With the changing seasons also comes a change in what we are craving, and with fall that often means yummy comfort food, colorful and flavorful and of course warmer drinks. In our town, the leaves will begin to change colors further indicating it's that sweet time of year. Festive tailgates and football season is upon us and we share some of our very own Roswell High's power snacks for "Friday Night Lights" on page 46. Celebrating the end of Summer Sippin' with the winners of our Roswell residents' favorites voted on this year. We congratulate you all! We also celebrate some of our local businesses and their anniversaries this year! Gathering up friends and family to head north to see new places and sip your way through some of our Georgia wineries is a fall must. Read more on page 40. We had the pleasure of sitting down with Janet Erdman, and learned about her amazing skills at creating charcuterie boards like the work of art on our cover - they will make your mouth water for sure. We also included a few new recipes using herbs from Roswell Farmers Market and Local Artisans for you to try at home. The aroma of certain spices and foods can bring us right back to our childhood kitchen table, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Once again we bring you inspiring stories of organizations, and people giving and changing lives by creating awareness programs for parents and celebrating our finest in first responders this month. FURKIDS ANIMAL RESCUE & SHELTERS CELEBRATES 20 YEARS

2022 has been a monumental year for Furkids Animal Rescue & Shelters, and not just because it is their 20th anniversary of lifesaving work! Furkids, headquartered nearby, is a 501(c)(3) nonprofit charitable organization that operates the largest cagefree, no-kill shelter in the Southeast for rescued cats and Sadie’s Place, a no-kill shelter for dogs. Furkids was founded in 2002 by its CEO, Samantha Shelton, with a mission to rescue homeless animals, and provide them with the best medical care and nurturing environment while working to find them a forever home. On April 9, 2022, Furkids celebrated its 20th anniversary at its amazing destination shelter and headquarters in Cumming. Thanks to the generosity and love of their supporters, Furkids raised over $200,000 of vital funds that night to continue their life-saving efforts. Furkids also launched two major expansion projects this year: a new Community Cat Program, and a new rescue and adoption facility in Cobb County. The Community Cat Program offers TNR resources, education, a monthly low-cost spay/neuter clinic and more. In addition to Furkids’ new East Cobb rescue center, the organization operates 10 different adoption centers and four thrift stores throughout metro Atlanta that support 30% of their operating budget. Furkids believes that adopting a wet-nosed companion into your home is a priceless joy, and the rescue saw incredible impact through adoptions this summer. Warmer months are the busiest time for shelters because of high volume

intakes resulting from increased litters, and fewer adoptions due to people being on vacation. However, Furkids reached a total of 287 cat adoptions in July, thanks to their participation in BISSELL Pet Foundation’s record-setting “Empty the Shelters” event-–the largest adoption event in the nation. This total was a 10% increase compared to Furkids’ 2021 July cat adoption numbers. On average, Furkids saves over 5,000 cats and dogs each year. Once an animal is rescued and vetted, the cat or dog is available for adoption through Furkids.org. Interested adopters can submit an application for any animal and speak directly to an adoption counselor to find their perfect match. Furkids is more than a rescue, it is a destination shelter. Their cat shelter is nestled in the botanical campus of Furkids’ Headquarters in Cumming with picturesque ponds filled with beautiful koi, a soon-to-open special event center for celebrations (ShilohGardens. org) that will bring revenue back to their mission, several cottages for new animal intakes, and even a tiny house for a shelter nightwatchman. It is a shelter like you’ve never seen before! Furkids’ four pillars include adopting, fostering, donating, and volunteering. Anyone who wishes to get involved can visit their website at Furkids.org. When it comes to a party, Lucky’s Burger and Brew in Roswell knows how to do it right: bring out the best party rock and roll music, add a buffet of burgers and wings, lots of ice cold beer, and feature a dog contest unlike any other, all to support a local rescue charity. This was the setting for Lucky’s 12th annual celebration during the End of Summer Anniversary Bash. In spite of a brief rain delay, a crowd of nearly 250 guests with their kids and pups came out to enjoy an evening of live music by local favorite, 40-HZ. Football games at Roswell High School are a family affair for the Stargels. With two sons on the team, Christy Stargel is a proud booster of the team and loves going to the games. We asked the Stargels, Roswell High School Athletic Director, Ben Sutter and Head Football Coach Chris Prewett about how they stay fueled. Christy says that Friday morning breakfast is a long-lasting tradition at Roswell High School. “The parents sign up for different breakfast items like breakfast casserole, eggs, bacon, sausage, hash browns and more. The entire team meets at the field house before school and gets fed,” she says. “Traditionally parents have gathered at Marlow’s before the game to socialize and get a bite to eat then walk over to the stadium. Our parents don’t tailgate because they get too nervous! They like to get to the stadium early and watch the warm-up.”

We asked the boys about their go-to power snacks. Lawson Stargel is #18 and a senior. “I enjoy eating breakfast casserole and a chicken biscuit for breakfast and a Publix Italian Sub for lunch. After the game, I eat either wings from Taco Mac or the All-Star Special from Waffle House.” Andrew, a sophomore and #63 on the field, tells us, “before games I always eat a big breakfast and a Publix sub for lunch with a banana at halftime.” Smart! Potassium plays an essential role in muscle function, and deficiencies in potassium can lead to abnormal cramping and discomfort. During exercise, your body loses potassium through your sweat, and prolonged periods of physical activity can significantly reduce your potassium levels. Eating a large banana boosts your potassium intake by 487 milligrams or 10 percent of your daily recommended intake, according to the Linus Pauling Institute. Go Andrew! And of course, all athletes know the importance of hydration. Begin drinking 15 to 20 ounces two to three hours prior to activity and seven to 10 ounces of water every 20 to 30 minutes during exercise. Stay hydrated! Roswell High School Athletic Director Ben Sutter is overseeing 23 different programs this year. At games and working out, he is all about the protein bars when he needs to fuel up. He goes for Kind Bars. "And, I don’t like anything really heavy. I’m a Gatorade guy so personally, I have to have one of those (orange is the only way to go)." Coach Prewett's secret weapon is a spoonful of peanut butter. And, of course, what really keeps him going is his beautiful family, cheering him on from the sidelines and every day. Go Hornets!

Hazing Is Not A n Accident Max Gruver’s family launched a foundation to honor his memory and help others.

Rae Ann Gruver knows that bullying is not an accident. Hazing is not an accident. A child dying because he wanted to belong is not an accident. It is an abomination. Gruver’s son Max, a graduate of Roswell’s Blessed Trinity Catholic High School, died in 2017 following a fraternity hazing incident at Louisiana State University. While the grief saturated every part of their lives, Gruver and her husband Steve started the Max Gruver Foundation to ensure other parents don’t have to go through this horrible ordeal. Their non-profit organization works with schools and universities to end the scourge of hazing on campus. The Max Gruver Foundation uses educational seminars and presentations to create awareness and education about the danger of hazing and bullying. The foundation also advocates for anti-hazing laws, including helping to get the Max Gruver Act passed in Louisana. “Max’s death was not an accident because hazing is not an accident,” Rae Ann Gruver told Roswell City Lifestyle magazine recently. “Max’s death was 100% avoidable and preventable because hazing should have never been a part of joining a fraternity or any

organization. Parents need to be aware of the signs that their child may be getting hazed and step in if they feel hazing is going on.” The Gruver family wants everyone to know that hazing needs to stop. They want high schools, college campuses, Greek organizations, and government entities to stand against hazing and save lives. The Max Gruver Foundation and the funds it raises through events like the Fly High Max 5K help to ensure hazing has no place on any campus. The night before they buried Max, the Gruvers found a paper he wrote on blessings. The last paragraph was this: "God works in funny ways. He does bad things sometimes because in the end they are good. Something bad may happen to you, but it may happen because it will make you better. He does bad to ultimately create good.” These four sentences gave the Gruver family the strength and direction to start their foundation. “Our ultimate goal is to make something good out of something that has been so horribly bad for us,” Rae Ann declares. “We hope and pray that by sharing Max’s story we are saving other lives." It is not unusual for routine occurrences to go unnoticed by all of us on a daily basis. Our daily lives are filled with activities from dawn to dusk, with occasional disturbance from our routine. We often don’t notice the police patrolling our neighborhood, the fire stations strategically located within the community, or the 911 operators always ready for the next call. Yet, they are there... and they are always there because of the dedication of a few heroic men and women that proudly serve as first responders within Roswell and the neighboring communities. To honor those who protect and serve Roswell, local businesses have come together to recognize Roswell’s finest and bravest on National First Responders Day, October 28, by providing over 200 boxed lunches to the Roswell’s police, fire and 911 operators. Roswell’s Houck’s Grille is leading this effort to raise awareness and money for these lunches to be delivered on October 28. Jeff Fischer, a retired UPS executive and co-owner of Houck’s Grille, sees this as an opportunity, in a small but meaningful way, to show his appreciation to those that make Roswell safe. "Without their dedication, we would not be the great community we are. Roswell is an amazing place to raise a family and have a business, and these first responders are a big part of it," says Jeff. One of the main sponsors last year and again this year is the owner of local franchise 1-800 Water Damage of North Fulton, Ron Wilder. He and his family are participating as part of the Restoring Kindness Movement, which is focused on bringing peace of mind back, not only to physical places like homes and businesses their company restores, but also to the people they serve by helping them. “Since my company had been already participating in the Restoring Kindness campaign, we jumped in right when Houck’s Grille made their announcement last year and we are eager to do so again,” says Ron.

Other small businesses are invited to join to sponsor the lunches that will be made by Houck’s Grille and delivered by all the sponsors to the Roswell Police Department. Roswell Officer Kianda Pritchett coordinated with Mr. Fischer last year and is helping out again this year with Officer Tim Lupo. “We were deeply encouraged last year and truly thankful for the effort made by Mr. Fischer and Mr. Wilder. We’re very appreciative that they have decided to do it again," says Officer Pritchett, community relations officer.

Cooler weather brings warm spices like cinnamon, ginger and nutmeg and each of those can be incorporated into cheese, jams and crackers. Citrus, figs, apples, pears are fall fruits that pair so beautifully with meats and cheese and look especially beautiful on a board.

My mother-in-law loved to gift me cookbooks. For my birthday, the year after we were married, she gave me a copy of Martha Stewart’s Entertaining. I read it cover-tocover and studied each of the menus. The photography is beautiful and to this day, the themes and recipes hold up. I was living in St. Thomas, USVI, working for a crewed yacht charter company. So many of our friends worked on luxury charter power and sailboats. It was a requirement of my job to interview the chef, experience a day on the boat and meet the captain, checking out the amenities on board. Tough gig, right? Between charters, our crew friends would come to hang out in our house and I would cook for them. Now, these chefs studied at Le Cordon Bleu and the Culinary Institute of America and they cooked meals in a tiny galley for discerning (and picky) charter guests. But, my husband would grill steaks (he’s a genius on the Big Green Egg) and I’d make this soup. It was one of my fall fan favorites. It feeds 12, so I suggest you share some with a needy neighbor or friend who can use some TLC. Add a crusty baguette and enjoy!

FRENCH MUSHROOM SOUP Adapted from a recipe by Martha Stewart • 1/2 cup minced shallots • 1/3 pound (1 stick) unsalted butter

• 6 tablespoons flour • 3 sprigs parsley • 1/2 bay leaf • Pinch of thyme • 3 pounds mushrooms, trimmed and sliced very thin • 1/2 teaspoon kosher salt • 1 teaspoon lemon juice • 4 egg yolks • 1 cup whipping cream • microgreens for garnish Cook the shallots in 4 tablespoons butter until soft. Stir in the flour and cook over low heat for four minutes without browning. Add the broth, blending it completely with the flour. Add the parsley, bay leaf, and thyme and simmer for 20 minutes. Melt remaining 4 tablespoons butter and a large pan. Toss the mushrooms in the butter with salt and lemon juice and cook five minutes. Add the mushrooms to the broth and simmer five minutes. If not to be used immediately, set aside. Reheat to below the simmer. Beat the egg yolks and cream until blended. Stir a cup full of the hot soup into the cream mixture. Add the cream to the soup and heat to below the simmer. If the soup simmers, the yolks will curdle. Taste for seasonings. Serve immediately and garnish with microgreens from the Roswell Farmers & Artisans Market.

GARLIC HERB BUTTER

HERB SALT

This butter is versatile and goes with just about anything. You can use this on top of bread, popcorn, veggies, as a sandwich spread and more. Ingredients: • 1/2 cup unsalted butter, softened to room temperature • 4 tablespoons fresh parsley, chopped • 1 tablespoon herb of your choice (dill, basil or oregano are my go-to herbs.) • 1 clove garlic, chopped • 1 tablespoon fresh lemon juice • 1/2 teaspoon salt • cracked pepper to taste Process Add all ingredients in a food processor (or mix by hand in a bowl). Transfer butter mixture on parchment paper or plastic wrap. Cover butter tightly and roll into a log. Place in refrigerator until firm. Enjoy!

Herb salts are becoming so popular and can add flavor to a variety of dishes. There are endless flavor combinations, and these salts are so handy to have as a staple in the kitchen. Plus, these make great gifts for family and friends. All you need is a blender or food processor and minimal ingredients. Ingredients: • 1 cup salt of your choice (I prefer Himalayan pink salt, but any salt will do) • 1/4-1/2 cup parsley (add more if using fresh herbs) • 2 tablespoons dried basil (or 1/4 cup if using fresh) • 1 tablespoon oregano • 1 tablespoon lemon zest • 1 garlic clove minced • Optional: Any additional herbs you prefer Process: Add fresh parsley, garlic, lemon zest and a little bit of salt to the blender or food processor. Mix for 10 seconds. Add additional ingredients and blend again. Line the baking sheet with parchment paper and pour salt mixture on sheet and evening spread. Set in a cool oven overnight to dry. Pour salt into a container of choice and enjoy!

HERBED POPCORN Add a little kick to your traditional popcorn by incorporating herbs in with the butter. You won't be disappointed with this buttery and savory combination. Ingredients • 3 tablespoons coconut oil (or olive oil if you prefer) • 3/4 cup popcorn kernels • 5 tablespoons butter, melted • 2 teaspoons garlic salt • 2 teaspoons parsley (dried) • 1 teaspoon thyme Process Add oil to the bottom of a pot and melt over medium heat. Add popcorn kernels and place lid on top of the pot and heat over medium heat until kernels are popped, shaking pan occasionally. Melt butter in a separate dish and add seasonings. Pour on top, and enjoy!

CHIMICHURRI Chimichurri is a condiment that can be used on endless things, and can be enjoyed as a sauce or dip. Serve over fish, chicken, vegetables or with crackers. Ingredients: • 1/2 cup olive oil (or flax oil for added omega 3 nutrition) • 2 tablespoons red wine vinegar (or lemon juice as an alternative) • 1/2 cup-1 cup fresh parsley, chopped finely • 1/4 cup fresh basil or fresh cilantro • 3-4 cloves garlic, minced • 1 small red chilies or 1 tablespoon red pepper flakes • 1/2 teaspoon dried oregano or Italian seasonings • 1 teaspoon salt • pepper to taste Process Chop fresh herbs finely and add to a bowl. Add remaining ingredients and mix. Chill for 1-2 hours. Enjoy!

Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

Roswell When Holly Ranney, co-founder of Sunshine on a Ranney day, a local Roswell non-profit, was in need of warehouse space fast, she called Jack Hudson. Jack, knowing the area well, was able to secure her a great location within a few days , and negotiated the deal to help accommodate the growth of Ranney’s non-profit. “He was great to work with,” says Holly. “It was a seamless transaction and now we have the perfect space we needed.” A commercial real estate agent here in Roswell, Jack immediately understood their needs. “Her space is a typical flex space: 4000 square feet of warehouse with two dock doors, and about 1500 square feet of office. Very convenient to their main location, they were an absolute gem to work with,” he says. We sat down with Jack to find out more about his company and projects.
