Still, never do I love that more than when I get the opportunity to share stories of people who are working to make a difference in other people’s lives. There is so much to be thankful for—and that includes the residents and businesses in our community who support so many wonderful organizations and help make our city the vibrant community that it is. A time to give thanks … Gratitude. This could easily be one of my, if not my absolute, favorite feelings! There is nothing quite like the feeling to be grateful for life. There are so many blessings to acknowledge—family, friends, good health, the air we breathe, the place we live, and the love we feel. Life really is beautiful, especially when you are a grateful person. Every day when I wake up, I remind myself how blessed I am. With this brings a tremendous feeling of joy and love—it really is spectacular! The best part is it’s completely free! In fact, not only is it free for you, but it’s free for everyone. If people could remember just this one thing, it could lead to so much beauty—connections, new friendships, opening doors, helping others, kindness, abundance, and the list goes on … I want to take this opportunity as a friendly reminder to tap into gratitude—every day. It will change how you view the world. With gratitude, fear and anger cease to exist. When we are grateful, it voids out negativity and judgment and only love can exist. Up Your Menu Game THREE LOCAL CHEFS SHARE SOME OF THEIR FAVORITE THANKSGIVING RECIPES
Stuffed Butternut Squash by Chef Mark Tarbell of Tarbell’s, Tarbells.com
BUTTERNUT SQUASH • 1 large butternut squash • 1 Tbsp. brown sugar • 2 Tbsp. extra virgin olive oil (EVOO) • 1 pinch of salt Peel butternut squash. Cut it in half and scoop out the seeds, and some meat from the neck. Rub it with EVOO, brown sugar, and salt. Place it in a pan, and roast for 25 minutes at 350 degrees, or until tender (check with a toothpick). Set aside. THANKSGIVING STUFFING • ¼ cup butter, melted • 2-3 cups chicken stock • 1 lb. chorizo • 2 cups celery, small diced • 2 onions, small diced • 2 cups carrots, small diced • 4 cups dry bread, small diced • 2 cups pumpkin seeds, toasted (dry toast in oven for 5 minutes at 250 degrees) • 1 egg, beaten • 1 tsp. salt • EVOO In a medium-size sauté pan, add a small film of EVOO and sauté onions, carrots, and celery for 5 minutes. Add chorizo and cook it down. Transfer to a bowl, and mix in bread, butter, eggs, pumpkin seeds, salt, and chicken stock. Let it sit for 20 minutes and let the bread absorb all the liquid. Stuff the butternut squash with stuffing and bake at 350 degrees for 25 minutes or until golden brown. Optional: Garnish with fresh cilantro. Makes four servings.

BRUSSELS SPROUTS • 4 cups Brussels sprouts, blanched for 15 seconds, then shocked • 3 Tbsp. olive oil • 1 tsp. salt • 1 Tbsp. shallots, minced • Aged balsamic, as needed MIXED HERBS • 1 Tbsp. parsley leaves, chopped • 1 tsp. thyme, picked • 1 tsp. rosemary needles, chopped • 1 oz. shelled, toasted pecans* To blanch the Brussels sprouts, bring salted water to a rolling boil, immerse in the water for 15 seconds, and then remove the Brussels sprouts and shock by immersing in an ice bath until cool. To toast the pecans, preheat the oven to 350 degrees. Spread the pecans onto a rimmed baking sheet and roast until they are golden brown and aromatic, 6 to 9 minutes, tossing halfway through. Get a large saucepan smoking hot, and then add olive oil. Once hot, add Brussels sprouts and toss, and then season with salt. Roast on high heat until caramelized and tender. Add the shallots, tossing until tender, then all herbs. Toss until herbs are lightly fried, then toss in the pecans and place in a side dish. Sprinkle with a small amount of balsamic and serve. Makes eight servings. *Chef Qualin prefers pecans grown in Southern Arizona, such as from The Green Valley Pecan Company (GreenValleyPecan.com).

AZ Stuffing by Chef Jeremy Pacheo of Genuine Concepts (The Genuine, Campo Italian Bistro and Bar, The Vig, The Womack Cocktail Lounge, The Little Woody), GenuineConcepts.us • 8 lbs. fresh focaccia croutons (from Noble Bread) • 1 lb. butter • 16 cups onions, small diced • 8 cups celery, small diced • 8 cups carrots, small diced • 4 lbs. bulk chorizo (from Arcadia Meat Market/Schriener’s Sausage) • 4 cups fresh sage, chopped • 16 quarts chicken/turkey stock • 16 Tbsp. fresh thyme, chopped • 4 cups fresh parsley, chopped • 2 lbs. dates, pitted and quartered (from McClendon Farms/Sphinx Date Ranch) • 8 cups Willcox Pistachios, coarsely chopped (from McClendon Farms) • 8 Tbsp. salt • 16 tsp. pepper • 8 cups pomegranate seeds (from McClendon Farms) Cut focaccia into 1-inch cubes. Lay them on a sheet pan and dry in very low oven until focaccia is completely dry (can be done several days ahead of time and held at room temperature until ready to make stuffing). Place in a large mixing bowl when ready to make stuffing. In a large pot, heat up butter over medium heat, add onions, celery, and carrots, and sweat until just tender. Add chorizo and cook through. Add stock and bring to boil, season with salt, pepper, and herbs (adjust seasoning, if necessary—it should be seasoned very well). Pour all ingredients over dried focaccia and mix very well to incorporate all ingredients evenly. Add quartered dates and mix through again. If stuffing seems dry, add more stock; bread should be moist all the way through. Place in a greased baking pan, refrigerate, and hold for later (can be made up to two days ahead of time). When ready to serve, cover pan with foil and place in 350-degree oven for 30 minutes or until heated all the way through. Remove from heat and top with pistachios and pomegranate seeds. (All local ingredients are available at local farmers’ markets.) Makes eight servings.

Changing the World and Giving Back Joel Barthelemy is Dedicated to a Life of Service
Joel Barthelemy, founder and CEO of GlobalMed, has changed the face of health care with quality and timely care for thousands of people around the globe. “I saw what was going on with health care—people unable to access what they needed—and I knew I didn’t want to be an elderly patient in that system,” he says. “I wanted to take what I knew in the field of technology and apply it to health care.” So, in 2002, he founded GlobalMed. GlobalMed offers virtual health care solutions and enables clinicians with the most advanced health platform to provide care to patients no matter the place or time. Under Barthelemy’s leadership, GlobalMed has improved the delivery of health care in more than 100 countries. The technology is used by the U.S. Department of Defense, as well as by the past three administrations for the president of the United States. Barthelemy, who originally hails from Minnesota, moved to Arizona in 1993 and fell in love with the weather and the friendly business climate. “It took me 19 years before I actually realized I wasn’t on vacation,” he says. “Waking up to blue skies and sunshine every day.” He also met his wife, Shannon, in Arizona. They have been married for over 23 years and have three sons: Jorryn, 22; Drew, 19; and Grayson, 17. Barthelemy’s commitment to service and giving back began at a young age. At 21, he joined the Marine Corps. His father was in the army, but Barthelemy
says it was two other men who influenced his decision to join the Marines. “My uncle and my best friend’s dad were Marines and they always stood out to me as exceptional men.” Today, he continues that mission of giving back. GlobalMed supports organizations such as Toys for Tots, Blanket the City, the Wounded Warrior Project, the Diaper Bank of Central Arizona, and Phoenix Theatre—to name just a small few. He also sits on the board of Sun Health Services, the Arizona Bioindustry Association, and the Health Futures Council at ASU. Barthelemy is also an ambassador to the Veterans Medical Leadership Council (VMLC), an organization that is particularly near and dear to his heart. Every year, the VMLC hosts the Heroes Patriotic Luncheon, and GlobalMed has served as its presenting sponsor for several years. This year’s luncheon will take place on Nov. 10 at the Arizona Biltmore. VMLC’s mission is to ensure quality medical and mental health care for veterans in the Maricopa County area. The organization encourages initiatives that honor the contributions made to the city, state, and nation by veterans and the men and women serving in the U.S. military forces. They are committed to providing much-needed financial support to veterans in need. “I am so moved by this organization. GIVING BACK ON THE GO Brenda LaTowsky, M.D., founder and director of Clear Dermatology & Aesthetics Center, became a physician to help others. Not only does she accomplish this at her brick-andmortar location, but she and her expert team also take their professional skincare, dermatology, and aesthetic services on the road through their Clear VANity concept. “Clear VANity is our custom Mercedes Sprinter van that provides aesthetic services in an upscale, private mobile suite, adhering to the highest medical standards,” LaTowsky says. Clear VANity’s services can be booked for personal occasions, special events, and pop-ups. But in addition to mobile skincare services, LaTowsky and her team also utilize Clear VANity to give back to the community. Clear VANity services have been donated to raise funds for the Phoenix Women’s Board of the Steele Children’s Research Center (PANDA), and it was featured at the
Mercedes-Benz Fashion Show that benefitted nonprofit Magical Builders. Over the next year and a half, LaTowsky says that Clear VANity plans to be part of local fundraising events for Trends Charitable Fund, Make-A-Wish Foundation, Childhelp, and One n Ten. TEZCAZUL TEQUILA One Man’s Passion for a Quality Product Leads a New Brand
For Michael Rowe, creating a new tequila brand all began as a hobby and is quickly turning into a dream. “I grew up in California and spent a lot of time in Mexico. Not surprisingly, I quickly acquired a passion for tequila. Not only for its flavor, but also for tequila’s link to its ancient Aztec culture,” he says. At one point, Rowe realized he wanted to create his own brand to learn more about the spirit’s history, origins, and manufacturing process, and discover for himself why tequila is considered the “Mexican by Excellence” beverage and part of the way of life for many Mexican people. The journey and education began … creating Tezcazul. When Rowe set off to fulfill his passion, he headed to what some experts consider the birthplace of tequila: Amatitàn, Jalisco, Mexico. “I made a contact in Guadalajara and we drove to Amatitàn, about an hour outside the city. We hiked through the cobblestone streets, knocking on distillery doors, and spoke to many knowledgeable tequileros about their product and processes,” he says. “Then, I met the man who had all of the right answers [I was looking for], so we sipped samples, smiled, and shook hands. The next thing you know, I am contemplating brand names, searching for bottle-makers, designing labels, and doing everything else that is required to obtain my personal stash of handcrafted tequila.” After learning about the United States—and Mexican—federal licensing requirements and importation processes for a couple hundred bottles, Rowe asked himself, “Why am I not doing this as more than just a hobby?”
CREATING TEZCAZUL That moment, Tezcazul tequila was born, and would now become available for everyone to enjoy. Rowe knew from the outset what he wanted. Not only did he want a pure tequila, manufactured in the traditional fashion, but also free of any additives, as well as being certified organic.
“I wanted a product I could be very proud of,” he says of his tequila. “A tequila that pays homage to the Aztec gods who first discovered its magical qualities.” Hence the brand name was decided: Tezcazul. A blend of letters starting with the first few from Tezcatlipoca, the ancient Aztec god of the nocturnal skies, and the Spanish word for blue, azul, representing the Blue Weber agave plant from which the spirit is made. “We are a handcrafted, artisanal tequila, made from organically farmed, sustainable, 100% blue agave. We implement traditional manufacturing processes and are dedicated to maintaining the purity, quality, and essence of this wonderful Mexican spirit,” Rowe says. “The response to Tezcazul has been fantastic!” he continues. “Our tequilas are made for everyone, from the shooters, blenders, sippers, and of course, the bottle collectors. Our bottles were intentionally designed in a simple fashion to add to the artisanal quality, but primarily to focus your attention on the liquid inside. It’s all about providing quality, artisanal tequila to those who can truly appreciate tequila.” There are four Tezcazul tequila expressions: Blanco, Reposado, Añejo, and Extra Añejo. Tezcazul Blanco is a natural, pure, earthy expression with hints of herbal and citrus flavors bottled directly from a stainless-steel fermentation tank following a double distillation process. Blanco is the essence and foundation of all Tezcazul tequilas. Tezcazul Reposado is rested for eight months in seasoned American white oak barrels, and is a favorite for sippers and mixers alike. After a timely, precise release, Tezcazul Reposado emits fresh aromas and subtle flavors of vanilla and citrus extracted during its “short” siesta in the cool and dark security of its temporary wooden home. Tezcazul Añejo is aged for 18 months in seasoned American white oak barrels. The rich and flavorful Añejo excites the nose with aromas of smoked agave, caramel, and vanilla. The noticeable amber color is representative of this full-bodied, smooth tequila offers a lingering and lasting experience from the first sip to finish. Tezcazul Extra Añejo is an

exceptional representation of a slow, nurturing process, extending over a very patient 60-month period of maturing in seasoned American white oak barrels. Well worth the wait, the Extra Añejo offers sophisticated and savory flavors of vanilla and caramel that truly deserve the title and recognition of a distinguished, unique, fine, handcrafted tequila. While Rowe created Tezcazul and is the importer, he’s been working with David Fox of International Brands and Beverages to distribute the tequila. The two have known each other and worked together for many years. “In the United States, a single company cannot be both an importer and distributor,” Fox explains. “So in late 2018, I started International Brands and Beverages in Tucson to distribute the brand in Arizona for El Tomandante and Tezcazul.” Today, Fox has moved the base of International Brands and Beverages’ operations to Phoenix, and there are now four managing partners—Fox; his son, Matthew; and Tammy and Eric Fellows—guiding it through the startup of sales and marketing. They have located the world headquarters in a newly refurbished space in the Scottsdale Airpark that includes offices, a warehouse, and facilities for introducing Tezcazul to new clients with private tastings. International Brands and Beverages is the exclusive distributor for Tezcazul, and the brand is the company’s primary focus. In the future, they are open to distributing other brands as Tezcazul becomes successful and opportunities come their way. Fox says they are launching Tezcazul in the Arizona market first, with other markets to follow. “Arizona is the seventh largest tequila market in the country, and we chose Phoenix for the launch based on our partners’ long history in the area and its high percentage mix of restaurants, bars, and retail outlets that sell tequila,” he says. “The distinctive thing about Tezcazul is that it’s a smooth, well-rounded, great-tasting tequila that adheres to traditional production methods with no additives,” he continues. “I think that the work that Mike has done with the distiller to create unique flavor profiles separates it from the other tequilas out there, and it’s certified organic and kosher. “This is all about providing a quality, artisanal tequila to those who appreciate tequila,” says Rowe. 2 oz. Tezcazul Blanco Kosher salt 1 grapefruit wedge 2 oz. fresh grapefruit juice ½ oz. fresh lime juice 1 tsp. sugar 2 oz. club soda (¼ cup)
Pour some kosher salt on a plate. Rub half of the rim of a highball glass with a grapefruit wedge; dip the rim of the glass in salt. Combine grapefruit juice, lime juice, and sugar in the glass; stir until sugar is dissolved. Stir in mezcal or tequila, add ice, and top off with club soda. Garnish with a grapefruit wedge.

Tezcazul Blanco • 4 oz. orange juice, freshly squeezed • ¼ oz. grenadine • Orange slice (for garnish) • Cherry (for garnish) Add the tequila and then the orange juice to a coupe cocktail glass filled with ice. Top with the grenadine, which will sink to the bottom of the glass, creating a layered effect. Garnish with an orange slice and a cherry.

Usually, it’s the child who carries out the legacy of a parent. The reverse is true for Lorraine Tallman, the founder and CEO of Amanda Hope Rainbow Angels, yet she has a full heart being the executor of her late daughter’s dreams. Since 2013, the foundation has assisted countless children undergoing cancer treatment and other severe debilitating conditions and their families by offering an umbrella of services that address nearly every need, from the physical to the mental to the financial. It all began with Comfycozy’s for Chemo, Amanda’s concept-turned-tangible apparel for children undergoing chemotherapy like her. Amanda designed a shirt with a peekaboo compartment that allowed for the port to be accessed discreetly without her body being exposed. This accomplishment came prior to her passing away two weeks before her 13th birthday in 2012, following a battle with leukemia and a brain tumor. Originally, the project was slated as a mother-daughter venture to help kids in her situation maintain their dignity during this difficult time. But that never happened. Tallman says Amanda knew she survived leukemia but had a feeling she would not outlast the tumor. “She made me promise that I would help every child with cancer,” Tallman recalls. “And an endof-life promise is one a mom is not going to forget.” The clothing is donated to children and organizations, with companies building care packages and sponsoring the production and designing of Comfycozy’s as team building or philanthropic efforts. Tallman’s foundation serves 100-120 new patients a month undergoing treatment that requires a central line, including dialysis.
Today, children in every state plus Canada, Mexico, Italy, China, and Venezuela are finding comfort in Amanda’s dream come true. The vast lineup of services also came from Amanda’s wish to alleviate many of the struggles other families with a child in treatment endured by addressing gaps in care. This includes family therapy, which is especially helpful to a parent watching over their child. Amanda was also aware of the financial toll that can ultimately lead to mental and emotional strain that most parents are unprepared for. This sparked addressing areas such as financial aid and mental health. In May, the organization added an integrative health component that incorporates massage, reflexology, and more. “If insurance doesn’t pay for it, hospitals would not provide it,” Tallman says. “Grieving happens the moment you hear the ‘C’ word. You are grieving the loss of everything you thought was possible.” Tallman sees the difference Amanda’s vision is making daily. She talks about the sibling of a child who had relapsed from cancer. The sibling knew how the previous diagnosis overwhelmed and consumed their mother, leaving the sibling to cope with everything alone. The mother found out how deeply her child was hurting and reached out to Tallman, who arranged for family therapy. “I know we saved that child’s life,” Tallman says. “We’re the helping hand, we’re the encourager.” Feelings of utter joy and pride come with knowing that her daughter’s must-do list is complete. “Amanda would always say, ‘Mom, we need to help.’ She wanted the full circle of family care,” Tallman says as her voice gently cracks. “Everything she wanted is being done. It was a tearful day when her bucket list was finally accomplished.” AmandaHope.org

• Build a menu around the season. “In November, people crave turkey, sage stuffing and cranberry sauce,” Chef Kyle says. “Autumn dinners mean bigger-course meals with varied proteins, like turkey, duck and sirloin, hearty starches, and good fall produce, especially root vegetables such as butternut squash and pumpkin.” • Always greet guests with a beverage and appetizers. “Offer champagne for wine-lovers or a sparkling drink or signature cocktail. It’s all about serving guests to the highest caliber,” Kyle says. • Draw inspiration from the season’s changing colors, cooler temps and lower humidity to move back outdoors. “Think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.” • “You can’t go wrong with fresh flowers,” Hannah says, “but keep bouquets low to not interfere with conversation flowing. For fall, I like richer, jewel-toned florals to mix and match and keep whimsical. I vary glass vases with burnished brass for warm fall vibes.” • An easy but thoughtful detail is to put a simple menu at each place setting, so guests know what to expect. “Add a pen, so guests can jot tasting notes, especially for wine pairings or multiple courses,” Hannah says. “Guests can share comments, then take the menu home as a sweet reminder of the event.” • Follow the French principle of mise en place or everything in place before your event. “This is actually our company’s name,” Kyle says. “It’s that important to us. Make sure the wines are all open, cocktails are pre-made, place settings are out, candles are lit and music is playing. When guests arrive, it gives that wow-factor and shows you intentionally made them feel special.” • To build confidence as a host, start small and practice. “Keep the menu and guest list small,” Kyle says. “Choose recipes you already have confidence in. If you make a great Beef Stroganoff, then go with that. People will love it!” • As fun as it is to dine outside, always have an indoors back-up plan. “We’ve had to bring it indoors before,” Hannah says. “It’s still fun.”

On Nov. 5, some of the world’s greatest polo players and teams from around the world will take the field at The Bentley Scottsdale Polo Championships: Presented by Talking Stick Resort, including Nic Roldan, Nacho Figueras, and Sunny Hale. Joining them will be former National Hockey League player Shane Doan. While he was always perfecting his hockey game, the former Arizona Coyotes captain also grew up riding horses—even owning a horse ranch for many years. “Now that I’m retired, I feel like it’s a good time in my life to try the sport and see if I can put some of

my hockey skills to good use and play polo.
