MORE THAN 20 YEARS AGO, TWO MOTHERS MET REGULARLY WITH THEIR DEVELOPMENTAL PEDIATRICIAN TO FIND WAYS TO HELP THEIR CHILDREN WITH AUTISM. That was the beginning of Southwest Autism Research and Resource Center (SARRC). The centerâ€™s programs, services and research help autistic individuals of all ages develop skills to help them engage in the community and live independent lives. On a yearly average, SARRC supports 1,000 children, teens and adults gain skills and confidence. For their adult clients, SARRCâ€™s Beneficial Beans social enterprise program was formed and began a community garden. The Beneficial Beans Garden serves as an internship site where clients participate in a 12-week preemployment program within the urban garden, learning valuable skills as they prepare to enter the workforce. Beneficial Beans offers The Community Supportive Architectural Program, CSAP, where the public can support the program by enrolling to receive a weekly bag of seasonal produce from the community garden. An online store also offers its signature coffee beans, mugs, T-shirts, planters, water bottles and eggs, and 100 percent of the money is put back into SARRC. KEN SINGH, A FARMER AND ENTREPRENEUR OF SINGH FARMS AND SINGH MEADOWS, IS PASSIONATE ABOUT CLEANING UP TOXIC DIRT. He has transformed a plot of barren desert and a chemical-laced golf course and turned the dirt into healthy, toxic-free soil. Ken's secret is the compost he developed that puts nutrients back into the earth. He’s been so successful doing this that universities, cities and companies seek his advice. Ken's family migrated from India, and he grew up working with his father on the family farm planting and harvesting crops. However, as he grew up, he didn’t feel farming was his future, and he left to pursue his own dreams. Years later, after a successful career, he was drawn back into farming and acquired a plot of land on Thomas Road and state Route 101. He wanted to grow healthy food for his family, and his hard work and magical compost transformed the dead dirt into an organic farm. “The condition of the earth is the condition of our health,” he says. "A lot of folks are sick, and they need to be more aware of what they are eating. Food is medicine. Your body is more valuable than anything else you own. Protect it with what you put into it.” GIVING BACK Ken started sharing his organic produce with the community at Singh Farms at a farmers market that was open on Saturdays, where the public could purchase fresh organic produce, engage in cooking demonstrations or relax in the tranquil atmosphere that he and his wife, Lee, had created. They outgrew that location, and, early last year, opened Singh Meadows, converting the 30-yearold Rio Salado Golf Course into a farmers market and community center. They created a haven where families can come to a healthy atmosphere, relax on the grass and enjoy a healthy snack or meal. It took three years for Ken to flush the chemicals out of the dirt, make walking paths around the pond, install a 400-foot well, put in new sprinklers, and feed the dirt his compost. He is still adding and creating to this wonderful, healthy oasis. “I’ve cleaned up the pond, added fish, a walking path, fire pits and more, so families come and enjoy good food and nature,” he says. “For a couple of hours, they can relax and forget they’re in the middle of a busy city.” Singh Meadows is open Friday, Saturday and Sunday to purchase fresh fruit, vegetables, freshly made bread, honey, apple butter, jams, spreads and more. It’s a place to linger and enjoy freshly squeezed juice prepared by his son, Kehar, or a cup of organic coffee. The bakery and café have tempting delights and meals prepared by talented chef and baker Dan Medlen and his brother, Joey Zarroli. Sit outdoors around the pond and enjoy the beautiful setting. Watch the children and families play on the healthy green grass. And, you’ll probably see Ken working and stopping to greet visitors. He likes to explain the importance of good earth, and he makes his compost available to the public. It makes him happy to see people enjoy what he has created. Singh Meadows is more than your typical farmers market. It was created to have a community feeling for families to enjoy and learn the benefits of healthy soil that grows healthy food available at the market. One of Ken's missions is to encourage people to start growing their own healthy food. His urban farm is an example of how nature works and the delicious, healthy food it produces. Each one of us can take a closer look at what’s around us and try to take steps to protect Mother Earth. By cleaning up the soil, water and air, we’ll be creating a healthier life for our families.

INGREDIENTS + 1 large golden beet, peeled and cut into matchsticks + 2 large carrots, peeled and cut into matchsticks + 1 kohlrabi, peeled and cut into matchsticks + 2 cups kale, cut into thin strips + ¼ cup toasted pepitas + 2 blood oranges, peeled and cut into cross sections INGREDIENTS FOR THE DRESSING + ½ cup fresh citrus juice (tangerine orange, mandarin, etc.) + ½ cup vinegar + ¾ cup olive oil + ¼ teaspoon mustard powder + 3 tablespoons honey or sugar + Salt and pepper, to taste DIRECTIONS 1 | Preheat oven to 325 degrees. Peel beets, carrots and kohlrabi. Cut all into thin slices and then cut slices into thin matchsticks. 2 | De-stem kale and cut into thin matchsticks. 3 | Peel citrus and cut into cross sections ¼ inch slices. 4 | Place pepitas in oven and bake until they just start toasting, 6-10 minutes. 5 | For the dressing, pour all ingredients into a blender and blend until combined. This can be made ahead of time and shaken just before serving to reincorporate ingredients. 6 | Toss all ingredients except the pepitas in a large bowl. 7 | Top salad with pepitas and enjoy!

How to Eliminate Hot Rooms in Your House

If I had a penny for every time someone asked me “why is one room in my home hotter than the others?” I would be a really rich guy. Hot spots are very common and felt even more during the extreme summer heat. There are several things that could make these happen and best of all, there is a solution for each. It is just a matter of diagnosing the problem. If you want to fix something wrong in your body you go see your doctor and get a diagnosis along with the resolution. Your air conditioning is no different. Find a good HVAC contractor, get a diagnosis and then fix the problem. The two common causes of hot spots are usually related to ductwork. You may have a leak in your existing ductwork and wherever that leak is, more cold air is going into your ceiling than the room it is supposed to cool. Another happens when you have incorrect air flow so you are not producing enough air to cool all the rooms evenly. There are solutions for any of these issues. Ductwork more than 10 years old is guaranteed to have some leaks. The major ones are what you really need to worry about because you can no longer cool an area effectively and you spend countless dollars on air conditioning your attic instead of your home. The team comes in and puts the product into the entire ductwork and then little particles find the leaks and bond into them to seal them. No mess or chemicals, and no more ductwork leaks. The other possible problem occurs from not having zero static air pressure which is related to an incorrect size of the air return or insufficient air flow by vent. Many of today’s newer AC units provide greater air flow and need additional return air . If the size of the return is inadequate to capture the correct amount of air in, it will not allow the right amount of air out. So you literally don’t have enough air from your AC unit’s pressure to cool the entire square footage of your home. That leaves a weak spot or what we call a hotspot. Sometimes another fix is to install an Air Balancer to redirect the air flow more evenly to the rooms it serves. That way you can correct the air flow from one room getting more while another is getting less. Other causes can be inadequate insulation or a unit not running correctly. If you have a hotspot you want fixed, the first step is getting that diagnosis on the cause. DI R E C T I O N S 1. In a large pot, heat oil over medium heat. Add squash, onion, carrots, turnip, potato and anise. 2. Cover and mix for 10-12 minutes. 3. Add broth and simmer for 10 minutes. 4. Add cayenne, salt and pepper, zucchini, tomatoes and garbanzo beans. Simmer for 10 minutes. 5. Add cabbage and cook for 5-7 minutes. 6. Salt and pepper, to taste. 7. Serve and top with Parmesan.
