KNOWING IT'S THE "HOME" ISSUE, THREE THINGS POPPED INTO MY HEAD: THE SAYING "HOME IS WHERE THE HEART IS," MICHAEL BUBLE'S RENDITION OF "HOME" AND DOROTHY'S FAMOUS STATEMENT, "THERE'S NO PLACE LIKE HOME." They all conjure up a feeling of comfort for me. "Home" for me has been all over the United States—including Kansas! This was my 12th move since college. (It's no wonder I have a hard time sometimes remembering names!) Every place holds special memories with family, friends and friends that became family. I've had many styles of homes–even designing one—and a plethora of countertops, lighting fixtures and wall colors, from traditional to trendy. This time around, it took Mike and me almost nine months to decorate and find just the right items as we sold most of our

Joey Maggiore is the executive chef of the Maggiore Group’s latest concept, The Sicilian Butcher. One of the most favored dishes on the menu is the Sunday Sugo, an all-time favorite of the chef’s that was served in his childhood home every “Domenica” as a cultural tradition on Sundays.

SUNDAY SUGO SAUCE: + 2 35-ounce cans plum tomatoes with basil + ¼ cup extra-virgin olive oil + 4 garlic cloves, chopped + 1 medium onion, chopped + ¼ teaspoon red pepper flakes + ½ teaspoon black pepper + ½ cup red wine + ½ cup grated Parmesan + 1 teaspoon salt + 1 cup water + ½ cup fresh basil leaves, cut into thin strips + 1 6-ounce can tomato paste MEATBALLS: + 1 pound ground sirloin or lean ground meat + 2 eggs + 6 garlic cloves, finely chopped, plus 3 garlic cloves, chopped + 1 cup seasoned breadcrumbs + 1 teaspoon salt + 1 teaspoon freshly ground black pepper + ½ cup grated Parmesan + ½ cup milk + 1 cup extra-virgin olive oil

SAUCE: 1. Strain plum tomatoes in a colander to extract the juice, breaking the tomatoes apart with your hands. Discard the pulp and set aside. 2. Heat olive oil in a large pot over medium-high heat. Add four cloves garlic, onion, red and black pepper. Sauté until the onion is soft, about 5 minutes. 3. Add juiced tomatoes, red wine, Parmesan and salt. 4. Add tomato paste and water; stir together over medium heat. MEATBALLS: 1. Put ground meat in a bowl. Beat the eggs and add them to the meat along with six garlic cloves, breadcrumbs, salt, pepper, Parmesan and milk. Mix together with your hands. 2. Wet your hands with water and roll mixture into 2-inch balls. Roll the balls in flour. 3. Heat ½ cup oil in a large skillet. Add three cloves chopped garlic and sauté until golden brown, set aside. 4. Add the meatballs and sauté over medium-high heat, turning them until they are completely brown. Nobody gets excited about that and they generally wait until that fateful breakdown occurs.

I have met people with units much older than that, but remember the rule of thumb is this… If your unit is old, and if you start having a pattern of repairs, the smartest thing you can do is get ready to replace it. The best time to gather estimates is not when your AC is broken during the summer. Most companies oﬀer their best pricing in the oﬀ season from November to March. Think of it as the clearance sale time to get the best prices. At Precision Air & Heating we like to say we give you the best deal year round because we don’t gouge price during the summer like our industry is notorious for.

The other advantage of being proactive on your AC replacement is comfort. Most unit failure occurs during the extreme summer heat. There are 4 million people in the Valley with stuﬀ breaking at the same time and literally not enough HVAC Technicians to get you quickly. First, you’ll get an estimate and probably a high one, then they’ll need to order product, schedule an install crew, and possibly a crane rental and sheet metal fabrication. Adding in those variables your best case install time might be 2- 3 days or more. Not fun when it is 100 degrees in your home.

I highly encourage anyone with an older AC unit to get proactive and at least start the shopping now. It will have you better prepared and save you both money and time in the long run. There is another big advantage that comes with replacing older units and that is the energy efficiency. The newer units are much higher in SEER (Seasonal Energy Efficiency Rating). Go to the New Unit page on our website and try out the BTU calculator. It’s a great tool that will show you based on unit age, how much you would save on annual energy costs with a newer unit. A lower utility bill makes everyone smile, right?
