The Man Issue
June 2022 PUBLISHER
Tammy Fellows | tammy.fellows@citylifestyle.com EDITOR
My husband, Dan, loves a good steak. He’s your true steak-and-potatoes guy (or steak with a side of steak, if he could ... !). Of course, this is one area where we differ… me, I’m a pescatarian (I eat fish, but no meat). My favorite foods are sushi and Italian (and cookies, but that’s another story ... ). The good news? He doesn’t have to share! When Dan heard we were working on a story on steak for this issue, well, let’s just say he was ready to grab the list. For the story, we scoured the area for the biggest steaks around—perfect for a manly appetite. It was a fun job, and a perfect story for our annual Man Issue. Speaking of our Man Issue, it’s no coincidence that this issue comes out during the month of June, right in time for Father’s Day! For this issue, we had the amazing opportunity to speak with iconic sports journalist and radio show host Dan Bickley. Funny story—I met Dan’s wife, Tamara, at one of my first jobs here in the Valley. We were both journalists at a local newspaper (she has since switched careers), and we’ve all had lots of years of friendship ever since. They are truly fabulous people. Read our feature and get to know Dan. Also in this issue we feature three men who inspire us, a cool car locale, a great vacation destination, the steaks, and more. Speaking of the steak, well, let’s just say I’ve already made some reservations for a Father’s Day dinner. Happy Father’s Day to my hubby, who is an amazing dad to our kids! Yours,

3 MEN WHO INSPIRE MEET THREE MEN MAKING THEIR MARK ON THE WORLD ARTICLE BY MICHELLE GLICKSMAN AND ALISON BAILIN BATZ PHOTOGRAPHY BY SOPHIA DUBOIS
GARRAD P E R RY PROFESSIONAL SINATRA SINGER Garrad Perry spent his childhood summers in Scottsdale, visiting his grandparents who had moved here from New Jersey. “We’d listen to the radio by the pool, and I fell in love with ’50s doo-wop, Elvis, and the Rat Pack. I’ve always loved to sing and act, [and grew up performing],” he says. Though he had stopped for a while, when his aunt’s birthday was approaching, she asked him to put together a CD of music for the speakeasy, casino-type party she was planning. Listening to those songs sparked something in him, and he again turned to singing. Today, Perry—who moved to the Valley about two years ago—performs at events, restaurants, bars, and more, and acts in various theatre shows. “I love taking people on a nostalgic trip,” he says of his Sinatra performances. “It brings me joy to see a spark regained in a lot of people’s eyes when they hear me.” —Michelle Glicksman

DÉMARIO VAU G H N COMMUNITY RELATIONS MANAGER, MERCY CARE Thanks to his parents, from a young age DéMario Vaughn learned the importance of community. So much so that while in high school, he mentored fellow students—something he would also do while a student-athlete at Arizona State University. Upon graduation, Vaughn began his career as a probation officer to serve the community before getting into higher education and eventually joining Mercy Care in 2014. “Mercy Care advocates for the comprehensive health of our members and their families. We provide access to physical and behavioral health care services for Medicaid-eligible families, children, seniors, and individuals with developmental/cognitive disabilities,” he says. Today, Vaughn serves as community relations manager, helping direct community reinvestment through Mercy C.A.R.E.S., which stands for Community Action Resources Education and Service. “Through this program, our team awarded nearly $3.6 million to support local nonprofits, addressing addictions, housing, school-based services, women’s health, and food insecurity this past year alone,” says Vaughn. —Alison Bailin Batz

“I’ve always loved what I do as a chef, and even in the hospitality and entertainment side of life, I’ve been able to branch out a little as of late and really focus on passion projects that give me the freedom to be more creative and develop young culinary talent—which is really important to me,” says chef Beau MacMillan, who is known for manning the kitchen at Elements at Sanctuary on Camelback Mountain for more than 20 years, as well as his frequent appearances on the Food Network. Recently, MacMillan opened Cala in Old Town Scottsdale. “Professionally, I am focusing on my responsibilities with the Clive Collective group. In addition to reducing risks, men also experience significant improvement in their quality of life while in a supportive aging process through hormone replacement therapy.
There is no reason to suffer or to live in fear anymore. Did you know some benefits of testosterone replacement include: • Enhanced Energy • Improved Sleep • Injury Prevention • Fat Burning
Be proactive with your health and longevity. Consider having your hormone levels measured to find out if your labs are normal or optimal. Why wait? Give us a call today and let us help you age optimally rather than normally.

Forget a new tie or shaving kit. This Father’s Day, get dad what he really wants—a night out with the family to enjoy a big, juicy steak. Maple & Ash sources from Meats by Linz, which is widely regarded as the gold standard when it comes to high-quality aging and butchering in the United States. Linz features 100% Black Angus cattle from its own herd and uses Old World dry-aging techniques, going so far as to age some cuts for up to 85 days. Though there are copious options at Maple, consider The Eisenhower ($215) for dad. It is a 40 oz. porterhouse cooked on the coals of a live wood fire and served with bone marrow stuffing. Like Maple, Bourbon Steak at the Fairmont Scottsdale Princess should be on any meat-lover’s bucket list, especially on a special occasion. Every piece of protein on the menu is natural, organic, and hormone-free, not to mention slow-poached in butter and finished in wood-fueled flames on the grill. Splurge on the 20 oz. Kansas City Strip ($89) when visiting and be sure to add the optional sauce trio. It features house-made béarnaise, peppercorn, and chimichurri sauces that will change your life. When it comes to insane enhancements, Steak 44 is also a must. Everything from a fried egg to black truffle sautéed Maine lobster can be added atop any steak, each of which is cut in-house daily by a master butcher. Of note is the eye-popping 12 oz. Westholme Australian Wagyu Filet. Westholme cattle graze on pristine tracts of Mitchell grass and are grain-fed proprietary blends to produce rich marbling, signature tenderness, and an ultra-juicy bite. Roka Akor also features exotically sourced cuts. The Scottsdale hot spot holds one of only 30 U.S. licenses to source Kobe Beef directly from the Hyogo Prefecture in Japan. Its highly recognizable texture and sophisticated flavor makes it one of the world’s most desirable and in-demand meats. At Roka, the Certified Tajima Kobe Beef is served by the ounce, based on market price. The menu currently boasts a 30 oz. Dry Aged Prime Ribeye ($130). The grass-fed ribeye was sourced from Tasmania, which is known for its clean air, pampered animals, and decadent richness. Each cut is dryaged 28 to 40 days before being trimmed, seasoned, broiled, rested, and paired with seasonal sides. Need more to chew on? STK Steakhouse’s steaks, rubs, and recipes are so coveted that the restaurant offers STK Meat Market, which offers packages of flash frozen cuts paired with spices, chef-curated instructions, and restaurant dining credit. There is even a Cut of the Month Club. An in-person visit is also a must, especially for the Japanese Wagyu selection, which includes A5 Strips, A5 Filets, and even A5 Spinalis cuts. For each, consider adding Wagyu Umami Butter on top or on the side. For views that rival each bite, do not miss J&G Steakhouse at The Phoenician, especially at sunset. The lauded eatery features a 30 oz. Wagyu Tomahawk Ribeye ($155), which is perfectly seared inside a 1,100-degree combination grill and oven before being served still sizzling atop a heated salt block and carvedto-order tableside. Finally, while you know celebrity chef Scott Conant for his pasta, you need to make a date at The Americano or Mora Italian to see his interpretation of steak. At The Americano, his Tagliatelle Wagyu Bolognese ($36) features perfectly grilled beef tenderloin and sauce made with both a beef wagyu and pork ragu that is truly next level. At Mora, the 18 oz. Wood-Grilled Ribeye ($62) is an ample, juicy, ultra flavor-infused cut for the ages.

The Grand Velas Riviera Maya Offers Exploration and Escape From the Ordinary at Every Turn
ARTICLE BY ALISON BAILIN BATZ

M UST SE E | TR AVEL
Mexico has become a hot spot for Valley residents, especially Cabo San Lucas, Rocky Point, and Cancun. But there is another emerging region—one made for those looking to escape the mundane and where adventure always abounds. It is the Riviera Maya’s Playa del Carmen. The region, a massive jungle along the Caribbean Sea, was discovered by the Mayans in approximately 600 B.C. Today, much of the area remains untouched, save for the preserved ruins, swimmable cenotes (underground caves), and responsibly built resorts nestled along the water. The 206-acre Grand Velas Riviera Maya is among the most opulent all-inclusive resorts in the area, especially for those who love the outdoors. The modern, all-suite resort is divided into three sections—Grand Class, Ambassador, and Zen Grand—each with its own distinct look and feel. The 90 suites in the Grand Class section, restricted to guests 16 and older, boast ample oceanfront terraces, and their own personal plunge pools. The 2,793-square-foot, two-bedroom Grand Class Presidential Suite is especially perfect for a getaway with friends. Guests in this room enjoy one 50-minute Velas Maya Therapeutic Massage per person, per day. There are also welcome bottles of mezcal, as well as a full bar, and personalized concierge services to help plan on-site activities such as kayaking, flyboarding, and in-room star gazing, plus offsite adventures—many in partnership with the award-winning Cancun Adventures—including snorkeling through giant turtle habitats, swimming through caves, and even zip lining through the jungle. The concierge team can also set up your group with a trip to the nearby Gran Coyote Golf Course, which was designed by three-time PGA Major champion Nick Price. While the Grand Class is perfect if traveling with friends, the Ambassador experience is made for those vacationing with the family. This section of the resort, 195 suites in total, features a baby concierge and is close to both the Kids’ Club and Teens’ Club. Amenities here include everything from in-room teepees and kid-sized bathrobes to beach toys and family photo sessions. There are even two-bedroom suites tailor-made for

families (complete with stuffed animals), not to mention ample nearby kid-friendly dining and optional en suite plunge pools for those with older children. As with the Grand Class, there are also specialized concierge teams. Notably, they help plan the resort’s dolphin swim programs and newly launched Jungle Adventure Experience. This guided eco-educational tour, given in the resort’s private Yucatan jungle, showcases the area’s remarkable wildlife and natural wonders. It offers families the chance to see mangroves, animals, and a freshwater cenote before learning how to make their own eco-friendly paper and to take part in both a butterfly release and fish feeding. Through December, there is also a golf enhancement package for those staying in the Ambassador suites, which includes a round of golf at the Greg Normandesigned El Camaleón, the first PGA Tour golf course in Latin America.

M UST SE E | TR AVEL
Finally, the Zen Grand Class is for those looking to escape from it all. Set just off the main resort, with shuttle service back and forth nearly 24-hours-a-day, each of these 254 suites features indigenous stone and wood, and comes complete with a plunge pool overlooking the actual Mayan jungle, as well as floor-to-ceiling windows to make you feel wholly enveloped by nature. The best way to describe it: A boutique property in the middle of Disney’s The Jungle Book. Given its distance from the main resort, the Zen Grand section boasts its own dining experiences and pools, as well. Those staying in the Zen Grand Class have access to all the amenities on the main property, just as guests of the main property may come to the pools and restaurants at the boutique space. In total, there are eight distinct dining experiences at the resort, including Piaf, meant to transport you to 1940s Paris; Sen Lin, a fusion of Asian delicacies; Lucca, a modern interpretation
of Italian favorites; and Cocina de Autor, the first all-inclusive restaurant in the world to win the AAA Five Diamond Award. Sporting events are broadcast nightly from 6 p.m. to 3 a.m. at Koi Bar, and there is also an open-air sky bar on the property’s rooftop, as well as a piano bar, mixology lounge, and nightly karaoke. Adults may also enjoy the 90,000-squarefoot SE Spa, named one of the most luxurious in the world by Forbes Travel Guide, lauded for its one-of-a-kind hydrotherapy circuit featuring a clay room, ice room, polar pool, color-therapy showers, and a co-ed experience pool with massaging neck jets, bubble beds, serene waterfalls, and more. The circuit is recommended before any treatment—including the newly launched 80-minute CBD spa experience that focuses on the seven known benefits of Cannabidiol—or on its own. Travel the globe. Hobnob with among the biggest names in professional athletics. Share those experiences with an attentive audience, equally eager to enthusiastically agree or vehemently disagree. And get paid to do all of it. There are arguably fewer gigs sweeter than the one radio host Dan Bickley has helming the popular morning sports talk show Bickley & Marotta on Arizona Sports 98.7 FM. On a Monday afternoon after a brutal Phoenix Suns playoff loss to the New Orleans Pelicans the night before, however, Bickley paints a less flashy picture of the job as he prepares for the flight from the Big Easy to Phoenix. After covering the game, Bickley finally arrived at his hotel room at 2 a.m. He was up at 6 a.m. to head over to a local radio station that agreed to host him so that he could broadcast from the road and be ready to go live at his normal start time in Arizona. The person in charge of opening the studio was late, resulting in Bickley dashing into the studio with just 18 minutes to spare. “But you can’t complain, right?” Bickley says with a hint of the trademark wholehearted chuckle his listeners know well. “In this business, you’ve gotta sleep fast and gotta roll with it.” The longtime newspaper sports columnist-turnedradio sports host’s career demonstrates his ability to do this. And do it well. His nearly four-decade career also reflects an unflinching willingness to take risks, all of which have been beneficial, from his early years as a reporter for his hometown Chicago Sun-Times to his award-winning columnist years at The Arizona Republic and to his current position as one of Arizona Sports’ top voices. He once turned down a job offer from The New York Times, an act that most print journalists would deem sacrilege. He left his coveted position with the Chicago Sun-Times to join the former Copley News Service so he could get on-the-job experience as a columnist—his ultimate newspaper dream job. His most recent big chance was walking away from The Arizona Republic, where he had been one of the paper’s faces, brands, and reader favorites. The decision to jump from print to radio was far from easy. “It was so much a part of my identity. I had never been resistant to change but I’m a newspaper man … but it was hard, I’m not going to lie,” Bickley says of his 2018 move. “But the way the print product was dying, the way companies were pulling back resources, something in me said, ‘This is the time to do it.’” These risks allowed him to thrive into perhaps the state’s most influential sports media professional.
Seven Olympic Games, dozens of Super Bowls, and countless playoff runs—one of which culminated with the Arizona Diamondbacks’ 2001 World Series victory— are on Bickley’s resume. But there was also the trial he covered in 1992, and the bombing at Centennial Olympic Park during the 1996 Olympics in Atlanta—both of which required Bickley to become a hard news reporter on the fly. “You learn how to get the job done,” he says. “I’ve been blessed to have been able to do a lot of different things.” And it all started thanks to tourists and the famous Chicago weather. Merging Two Passions Growing up, Bickley’s father was a bartender at a swank steakhouse in Downtown Chicago. At the end of every shift, he’d go around the tables and gather all of the outof-town newspapers that visitors left behind. He brought them on the train ride to the family’s home on the South Side and gave them to Bickley, who was about 13 at the time. A love for print journalism was sparked. “My dad would get off the train and the papers would be cold. I could smell the newsprint coming off the broadsheets and the tabloids,” Bickley says, savoring every descriptive word as he relives those moments. “The smell of cold newsprint is still embedded in my brain … that’s how meaningful it is to me.” His admiration for the craft grew, fostered by icons like legendary Chicago columnist Mike Royko. The teen was smitten by the idea of fighting the good fight for the little people with the power of the written word. He was also a sports fan and athlete who was usually found on a basketball court or baseball diamond. Destiny was clear. Bickley set his sights on a sports journalism career. After graduating with honors from Harper College, about 30 minutes outside of Chicago, he got his pro start at the Daily Herald in suburban Chicago in 1987. He would go on to the Chicago Sun-Times and Copley, where he was a syndicated columnist. In 1998, with the formation of the Arizona Diamondbacks, The Arizona Republic sought another sports columnist. The newspaper hired him, and like many Chicagoans, Bickley made the move to the desert. Since then, Bickley has penned two books: “Return of the Gold: The Journey of Jerry Colangelo and the Redeem Team” and “No Bull: The Unauthorized Biography of Dennis Rodman.” “I folded that level of infatuation [with newspapers] with my love of sports. I had a natural gift for writing and I kind of put the pieces together and made a career of it,” Bickley says.

More Than a Game Alongside his on-air partner Vince Marotta, Bickley has carved a space in sports fans’ mornings as they drive to work, get ready for the day, and are catching up on how the local sports teams did the night before. Bickley enjoys bringing that humor and energy to listeners, at the barely sunrise hour of 6 a.m. Many catch up at their convenience with the show’s podcast, as well. Even with his veteran status that includes covering Michael Jordan’s six NBA championships, Bickley exudes the enthusiasm of a rookie soaking in every second of a dazzling world. It’s about more than traveling with the teams. It’s about the buzz a winner brings to a town. This is when sports becomes, even if for a few weeks or months, part of the culture and daily life of a community. “Being able to travel with a sports team that carries with it the heart of the city—there’s nothing like it. I’m part of this ride but privileged to provide content and tell stories within this kind of ride,” he says. “Every time a sports team galvanizes a city, whether it’s the D-backs, Suns, or Cardinals, these stories transcend sports and they become important to everybody.” In the midst of the 2022 playoff run, the Suns occupied a top spot on Bickley’s radar. At home games, he’s reminded of how sports can be a great unifier, regardless of the climate outside the arena’s doors. "You look out into a Suns crowd over the past two years, and it's a really young, diverse mix of Latinos, AfricanAmericans, and whites. And it works. And it's a beautiful example to society that if we get by our differences in the political circle, there are great benefits and a great energy that comes with embracing our differences under one

common purpose. It's easy for everyone to get behind a great NBA team in Phoenix, and these moments and playoff runs can teach us so much about each other. It's another reason why sports can be so important in the community and in society,” Bickley says. All About Loyalty When he’s not doing his day job, Bickley enjoys spending quality time with his wife of 25 years, Tamara, who is a professional makeup artist, and their three children: Skylar, 20; Cameron, 19; and Cole, 12. He also indulges his inner rock star as a guitarist for Whiskey’s Quicker, the rock cover band he founded in 2011. The five-man band has played many events, including Roger Clyne & the Peacemakers’ Circus Mexicus and the 2015 Super Bowl in Glendale, when the band took the stage following NFL Commissioner Roger Goodell, who always draws resounding boos. “We were in a perfect spot. There were 5,000 people who would’ve gone nuts for anyone who wasn’t Roger,” Bickley says. But at the end of the day, it’s the feeling of writing a column, hitting send, and shutting his laptop knowing he’s written something that is truly solid and will provide enjoyment and perhaps insight for those who read what he wrote—even when it means not making everyone sing his praises. “You’re around athletes and they are celebrities here. But you write pieces that are positive and critical. It can be a combative profession. You’re not making long relationships and sometimes you're not going to be the most popular person in the organizations you cover,” Bickley says. “I write from a fan’s perspective. I’m loyal to the story and loyal to the reader, not the people I cover.”

After 30 years in the healthcare industry, Ron Evans and his wife Pam sold the business they had owned for 14 years and planned to retire. “I guess I’m just not wired to stay at home,” laughs Evans. After about a month at home, he knew he wanted to do something different. And he knew it needed to involve cars. “I’ve been a passionate car enthusiast my entire life,” relates Evans. “I’d been kicking this idea around in the back of my head for about 10 years.” The reality of those dreams—The Vault of Scottsdale— opened in December 2021.
THE VISION OF SOMETHING UNIQUE Evans says they designed The Vault to offer three things: • Storage for luxury, classic, and exotic automobiles; • A unique event space; • A way to share a passion for cars with others.
A UNIQUE EVENT SPACE WITH AN AUTOMOTIVE TWIST ARTICLE BY SUSAN LANIER-GRAHAM PHOTOGRAPHY BY JAMES PATRICK
While The Vault focuses on vehicle storage in its 16,000-square-foot space, Evans is excited about being a gathering space for the community and working on that third goal of sharing his passion for cars with others. “Once a month, we host Cars & Coffee for the public. People can come in and see the facility, bring their cars, have coffee and donuts from the food truck, and hang out with other car enthusiasts.” Evans says the biggest bonus for him is to see the variety of cars in The Vault. “We have everything,” he says. “I’m sitting here looking at a ’65 Lincoln Continental convertible. We have modern exotics, and supercars like Ferraris, Lamborghinis, and Porsches. We have Mustangs, Corvettes, and Camaros. We have several trucks here. But mostly, if the car is special to the customer, it’s special to us, whether it’s their dad’s ’48 pickup or a new Lamborghini.” CONTINUED >

Evans explains that it is far less expensive to house cars at The Vault of Scottsdale than for individuals to build additional garage space. The Vault handles insurance, security, and utilities, and can keep cars plugged into battery maintainers. While some members leave cars permanently, others store cars while they are away for the summer. Evans says they also take in vehicles for special events. “During Barrett-Jackson [Auto Auction], we had a ’32 Ford owned by the Beach Boys and used in their films back in the ’60s.” The Concierge service is one of the most significant membership benefits. Evans explains that he treats members’ cars with the same care he would treat his own cars. “We have a company that comes in and details. We can exercise older cars because they don’t like to sit. If the car needs to go for an oil change, we can take care of that. We even arrange photographer services.” Evans explains that they can make it all easy, and the owner shows up, drives the car, and enjoys it.
MEMBERSHIPS There are currently two types of memberships. Social memberships are for those who don't have a vehicle to store but want to use the conference room and lounge and attend private, member-only events. Full membership includes the social aspects along with vehicle storage.
EVENT SPACE Evans is perhaps most excited about the facility's great event space, which is available to the community. The Vault can host events for 20 to 250, extending to 350 with outdoor tents. Recent events include a golf apparel company during the Phoenix Open, a supercar unveiling during the Barrett-Jackson Auto Auction, a local charity event, and a venue for Phoenix Fashion Week.
Evans is happy to turn his passion into a business and share that passion with others. VaultofScottsdale.com
