Thanksgiving gathering, I’m grateful that 2021 will be a gathering of grandparents, grandchildren, aunts, uncles, cousins, and relatives of all ages. One thing that came sharply into focus throughout the pandemic was how much we took getting together in-person to celebrate milestones for granted—or at least I did. I’m lucky that my parents, my sister, and my aunt all live within a short drive of me, and that I see them on a regular basis. My kids spend time with their cousins often.

AAWL's Evening to Paws The Arizona Animal Welfare League’s (AAWL) Evening to Paws gala had all the pup-arazzi in Scottsdale busy in late September as fourand two-legged guests dressed to the nines walked the red carpet rolled out at the Omni Scottsdale Resort & Spa at Montelucia. It was a record-breaking night for the state’s oldest and largest no-kill shelter, which raised over $400,000 to support AAWL’s lifesaving programs.

THANKSGIVING IS ALMOST HERE, AND MANY OF US ARE LOOKING FORWARD TO GATHERING WITH FAMILY AND FRIENDS—AND OF COURSE, EATING THE DELICIOUS FOOD. But, for those trying to practice a healthy lifestyle, this time of year can be filled with challenges. So, what can we do to enjoy all the holiday has to offer, while still maintaining or even beginning a regime that will allow our bodies to function at their best? Dr. Carrie Bordinko, Chef Chris Lenza, and Performance Nutritionist Sherry Ward from Benessair Health (Benessair.com) are here to give us some great tips on having a healthy and happy holiday. “Maintaining a healthy body composition is really important because body composition is tied to many chronic illnesses,” says Dr. Bordinko, who founded Benessair to provide clients with the best programs for overall health, weight management, and athletic performance. PLANNING YOUR MEALS To best prepare for the upcoming season and the hurdles that may await, Dr. Bordinko finds planning ahead critical. “If you think forward about how you’re going to make choices throughout the season, you will survive with flying colors,” she says. “For many of us, it comes down to meal planning, and that’s where Chef Lenza comes in. He is able to help people understand the balance between different macronutrients and having healthy, holiday-type foods that still stay within those macronutrients and those calorie restrictions that we all need to be consciously aware of.” Says Chef Lenza, “Challenge yourself to shop at the farmer’s market. You’re going to find seasonal foods there that are going to be 30

nutritious and taste really good for your holiday events. For something as simple as pumpkin pie, buy an actual whole fresh pumpkin and roast it yourself. This way, you’ll have control over the ingredients in that pie as opposed to one that you purchase.” He also recommends using healthier fats such as olive oil, and incorporating avocados and healthier nuts and seeds into your diet. “Also, transitioning from processed flours to using ancient grains can really be beautiful on your holiday table.” In addition, he advises using more whole foods and being cognizant of your portion sizes. Dr. Bordinko agrees. “Fillers are being used in our mass production processes, and what most people will notice when they transition to whole food cooking is that they get fuller with less calories,” she says. “For those who have a little bit more control issues, I tell them to put only protein on their plate first. After they finish the protein, they can then start looking at the other food sources like fats and carbohydrates. Two things will occur—first, they fill up on the good food source, and second, after about 20 minutes, the brain sends chemicals out to their body that tells them they’re kind of full, so they’re going to naturally consume smaller portions of those Dr. Carrie Bordinko

INCORPORATING FITNESS “Leading up to the holidays, if you’ve already established a fitness program, continue to work on that,” says Ward. “Oftentimes those new to fitness go all-in prior to the holidays, then resume for only a few days afterwards. The important takeaway is making it a lifestyle habit so that way you can always prepare and be ready for those life events or seasons.” During the holidays, most of us are going to be spending a lot of time with family, so Dr. Bordinko suggests developing ways that everyone can play together and burn calories together. “Here in the Southwest, we have beautiful weather in November. The heat is gone, and you can get outside and do some of the good old-fashioned things that many of us grew up doing, like playing ball and throwing a frisbee.” You’ll be burning a large number of calories and you won’t even realize it because you’ll be having fun and laughing, which, she says, is not only physiologically beneficial, but also very uplifting. “We definitely know through medicine and exercise science that the more somebody completes physical activities in some capacity, the more their body will actually crave healthier foods,” says Dr. Bordinko. “It’s amazing how much your body will tell you if you just take the time to listen.” PREPARING YOURSELF MENTALLY “You should tell yourself that there is no reason to consume absolutely everything on the table,” says Chef Lenza. “But, if you want to have some of everything on the table, take a small portion of each.” Adds Ward, “I think we have our priorities backwards when it comes to food and family. Our main takeaway should be realizing who’s around the table and not what is on the table. It’s the one day where you actually have time to spend with your loved ones, and we should focus on that.” “Many of us want that well-rounded, Normal Rockwell picture of our plate with the turkey, mashed potatoes with gravy, and stuffing, and if you can break away from that habit, you can do really well on maintaining calorie control during those holiday meals,” says Dr. Bordinko. “We have to look at the bigger picture and not just this season,” adds Ward. “There are ebbs and flows throughout the year and there’s always going to be a holiday, a birthday, or a wedding, so we have to prepare and plan for those events in our lives.”

THYME ROASTED TURKEY BREAST W I T H G UA J I L LO C H I L E A N D P E P I TA SEED MOJO WITH A SIDE OF RICED CAULIFLOWER WITH ROASTED BRUSSELS SPROUTS
FOR THE MOJO: In a 4-quart pot add guajillo chile peppers, chipotle pepper, garlic, shallot, and Roma tomatoes, and fill with water until ingredients are just covered. Place onto a burner on high heat and bring to a boil. Now lower to a simmer and let this cook for about 30 minutes on low heat. Next strain ingredients into a mesh strainer and place the ingredients into a blender with pepita seeds, ¼ cup of orange juice, and a pinch of salt. Blend on high for about 1 minute and wipe down the sides of the blender with a spatula as needed. Continue to blend until fully emulsified. (For a thinner sauce, add ¼ cup of water at a time until desired consistency.) Set sauce aside. + Fresh turkey breast, 2-3 lbs.
FOR THE TURKEY BREAST: Preheat the oven to 350F. Combine

Since it opened, the school has been responsible for globally training generations of racing drivers and Hollywood celebrities. A recent Forbes article stated, “But the school wasn’t just about training celebrities, thousands of everyday people have taken Bondurant courses, and 90% of NASCAR drivers as well.” “As a matter of fact, most of the champions standing on the podium today are Bondurant graduates,” Bondurant says. “In fact, the school has specialized in instruction for high performance driving, teen defensive driving, law enforcement and special forces driving, open wheel race car training, Grand Prix road racing, drag racing, go karts, and more. Everyone comes through Bondurant.” Recently, the iconic school went through unique times when Bondurant’s adopted son attempted, but failed, at a hostile takeover. Pat and Bob found themselves fighting to save what Bob had built for the past 50 years. “I want the world to know that we were presented with a set of false financials, and we were never legally qualified to be in Chapter 11,” Bondurant says of the misinformation leading to the attempted takeover as she is successfully maneuvering through malpractice proceedings with the school attorneys and CRO. Eventually, the intellectual property lawsuits played out and justice prevailed, with Pat and Bob securing the rights to their school’s name and company. They walked away from the Chandler facility and are now in deep negotiations with titans in the racing industry and hope to be announcing the new Bondurant School plans in the next few months. “Many [locations] are offering us land to build the new Bondurant school, and we’re looking at everything,” Bondurant shares. The Bondurant Racing School has historically averaged a local economic impact of about $40 million annually—this does not include the economic impact it had on the Gila River Resort, Casino, and many amenities—but the Bondurants have also been incredible supporters of the local community, averaging about 100 charities per year, earning them the accolades of being pillars of our community. Pat and Bob Bondurant, racing’s royal couple, are just as iconic for their charitable endeavors as they are for their global business. For years, Bondurant has spent much of her personal
time fundraising for Childhelp, St. Jude, TRENDS, VINO, Healing Hearts Animal Rescue, Kids in Focus, and many others. The couple has led such extraordinary lives—both separately and together—and have impacted so many that they are currently in talks with Netflix regarding a movie. Although the talks began around Bob’s life, “then they heard our love story,” Bondurant shares. The love story endures, as will the Bob Bondurant School of High Performance Driving. “I’m a wife, mother, caregiver, friend, and philanthropist, and that will continue,” says Bondurant. “And, the Bondurant Racing School will go forward, and it will go forward with a new, hightech facility that will be around for many, many years. “Bob and I are incredibly grateful for the thousands of journalists, sponsors, graduates, and fans encouraging our tenacity in keeping the #1 racing school in the world as a pillar in the automotive industry. A member of the 12 News team since 1984, 31 years as an anchor, Cooney proactively joined in the fight against breast cancer with her “Buddy Check 12” reports and developed “Hero

Central,” which shined a light on people giving back and overcoming obstacles to do extraordinary things for others. But, that is not where the Rocky Mountain Emmy Award-winner’s story ends. It is where a new chapter begins. “I left to be home in the evenings with my family and to begin an ‘encore career’ with Hospice of the Valley (HOV),” says Cooney. “HOV cares for people with dementia, and serious and terminal illnesses, while supporting their families with education, understanding, and compassion.” According to Cooney, HOV is about to open an innovative Dementia Care and Education Campus in Arcadia to help families touched by all stages and all types of dementia, a condition that affects nearly 200,000 Arizonans. “This amazing community resource provides full-spectrum care and support all in one place,” says Cooney. The campus features an assisted living center, inpatient care home, inter-generational adult center that promotes meaningful interaction with preschoolers in the adjacent child center, and a community education center open to all.

TREVOR WILDE, MBA, AIF® CHIEF EXECUTIVE OFFICER WILDE WEALTH MANAGEMENT GROUP The moment 5-year-old Trevor Wilde jumped barefoot out of his family’s moving van onto the hot Arizona asphalt he felt at home (despite the resulting blisters). “My parents taught me that you always take care of your home,” says Wilde, who graduated from Horizon High School in 1995 and the University of Arizona in 2003 before founding Wilde Wealth Management Group with an eye to offer customized investment and planning advice in a holistic fashion. The boutique business thrived as a result of its personalized approach, so much so that Wilde was able to “take care of his home” in a big way via personal volunteerism, joining the boards for both Child Crisis Arizona and Junior Achievement. He also began mentoring staff on servant leadership, supporting team members to join boards including Scottsdale Active 20-30 and Chrysalis. “Perhaps my biggest point of pride as it relates to giving back was founding Wilde for Arizona,” says Wilde. Wilde for Arizona empowers the entire firm to work together to give back both through fundraising and the donation of time. “Through the program, we have been able to make a positive impact on over a dozen programs near to our hearts such as Arizona Tuition Connection, Feed my Starving Children, and Free Arts for Abused Children,” says Wilde.

BRIAN D. STEELE CHIEF EXECUTIVE OFFICER PHOENIX DREAM CENTER End human trafficking. This is a big statement, but one that Brian D. Steele and Phoenix Dream Center work toward daily. In the mid-2000s, Steele worked with United Methodist Outreach Ministry (UMOM) on operations of the Watkins Overflow Shelter, which housed 150 single homeless women and 18 homeless families. “Then life changed in an instant when my wife, Skye, and I were doing outreach and came across a 13-year-old girl,” says Steele. “She was being sex trafficked.” Mobilizing immediately and getting authorities involved, they were relieved at the speed with which Phoenix Dream Center was able to find her a safe shelter. “We decided then and there to dedicate our lives to fighting human trafficking,” says Steele, who joined Phoenix Dream Center to launch its formal human trafficking recovery program, while Skye became chief executive officer of StreetLightUSA, a collaborative partner with Phoenix Dream Center specializing in Trauma Informed and Behavioral Health Services to young survivors. Since its inception, the Phoenix Dream Center program has helped recover more than 2,850 females. “The pandemic brought on a 98% increase in sex traffickers attempting to connect with children online,” says Steele. LIZ AGBOOLA CHIEF EXECUTIVE OFFICER MOSES BEHAVIORAL CARE AND SENIOR PLACEMENT SERVICES Most of us have an “aha moment” or two in life. Liz Agboola’s happened in 2013 when her mother called her with a problem. “My parents volunteered at a local hospital and noticed many of the patients that they helped sat around the entrance doors after discharge,” says Agboola. “We found many of the patients were homeless veterans or suffered from mental illness and had trouble accessing the resources available to them.” Affected by the information discovered, the Agboola family was inspired to found Senior Placement Services (SPS), a free assistance program that prioritizes Assisted Living Housing for vulnerable adults across Phoenix who are unable to live independently due to medical or mental health concerns. “Through SPS, we quickly learned housing options were far more limited than we could have imagined,” says Agboola. “So, we were determined to do something about that as well.” By 2014, Agboola and her family also founded Moses Behavioral Care (MBC), a group of community-based mental health facilities offering 24-hour long-term care for the population with Serious Mental Illness, also called SMI. “We’ve grown MBC to house 60 residents living with SMI,” says Agboola, who serves as the organization’s chief executive officer and today is also a member of the Valleywise Health Foundation board. B R A D C L O T H I E R EXECUTIVE VICE PRESIDENT OF BUSINESS DEVELOPMENT DELTA DENTAL OF ARIZONA Adopted in his native Kansas, Brad Clothier’s family made significant sacrifices to put the wants and needs of their children first, and above all, made sure their children knew they were loved. “My family chose me,” says Clothier. “As a result, I grew up with an attitude of gratitude, determined to help others feel chosen as best I could.” Clothier began paying it forward in health field, eventually serving as chief operating officer for healthcare organizations. He also took on volunteer roles with Goodwill, Smiles Change Lives, and more before moving to the Valley to join Delta Dental of Arizona in 2016. Upon joining Delta Dental, Clothier got involved in the community via board positions with the Greater Phoenix Chamber Foundation and AZ Biz Link. He also joined the St. Vincent de Paul (SVdP) advisory board. “At the time, SVdP was in the midst of a capital campaign to double the size of its dental clinic,” says Clothier. Eager to support oral health care for underserved Arizonans, Clothier helped spearhead a $1 million gift from Delta Dental of Arizona Foundation to sustain the operations of the dental clinic through 2027. “I am proud to say I have tried to make a difference in everything I do, consistent with my upbringing and amazing family,” says Clothier.
