Like dinos, the new store is gargantuan, scaled in keeping with the outsized mission of Habitat for Humanity. But Habitat’s new store also harbors a secret that locals might not expect: small prices. The new, improved building brims with bargains! The reason? Our local Habitat for Humanity’s 40,500-square-foot sustainable building, the second largest ReStore in Colorado, completely transformed the local nonprofit’s financial structure. Because of the facility’s deep-green features, Habitat saves $24,000 a year in utility bills alone, enabling it to live out its home-building mission (and save you a dime) in a way that was previously not possible. As Executive Director Scott Gilbert explains, all four former locations of the local ReStore were once stuck chasing “cheap rent,” something that has largely vanished in the Roaring Fork Valley. “We’re dedicated to the idea that homeownership confers permanent financial CONTINUED >

advantages,” says Gilbert. “Our board did some deep soul-searching, asking, ‘If homeownership makes sense for individuals, doesn’t it make sense for us as an organization?’” The answer, they found, is yes. The new ReStore was made possible by loans from Alpine Bank and the USDA, plus major gifts from Jim and Connie Calaway, CORE, the Gardener Foundation, and Bighorn Toyota. In addition to having a new mortgage payment that costs less than prior rents, the facility also delivers multiple environmental benefits: Because it makes use of day-lighting and because all interior lights are LEDs, lighting costs about one-third what it would in a comparable retail store. A 56 kW solar array powers nearly all the store’s energy use. And it’s far more comfortable for both workers and shoppers. Upon entering, shoppers notice the transformation at a glance. Goodies that were formerly stacked high and deep or stuffed in shadowed nooks are now handsomely staged by Marjon Huibers, ReStore's interior designer. Everything from furniture to home décor to appliances and building supplies is now consolidated in one location. And ReStore’s collection of wares now contains a lot more treasures. Among the added offerings are new mattresses, decorator rugs, never-used appliances retailers wouldn’t sell due to minor scratches and dents, cabinets and vanities that will be custom-built, and a variety of arts and crafts items from Habitat for Humanity International. Readers can view a one-minute preview of the new building on Habitat Roaring Fork Valley’s Youtube channel. Or better yet, stop for a visit: Look for the bright green welcome sign at 53 Calaway Court just south of CMC Road and enter the door by the green dinosaurs wearing hard hats. “We’re all about green,” chuckles Gilbert. “We’re well on our way to becoming a self-sustaining nonprofit. MARK HARDIN BELIEVES THAT OUR FOOD SHOULD NOT HAVE TO TRAVEL AROUND THE WORLD TO GET TO OUR PLATES. So, he founded catering service Field 2 Fork Kitchen to help connect locals with foods grown in our own valley by people we actually know. Here, Hardin offers two delicious spring recipes made with some of his favorite regional products.
LOCAL GREENS WITH BEET-PICKLED EGG, FARMHOUSE LOCAL GREENS WITH BEET-PICKLED EGG, FARMRICOTTA, AND CHARRED RICOTTA,HOUSE AND CHARRED SPRING ONIONSPRING VIN ONION VIN
B E E T P I CKLED EGG + Dozen farm eggs (such as those from Emma’s Mountain Primal Meat Co.)
+ 2 red beets, peeled and sliced + 1 small sweet white onion, sliced thin + 3-4 cloves peeled fresh garlic + 6 dill sprigs + 1 cup sugar + ¾ cup cider vinegar (preferably Big B’s) + 1 tsp salt + 12 whole peppercorns + 2 bay leaves Hard boil, cool, and peel the eggs. Layer in a two-quart wide mouth jar with the beets, onion, garlic, and dill. For the brine, combine remaining ingredients with one cup water and bring to a boil. Simmer until the sugar is dissolved, then pour over the eggs. Allow mixture to cool before securing lid. These can be eaten immediately, but are best after a day or two in the refrigerator.
C H A R R E D SPRING ONION VINAIGRETTE + 6-8 spring onions + ¼ cup cider vinegar + 2 tbsp local honey + 1 tbsp whole grain mustard + 1 cup sunflower oil Char the onions (greens and bulbs), over a flame. Place in blender with next three ingredients and pulse to combine. Slowly add the oil while blending on low. Add salt and pepper to taste.

FOR THE RUB: + 2 tbsp fennel pollen + 2 tbsp kosher salt + 1 tsp white pepper
FOR THE BRAISE: + 4-5 pound Berkshire shoulder (from Mountain Primal Meat Co.), cut into one-pound cubes.
+ 1 onion, quartered + 3 cups Big B’s Cider + 3-4 cloves garlic + 2-3 star anise Rub the shoulder and sear in a hot cast iron skillet with a little oil. Add onions and garlic, cooking until lightly browned. Reduce heat to simmer and add cider and star anise. Cover skillet with parchment, then foil and finish in the oven at 300 degrees for four hours, until tender. Reserve jus to top the dish.
FOR THE PUREE: + 2-3 pounds celeriac + 2-3 pounds potatoes + 2 cups chicken stock Peel and dice the potato and celeriac. Boil for 20-30 minutes, until tender. Strain and pulse in a food processor while adding stock to desired consistency. Be careful not to overmix. Season with salt and pepper. Finish by sautéing oyster mushrooms and top with pea sprouts. Use the jus from the braise as a light sauce over the top. Hardin: This is one of my favorites, and a true treat! MODERN WEST FLORAL COMPANY BLOOMS WITH LOCALLY GROWN BOTANICALS NO ONE EXPECTED THEIR FLOWERS TO COME FROM LOCAL SOIL—UNTIL NOW. With roots in landscape architecture, the untamed diversity of the Roaring Fork Valley landscape, and blooms from their own high country floral farm, the designers behind Mountain West Floral Company (MWFC) create botanical experiences steeped, they say, in the valley’s floral terroir. “Our hope has been to shift our clients’ perception of beauty and encourage others to appreciate and respect the uniqueness of our local aesthetic,” says co-founder Vanessa Gilbert. “In order to accomplish this,” fellow founder Tara Abbaticchio says, “we harness the deep Colorado aesthetic of beauty by foraging locally (for which we have permits). We let the architecture of a flower, branch, stem, or dried seed head initiate the design. We then complement the ever-changing local availability with annual varieties grown on our farm in Carbondale.” “Our goal,” she adds, “is to be purely focused on the people who value the local, seasonal aspect of what they’re getting. They’re okay with not knowing exactly what color or what flower they’re going to get because they want what’s available at the time.” Focusing on events, weddings, weekly contracts, and gifts, MWFC’s style is reflected in both Gilbert and Abbaticchio’s inclinations. Gilbert leans toward the romantic and colorful: “apricot blossoms in the spring, with lilac branches, peonies, that’s when I start feeling good,” she chuckles. Abbaticchio is drawn to the airy architecture of a specimen, especially in the fall “when they’re drying, even more than when they’re alive,” she says. Gilbert pokes good-natured fun at her business partner's fondness of “tumbleweeds,” but Abbaticchio proudly shares stories of going for walks and runs, hands full of weathered husks by the time she returns. “Even just one of those in a vase is so much prettier than a grocery store flower,” she asserts. MWFC’s approach to floral sustainability may be unmatched in the valley. The two women farm their own flowers organically on the valley floor east of Carbondale. There are no chemical drenches, no trans-Atlantic air transport. Gilbert and Abbaticchio are also inspired by the organic farmers of the North Fork Valley around Paonia. Role model Zephyros Farms has been very supportive of their work and a reliable source for horticultural wares. For example, for Valentine’s or Mother’s Day arrangements, MWFC will order unusual stems from these and other organic farms. Both women prefer utilizing stylish alternatives to the standardized imports of South America and Africa. So ultimately, their hearts and intentions are truly local. Gilbert originally moved to the valley after landscape architecture school to apprentice at Sustainable Settings for several seasons. She wanted to learn more about ecology, cycles, seasons. She wanted to grow, to connect with the earth prior to launching her career in landscape architecture. Several years later, well into their careers at a prolific firm, the siren song of earth and creation began to call to both Gilbert and Abbaticchio. In the spring, when the sap begins to flow and the buds to swell, when roots begin to stir anew, the MWFC shop at the Studio for Arts and Works in Carbondale becomes a hotbed of early-season growth. Heat mats and grow lights usher in new life: architectural spires of larkspur, bells of Ireland and snapdragons, frothy love-in-a-mist, Queen Anne’s lace, and luminous dahlias. From everlastings to the ephemeral, MWFC grows clean botanicals. These organic florals, grown two to three miles from their shop, are rooted in historic potato fields, nourished by alpine sun and air, and enlivened by valley water and weather. They are imbued with the raw, elemental nature of our Rocky Mountains: that floral terroir that Abbaticchio and Gilbert espouse. “We wanted to fill the void of ‘everyone wants to know where their local food comes from.’ You should know where your flowers come from, too,” Abbaticchio says. “If you’re in the habit of buying flowers, it’s another part of our local agriculture that’s just as important.”

NOT SO LONG AGO, SOLAR ENERGY SEEMED OUT OF REACH FOR THE AVERAGE CONSUMER. Although many had the desire to adopt a green energy solution and take control of their electricity bills, the upfront cost of a solar setup was often unaffordable. Fortunately, things have changed in recent years. “Solar is now much more low-cost than it once was,” says Katharine Rushton, commercial sales and marketing manager for Sunsense Solar. “But there will always be marginalized groups who don’t have access, and they are in fact the ones who need the most help because they may be struggling to pay utility bills.” Although Rushton notes that while there is no magic solution to this dilemma, Sunsense is actively taking steps to close the gap in accessibility for local residents. The company, voted Best Solar Provider in Roaring Fork Lifestyle’s Readers’ Choice awards last year, has served the valley since 1990 and values its deep commitment to bettering the community. “We understand that sustainability is bigger than just environmental concerns and that social equity leads to community resilience,” she adds. “A challenge for the solar industry has been to expand the solar market to include lower-income individuals and the nonprofits that serve them.” With that challenge continually on its radar, Sunsense has maintained a longstanding partnership with Habitat for Humanity Roaring Fork Valley.
