OR 27 YEARS, COURTNEY FRASCH DEDICATED HER LIFE

TO SCIENCE. She earned a PhD in Microbiology and worked as a Senior Scientist at National Jewish Health. While in graduate school, Courtney discovered her love of cooking once realizing that it was very similar to her experiments: mix some ingredients together and observe the result. After a milestone birthday and a retiring boss, Courtney hung up her lab coat. “It was time to feed this other passion,” Courtney says, pun intended.

“It was time to feed this other passion.” That’s when Courtney started, PH[oo]D Specialist, a personal chef service for those needing help in the kitchen. The name of her business nods to her PhD, but Courtney isn’t educated in only microbiology: she also graduated culinary school in 2018, officially becoming a Chef. The largest part of PH[oo]D Specialist is in-home meal prep, when Courtney goes to her clients’ homes and prepares their weekly meals. This service is popular among families, but Courtney also meal preps for some couples. Especially with more clients working from home, Courtney says it feels like she’s “cooking for [her] family.” PH[oo]D Specialist also offers in-home cooking classes. Courtney’s goal is to teach

clients how to successfully use their own kitchen equipment to prepare great food. Courtney’s favorite and most popular class is pasta making, where she teaches the class how to make a few different types of pasta and they all enjoy their homemade meal at the end. Courtney wants people to know that having a personal chef is not an unreachable goal, but instead a great option for those who stress over cooking. Courtney works with her clients to fit their varying needs. She even offers meal prep plans for all diets from vegan to gluten-free. She even once prepared meals for a vegetarian-keto client! When it comes down to it, Courtney is happy she made the switch from Petri dishes to dinner plates. “I want to create amazing food for people to enjoy,” Courtney says. HOT SPOT BLACK + HAUS TAVERN SERVES UP CREATIVE COCKTAILS AND FRESH FOOD TO DOWNTOWN PARKER

MAINSTREET EATS AT THE COVETED CORNER OF MAINSTREET, THERE IS A NEW PARKER TRADITION AND A TABLE WITH YOUR NAME ON IT. Black + Haus Tavern is downtown’s newest spot for sustainable, healthy and satisfying fare. True to its name, Jen Black and her husband, Brent Niedringhaus, opened Black + Haus Tavern the day after Black Friday last year. As the restaurant approaches its one-year anniversary, the couple celebrates continual growth despite indoor dining mandates and labor shortages. Around four in the afternoon, the sunsoaked patio begins to fill with people indulging in an after-work cocktail. Jen sits in the tavern’s cozy interior underneath a string of Edison bulbs as she discusses plans for a new private dining area. Already the space has been booked with baby showers, rehearsal dinners and Christmas parties. The resurgence of local events and festivals keeps Jen and Brent busy as well, amidst all of the day-to-day duties of a restaurateur.

In addition to ambiance and a commitment to local living, Black + Haus shines in their chef-driven menu as well. The head chef, Kurt Eichenberger, has worked with Jen for six years. Coming from a corporate background, he and Jen both love the freedom that comes with owning a local business. He was given liberty when crafting the menu and describes the cuisine as “unconditionally fun and accessible.” Everything is made from scratch to provide guests with the most natural and fresh ingredients. “It’s not like I have to deconstruct my meal to make it suit my dietary needs. We focus on that kind of healthy living,” Jen explains after listing their abundance of gluten free and vegetarian options.

Her favorite menu item is the crispy cauliflower. Lightly fried and adorned with sriracha aioli and sesame seeds, it’s not your average vegetable. On the other hand, Parker’s favorite item is the Black + Haus Burger. This number one seller boasts of bacon jam, cheddar, garlic confit aioli, arugula and caramelized onions on a toasted Kaiser bun.

meal. Their goal was to create an all-inclusive experience

so that every palate and preference leaves satisfied. The wine room is the centerpiece of the restaurant and holds over thirty wines by the glass and over thirty more by the bottle. Bourbon lovers have the option to choose from 115 different varieties and several special drinks, such as the Black Walnut Manhattan with Maker’s Mark, sweet vermouth, and black walnut bitters. The staff enjoys curating creative cocktails and the menu rotates with the season so locals can always try something new. Ultimately, Jen and Brent’s goal is to be a spot where the people of Parker can enjoy a great meal, celebrate what’s good and build community. “The key was going back to basics,” Jason smiles. Simple? Maybe. Essential – definitely! Jill’s background is in retail sales and management and Jason has years of experience in the hotel and hospitality industry. “Our employees embrace our philosophy,” Jason affirms, “which is making each customer feel great. When a customer walks in the door it’s all about the experience.” Just like Jill and Jason, the markets and the stores have been a match made in heaven. Only about 20% of the farmers market vendors fit easily into the stores; yet in both cases, the markets and the LOCALs are representing 100 other small businesses. “We knew we could rebound, but the stores killed it!” Jason beams like a proud dad. As any entrepreneur knows, each business is like having a child - or two! During the past holiday season, community residents were intent on supporting local. “Customers commented that they were buying all of their holiday gifts here (at the LOCAL),” Jason says. Three markets and two retail stores – yes, it’s a lot. So why do Jill and Jason do what they do? They love the success stories! Like Léon, who moved to the U.S. four years ago. In that time, he has married, had two kids, learned to speak English (he also speaks French and German) and has a thriving bakery business.

beaten path, Chef ‘Dennis The Prescott’ is a culinary change maker whose feed you’ll want to feast on. Originally an aspiring musician, Canadian-born Dennis Prescott’s journey began while in university with a single invitation from another solo musician who asked him to tour with them around the US. This eventually took him to Nashville where they began making records and pursuing their musical dreams. Yet, in the midst of all of this, Dennis was not taking care of himself — eating take out, dollar menus, etc, had become a way of life. A friend had a “come to Jesus” moment with him and stressed that he needed to start taking care of himself. Having no idea exactly what that meant or how to do so, the advice was simple: “You need to start eating better.”

The St a r t “Go to the library and borrow some cookbooks,” his friend suggested. Dennis went to a nearby library and borrowed three books only to have his friend ask why he chose those in particular. Dennis remembers saying verbatim, “I don’t know? The guy on the cover looks kinda good looking, and I feel like I could probably pull these recipes off, and he seems really happy too!” As it turned out they were three books by Jamie Oliver; it’s just that he had no idea who Jamie Oliver was at the time. Flash forward and Dennis’ first dinner-hosting experiment was made up of twenty people from the music studio, all sitting in camping chairs with beer koozies and makeshift tables in his apartment. “I remember at the time this moment of, okay, the food is on the table, it’s a stressful thing, and then everybody tucks in and they take their first bite, and there’s a moment of hush that kind of came over everyone; it got really quiet just for a second, and then everyone started talking and getting into it and I fell in love with food right there at that moment. What eventually followed were 13 episodes over nine months where the Restaurants on the Edge team traveled to and filmed restaurant revivals that included three in Canada, one in the continental US, one in Hawaii, and others outside of North America, including Hong Kong, Slovenia, Austria, Malta, St. Lucia and Finland. T r avel R ecom mend at ion s for Food ies “Slovenia borders Italy and Croatia, which is to say there are a lot of shared values in and around food; they have really great cheese, dairy, beef, pasta, but very few tourists, hardly any. So if you love Italy, that kind of specific travel and food experience, particularly Northern Italy, because you can see the Alps from where they are. It’s picture perfect, a beautiful place, and also where orange wine is from.” Dennis also highly recommends Costa Rica, Hawaii and Finland. “Most people love the idea of travel, but we tend to pick the same places when we travel, and there is nothing wrong with that, they are amazing for a reason, but when you get off the beaten path a little bit, you learn the difference between vacation and travel.” Restaurants on the Edge is important and meaningful to Chef Prescott because it tells stories of hope and joy and redemption around the kitchen. Oftentimes the food space can be very stressful, but he believes that at the end of the day, people just want to spend time with other people that they love. One of the most common fears Dennis hears from people cooking and/or grilling at home is, ‘where do I start? I don’t know how to get going, so I just don’t.’ Rather than overcomplicating it, Dennis recommends cooking the things that bring you joy — things that are on a restaurant menu you can’t NOT order because you’re so pumped that those dishes are on there. “Find the things that you love. Take the stress out of food. Feed people because all they really care about is spending time with you. Bring joy back into the kitchen.”

This spooky treat is easy to make and even better to eat! Feel free to mix up the colors and candies to fit your Halloween celebration or any other occasion! Start by lining a baking sheet with parchment paper or another non-stick base. Prepare the toppings that go on the bark: try breaking up the pretzels and Oreos and putting candies in a small bowl for easy access. Melt candy melts according to package instructions (30 second intervals in a microwave works great also). Pour the melted chocolate onto the lined baking sheet. While the chocolate is still soft, add toppings in any fashion. Let bark cool at room temperature or in the refrigerator for a shorter wait time. Peel the bark off the parchment paper and break into pieces. Enjoy!
