LOCAL DEVELOPER HOPES TO SHAKE UP PARKER RESTAURANT SCENE WITH FRESH SEAFOOD, RANCH-TO-TABLE FARE
WHEN YOU LOVE YOUR TOWN, IT’S HARD TO GET MOTIVATED TO FIGHT INTERSTATE 25 TRAFFIC ON A FRIDAY EVENING JUST TO GO OUT FOR A SPECIAL DINNER. That’s part of the motivation behind developer Mike May’s multi-restaurant and boutique hotel project, called West End on Mainstreet, that just broke ground in the summer. The CEO of Mars Development in Parker says he wants to bring something unique to the dining scene in the town he calls home and keep residents spending their money locally—and he wouldn’t mind making Parker a restaurant destination, either. “I’ve been here for 32 years, so I love this town,” says the former Parker Town Councilman and Colorado State Representative. “People can come downtown and choose from several restaurants and not have to go to the Tech Center.” West End on Mainstreet’s signature restaurant, Rick’s Steak and Seafood, will feature Colorado ranch-to-table beef, fresh seafood that will be flown in daily and other ingredients sourced from local farms.

Mike says Martini’s on the Half Shell oyster and piano bar will bring a little Casablanca feel to Parker that doesn’t currently exist. The piano bar will offer flown-in-daily oysters and craft cocktails and wines, as well as mountain views from its patio. West End on Mainstreet will also feature

The Upper Deck, an upscale sports bar with TVs and fire-pit seating on its expansive outdoor deck; Doug’s Diner, serving breakfast and lunch; and West Main Taproom and Grill. Restaurateur Pamela Brier says her West Main Taproom and Grill will offer 54 Colorado brews on tap and Coloradomade spirits. She owns restaurants and a catering company in Omaha, Neb., and says she’s been thinking of the Parker gastropub concept since she moved to the town more than a year ago. “My big thing is partnering with local vendors,” she says. “I want to build a restaurant where the food is fresh, a scratch kitchen, and we’re working with local farmers.” The project, located on Stage Run Road, in between Twentymile and Dransfeldt roads, will include a high-end 51-room hotel called the Laszlo Hotel and is expected to open summer 2019. Mike has been building hotels in Colorado and several other states for many years, so he says it feels good to bring something unique and locally driven to his hometown. “We’d rather create an outlet for local businesses in a unique environment, because if you’re just going to end up at a Jimmy John’s,

PARKER GARAGE CHEF DUY PHAM IS SOMETHING OF A LOCAL CELEBRITY. After 25 years of making headlines in the restaurant scene in Colorado, he’s used to talking to local media about his creative dishes and new restaurant concepts. But on a recent Thursday, just as the Parker Garage lunch shift is starting to bustle, he’s happy to sit down awhile to show off his new love. He proudly displays two Japanese knives with the custom handles he made for two cooks he knows. As he sips his coffee, Duy quietly says he stayed up way too late the night before to finish them. Cooking, Duy says, is his first love. But custom-making handles and learning how to forge knives are his new obsession. It all started about a year ago when Duy needed to replace worn-out handles on several beloved Japanese kitchen knives, some of which he’s used since he started cooking professionally 28 years ago. After figuring out the price tag for new handles, he opted for some DIY. “Instead of the thousands of dollars it would take to replace them, I took that money and went to Home Depot to buy the equipment I needed to make my own,” Duy says. “The first few handles, out of all honesty, were horrible. But I kept at it.” His DIY venture soon turned into a quest to learn all he could about handle making, bladesmithing and collecting. Cook friends began to notice and asked him to make them custom handles. Just weeks after his first crude handle making, Duy spent a week apprenticing with renowned bladesmith Murray Carter of Carter Cutlery in Hillsboro, Ore. Under Murray’s tutelage, Duy learned to forge his own blades using Japanese techniques and carbon steel and earned a journeyman knife maker certificate. Murray says Duy stuck out to him as an eager student who was already well-honed in using his eyes to perfect the blade, something Murray says is not easy to teach or learn but is critical in forging steel into a work of art and utility. And the chef and the bladesmith, who trained for 18 years in Japan, were able to teach each other lessons. “As I taught him how to use his eyes in bladesmithing, every day for lunch we’d travel to different restaurants, and he opened my eyes to different cuisine,” Murray says. After his class in Oregon, Duy threw himself into his new craft. He sold his two-bedroom condo and bought a five-bedroom, three-cargarage in Parker just to have enough workshop space to work on his knives. He’s long suffered from insomnia, so it’s easy to just go downstairs to work on a project in the middle of the night if he wants. The result has been D. Pham Blades, the company Duy started with his Parker Garage partner, restaurateur Brent Walker. He now has almost 3,000 followers on Instagram, where he often hosts auctions for knives that start well over $1,000. He says handle orders have been pouring in from all over the world. “I’m a one-man sweatshop,” Duy says, laughing. He prides himself on his quick turnaround on knife handles, his personal response to every customer inquiry and his ability to create well-functioning tools of the kitchen trade.

TAKE ADVANTAGE OF THIS YEAR'S BUMPER APPLE CROP BY PLANNING A ROAD TRIP TO YA YA FARM & ORCHARD IN LONGMONT. Just an hour and a half north of Parker, you’ll find the perfect food-inspired day trip at this charming throwback to when the region was predominately farms and orchards. The orchard sits on the original eight acres where Percy Goss first planted apple trees in 1896. In 2003, YA YA Farm was born, preserving Percy's original orchard then planting new apple tree varieties and opening as a pick-your-own orchard in 2006. The picking season runs from the beginning of July for cherries through the end of October for some apple varietals and pumpkins. Dependent on the season, there are 128 apple varietals, cherries, peaches, plums, pears and pumpkins. You can even create your own bouquet from the beautiful cut-flower garden and harvest your own vegetables. A visit to YA YA Farm & Orchard offers many activities for the entire family. In addition to picking, they offer hayrides and “adopt an apple tree”. Kids can feed Dolly and Dude, the farm’s recently rescued miniature burros, who want to greet you like golden retrievers. There are turkeys, chickens and peacocks, as well as the commanding Percheron draft horses, Crystal and Sweetie Pie, who love apple and carrot treats. In fact, YA YA is another word cowboys use for “giddy up” and harkens back to the days before the apple orchards when Percheron horses lived here. The Farm Stand, a recently built barn constructed from the remnants of three local barns and the floor of an old house in Longmont, holds many treasures to take home with you. The products in the shop are all made from the produce grown on the orchard. Apple cider, fruit pies, apple butter, applesauce, pumpkin butter, honey and even sarsaparilla are just a few of the treats you will find. YA YA also hosts weddings, corporate events, farm-to-table dinners and Johnny Appleseed School. The wedding ceremony site is surrounded by fruit trees, with Longs Peak in the background and the Flatirons in the distance. A private flower garden for the use of the couple to create their own bouquets is available.
