Welcome Fall! With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages available in Parker. We had the pleasure of sitting down with Daniel Ramirez, co-owner of Los Dos Potrillos, and Alen Ramos and Carolyn Nugent, owners of Poulette Bakeshop. Whether you love some spice or something sweet, these local favorites can't be beat — so get your tastebuds ready, you are in for a treat. Some fall favorites in our family include savory and sweet choices too — yummy chicken green chili is a cool weather staple and melt-in-yourmouth pumpkin chocolate chip cookies, a recipe from a dear family friend, are in the oven as soon as the crisp air returns. There is an art to creating a flavorful dish that not only satisfies our taste buds but also evokes memories. The aroma of certain spices and foods can bring us right back to our childhood kitchen table, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Douglas County Feast THE DOUGLAS COUNTY FAIR AND RODEO’S FIRST ANNUAL FARMTO-TABLE BRUNCH SHOWCASED LOCAL, SEASONAL INGREDIENTS
On a warm, sunny Sunday during this year’s Douglas County Fair & Rodeo, more than 275 hungry attendees enjoyed the fair’s first-ever farm-to-table brunch that featured seasonal and locally grown, raised, and prepared meat and produce. The easy-morning, decadent brunch with various buffet stations was a delicious way to show off what Douglas County producers can put on the table. Seated around long picnic tables topped with festive bouquets from Parker-based Prairie Hill Flower Co, the guests indulged in farm-fresh eggs made three ways, Challah French toast with house churned butter and maple syrup, Colorado beef and ponzu shroom sliders, and Palisade peach cobbler. The food was prepared by Chef David Pitula of Whistling Boar—a from-scratch caterer/private chef company and artisan bread bakery. Ingredients were sourced from several Colorado farms, including Sandy’s Way Farm, FarmBox Foods, MetaCarbon Organic Farm, and Highland Honey. “Douglas County is rich in agricultural resources and this new event highlighted several of our local producers from honey to beef production, and from mushrooms to flowers,” organizers of the Douglas County Fair & Rodeo say. “The Fair & Rodeo strives to create new events and activities to educate our community, and our first farm-to-table brunch was a unique opportunity to showcase the importance of sustainability and the benefits of fresh foods. With the idea of building community through agriculture, this event gave fairgoers a more meaningful first-hand experience with family and friends. Like so many people, the pandemic changed everything for Chefs Alen Ramos and Carolyn Nugent. The classically trained pastry chefs had spent more than a decade building their careers, working in some of the finest restaurants in the world. In March 2020, they happened to be in Chicago. “We were both furloughed and our son’s school closed,” Carolyn says. “And we thought, ‘Okay, we haven’t had a vacation in forever, we’ll take three weeks off, we’ll just relax and we’ll have a chance to breathe, maybe clean the house.” Of course, the pandemic raged on. “We were really dipping into our savings to pay our rent, there was no rent relief, and the crime rate in Chicago was on the rise.” The married couple who had been living and working in the great city centers of the world decided to make a change. Alen’s parents had retired in Parker and encouraged the couple to give suburban life a try. “There was no end in sight for the pandemic and we didn’t know what would happen next, so loaded up our stuff and drove here,” Carolyn says. “We had never moved without having a job; we didn’t know what we were doing.” Two weeks after arriving in Colorado, Alen and Carolyn opened a pop-up bakery out of their townhouse kitchen window. That was in December 2020. By the following March, the traffic into their community became a bit too much for the neighbors and they were asked to stop selling out of their home. But everything worked out in the end—for both the couple and the customers who love their pastries. In October 2021, Alen and Carolyn opened Poulette Bakeshop.

Specializing in “Americana with a European influence,” patrons of Poulette enjoy sweet delicacies—some with unfamiliar, exotic names like Ducasse cakes and Gianduja macarons, but also well-known favorites like almond croissants and lemon meringue pie. The award-winning bake shop is located on Hess Road in Parker. Open from 8:00 a.m.–12:00 p.m. (or until they’ve sold out) Wednesday through Saturday, Poulette has become part of the community—which is exactly what Alen and Carolyn wanted. “It’s such a joy to see people become friends as they wait in line early in the morning to get their breakfast pastries,” Carolyn says. And the chefs strive for interaction with their customers, too. “We don’t have signs in the display case that name the pastries, which opens a
dialog with our guests as they ask what’s what. It’s so wonderful to be able to share the history and culture of the pastries we make.” “We are privileged, and we don’t take that for granted,” Alen says. “In return, we want to bring high-quality ingredients and high-quality products to our guests.” And even if some of the pastries have fancy French names, there is nothing pretentious about the shop or its owners. “People would ask us, ‘Why would you open your business in Parker?’ They felt like we should be in a city center. But there is a demand here for the same high-quality products we’ve always had in the city,” Carolyn says. “The people of Parker have been so supportive. We don’t know why people are afraid to open a business in suburbia. It’s truly the best decision we’ve ever made.”

Bicyclists and motorists can hop on this scenic route and take their pick of delightful wineries. We chose Colterris Winery, Bookcliff Vineyards, and Meadery of the Rockies.

U-pick fruit is also a must. While summer in Palisade is notorious for juicy peaches, fall is the prime time to pick apples and pears.”
Colterris is the largest winery in Palisade. It’s a family-run, estate-grown winery, which means that 100% of the grapes are grown on land owned or controlled by Colterris. As Lance Lewis poured Malbec into our glasses, he explained how Palisade has the perfect conditions for growing “rich, intense, world-class fruit.” Diurnal temperatures (hot in the day, cool at night) help generate optimal sweetness, and the high altitude gives grapes thick, tannic skin. Bookcliff Vineyards is named so because of its stunning views of the Bookcliffs— flat-topped mountains resembling bookshelves. In addition to the panoramic views, we loved this vineyard for its generous wine tastings and lively environment. Bookcliff offers ‘Sunset Saturdays’ through October. There’s live music and a food truck—we indulged in a gooey brie and jam grilled cheese from Underdog Cheese. Finally, we ended on a sweet note at Meadery of the Rockies. You can sample unique flavors like blackberry mead, apricot honey, and lavender wine. Their honeyed offerings are the cherry on top of a day full of tastings.

Patrick Allen, a tasting room host at Colterris Winery and former Disney employee, moved to Palisade a few years ago. He likens the town to a mini-Sonoma or a mini-Napa and affirms that “there’s no way you could do everything in this area in a weekend.” We agree with that assessment—from vineyards and orchards to hikes and bikes, there are several ways to play during your stay in Palisade.

Daniel and Luis Ramirez know a little something about legacy. Their family originated in Zacatecas, Mexico, and their father was the seventh of 15 children. He moved to America and began working at the age of 13 as a bag boy. After several years of hard work and long hours, Jose saved enough money to open Los Dos Potrillos in 2002. The Ramirez’s inaugural restaurant left Jose with just $5.18 in his bank account. Los Dos Potrillos means “the two colts.” Jose and his wife, Martha, named the restaurant in honor of their two sons. It’s fitting—Daniel and Luis certainly inherited their parents’ ambition and gumption. The family has since expanded Los Dos Potrillos to four locations (Centennial, Littleton, Highlands Ranch, Parker), with two more on the way (Northglenn and Castle Rock.) From rooftop dining to a fast-casual concept in their soon-to-be Northglenn location, the Ramirez brothers are always thinking of inventive ways to enhance the customer experience. They also have two food trucks, Los Tacos and LDP Express, that can be rented out for private events. “When you mix old school with new school, what you get is an unbeatable product,” Daniel says.
THE FOOD Daniel describes the food at Los Dos as “Den-Mex.” They offer Zacatecan family recipes, such as their

grandmother’s shredded beef and classics like enchiladas. They also know that Coloradans like their green chili. Savory dishes like Burrito Los Dos Potrillos and The Chicken Chile Relleno are smothered in housemade green chili. Though Daniel has many favorites, his go-to order is street tacos. “Many people who come in stick with their favorite dishes,” Daniel observes. “But then one day, they’ll take a risk, and that thing will become their new go-to.” Before you dive into your main dish, get some tableside guacamole and prime your tastebuds with the perfect bite of lime, cilantro, and salt. If you are at the Parker location, order a Mexican Amber Lager or Passion Fruit Wheat from the Los Dos Cervecería. The Cervecería makes Los Dos the first Coloradan Mexican restaurant to have a brewery underneath its roof. You can find their beer in a selection of local liquor stores and restaurants. It’s the ultimate outdoor game-day experience you can enjoy in your own backyard or anywhere you love to gather your team for the season. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
