I hope this letter finds you lying by the pool or lake and soaking in some much-needed Vitamin D.

As the days grow longer and the weather gets warmer and warmer and warmer, I find myself eagerly loving summer. There's just something about this season that brings about a sense of excitement and adventure.

Sure, Fall has my favorite flavors and scents, Winter has its cozy charms, and I can't deny the beauty of Spring. But when Summer rolls around, I’m more than ready for the long, languid days sitting by the pool or floating on a boat. Having been born and lived in Brazil for many years, I am a huge fan of the warmer weather!

The pages in our Summer Fun issue will help you make the most of this season in our Red Rock community. This month we bring you stories about delectable summer food and drinks, solar energy to take advantage of all the sun we get here in the desert, window fashions and retractable awnings to help with the heat, and more.

And even if Summer doesn't mean three months of summer vacation anymore (because we're, you know, adults), we can still look forward to an adventure by crossing things off our ultimate Summer bucket list and curling up with a new favorite relaxing read. (P.S. Teachers, you deserve this much-needed break!)

At our house, we love to have pool parties and be around people that we love. Taking the time to explore our own natural resources by going on hikes earlier in the day is also something that we look forward to. There's something about being in nature that feels so rejuvenating and refreshing.

Local Event Celebrated Top 25 Women in Real Estate

The Women's Council of Realtors held its annual "Top 25 Women in Real Estate" event to honor the achievements of exceptional women in the industry. These standout women demonstrated exceptional skills, leadership, and commitment to excellence in their respective areas. This year's event award recipients dressed as their favorite Shero. Project Marilyn Presented with Donation Over $52,000

The Clark County Medical Society Alliance Board of Directors presented a donation check for more than $52,000 to non-profit organization, Project Marilyn. The fundraising efforts over the past year were in addition to bi-monthly volunteer packing and distribution of period supplies in an effort to end period poverty. This resulted in more than 200 hours of volunteer time packing 3,800 period kits and to help end period poverty in Southern Nevada.

Discover what acclaimed Chef Carla Pellegrino is cooking up at Limoncello Fresh Italian Kitchen

One of Las Vegas’ “Top Chefs” is settling into her new home at one of the city’s finest Italian restaurants.

Former “Top Chef” Season 10 contestant Carla Pellegrino stepped into the kitchen of Limoncello Fresh Italian Kitchen last November as its new executive chef and partner. One of Las Vegas’ most renowned chefs, having worked at remarkable Strip restaurants as Rao’s inside Caesars Palace and Bacio inside Tropicana Las Vegas, Pellegrino’s move to Limoncello, located at 8245 West Sahara Avenue, not only marks her return to Las Vegas’ culinary scene after serving as the executive chef of The Ahwahnee hotel in Yosemite National Park but also fulfills a long-standing wish of the celebrated chef to work alongside Limoncello’s owner, 20-year restaurateur Giuseppe Bavarese (Las Vegas’ Prosecco Fresh Italian Kitchen).

“I have been friends with Giuseppe for about 12 years, and we have always spoken about collaborating together,” Pellegrino said. “Last year, Giuseppe asked me if I would be interested in opening a restaurant in Los Angeles. A few phone calls later, he asked me about the possibility of returning to Las Vegas and invited me to spend the weekend with him and his wife, Jenny, to discuss Limoncello. I gladly accepted the invitation and loved what I saw. It felt right to join Giuseppe and Jenny on their venture, and I am happy I did.”

Known for its authentic Southern and Northern Italian cuisine prepared with a modern flair, Limoncello serves an assortment of traditional Italian dishes nightly for dinner, including a variety of house-made pastas, succulent steaks, and whole grilled fish. Menu highlights include the delicious Burrata & Prosciutto San Daniele antipasto served

with arugula and heirloom tomatoes; the homemade Gnocchi Norma sautéed with eggplant, grape tomatoes, and light marinara sauce topped with fresh mozzarella; and the flavorful Salmone ai Ferri topped with black olives, capers, and heirloom tomatoes. A selection of perfectly prepared pizzas is available, too, such as the Della Nonna topped with Italian sausage, shiitake mushrooms, and onion, and there is a menu of delightful desserts, like the refreshing Limoncello Flute: lemon gelato swirled with limoncello sauce and served in a champagne flute.

Unlike Pellegrino’s former Henderson eatery, Bratalian, which featured Neapolitan trattoria cuisine, Limoncello offers guests more of a sophisticated Italian steakhouse experience. Not only does the 8,000-square-foot restaurant have its own sommelier and modern wine cellar on site, but it also showcases several of its fresh fish selections on ice just off the main dining room floor. Nevertheless, Pellegrino has updated the casually elegant restaurant’s mouthwatering menu to include a few of her signature dishes.

“My new menu keeps with Limoncello’s concept — which is having a great variety of steaks and seafood — but includes some of the classic dishes known by my followers, such as my sweet and hot pork chops (the Cotolette di Maiale), my traditional marinara sauce and my Pasta & Fagioli soup,” Pellegrino stated. “Plus, I’m adding my unique touch to a variety of classic Italian dishes.”

Guests will typically find Pellegrino in Limoncello’s kitchen five days a week for about 11 hours each day, cooking for diners and developing new recipes.

“I love being in the kitchen and creating,” Pellegrino, who began cooking alongside her mom when she was just 10 years old, said. “I couldn’t be happier to be back in the kitchen where I can cook and create bonds with my staff.”

In addition to implementing seasonal changes to the menu throughout the year so that the staff is only “embracing the freshest and highest quality ingredients” available, Pellegrino plans to introduce a brunch menu at Limoncello in the future — once the restaurant finishes adding a patio for alfresco dining. Until then, Pellegrino hopes her foodie fans from all over the Las Vegas Valley head to The Lakes near Summerlin to check out what she is cooking at one of the city’s most impeccable Italian restaurants.

“I put a lot of thought and effort into my menus and dishes, and anyone who knows me knows how much I care,” Pellegrino concluded. “I’m excited for the community to experience that at Limoncello.”

Adventure Awaits

Chance Adventure Co gives families the freedom to hit the open road in classic style.

Kelley and Sam Chance have it figured out when it comes to spending quality family time together with their two young sons, Sully, 9, and Grady, 7. They literally took a chance in 2013 and bought Stella, a 1984 Airstream Excella, as a renovation project. One family camping trip and they were hooked. Now they are true vintage Airstream enthusiasts.

They sold Stella, but the “silver bullet” calling never left and Chance Adventure Co was born. Sam had talked for years about renovating and renting Airstreams.

“Once the pandemic hit, it was now or never,” Kelley says. “We welcomed Carolina into our family, a 1983 31’ Excella, and she’s been rocking out camping trips with us and our clients since early last year. In 2020, she traveled to Yellowstone, Glacier, the Badlands, Upper Peninsula in Michigan, Indiana Dunes, Kannapolis, Kansas and more. Georgia, a 1978 31’ Sovereign Land Yacht, is currently being renovated from the frame up.”

They will be adding to their fleet soon and are adding an Airstream Renovation Workshop on their Tonganoxie property. They also have the Chance Adventure Co shop, loaded with outdoorsy inspired items.

Adventure is a part of life for this active couple, who live on 10 acres. They have horses, garden, hike, bike and explore.

“By far, our favorite thing to do as a family is travel and spend time outdoors. We hiked the three miles roundtrip, 480-foot climb to Delicate Arch when the boys were 8 and 5, biked through the Badlands, kayaking Lake Michigan. We’ve had so many incredible experiences connecting the four of us, and connecting us to nature via camping,” she says. “The boys have learned a deep appreciation and love for Mother Earth, to navigate the terrain using a compass or their own wits, to identify and care for the flora and fauna around us, and they’ve gained so much confidence and courage through it all.”

Each trailer is thoroughly cleaned and sanitized after each rental. Airstreams are available for rental for road trips, or they can deliver and set up at local locations.

“There’s something magical about those silver trailers, especially the old ones. They have such character, and many stories within their aluminum walls,” she says. “Making them a part of our family story just made sense.”

The Perfect Steak

Nothing describes summer better than a good cookout! And what is a cookout without a good, quality steak and the perfect grilling recipe?

1. Thaw and acclimate the steak. For searing to occur, the proteins in steak need to be heated to at least 310°F. Tossing cold meat onto a hot grill lowers the temperature and can prevent a crust from forming, so it’s important that any frozen steaks are thawed completely before cooking.

2. Salt your steak 30-45 minutes before grilling. This causes the salt to draw moisture from within the steak up to the surface, where it dissolves the salt and creates a brine that gets reabsorbed into the steak where it breaks down tough connective tissues.

3. Oil the grate on the grill, not the steak. Use tongs and a paper towel dipped in vegetable oil to lube your grates.

4. Manage your heat well. Remember that your grill needs to be hot for your steak to get a good sear. But if it’s hot enough to cause your oil to smoke, it’s too hot.

5. Use the 60/40 rule. The best-tasting steaks are seared on both sides and cooked evenly in the middle. The simplest way to do that is to only flip your steak once. The 60/40 rule suggests that 60% of your cook time should be spent on one side, and 40% on the other.

6. Keep the lid closed. It may be tempting to peek, but trust the experts and keep it shut! Opening the lid makes your grill lose heat, which makes steaks cook unevenly.

7. Check for doneness. A meat thermometer will give you the most accurate temperature reading:

• Rare: 120°F

• Medium Rare: 130°F

• Medium: 140°F

• Medium Well: 150°F

• Well: 160°F

8. Let your steak rest. Pull your steaks from the grill once they’re cooked to 5-10 degrees below your target temperature and rest for 10-15 minutes.
