LIFESTYLE LETTER

Cherished Home

Home emanates a sense of belonging. It’s our sanctuary, our foundation and the place where life unfolds. Home is where our routines are shaped, where each day begins and ends. It’s where we find solitude and rest. And while it can mean something different to each of us, its significance is universal.

This month’s issue focuses on what makes home cozy and welcoming—from the warmth of sourdough recipes with Gina Gellings to organizing tips from Kristi Walter, we want this issue to touch all the aspects of what sets home apart from anywhere else.

Sometimes it’s about doing the brave thing and pursuing the dream outside of your comfort zone. When sharing about Cozy Colorado Furnished Rentals, Susan Corriere reminds us of the importance of being able to call somewhere home even when you’re in transition. For Susan, it’s all about relationships, being ethical, embracing what you have, helping others and always giving back. These are aspects we see within our beautiful town of Parker as a whole.

We hope that as you turn these pages, you’ll be inspired in your own routines and even boundaries that make your home a better, sweeter place. Many of our readers tell us they hold onto this magazine long after the month on its cover, treasuring it as a piece of home—whether as coffee table art or a source of inspiration. It’s an honor to be part of your home.

Thank you for welcoming us into your homes. Here’s to making this March a celebration of the spaces and people that matter most.

Happy March!

Las Delicias, A Longtime Parker Favorite, Is Now El Delicioso

El Delicioso opened in February under new local ownership. The transition comes as the current owners retired, leaving behind a thriving, well-loved restaurant. Longtime employee Juan (John) Andrade, with more than 30 years at Las Delicias, will assume ownership and transition to an employee-owned model. Beloved menu favorites will remain, alongside new Tex-Mex dishes inspired by Juan’s family recipes, as the familiar team, led by longtime manager Jesus “Chuy," welcomes guests.

OUTFITTING YOUR HOME WITH THE LATEST GLASS TRENDS OF BIGGER AND CLEARER WITH A 40-YEAR VETERAN COMPANY

GLASS BACKED BY INTEGRITY

A 40-year-old company, Penny Salak and her husband, Bob Hill, bought Hansen Glass 9.5 years ago and moved it into the heart of Parker. Located on East Plaza Drive, right off Highway 83, Penny felt this was the perfect spot, settled on a less-busy road at an intersection. Plus, they refer to the brewery next door as “office east” when happy hour calls.

Penny speaks frankly about being honest with customers regarding replacing windows around a home and avoiding scare tactics used by companies that insist people need new windows.

“We saved one customer $80,000,” she explains, after a Pinery homeowner received an enormous bid from a company to replace all their windows. “We went out, and the frames were gorgeous. They were in perfect condition. The person needed new glass.”

She continues, “That’s what we try to get across to people, is we will sell you what you need and not just what we want to make money on.”

The heartbeat of Hansen Glass is quality work with excellent customer service. Every project is custom-designed to fit a buyer’s needs, without overindulging in products that aren’t pertinent to their situation. Building a business on that philosophy brings repeat customers to their door, especially during the dreaded hail season.

“A lot of times after a hail storm, one side of your house gets hit,” Penny explains. “The whole house did not get damaged. Most companies don’t want to do one window. They want to do the whole house. If you only had like five windows that got damaged, you do not need to replace 30.”

“WE WILL RARELY, IF EVER, BE YOUR CHEAPEST BID, BUT WE ARE WORTH THE DIFFERENCE.”

Speaking of hail, Hansen Glass has a subsidiary, Screen King of Colorado, to help with hail-damage to screens, both for doors and windows.

“We will make completely new screens from the ground up, or you bring in the screen and the frame is fine, but somehow got shredded, we’ll do that too,” Penny says.

While Hansen Glass does 60% glass replacement work, they do entire windows, blinds, window treatments, shower or tub enclosures as well as pet doors.

As glass trends change for home and offices, Penny comments, “Glass is trending towards just being bigger and clearer.” That includes replacing cabinet doors with glass to open up space in kitchens and bathrooms, or replacing mirrors when the frame is intact.

Good news for lead time on glass is that the standard time is 2-3 weeks, unless there is a major hailstorm with extensive damage in the local community. Hansen Glass works with insurance companies whenever storms occur to ensure customers receive the repairs they need as quickly as possible.

An avid member of the Parker Chamber of Commerce and the Rotary, Penny enjoys giving back to the community that trusts her with all their glass needs.

“If I can’t give money, I give time,” Penny says.

From start to finish, Hansen Glass provides the workmanship people appreciate in their homes and businesses, trusting the process because integrity is an integral part of their success.

“That’s something that I tell people,” Penny explains. “We will rarely, if ever, be your cheapest bid, but we are worth the difference.”

CLUTTERFREE LIVING

HOME ORGANIZER, KRISTI WALTERS, SHARES HER TIPS ON BRINGING ORDER TO THE HOME

“We all deserve the best space and don't have to live with all that clutter!”

Kristi Walters’ eyes light up at the mention of color-coded tabs, label makers and plastic bins! These are tools of her trade! She is a home organizer who loves what she does.

She works with people to assess their needs, not just to get rid of things, but to streamline their spaces and find a place for everything that matters to them. “There is nothing better than seeing someone’s spirit lift. Just seeing the pressure come off them. My goal is to make their life better. We all deserve the best space. We don’t have to live with all that clutter.”

Researchers have found that clutter can impair quality of life by overwhelming the brain, limiting focus and productivity, creating anxiety, causing stress and disrupting sleep patterns, among other negative effects.

Kristi suggests these clutter busters:

1. Start small with the space in your home that gives you the most anxiety: your kitchen, office, laundry room, wherever it is.

2. Set a timer for 15 minutes and tackle a section; this makes a large project doable.

3. Ask yourself how you use that space, what the rhythm of the room is and start to set up systems that work with that life flow.

In your office, that can be a bin that contains all adhesives or a ‘sharps’ bin that contains all your scissors and other sharp items.

In your mudroom, put all your kids’ sports items in a bin by the door, ready to go.

In your kitchen, take bottles from your counter and arrange them on a pretty tray. Create a ‘Go Bag’ you can take in the car to run errands between your day’s activities.

For homes with little ones, she recommends putting safe things at a level they can reach. Plastic cups in a low kitchen drawer. This teaches them independence and saves you time.

4. Everything has a place it belongs. Don’t just put something down, put it away.

Kristi buys bins with lids on Amazon and clear plastic boxes for $1.50 each. She believes that people don’t have to spend a lot of money to create order in their home.

“Your house should give you a hug when you walk in!” Kristi says with a satisfied smile.

ORIGINAL LANDSCAPE AND ABSTRACT PAINTINGS

The Story Behind the Painting:

This piece was inspired by a place in Newton, KS, where I loved the simplicity of the scene before me. Nothing felt hurried; life seemed to move at a gentler pace. While I knew activity was happening somewhere beyond my view, what I encountered felt like a quiet, unhurried slice of life. It was just before sunset, and a soft glow touched the landscape, adding warmth to the moment. In this painting, I wanted to capture the same sense of stillness and gentle beauty that I felt that day.

Gina Gellings Shares How to Make Beginners Sourdough Bread and Overnight Pillowy Sourdough

Cinnamon Rolls

Kitchen Recipes

Gina Gellings is a wife, mom and beautiful friend to the community. A physical therapist by training, she also sews, crochets, does alterations, models and loves to bake. She says, “I’ve always been one to work with my hands and use my hands for good to create.”

Her family centers their values around love, hard work, kindness and caring for each other and the world. Gina has helped many people make sourdough and has shared a couple recipes to integrate into your own kitchen. For advice and tips, please feel free to message her on Instagram @denver_model_mom.

Beginners Sourdough Bread

INGREDIENTS

• 475 grams all-purpose flour 3 1/2 cups

• 100 grams starter active and bubbly (1/2 cup)

• 325 grams water 1 1/3 cups

• 10 grams salt 2 teaspoons

INSTRUCTIONS

1. Feed a sourdough starter 4-12 hours before starting the dough, ensuring it is active and bubbly.

2. Combine warm water, active starter, salt and flour with a wooden spoon or even just your hands in a large mixing bowl.

3. Cover with plastic wrap or a lid and allow to rest for 30 minutes for the water to hydrate the flour.

Stretch and Fold

1. Grab the edge of the dough and pull up stretching it out as you pull upwards. This may be difficult and you may need to kind of bounce the dough to get it to stretch. Place dough that is in your hands back into the center. Turn the bowl about a quarter turn and complete another stretch and fold. Repeat two more times. This is considered one round.

2. Thirty minutes later, complete another round of stretch and folds. Cover and allow the dough to rest another 30 minutes.

3. Complete one last stretch and fold it round.

4. Cover with a lid, damp towel or plastic wrap. Let the dough bulk ferment in a warm place until it has doubled in size. This could be anywhere from 6-12 hours (or longer), depending on the temperature of your kitchen, maturity of your starter, etc. Be careful not to let it overferment.

Shape

1. Place the dough on a clean work surface that has been lightly dusted with flour. Fold the dough onto itself and roll up. Then shape into a ball by gently spinning it toward you.

2. Optional: Let the dough sit out for 15-20 minutes uncovered. This prevents the dough from sticking to the tea towel during the overnight rise.

3. Turn over and shape. I do this by folding the two sides over to meet in the middle, pinch together and then repeat on the other two sides. This creates surface tension, which helps give it more oven spring (a good rise).

4. Transfer to a floured banneton or bowl with a floured tea towel (typically floured with rice flour, this is not necessary and all-purpose will work just fine) seam side up.

5. Cover with plastic or place in a plastic bag and tie the ends. Let the dough rest for 12-15 hours in the refrigerator. You can also let the bread rise at room temperature for 3-4 hours. I like using the longer rise time in the refrigerator because it is easier to score and feel like the oven spring is better.

Bake

1. Preheat a dutch oven to 500 degrees for 1 hour.

2. Remove dough from the fridge right before baking. Place dough on a piece of parchment paper.

3. Dust with flour, if desired and score with lame or razor blade. I like to do one large score (called an expansion score) and then a cute design for the other score.

4. Carefully, transfer the piece of parchment paper with the dough into the hot dutch oven. Careful not to burn your fingers.

5. Place the lid back on and place the dutch oven into the hot oven. Bake for 20 minutes.

6. Remove the lid with oven mitts, turn the oven temperature down to 475 degrees and bake for an additional 15-25 minutes or until golden brown. CONTINUED >

FILLING

• 3 tablespoons softened unsalted butter

• 80 grams organic cane sugar

• 2 1/2 teaspoons ground cinnamon

• 1 tablespoon all-purpose flour

• pinch of salt

CREAM CHEESE FROSTING

• 5 ounces full fat ounces cream cheese, softened

• 2 tablespoons unsalted butter, room temp

• 1/2 cup + 2 tablespoons powdered sugar

• 1 1/2 teaspoons vanilla extract

• 1/4 teaspoon fine sea salt

Overnight Pillowy Sourdough Cinnamon Rolls

Author: Amanda Paa

Yield: 8 rolls

INGREDIENTS

• 300 grams all-purpose flour

• 20 grams bread flour (Or this can be all-purpose flour. I like the little bit of chew that bread flour adds.)

• 20 grams whole wheat flour

• 30 grams organic cane sugar

• 7 grams sea salt

• 180 grams whole milk, room temperature

• 130 grams active sourdough starter

• 1 large egg, room temperature

• 75 grams room temperature softened unsalted butter, cut into 1/2 tablespoon chunks

INSTRUCTIONS

1. Add flours, sugar and salt to the bowl of a stand mixer. Stir together. Whisk egg, milk and starter together in a separate bowl until no lumps of starter remain.

2. Attach hook to mixer, and turn on the KitchenAid speed 2. Gradually add liquid ingredients until all dry bits are gone. When most of the flour is absorbed, turn mixer to speed 4 and knead for 30 seconds. Mixture will not look smooth, just shaggy. Let sit for 15 minutes.

3. Turn mixer onto speed 2 (using KitchenAid Stand Mixer) and add one chunk of butter at a time to the dough, only adding another chunk once the previous is fully incorporated into the dough. Keep doing this until the butter is all added to the dough.

4. Once all the butter is in the dough, turn KitchenAid up to speed 4 and continue kneading for 7 minutes: the dough will be smooth, and cleaning the sides of the bowl. It will be slightly sticky to the touch still.

5. Overnight rise: Once kneading is done, place the dough in a bowl and cover with a damp cloth or place bowl inside garbage bag. Leave at room temp to rise until double, about 9-10 hours if your home is at 70 degrees F. It will take longer if your home is cooler, less time if your home is warmer. *Because this is a brioche dough, it takes significantly longer to rise, don’t be alarmed.

6. In the morning, the dough will have doubled, have a smooth top and be domed. Turn it out onto a heavily floured counter. Gently pat it into a rectangle shape and let rest for 10 minutes.

7. Using a floured rolling pin, roll it into a large rectangle roughly 17″x 12, making the rectangle so that one of the longest sides is closest to you.

8. To make the filling: Use your fingers to spread the softened butter onto the dough keeping 1/2” away from edges.

9. This will seem odd, but this technique prevents the filling from leaking out while rising.

10. Mix cinnamon, sugar, flour and salt in small bowl. Evenly distribute the mixture on top of butter.

11. Then use your bench scraper to begin rolling up the dough into a log, starting with the long edge closest to you. Use a little extra flour on the bench scraper each time to help pick the dough up from the surface. Don’t worry if it sticks a little; just use a little more flour dust. Roll it down to the top edge and pinch the edge to the dough log to seal it.

12. You should have a long log of dough roughly 17″ long.

13. Now cut the dough log with your bench scraper, at 1 1/2 to 2” intervals (you should get 8 or 9 rolls) and place the rolls into a liberally buttered or greased 9 x 13 inch aluminum pan.

14. Place the pan inside a clean garbage bag and fold the opening over so that no air gets inside. Leave at room temp (in a warm spot if possible) to proof until rolls have risen about 50% in size, this takes about 2ish hours if your house is at 70 degrees (less if it is warm in your home or summer time). If you have a warm spot in your home, put them there to speed things up. They should be puffy.

15. When the rolls are done proofing, preheat oven to 400 degrees F. Place pan in oven, turn down to 375 degrees F and bake for about 25-30 minutes, or until golden brown at the edges, set in the middles and smelling done. Remove and let cool for 15 minutes.

16. Make the Frosting: Beat cream cheese and butter together until smooth. Add remaining ingredients and beat until smooth and airy. When rolls have cooled for 15 minutes, frost them. This will allow the icing to melt into them a bit and create the most fabulous icing.

Wellness Flow The

HELPING PEOPLE FIND CALM IN THE STORM

Nestled in Parker is a serene space dedicated to helping people throughout their wellness journey, both physically and mentally.

Named after one of the five Niyamas of yoga, Santosha Studios combines yoga and therapy in one space. Owner Kelly Klein Nason opened the studio in 2023 and has expanded its offerings beyond yoga classes and therapy sessions to fill a need in the community.

“We try to offer things that you can’t get anywhere else,” she says. “I think there’s not a one-size-fits-all when it comes to yoga, when it comes to interest. I think what we’ve realized is that there is a thirst for wellness right now.”

“I THINK OUR EVENTS HELP PEOPLE FIND THAT PLACE OF ESCAPE OR SURRENDER.”
KELLY KLEIN NASON, OWNER OF SANTOSHA STUDIOS

Santosha Studios is a unique trifecta. It’s a space where people can attend a yoga class, visit with a therapist and find peace and tranquility at a sound bath all in one day.

“We’re living in a lot of high-stress situations,” Kelly says. “I think our events help people find that place of escape or surrender or finding peace against the chaos in whatever form that takes.”

In addition to therapy, Santosha Studios offers 11 different yoga classes and special events, such as mental health workshops, breathwork and sound bath sessions.

“We do offer the gamut of classes because some people really want that headed, humidified and more intense Vinyasa, power yoga practice,” says Kelly, who’s a certified yoga instructor and licensed therapist. “But some people, that’s not their jam; they really want to tap into the more restorative or Yin-style yoga.” Both styles are offered at Santosha Studios regularly.

Each class and special event is designed to be nurturing and meet people where they are mentally and physically.

“My classes, and I think many others, focus a lot on using [yoga] as a way to support mental health, emotional health, even spiritual health,” Kelly says.

Santosha Studios has 12 yoga instructors. It also hosts free community classes three times a week and yoga in the park once a week in the summer.

But the studio’s offerings don’t stop there. Santosha Studios’ monthly calendar also features breathwork and sound bath classes, mental health workshops and a 90-minute event called Relax, which combines a spa night with yoga.

The Relax event starts with a heated room similar to sitting in a sauna, then cools down to simulate a cold plunge. Spalike services include an Aveda facial, zero-gravity chairs, cool cucumbers and body mists. The program then moves into Yoga Nidra, or yogic sleep, a progressive relaxation followed by a guided meditation. It ends with an Aveda comforting tea and chocolate.

“Everything that we do is designed to feel really nurturing,” Kelly adds.

Cozy Colorado Furnished Rentals Creates a Seamless Experience During Your Relocation Process

YOUR RELOCATION SPECIALIST

Whether you’re relocating to Colorado or need somewhere to stay for an extended period of time, Susan Corriere is Your Relocation Specialist. She and her husband, Jason Corriere, have integrated businesses. Through Corriere Real Estate Group and Cozy Colorado Furnished Rentals, your needs are met throughout the relocation process.

Coming from 15 years in the travel industry, Susan shares about her expertise, “I started out as a flight attendant and then travel agent. Then I ended up working for wholesale travel companies and I had great jobs. I would go anywhere! One job, for

example, I educated travel agents on how to market products. I’d take them on fam trips, which were familiarization trips. So, I would wine and dine them and show them all our destinations. I was a host. So, that’s what I like to do! I liked to host and this goes hand in hand with hosting from my travel days.”

Susan has a heart for community, meeting new people and creating smooth transitions home to home. She shares, “The first family I helped, they had one of those power pack batteries explode in their kitchen while they were sleeping, and their house caught on fire. It was the first insurance family that I helped. It was within the first few months of having my properties. They were probably in my property for 8 months, but instead of going to a hotel, they could stay in one of my cozy three-bedroom two-bath houses.”

Her heart to organize the details and host her clients creates a seamless experience while moving. She explains, “People are displaced for a little bit when they’re relocating. Moving is one of the most stressful things you can possibly do in your life. Relocating to another state is even more stressful. But having a place to relax in is great, so I always make sure people are comfortable. Anything you need that you typically have at your house, you have in one of my fully furnished homes.”

Cozy Colorado Furnished Rentals also provides tours for people relocating. Susan says, “As realtors, we’ll pick them up and drive them around, providing a car if necessary. They can look at new areas, houses. Once they find something, then they can stay in one of my fully furnished homes until they close or until their house is built.”

Susan also helps people buy investment properties and turn them into mid-term rentals. For Susan, it’s all about relationships, being ethical, embracing what you have, helping others and always giving back. Visit cozycoloradofurnishedrentals.com for inquiries and to connect with the Corriere’s and their team.

THE BENEFITS OF A REVERSE MORTGAGE

While reverse mortgages have carried a negative reputation over the years, Laurie Gallegos, the Reverse Mortgage Specialist at Zenith Home Loans has seen firsthand how beneficial they can be for the right individuals. Her goal is to help people understand what reverse mortgages are, how they work and who they work best for—so they can determine whether this option could truly improve their retirement years. We asked her a few questions to identify the benefits of a reverse mortgage and also her passion behind her work.

COULD YOU PLEASE SHARE A LITTLE BIT ABOUT YOURSELF?

I’ve been in the mortgage and real estate industry for over 20 years, beginning my career with reverse mortgages. From the start, I saw how powerful this program could be for older adults when used correctly. My very first reverse mortgage was for a family member, and from there it naturally grew into helping other family members and friends navigate the process.

My mother’s experience truly solidified my passion for this work. She has completed two reverse mortgages with me, including purchasing a home using a reverse mortgage—where the buyer

brought in a larger down payment and, after closing, were never required to make monthly mortgage payments.

I obtained my real estate license in 2013, expanding my ability to better serve senior clients who may be looking to downsize— something that, in today’s economy, can often be a smart solution. In 2022, I decided to return my primary focus to reverse mortgages because I genuinely love working with the senior community, especially those searching for real solutions to real challenges.

WHAT IS A REVERSE MORTGAGE AND WHAT ARE THE BENEFITS OF IT?

A reverse mortgage is a unique loan designed for homeowners aged 62 and older (55 and older in some cases) that allows them to access a portion of the equity they’ve built

in their home as tax-free cash. Instead of making monthly mortgage payments, the loan is structured to ease financial pressure and provide more flexibility during retirement.

The funds can be used in whatever way best supports the homeowner’s lifestyle—whether that means supplementing monthly income, paying off existing debt, covering medical expenses or simply having a financial cushion for peace of mind. The home must be the borrower’s primary residence, and homeowners continue to maintain their property taxes, homeowners insurance and any HOA dues.

For many individuals, a reverse mortgage can be a comforting solution—one that allows homeowners to stay in their home, maintain independence and enjoy their retirement years with greater confidence and security.

CONTINUED >

WHAT IS YOUR ENCOURAGEMENT FOR HOMEOWNERS OR EVEN FUTURE HOMEOWNERS?

My encouragement to senior homeowners is to take the time to learn about all of the options available to them. Without fail, when I speak with people about reverse mortgages, most don’t truly understand how they work and are often influenced by long-standing myths and misconceptions.

Having access to a portion of the equity they’ve built over a lifetime can provide the financial support needed to stay current on monthly bills and ease everyday stress, especially with the cost of living continuing to rise—often faster than Social Security benefits.

A reverse mortgage can offer peace of mind, helping seniors maintain their independence and remain in the home they’ve loved for so many years. For anyone who is curious or unsure, I encourage them to reach out to me via email to request information on the most common myths and misconceptions surrounding reverse mortgages. There is absolutely no obligation—just clear, honest information to help determine whether this option could be the right fit.

For many, it’s not about spending—it’s about security, stability and the comfort of knowing there is a safety net in place.
