We had the pleasure of visiting Grace Pizza and Shakes, and learned about what their fall menu will be boasting.—so get your tastebuds ready, you are in for a treat. “Coastal comfort food” without going to the coast, is exactly what you will find at Good Vibes Coastal Kitchen. Eric Nelson and his partners opened Good Vibes in January of 2021 to recreate a coastal feeling and vacation dining experience without leaving the city. Nelson, who had spent years as a chef for a fine dining steakhouse in Galveston, chose to leave that environment after COVID to create “something fun.” As Nelson says, “I wanted to create a place I’d want to hang out at and leave my cares at the door. Good Vibes Coastal Kitchen, previously Good Vibes Burgers and Brews, is located at 1329 E. Broadway Street in Pearland. When asked about the name change, Nelson said, “we changed the name because the menu didn’t reflect just burgers and brews.” With menu options ranging from burgers to shrimp skewers, oysters to tacos Good Vibes have something for everyone. Even with so much to choose from Good Vibes most popular dish is still their signature burger plate. Crafted with wagyu beef,
their smokey vibin’ sauce, smoked gouda and bacon all bound between a garlic bread bun locally sourced out of Houston. With ingredients like that it is no surprise guests keep coming back. Nelson said the establishment's interior vibe mimics the feel of their coastal comfort food menu with shiplap walls, tropical palms, and large coastal scene paintings. Good Vibes also offers a fully heated patio that can seat up to 125 guests, a room for private bookings and live music Thursday, Friday, and Saturday. In addition to offering an eclectic menu of delicious plates, Good Vibes Coastal Kitchen is also active within the community. Most recently they have been a Pearland Little League sponsor, made donations to local schools and even participate charitably with the Houston Livestock Show and Rodeo. Nelson said, “because we’re so close to Friendswood we also participate in that community as often as we can with donations for a good cause.” Good Vibes Coastal Kitchen, a local place for “coastal comfort food” within city limits. The meaning of FAMILIA
Don Pepe opens up about what the word means to him As you walk up to the door vibrant living tropical avocado green plants welcome you with their peaceful nature. The scent of freshly grilled food makes your mouth water immediately, inviting you in to see and taste. The walls, tables, décor, and meals are alive and buzzing with bright colors, designs, and love being crafted mainly by hand by one man. Who is that one man that has been keeping a treasured piece of Pearland living for close to 30 years, owner Don Pepe. He has been feeding families wholesome and authentic flavorful Tex-Mex dishes with love and devotion for multiple generations and that is what really keeps the locals coming back to his Emma’s Mex Grill. Don’t be surprised to see patrons at Emma’s swaying to classics of bosa nova to jazz Latino while sipping on hand-picked high-quality tequila cocktails and indulging in traditional delights which are always made fresh daily. Tongue tickling salsas made with locally procured ingredients, handmade piles of piping hot tortillas and tortilla chips. Marinated and braised beef, pork, and chicken dishes, all of them used in a variety of dishes that leave

customers undecided because they are all delectable and leaving decisions on the wait staff after asking, “what would you choose?” Daily customers are putting faith and trust in someone taking their order because they have been with the restaurant for years. The restaurant itself has grown into a family union with staff that have been there close to its first opening, or it is the children of the previous employees getting their taste of the restaurant industry. So, is it the food or the togetherness that really brings the locals back to Emma’s again and again I ask Don Pepe which he replies with a chuckle, “I believe it is the respect and appreciation we give plus the combination of wholesome food and being together around a dinner table and not have to clean house.” This response is deep all in its own because over the years many families have gotten busier and in the past few some have realized how important being together truly is. Dinner tables are now starting to become warmer due to seating the entire family in them. More communication is happening and opening a gateway to understanding differences. “Dishes serves at Emma’s are not small, can be shared, are healthier, and food like I grew up eating at home.” states Don Pepe. Parents having issues feeding picky eaters should look no further. Here kids are encouraged to sniff, taste, inquire, and explore all food placed on the table. Junk food is not an option and instead whole foods like beans, vegetables, fresh cheeses, warm tortillas are available. Don Pepe and staff have been known to substitute items for the littles to get them to “try” something new. Chicken quesadillas can just be cheese or add beans to half of one. Don Pepe and staff understand adapting to something new. Coming from Mexico and curating dishes that are Tex-Mex, a CONTINUED >

cuisine not derived from Mexico at all but took some influences from Mexico and the Texan cowboy life. Trained as a corporate chef Don Pepe was used to food evolving but keeping the essence of authentic Mexican traditional flavor when creating his menu was of the utmost importance. He began to incorporate the Tex-Mex flavor into his dishes with bits of cumin here and anise there. Taking basic dishes like cowboy refried beans and turning them into works of art like frijoles con chorizo y queso panela a la plancha. These masterpieces with slight changes over the years won the hearts of many because here we are three decades later with this article. With emotional tears in his eyes Don Pepe is enamored by the growth, support, and respect the community has given him over the years. After the loss of his eldest son two years ago he has now a different sense of happiness and appreciation when seeing now a fourth generation of customers come into his location and knowing that everyone grew up together. “I love how my customers come in and ask how my children and I are because in turn I ask the same. I have seen many of them with their parents and now those at one-point kids are now parents themselves.” says Don Pepe with a smile and glimmer in his eye. So, thirty years later a small business that started with only ten tables has now turned into a huge staple in Pearland. Don Pepe has done multiple serves to our community in those years even continued serve to feed first responders during the pandemic. He even has sponsored citizenship for fifteen of his employees past and present and some still work for him or now own their own restaurants here local. In the end respect and family is what Don Pepe has within much the community.
A casual family-style setting, where they can sit down and sample all the best antojitos (snacks/appetizers) and talk about their days and keep the value of family unity alive is all Don Pepe has ever wanted.

Come celebrate Pearland’s flourishing culinary scene with a charity dining event. The event similar to Houston Restaurant week will feature curated menus and specialty offerings some of Pearland’s most mouthwatering and inviting restaurants. Dozens of Pearland restaurants have gotten together in supporting the Pearland Neighborhood Center. Since its inception in 1987 the neighborhood center has been fulfilling the need of residents in Brazoria County. The concept was in response to residents needing access to a variety of health, human, and social services but were unable to travel to multiple locations. The center since has proven to be a much-needed and effective way to deliver services in our area. Over the years with hurricanes such as Harvey, unusually fridged temperatures causing massive outages, recurring floods, and most recently a pandemic our area is in demand for more support. As a community by ordering off the carefully
curated restaurant menus we can also be supporting our neighborhood center because one hundred percent of profits will be donated. The opportunity is a wonderful way to try places that might exist outside your food bubble. SMOK ED G OU DA POR K BU RGER INGREDIENTS Feeds 2 persons • 10oz Ground Pork • 1 yellow onion • 1/2 grated garlic clove • 1/2 tsp sugar • 1 tsp smoked paprika • 2 slices Smoked Gouda • Salt
DIRECTIONS Sweat half a diced onion in a large skillet. While cooking in a large bowl, combine pork, minced garlic, paprika, sugar, and salt. Add the onion to bowl. Form into two patties, each slightly wider than a burger bun. Heat a large drizzle of olive oil in pan where onions were cooking. Add patties and cook until browned and cooked through, 4-7 minutes per side. Last minute cooking top with a slice of Gouda.; cover pan until cheese melts. Toast buns (tip: for a deeper flavor toast in the pan used for the patties), wrap in butter lettuce, add whatever condiments you desire.

Lemon Balm A culinary herb known for its distinct lemon scent and health benefits.
INGREDIENTS 2 tsp fresh lemon balm or 1 tsp dried 1/4 tsp fresh ginger 12oz boiling water Honey
INSTRUCTIONS Place lemon balm and ginger in a mug. Fill the mug with boiling water. Steep 5 to 10 min. Sweetened as desired.

INGREDIENTS 2-3 cups warm bone or vegetable broth. Juice 2 lemons 2-3 eggs (depending on desired thickness) 1 tsp fresh lemon balm
INSTRUCTIONS Start by cracking the eggs into a bowl and whisk well. Gradually add lemon juice and whisk. Slowly add a little of the warm broth and whisk quickly, adding more and while whisking. Slowly adding the broth is to gradually warm up the eggs as to not overcook. Pour gradually the egg mixture back into the pot, whilst whisking constantly, add lemon balm, and bring just below boiling point. Remove from heat and serve.

Lately, life has been throwing a ton of lemons and with inflation being a hot topic, a good sub for those lemons and an all-around great plant to keep us plant people happy, lemon balm otherwise known as Melissa officinalis is our girl. Native to the Mediterranean region of Europe and Asia, lemon balm a popular perennial herb easily grown here in the US as well. Known for its distinct lemony scent, culinary and medicinal uses, lemon balm has been making its way into our lives in many forms from lip balms to dressings.

Where Italian food meets over-the-top celebratory shakes! Grace Pizza and Shakes prides themselves on providing food and experiences that will make each guest's day “a little better.” Adrian and VJ, co-owners, of Grace Pizza and Shakes named their restaurant aptly when they decided they wanted to share a little grace with each customer. Adrian Hembree and VJ Nandlal met through charitable events hosted by Hembree at Grazia Italian Kitchen & Pizzeria. “Adrian shuts the restaurant down for the community. He is always willing to host fundraising events to help. I attended a few and we became close friends” says Nandlal. VJ said that he knew his and Adrian’s paths were aligned for a reason. He wanted to open a restaurant and told Hembree “let's do this together.” Both men had felt the recurring theme in their lives of “the grace of God” and knew that was what they should name this new venture, Grace Pizza and Shakes. Grace Pizza and Shakes opened their flagship location in Alvin, Texas May 4, 2021. They were an overnight success. “We ran out of pizza in the first few days,” says Nandlal. Since then, the duo has opened locations in Grayton Beach, Florida and Pearland, Texas, ever watchful for more expansion opportunities. On the menu, you can find ingredient combinations that create the most mouth-watering and satisfying pizza you have ever eaten. Their most popular pizza being the hand-crafted Supreme Grace Pizza. Nandlal says the guests also love their house-made ranch dressing and

hand-pinched Italian sausage. However, the over-the-top, easily all-around favorite menu item is the “Sparkling Birthday Shakes.” Designed solely to make “kids face’s light up.” The Sparkling Birthday Shake boasts a triple-layer slice of cake topped with locally source vanilla ice cream from Hey Mikey’s Ice Cream. As if that were not enough, VJ said “let's set it on fire.” So, VJ added sparklers to give the shake that “over the top, Vegas for kids” kind of experience. In addition to creating a dining experience like none other Hembree and Nandlal love to support the community in every way they can. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
