THESE COLORFUL QUINOA BOWLS ARE NUTRITIOUS, FILLING, AND DELICIOUS!

CULINARY CREATIONS

H E A LT H Y MEAL PREP LET ME GUESS. You want to eat healthier this year but aren’t sure how finances or time factor into the equation. This is an age-old dilemma, but luckily it can be solved by a little meal prep! I feel so much better when I know my lunch is healthy and planned out during busy workdays. This recipe is full of color, texture, and flavor, and it’s completely customizable! It has a quinoa base and is topped with roasted chickpeas, loads of fresh produce, and a tahini lemon sauce. I chose a savory, slightly spicy palate with a rainbow assortment of winter vegetables. Make this recipe your own-- this one is vegan but is also delicious with the addition of grilled chicken or salmon.

INGREDIENTS Prep time: 30 minutes Cook time: 30 minutes Total time: 1 hour BOWL

+ salt and pepper

+ 3/4 cup of quinoa

+ 1 red onion + 1 head of cauliflower + 1 head of broccoli + 1 pint of cherry tomatoes + 2/3 cup of olive oil + 1 1/2 teaspoons of cumin

+ 3 cloves of garlic SAUCE + 1/2 cup of tahini + zest and juice of 1 lemon + 1 tablespoon pure maple syrup + 1 teaspoon soy sauce + 1 minced clove of garlic + dash of salt and pepper + 1/4 cup of hot water; add more if consistency needs it


DIRECTIONS 01 Gather ingredients—Preheat oven to 400 degrees. 02 Halve tomatoes, cut cauliflower, and open the can of chickpeas. Put everything in a gallon-sized ziplock bag with a marinade of 1/3 cup of the olive oil, the paprika, red pepper flakes, cumin, salt, pepper, and 3 minced garlic cloves. Set aside. 03 Cook quinoa. I used a rice cooker with 2 parts water, 1 part quinoa, and a dash of olive oil. The same method could be used over the stovetop; add water, quinoa, and oil, raise heat to a boil, and occasionally stir until quinoa absorbs water. 04 Chop the rest of your veggies: sweet potato, red onion, broccoli, and yellow pepper. Put everything (including your marinated veggies) on a pan, drizzle olive oil and s&p, put in the oven for 35 minutes or until crispy. Tip: Cut the stem off the pepper, rub it down with oil, s&p, and roast whole. 05 While everything roasts, make your sauce. The sauce adds a citrusy sweet and Asian flavor profile— it MAKES the bowl. Whisk together the tahini, lemon zest, lemon juice, maple syrup, soy sauce, garlic, salt, and pepper until smooth. Add the hot water and whisk again until completely smooth and creamy. 06 Assemble and enjoy— you’re a step closer to a healthier, more efficient, week! CityLifestyle.com/Parker

Before joining The Exercise Coach, Mark was skeptical that two 20-minute workouts per week could be effective. He spent several years in sports and the Army, taking multiple hours out of his day to exercise. He was looking for a workout regimen that would be challenging while still kind to his three joint-replacement surgeries. After the first workout, his muscles were fatigued and he was sold on the company’s strategy. The Exercise Coach operates on a scientific, personalized approach to wellness. A large part of this has to do with specialized Exerbotics equipment and testing process. Every client has a unique PIN when they get on a piece of Exerbotics resistance-based equipment. The equipment analyzes every client’s baseline muscle condition and provides ideal personal strength recommendations for the coach and client to follow. Then, the equipment adjusts the necessary resistance required to build muscle. Their system eliminates the ambiguity that comes with working out and provides confidence in progress through reports, data, and shaking muscles! The Exercise Coach is accessible in multiple ways. 2. Invite Others to Join You When you’ve settled on the problem you want to tackle you should immediately begin looking for others to join you. In the book, Rob and I recommend starting with friends and family; you already have influence with them, and chances are you’re of like mind in many areas. Go to those family members who frequently ask you for advice or seek your opinion on personal matters, as you likely have greater influence with them. To move beyond family, however, you’ll need to take a leap of faith and begin sharing your passion for solving the problem with other people. Passion attracts, and when people come to you with interest, don’t be afraid to ask them what they think or invite them to improve your ideas. Empowering people to help you creates a bond, and once that bond is established, you will quickly discover who you can truly work with and invite them to take action with you.

3. Do What You Can Where You Are Action is the final step. It doesn’t have to be big or grand; it doesn’t even have to be guaranteed of success. Nothing happens in life until someone does something, and once you take your first step, the next step will come into focus. Remember that transformation is a process, not an event. It takes time and repeated action to bring about positive change. So focus on purpose, not perfection, and do what you know to do. These three steps may seem too simple, but I assure you they work. The goal of all transformational movements is making things better however possible. Incremental change is better than the status quo; and when you’re truly committed to making your community a better place, you know that any improvement is a significant improvement.
