I remember when my kids were really young (my oldest just turned 18— happy birthday, B!), my husband and I would make it a point to plan adventures for them on the weekends. Zoo? Of course! Park to play? Yes, please. Lego exhibits and The Wiggles, Live? Yes, that, too. The point is, we would explore. We’d explore everything from the town to culture to experiences; we made the time to try things and make memories. As we’ve all gotten older, those times have been replaced with extracurricular activities, carpools, work commitments, and them wanting to spend more time with their friends. We’ve fallen into a routine that’s more about just getting through each day. This issue—our Explore Issue—reminded me that we all need to make time to explore; to try new places and things, to go on an adventure, and to experience more. I hope this issue sparks that for you, too. Where will you go, and what will you experience? From food and drinks to events to cool places around town, there is so much to see and do. Take a class, hike a trail, take in a show. Make time for the things that matter most to you, but often come last on the calendar. If April showers bring May flowers, make time to play in the rain! And I think to myself … what a wonderful world. April 22nd marks Earth Day, which has been observed since 1970! I love that it is recognized all over the globe each year! What a beautiful thing to celebrate—our world! I feel that people have become more aware of the severe necessity to conserve our planet and adopt more environmentally friendly lifestyles. We are lucky enough to inhabit this incredible place, which is very much alive and fruitful, and enjoy it. There are so many ways to give back to our planet. Here are some ideas to do your part. • Reduce, reuse, and recycle. • Volunteer for cleanups in our community. • Educate people, especially our youth, on the importance of conservation. • Conserve our water supply. • Consume sustainable products. • Plant a tree … maybe on your birthday each year. Exploring

MONTEREY COUNTY A stunning coastline, storybook-looking villages, wineries, and so much more are the hallmarks of picturesque Monterey County, California. Getting to Monterey is easy—it’s just a short 1.5-hour flight from Phoenix into Monterey Regional Airport, a small, well-run locale where you’ll often have your bag and be on your way 15 minutes after landing (unless you stop to eat at Woody’s At The Airport, a destination in its own right … but more on that later). You can see the ocean from the airport, and that’s just the beginning of this destination’s striking welcome. Monterey (SeeMonterey.com) sits about 5.5 hours north of Los Angeles and just under three hours from San Francisco on California’s coast, and there is plenty to explore and experience here.

EXPLORE Wander Through Carmel-by-the-Sea This charming village by the sea is filled with storybook architecture, cute shops, wine-tasting rooms, art galleries, and restaurants. The main street—Ocean Avenue—leads to Carmel Beach, which offers both soft sand and the perfect place to catch a sunset. the destination. There’s also a visitor center and shops, as well as several restaurants where you can enjoy a great meal and a great view. Drive the 17-Mile Drive To get to Pebble Beach, you can drive along the 17-Mile Drive. There are gates at each end of the drive, and once through (there’s a small fee, reimbursed with purchases in the restaurants), you’ll follow a red-dotted line that leads the way through changing scenery, including giant trees, open beach views, and more. NOT-TO-MISS EXPERIENCES Go Wine Tasting Monterey County is one of the largest wine-growing regions in California. There’s a wine trail of tasting rooms in Carmel-by-the-Sea (make sure to stop by Dawn’s Dream), as well as other locales, and numerous wineries to visit in the region itself. Dine at Woody’s At The Airport As chef Tim Wood—of Carmel Valley Ranch and Bernardus fame—jokes, “We’re a restaurant with an airport attached.” Indeed Woody’s, chef Wood’s restaurant at Monterey Regional Airport, is both a popular local hangout and a favorite of travelers. Make sure to stop by for a meal and a drink. Drive a Classic Car Along the Coast Monterey Touring Vehicles is a unique locale, offering a selection of iconic classic and vintage cars for rent, starting at just a half day. Visit Carmel Valley Ranch This luxurious, 500-acre destination not only offers a place to stay but also a variety of activities— including golf, a farm tour, biking, and more, as well as a top-notch restaurant on-site. Relax & Rejuvenate Stop by a spa. I loved Vista Blue Spa at Monterey Plaza Hotel & Spa (check out the view from the outdoor area!). Adventurous Ingredients TAKE YOUR TASTE BUDS ON A DELICIOUS DETOUR WITH THESE DARING DISHES

Humans are creatures of habit, so when we find something we like, we tend to stick with it. This is especially true when it comes to food. But while meat, potatoes, pasta, and salads can certainly be satisfying, from time to time, our taste buds deserve an epicurean adventure. For those open to trying something new in the name of flavor, there are copious dishes at varying levels of daring across the Valley. Those who want to start small should consider the Hunkin Samoa Burger ($20) at Hula’s

Modern Tiki (HulasModernTiki.com). A burger sounds safe enough, right? Well, this one has all the usual suspects, including a big beef patty, cheese, a sunny-side-up egg, and fixings including tomato and lettuce, all on a bun. However, the burger is also topped with linguica sausage, a spicy Portuguese pork sausage with oodles of garlic and paprika; fried Spam, a canned pork especially beloved in Hawaii; and Hula sauce, a twist on remoulade infused with ginger for an added tropical kick. Hash Kitchen (HashKitchen.com) also offers a daring dish, without being too intimidating, in its Billionaire’s Bacon ($8 per slab). As with the burger, it starts off innocently enough with premium applewood smoked thick slab bacon rubbed with honey and brown sugar. Then, the dish takes an unexpected turn when the bacon is coated with a glaze of yuzu, which is a citrus fruit from Asia with sour and floral

notes, and then cooked. Once plated, it is topped with edible 24K gold flakes, adding a decadence likely not experienced daily. Ready to dive deeper into unusual ingredients? If so, why not try the Marinated Boquerones ($14) at Don Woods’ Say When (RiseUptownHotel.com), which are meant to transport guests to Southern Spain in a single bite? Boquerones are actually white anchovies, which are exceptionally popular in tapas dishes in that region. At Don Woods’, they are cooked simply with butter, lemon, chives, and select herbs, and served atop toasted country bread with heavenly tomato marmalade. The Pig Face Dumplings ($13.50) at Clever Koi (TheCleverKoi.com) is also a must. Hand-rolled daily, these dumplings bring together the pork cheek, which is the slip of meat in the hollow of a pig’s cheek underneath its eyes, and ultra-briny kimchi, an Asian

staple that intimidates some but is just a take on fermented vegetables. Finally, the dish is topped with from-scratch Sriracha sauce, which many in Arizona can take, but visitors (especially from the Midwest) still shy away from on the regular. Or what about the Risotto de Mare ($42) at Tomaso’s (Tomasos.com)? Its eye-catching dark risotto base is made from the black ink a cuttlefish releases when scared. Perfectly safe to eat, this ink adds an umami quality to the creamy risotto, and pairs perfectly with the briny fish itself. The dish also comes piled high with jumbo prawns, mussels, and clams, making it feel like an indulgent twist on seafood paella. When scared, squid also release a similar ink, which guests of LON’s at the Hermosa Inn (Lons. com) can now sample in the seasonal Diver Scallops ($49) currently on the menu. As with Tomaso’s, the ink is used to add additional layers of flavor to the risotto, but here it is paired with delicately sweet scallops, grilled artichokes, sugar snap peas, and Chimayo chili hollandaise. Now, for the ultra-adventurous dishes … Do not sleep on the Roasted Bone Marrow ($28) at Bourbon & Bones (BourbonAndBones. com), which is the soft, spongy tissue with copious blood vessels found in the center of the bones of most animals, including humans. Eating bone marrow can build the immune system, and its flavor is both decadently buttery and meaty. Finally, there is the Roasted Corn Gordita ($12) at The Mission (TheMissionAZ.com). Sounds tame, right? Well, its signature ingredient is huitlacoche crema. Huitlacoche, also often called corn smut, is a full-on fungus that infects some species of corn. Though it sounds odd, huitlacoche actually tastes like a mushroom-corn hybrid with a hint of truffle. In Mexico, the ingredient is so beloved, it is common to find baskets of it at farmers' markets, just like one would find strawberries or basil.

No one can argue that Mark Victor Hansen isn’t a huge success. The now-multimillionaire has written or co-authored more than 300 books, sold more than 500 million copies of his Chicken Soup for the Soul books, is a global keynote and motivational speaker to top corporations, and is known as the “Ambassador of Possibility.” But it wasn’t always that way. When he tried to publish the first of his now widely popular Chicken Soup for the Soul series, he was turned down 144 times. Yes, 144 times. What set this inspirational and motivational author and speaker apart—and what he strives to teach others—is that he believed in himself, and he didn’t give up. Instead, he saw the possibilities ahead. Since then, the Happiness Hall of Fame (a nonprofit that recognizes special people who have advanced the cause of happiness worldwide) inductee has made it a mission to try to help as many people as possible

reach their potential, find happiness, and find success. “Everyone has infinitely more talent than they think,” he says. “I’m trying to help people wake up to their full self-potential.” In addition to the Chicken Soup books, Hansen has authored motivating books such as The One Minute Millionaire... The Enlightened Way to Wealth, How to Think Bigger: And Go From Ordinary… To Extraordinary, Dare to Win: The Guide to Getting What You Want Out of Life (co-authored with Jack Canfield), and his latest, Ask! The Bridge From Your Dreams to Your Destiny, which he co-wrote with his wife, Crystal Dwyer Hansen. Some of his topics are inspired by the people he meets, he says. “I’m 75, and I’m going to live to be 127—with options for renewal—and I’ve talked to 7 million people live. And, after we sign books or go on YouTube, people always ask questions.

I always go back and process and distill the answers, and I figure if one person is asking, others must be wondering, too,” he says. “They pour their hearts out in 30 seconds and tell you what their issues are, and I’m attempting to address them all.” Hansen also recently launched MarkVictorHansenLibrary.com, which provides ghostwriting and publishing services. Through this, he helps anyone interested in becoming an author create and publish a book. He’s also teaching “the four freedoms” right now, and finishing a book about them. “Those are 1. money freedom to buy 2. your time freedom so you can have 3. great relationships freedom so you can have the 4. freedom to manifest your magnificent purposefulness—that is unique to each individual,” he says. “I’m your wake-up call,” he continues.
