Take time to enjoy all the small moments with family instead of getting caught up in all the daily tasks that can steal our attention away—to be truly present when spending time with our family instead of dividing our attention with our technology or to-do list. Although we usually aren’t perfect at accomplishing these things, it is worthwhile to strive for them each day. Let your children, nieces and nephews and grandchildren see you slow down. Read a book, play a game, sip coffee in the early morning hours and enjoy the peacefulness of your favorite room or outdoor space. When they grow up, they will know how to slow down and enjoy time together with family and friends at home too. March is our Home and Design issue. Creating a home that you want to spend all of your time in isn’t always easy. Maybe it's time to add that hot tub for restorative relaxation. Easy meals moved outdoors as the days get longer are a perfect way to unwind. Spring can be cozy too with a few transitioning tips. The memories that are made within the walls of our home are what last. The Parker community stepped up to help those affected by the Marshall Fire. Even families that lost their houses in the fire still have the memories they made and the love they share - which is the true feeling of home. In this year’s Home issue, we hope to leave you inspired to make memories, whether you have lived in the same home for years or you have moved many times. A BEGINNER’S GREEN GUIDE Making your kitchen more sustainable and eco-friendly step by step without judgment. ARTICLE BY MADELEINE KRIECH
It’s not easy being green. At least, that’s what that one frog said. While Kermit might be right about a few things, it’s easier than ever to take steps to making your home more eco-friendly. A crucial aspect of living more sustainably is to be aware of your waste, both physical and intangible. Do you consistently throw away produce because it spoils before you use it? Are multiple lights left on for your cat when you go out? How many single-use water bottles did you use while your reusable one collected dust? Now, I’m not asking you to be perfect when it comes to being green. I just ask you take that extra moment to walk to the recycling or turn your lights off. This guide focuses on becoming more sustainable in your kitchen, including growing your own produce and starting to compost. Making one room in your house more sustainable is a great first step on your eco journey.
CREATE A SALAD GARDEN Let’s face it—not everyone has a green thumb. Plenty of plants have died by my hand, but after many failures and a little bit of tenacity, I’m making progress. It’s doubtful the Queen herself will be taking a stroll in your backyard anytime soon, so let’s start small. Nicole Johnsey Burke, the owner of Rooted Down and Gardenary, @gardenaryco, is on a mission to get more people to grow salad gardens. If not deciphered from its name, a salad garden is a home garden that houses your favorite ingredients for a salad: lettuce, carrots, tomatoes, fresh herbs, peppers— you name it! The goal is to grow some produce at home. Produce in our local grocers has a large carbon footprint comprised of water use, refrigeration and travel. Walking out to your salad garden and grabbing some lettuce almost has a carbon footprint of zero. And what’s more rewarding than a fresh salad you grew yourself! To start your salad garden, consider using a feeding trough or an old cooler on wheels. Whatever container fits in your space and can hold soil can become a garden bed. After prepping your soil, plant your chosen veggies, water and wait. It’s that simple—a rainbow connection.

BE A SMART SHOPPER When you do venture for grocery shopping, try to buy in-season and Coloradogrown produce. This ensures your fruit and veggies didn’t have to travel thousands of miles to reach your plate. And if your wallet allows for it, buy organic produce for food that has been grown with the Earth’s health in mind. Remember to bring your reusable bags! I like to use cloth mesh bags for my fruits and veggies and larger bags at checkout. Pro tip: keep your bags in your car so you don’t forget. When you can’t avoid plastic packaging—I’m looking at you berries—stick to plastic numbers one, two and five (the number inside the little arrow triangle). These plastics are most widely accepted by recycling programs.

COMPOST FOOD WASTE Compost is a mixture of decomposing plant and food waste that can be used to reutilize and improve soil health. Whether you’re ready to dedicate a part of your yard to a compost pile or are sticking with an on-the-counter bin, I applaud you for taking this next step in kitchen sustainability. When starting, a good rule of thumb is if it comes from the ground, it’s good to compost. Paper comes from a tree which comes from the ground: compost. Beef comes from cows which do not grow on trees: trash. The big exception to the rule is eggshells. When composting, the internet is your friend. See what others have done in a space that’s similar size to yours. Do some research about compost pickups in your area, like Wompost in Aurora. If your salad garden is doing alright, mix in your compost to see it thrive. At the end of the day, the best thing you can do for Mother Earth is to take sustainability one lettuce leaf at a time. Being aware of where your food came from and how much is going to waste is a good first step. From there you can shop local for seasonal produce and buy the correct amount. Each day you are a little more eco-conscious is a step in the green direction.

STRESS-FREE ALFRESCO DINING!
Al fresco is an Italian word that means, “in the fresh air.” As warmer spring days lure us outside, it is the perfect time to transition to dining in nature and keeping the food and decor fresh and airy too. These recipes are easy to assemble and will be a hit with you and your guests and take you right into summer! (Hint- you can even use store-bought ingredients to make these hassle-free recipes even easier!) Vibrant pops of color are key when it comes to making a splash — for both the food and the table. A bright monochromatic centerpiece nestled in greenery sets the stage for alfresco dining. White plates add crisp contrast and provide a neutral palette so the food is the star of the show. Woven elements provide a bit of coastal flair and are more popular than ever. Thick wicker like rattan and other natural fibers are perfect choices for outdoor furniture as they can weather the elements while exuding airiness. However you choose to set your table, enjoy time with friends and family this spring in the great outdoors.
HUMMUS WITH TOPPINGS YIELD: Serves 6-8 INGREDIENTS • Your favorite store-bought hummus, or make my recipe @ Lauren-Lane.com • Topping Options: • 1 small zucchini or a few radishes, thinly sliced • 1 cup cherry tomatoes, quartered • 1 handful watercress or microgreens • Additional topping ideas: fresh basil, crumbled feta cheese, 1/2 cup toasted pine nuts or capers INSTRUCTIONS 1. Spoon the hummus into a serving bowl. Using your spoon, make a few swirls on the top. 2. In medium bowl, toss toppings together. Add a drizzle of olive oil and a pinch of salt and pepper. Toss well to combine. 3. Drizzle hummus with olive oil and top with the dressed toppings. Serve with pita chips and/or veggies for dipping.

TOMATO PEACH BURRATA SALAD YIELD: Serves 6
INGREDIENTS • A few big pinches of Kosher salt • Freshly ground black pepper • 1 teaspoon dried oregano or 2 teaspoons fresh oregano • 1 tablespoon balsamic vinegar • 1/4 cup extra-virgin olive oil • 2 large heirloom tomatoes or large plum tomatoes, or cherry tomatoes. (about 2 1/2 pounds total) • Two peaches • 8 ounces mozzarella pearls or small balls • 4 ounces burrata cheese • 1/4 cup torn fresh basil leaves plus additional whole leaves for garnish
INSTRUCTIONS 1. Combine salt and olive oil. 2. Place the burrata cheese round on a platter. Arrange the tomatoes, peaches and mozzarella balls around cheese. 3. Drizzle with dressing from bowl. Sprinkle with more salt and pepper. Garnish with additional basil leaves and serve.

GRILLED CORN SAL AD YIELD: Serves 4-6 INGREDIENTS • 2 ears corn, grilled and cut from the cob • 1 small shallot, thinly sliced into rings • 1/4 cup fresh feta or goat cheese, crumbled • 3 sprigs basil, leaves removed and torn • 1/4 cup extra virgin olive oil • 1 tablespoon red wine vinegar • Black pepper to taste • Jalapeño, thinly sliced (optional) INSTRUCTIONS 1. Place corn kernels into a bowl with the rest of the ingredients and stir to combine. 2. Taste and re-season with salt, pepper, and vinegar to taste.
PITCHER VODK A LEMONADE YIELD: Makes 6 Cocktails INGREDIENTS • 48 ounces homemade lemonade (or store-bought) • 12 ounces vodka • Ice, for serving • 1 lemon, sliced thinly • Fresh mint for garnish INSTRUCTIONS 1. Make the lemonade or pour storebought in a pitcher 2. Add vodka and lemon slices (can be made the day before). 3. To serve: pour cocktail over ice and garnish with fresh mint.

STE AK WITH CHIMICHURI SAUCE YIELD: Makes about 1 cup
INGREDIENTS • 1 cup packed, fresh Italian parsley • 1/2 cup olive oil • 1/3 cup red wine vinegar • 1/4 cup packed, fresh cilantro (optional) • 2 garlic cloves, peeled • 3/4 teaspoon dried crushed red pepper • 1/2 teaspoon ground cumin • 1/2 teaspoon salt STEAK • 1 ½-2 pounds flank steak or steak of choice.
PREPARATION 1. Make sauce: Puree all ingredients in processor. Transfer to bowl. (Can be made 2 hours ahead. Cover and let stand at room temperature.) 2. Preheat grill to medium-high heat. WHAT IS BE THE GOOD ONES? Be The Good Ones is a local non-profit created in the beginning of 2020 by [myself], Alex Yakubovich and Erin Jones. We started this group knowing that our friends, neighbors and family were going to need help throughout the pandemic and it has since grown into something bigger and more amazing than we ever imagined. We coined the tag line “Small Needs and Good Deeds” to help exemplify our mission of helping people in our community with small needs. What started with a handful of people figuring out how we could help others is now a thriving group of almost 2,000 members that are ready to jump into action when needed.
WHAT WERE YOUR GOALS FOR THE MARSHALL FIRE DRIVE? The drive for the Marshall Fire just sort of happened. Many people, groups and organizations within our community wanted to help and as we all started to put efforts together, we ended up working together—it was magic! We knew that there was going to be immediate needs like water, hygiene products, diapers and clothing. I made sure everyone understood that as generous as people wanted to be with providing furniture, home decor and kitchen items, these needs wouldn’t be relevant for the next few weeks while displaced families located new housing. Soon, we received a call from a Parker Town Council member asking for as much water as we could gather as the Mayor of Louisville called to say that they were completely out of bottled water and their corporate donations wouldn’t be coming in for four to seven days. That is when we put everything

into action by working with Rob Nelson, SECOR and Grace Baptist Church to host drive-thru donation sites. We told everyone we just needed water, hygiene products and diapers. Our community came out in full force! It was incredible. This went on for about four days, with volunteer truck drivers taking trips up to Louisville and Boulder County multiple times a day to make sure we could get everything up there. We connected with a woman named Jeri Curry who was part of a group called The Enclave, comprised of University of Colorado Boulder Alumni members, who all had friends that lost their homes. Jeri was working with a local bar owner who was setting up shop to become a makeshift store front for families to shop for free for anything they needed. We ended up sending trucks full of clothing, food, pet food, baby supplies and more. It really was amazing.
HOW WERE YOU FEELING AFTER DROPPING OFF YOUR DONATIONS? I think everyone was just ready to do more. We were all happy and excited to help.
WHAT’S NEXT? At this time, the needs are all over the place since many families have located long term housing and everyone’s needs are different. Currently, we are not holding any other large drives or donation drop offs, but are working with a few individual families on their Wish Lists for things they specifically need. As we enter the month of March, you may be getting a case of spring fever. While it’s normal to lose yourself in reveries of warmer weather and outdoor gatherings this time of year, those hopes might be a little premature in Colorado. The Danish concept of hygge is often thought of as a winter practice. At its core, this way of living is not defined by a season, but more through the feeling of contentment in your space. CITY LIFESTYLE: SHARE WITH US YOUR BACKGROUND AND THE INFLUENCE IT HAD ON YOUR JOURNEY TO WHERE YOU ARE TODAY. DAPHNE OZ : I was born in Philly, raised in
New Jersey, and now my husband and our four kids and I live in Florida. I spend a few days each week working in NYC taping our new syndicated talk show, The Good Dish, covering everything delicious in daytime which is a dream job for an eater by nature, by calling and by choice—like I am. My mother’s family is part Italian and my father’s family is Turkish, and these two incredible food cultures inform so much of how I grew up eating and how I love to cook now. The vibrance of flavors, passion for gathering family and friends to the table, and effortless ways in which simple meals become beautiful memories are just some of the ways I try to infuse all my cooking with the joy of this heritage. I’ve been to culinary school, but every bite I take continues my education, and the foundation of my love of cooking started at my mother’s and grandmother’s elbows, watching and then helping them whip up these delicious, nourishing meals for their big families. A perfect example of the kind of epically memorable, wonderfully simple recipes I grew up on is my Grandmother’s Eggless Caesar Salad. It’s bright with lemon and garlic, one or two secret ingredients, plenty of pecorino and parmesan cheese, and ultra-creamy despite no raw eggs! It’s one of my absolute favorite salads, so I made it into an IGTV recipe video about a year ago that has been viewed nearly 7.5 million times online. I get giddy every time someone shares a photo or video of them making it at home.
CL: WHAT ARE YOUR TIPS FOR HOSTING A MEMORABLE DINNER PARTY AT HOME? DO: When I entertain, my general approach
is: Abundant Simplicity. Appetizers are generous piles of a few different things – olives, hunks of parmesan, spiced nuts, torn bread with herby oil to dunk in, sliced Persian cucumbers with a pool of labne or Greek yogurt, olive oil, and flaky salt for
dipping. I look for recipes that are simple or that I’ve made 100 times before that are always crowd pleasers and leave me plenty of time to enjoy my company. The whole point of a beautiful evening together is to make sure you, the host, are relaxed and comfortable, because your guests will take their cue from you. I always set a drink out that guests can help themselves to when they arrive, which frees my hands up to continue any final preparations and has the added benefit of helping them get comfortable and feel right at home.. I like to think my decorating melds are simple, elegant and polished with very plush, soft, round edges, and I love anything that feels handmade with a story to tell. I love making edible centerpieces and will put tons of bowls and platters out in the center of the table spilling over with fresh produce or herbs in terracotta planters that guests can help themselves to. I enjoy colorful glasses, tons of gold candlesticks, and then handmade ceramic plates and pretty, linen napkins to keep it textural.
