifestyle. A board that virtually anybody at any age could paddle with ease. It needed the capabilities of a boat with the simplicity of a board. And, it needed to look good...really good.”

Cenotes are natural sinkholes that expose cool, refreshing groundwater that is both invigorating and spiritually refreshing at the same time. There are over 6000 cenotes on the Yucatán, each one is unique and otherworldly. Floating or frolicking in the cool waters inside the

earth is the ultimate spa experience. There are zip lines or diving platforms at most cenotes and they are well worth experiencing. While it is nice to explore the “Hotel Zone”, I did not feel like I had to leave the hotel to experience fine international dining at its best! Sacbé Beach Shack, located in the adjoining Marriott property, was beyond belief. Situated directly on the sandy beaches beneath the hotel, the “beach shack” is a whimsically designed bar and dining room offering a perfect oceanside culinary experience. The freshest local ingredients were artfully combined to create a scrumptious offering that highlights regional Mexican cuisines. The mezcal lab experience with famed Master Mezcalier, Chef Benjamín Nava Vargas, was an unexpected treat and opened a door to a delicious understanding and appreciation of small-batch mezcals. Other JW Marriott Resort and Spa culinary treasures include Hana Polynesian Grill’s themed dining room. Perfectly crafty cocktails paired wonderfully with the authentic Polynesian Islands menu. The evening’s festivities were highlighted by a completely themed costumed troupe of singers and dancers performing time-honored Polynesian fire dances. While visiting, be sure to explore Kasai Izakaya, Club 91, and Bravo, a very fresh take on modern Spanish cuisine. And, when it feels like it’s time to leave the hotel again, check out Chambao Cancún. Just think of it as an interactive curated dinner theatre experience with pop-up music, dance, fashion, and acrobatic activations staged throughout the evening. There is really nothing like spending time in New Orleans—a cultural hub renowned for delicious food, world-class music and unmatched nightlife. Since opening in 2021, the Four Seasons Hotel and Residences New Orleans have provided visitors with a luxurious experience set on the banks of the Mississippi River. Nestled in the Central Business District, the Four Seasons New Orleans towers over the riverfront in the former World Trade Center building, which was once the city’s tallest building. Today, rising up 34 stories, the historic landmark tower features a rooftop observation deck with panoramic views, one of the city’s largest hotel pools, and dining options from James Beard-awarded chefs. During our recent stay, we were delighted by the hotel’s urban resort feel—it was a place to relax and unwind but we still felt like we were in the middle of all the action. Upon arrival, we were quickly checked in and shown to our executive suite on the 16th floor with a city view. The 700-square-foot room featured a living area, a large separate bedroom, a walk-in closet, and

a huge marble bathroom. Before we knew it our floor-to-ceiling windows allowed the buzzing streets of New Orleans to call us out for a pre-dinner stroll. New Orleans, as Bob Dylan wrote, is a “great place to live vicariously.” Known as the birthplace of American jazz, New Orleans is a great destination for music fans of any genre. While tourists are frequently lured by the art and architecture of the well-known French Quarter or in trendy Marigny, where revelers who want to hear jazz late into the night make themselves at home on Frenchman Street. We liked our address on Canal Street, where we felt close enough to our favorite cafes and shops, while happy to explore the redeveloping riverfront area. Our first stop was a late dinner at Miss River, featuring chef Alon Shaya’s inspired menu of beloved local-inspired dishes. The bold flavors were enhanced by the restaurant’s sleek design and lively atmosphere. We were tired, but we couldn’t pass up a chance to follow our meal with a nightcap at the Chandelier Bar with its enormous namesake chandelier made up of 15,000 crystals. The drink menu celebrates the classic New Orleans cocktails, but do yourself a favor and order their signature martini, which is enhanced with homemade bitters and your choice of garnish, and was named one of Food and Wine magazine’s “favorite martinis of 2022.” The options continue at the Four Seasons. Bulloch Hall is the only nationally recognized historic house museum in Roswell since it was the childhood home of Mittie Bulloch, mother of President Theodore Roosevelt. When the baby alligators hatched at the edge of the May River at Montage Palmetto Bluff recently, they were born into the lap of luxury. The Montage staff naturalists were alerted and immediately worked to secure the hatchlings, who will stay with their mother for two years. They will snack on shrimp, small fish, and bugs like flies and snails, under the protective eye of their parents, the four-legged ones and the Montage staffers. Caution tape roped the area and nearby trail, so humans and reptiles alike would remain safe. This incredible respect for the environment and the 20,000 acres of natural beauty

I’M NOT HAVING A GLASS OF WINE. I’M HAVING SIX. IT’S CALLED A “TASTING” AND IT’S CLASSY. I often get asked by friends and customers to help plan their trips to Napa Valley. This is something I love to do. Here are a few tips and tricks I am pleased to pass along. First, plan ahead! Nearly all wineries require advance reservations. Give yourself plenty of time at each winery and don’t try to pack too many wineries into a day…three is ideal. Plan each day in a relatively small radius so you don’t spend a lot of time in the car. For instance, focus one day in the southern regions of Carneros, Coombsville and Oak Knoll. Spend another day in the mid-valley regions of Stags Leap, Oakville, and Rutherford. Then plan a third day visiting the northern regions of St. Helena and Calistoga. Most important: aways get a driver or plan to Uber. Finally, if you have the time, take a day away from the wineries. Enjoy a scenic hike, visit the hot springs in Calistoga, get a massage at one of the world-class hotels or just wander around downtown Napa, St. Helena or Yountville. The management team from Deep Roots recently took a trip to Napa Valley. It was so much fun showing them my old stomping grounds while experiencing world-class wines and cuisine! Any time of year is ideal to visit Napa. Spring is full of hope with bud break symbolizing a new vintage. During summer, the vineyards are green and bursting with fruit. Fall is a busy time with harvest underway and an abundance of harvest parties. The winter months are more relaxing with CONTINUED >

fewer visitors in the Valley. I particularly love this season when mustard is growing between the vines. Harvest Season in Russian River Valley is my favorite time of year! Located in northern Sonoma County, this area is well known for beautiful vineyards, majestic redwoods and the river that flows through it. This cool climate region experiences morning fog rolling in from the Pacific Ocean and warm, sunny afternoons during summer and early fall. Russian River Valley is famous for Chardonnay, Pinot Noir, Zinfandel and sparkling wines. If you visit, make sure to take a break from wine tasting to hike, float down the river and visit the famous Russian River Brewing to have a cold Pliny. Be sure to visit the beautiful terrace tasting room at Booker Vineyards in Paso Robles. Paso is the fastest-growing wine region in California with over 300 wineries. Located just a few miles inland from the Central Coast, with miles of lush rolling hills, it has a super laid-back and relaxing vibe. My favorite time to visit Paso is spring and early fall as the summers can get really hot! Paso is famous for Syrah and Rhône-style wines. I particularly enjoy the white Rhône blends being produced in this region. For beer lovers, there are many great craft breweries. During a recent trip to Santa Barbara, we took a drive up the coast to Santa Ynez Valley. One of our stops was Stolpman Vineyards in Ballard Canyon. We took a ride through the vineyards with Peter Stolpman as he told the story of his family business. This region experiences a wide diurnal swing (temperature change). Foggy mornings can begin at 40 degrees and get as high as 90+ during the afternoon. This is ideal growing conditions for Syrah which is the noble grape in this region, but producers are also making other amazing Rhône and Italian varietals here. When we talk about healthy food, many times we think it is about following a diet to lose weight, and it usually consists of a plate full of lettuce and a tasteless dressing. Or when we talk about gluten and dairyfree, we think of flavorless, cardboard-like food. Nothing is further from reality at Cristy’s Kitchen. In their case, food has a very deep meaning (and flavor), and it saved their family in many ways. Cristy and her husband Sebastian left Peru in October of 2019 and arrived in Roswell after their company in Lima went bankrupt. They lost everything they had. Full of hopes and the American dream, they opened the doors of their café-bakery, Cristy’s Kitchen, in December of the same year. March of 2020 brought new challenges with the pandemic and 16-hour workdays, but neither exhaustion nor hopelessness were going to make them give up on their dream of giving their daughters a better future.

Back in Peru, Cristy and Sebastian had gone through many crises. Perhaps the hardest was when they received a cancer diagnosis for their eldest daughter. They were told it was a malignant tumor behind the eye and surgery was necessary. Then their first miracle happened. The surgeon did not understand how something that was clearly a tumor turned out to be an abscess. The diagnosis then turned to a rare autoimmune disease with little information about it. While new symptoms appeared, their daughter was getting worse. Cristy didn’t study to become a doctor or a nutritionist or even a chef, but something inside her told her that food was the solution. It was also the only tool over which she had control. She researched everything she could about food and its effect on our health. Three months after implementing changes to their daughter’s diet and adding in the right supplements, her symptoms were in remission. From an early age, Cristy and Sebastian’s daughters developed different health conditions starting with respiratory allergies and eczema. Even Sebastian had his bout with health issues, suffering a stress-induced heart attack, which taught Cristy not only how powerful the mind is over our body, but how connected stress is with our health. The family quickly realized

that life must be enjoyed, and they should live in gratitude for every moment of their journey. Little by little, Cristy discovered the relationship that existed between their health and food, and most importantly, the quality of food. Food became her mission. Not only to help her family improve their health, but to also help families who are going through similar situations, looking for answers or trying to eat healthier. One of Cristy’s Kitchens’ beloved customers, Brandon Stanton, creator of Humans of New York, fell in love with their food and asked Cristy to tell their story. Then their second miracle happened. Thanks to Brandon and the generosity of the community, Cristy’s Kitchen was able to stay afloat and continue to live the American dream. The story in Humans of New York also opened the door for Cristy to write a cookbook. It includes not only her recipes, but also her history and the lessons she learned in the kitchen and in life. It allowed her to reach many homes and kitchens.

Some recipes in the book include ingredients that are possibly new to readers, but her Peruvian heritage is visibly represented. These ingredients are very easy to access in America and are full of health benefits and incredible flavor. Everything at Cristy’s Kitchen is gluten and dairy-free, because these are considered some of the most inflammatory foods. She

also understands that everyone is different, and everybody reacts differently to ingredients, so she offers many options such as vegan, vegetarian, paleo and AIP (Autoimmune Protocol). Makes 6 large muffins ingredients • ½ cup plus 1 tablespoon (60 g) super-fine blanched almond flour (such as Bob’s Red Mill brand) • 2 tablespoons (20 g) coconut flour • 5 tablespoons (30 g) unsweetened shredded coconut (such as Let’s Do Organic brand) • 1 teaspoon Homemade Baking Powder • ½ teaspoon baking soda • ½ teaspoon ground cinnamon • 2 large eggs, at room temperature • ½ cup (80 g) coconut sugar • ¾ cup mashed ripe bananas • ¾ cup (125 g) peeled, cored, and grated red apple (such as Gala apples) • ¼ cup (55 g) extra virgin olive oil • ¼ cup (60 g) organic extra virgin coconut oil, melted • 1 teaspoon pure vanilla extract • ½ cup (75 g) paleo 70% chocolate chips or gems (such as HU brand) or carob chips • ¼ cup plus 2 tablespoons (50 g) coarsely chopped raw pecan halves

1. Preheat the oven to 350F. Line a large muffin tin with 6 baking cup liners. 2. In a medium bowl, whisk the almond flour, coconut flour, dried coconut, baking powder, baking soda, and cinnamon. 3. In a large bowl, whisk the eggs lightly. Add the coconut sugar and continue to whisk until combined, making sure not to overmix the ingredients. Add the mashed bananas, apples, olive oil, coconut oil, and vanilla and stir well to combine. 4. Add the dry mixture to the wet mixture and stir until smooth, taking care not to overmix. Fold in the chocolate chips and pecans. 5. Using an ice cream scoop or two spoons, divide the batter evenly among the 6 baking cup wells. Bake until a toothpick inserted in the center comes out clean (except for the melted chocolate), 30 to 35 minutes. 6. Transfer the pan to a cooling rack and let cool for about 15 minutes, then remove the lined muffins and place them on the rack to cool completely. 7. Eat immediately or store in the fridge for up to 5 days. You can freeze them for up to 4 months.
