Celebrate Fine Wine and Bountiful Beer I

’ve personally been lucky enough to experience the winemaking process first-hand while in Italy, and the experience was one that I will not soon forget. It was a crisp, chilly mid-September morning; the sun was just peeking out over the hills, casting a golden glow over the whole city. I sat in the back of the van, wrapped up in my sweatshirt, sipping the frothy cappuccino that was warming my hands. I looked out the window to see fields of bright sunflowers, farms with grazing cattle and old brick houses with ashy smoke rising out from the chimneys as we made our way from the city center onto a quiet dirt road in the countryside.

With the sun now fully risen in the sky, I beheld a wondrous sight before me as we stopped: row upon row of lush green vines dotted with plump purple grapes as far as the eye could see. Once on the vineyard, we were greeted by a husband, wife and their three children, who soon informed us that we would be spending our day picking grapes for the harvest. I was handed an old, dirt-laden bucket and directed to the part of the vineyard where I would be working. Four hours later, my jeans were soaked knee deep with thick mud, my shirt had splotches of purple all over and my hands had turned a greenish-brown color—I had never felt so exhausted yet so accomplished. Luckily, upon our return to the house, a brick pizza oven radiating warmth was firing up handmade pies and a full picnic table laden with every Italian specialty in the book greeted us. After devouring the sizeable meal, we helped clean before relaxing under the shade of the trees while the kids taught the boys from our group how to really play soccer. As the sun began to set and we prepared to leave, I looked at my hands: they were calloused and a little scarred, and there was still dirt under my fingernails, but I had spent the day reconnecting with the land and had gained a true appreciation for it.

ho would have guessed that only an hour or so drive to Florence, Arizona would uncover a cozy, country-chic winery so picturesque that it has become a must-visit destination venue for corporate meetings and weddings. Harold and Katie Christ purchased the 60-acre property, which was originally a dairy farm, in 2004. Harold, a former real estate developer, bought the property to be a nursery for growing shrubs and trees to be used for his developments. However, after the construction industry declined, Christ decided to plant grapes and birth a vineyard. Once a barn was built to hold equipment, inquiries from couples wanting to hold their wedding there started to come in. Ten years later, the vineyard is producing grapes and houses two venues for conferences and the over 200 weddings a year they host. “We don’t just host these special events, we make these events special,” says president Rick Yeatts.

The Windmill Winery has four of its own wines: Pinot Noir, Chardonnay, Symphony and Pomegranate, which all feature unique blends of fruit not normally found in wines. The Pinot Noir balances the flavors of dark cherry and wild raspberry with subtle oak, producing a smooth velvety finish. The Chardonnay has hints of pear, golden apples and wildflowers, making a delightful taste for even the most discerning of palates. The Symphony grape is rare and produces a very unique, semisweet white wine that has graceful aromatics of apricots and peaches with subtle notes of tropical fruit flavors. Finally, the Pomegranate wine, made with the juice of the pomegranates from North Carolina, has a combination of sweetness and the perfect amount of tartness. Christ’s keen eye for detail is apparent throughout the property and incorporated in the buildings. The Wine Tasting Room is housed in a rustic-looking building that holds a bit of history, found in the old windows and heating stove salvaged from a historic building.

MEMORABLE MOMENTS

Winery Operations Manager, Kevin Parsons, moved from California, where he studied Viticulture at California Polytechnic State in San Luis Obispo and worked at the Wild Horse Winery. Parsons oversees the vineyard and winery operations, as well as the wine tasting room. His choice of growing Barbera grapes, a southern Italian varietal, was selected due to its strong drought potential and blending capabilities. However, growing grapes that are not common in the industry, along with the area’s climate, is a bit of a challenge. “We are truly pushing the boundaries of viticulture and pioneering a new area,” states Parsons.

As the demand for weddings to be held at the venue has grown over the years, the Christs have continued to create magical settings for the bride and groom. The Big Barn is a 1910 barn from Green Bay, Wisconsin that was dismantled board-by-board and reassembled on the property. Additional buildings were added for the bride and her attendant’s, as well as the gentlemen’s quarters. One of the two lakes featured on the property, which were originally built for the nursery, now makes a wonderful backdrop for The Lake House— the second venue used for weddings and conferences. Coming Full Circle Lawrence Dunham Vineyard Brings Winemaking Back to the Land

A

s the morning sun breaks through the lazy fog rolling down from the Chiricahua Mountains a peaceful hush falls over the land surrounding them. Down below, drops of fresh dew glisten off lush green leaves sprouting from seemingly endless rows of grapevines. A closer look reveals bunches of plump grapes, ripe for the picking and ready to share their plentiful bounty with the world. At the same time, winemaker Curt Dunham wakes up, grabs a cup of steaming hot coffee and readies himself for the day’s work ahead. He steps outside, breathes in the crisp, fresh mountain air and beholds the sight before him—rows of lush grapevines as far as the eye can see, all of them his. This is Lawrence Dunham Vineyard. A WINEMAKER’S PASSION

To truly understand Dunham’s love of wine, one must start from the beginning, when he was just 16 years old. After taking a trip to Napa Valley, Dunham’s parents brought back a bottle of wine for their son to try. Little did they know that one sip of wine would open a whole new world for him. “They brought back a bottle of 1974 George Latour Blue Vineyards Private Reserve Cabernet Sauvignon and poured some for me, just to watch me turn into prune face,” recalls Dunham. “Then, to their 18

surprise, I asked how they got the chocolate, cherries, blackberries and coffee into the wine. From that point on, I was enthralled.” After some time, Dunham met his wife-to-be, Peggy, and the two of them began traversing the world in search of bespoke, boutique wines and the expert winemakers that devoted their lives to the art. “Being anywhere that grapes are grown is beautiful, so we really enjoyed traveling all over and meeting and spending time with the winemakers,” says Dunham. “In the end, we had a great collection of some really cool boutique wines, and we had a story to go with each bottle.” After some research and decision making, the couple decided to put down roots, quite literally, by the Chiricahua Mountains and start Lawrence Dunham Vineyard from scratch—a place built from a passion for harvesting the earth’s fruit and a deep respect for the land. “Wine is a magical product, and the places that the grapes are grown are magical because they all impart their own characteristics into the fruit,” says Dunham. “Our site here is very unique with the soil’s volcanic composition; I've really never seen anything like it before.”


FROM THE LAND

At Lawrence Dunham Vineyard everything truly does come back to the earth. “I have a philosophy that every time you touch the wine it gets further from the vineyard, and our goal is really to reflect the vineyard in our wines because it’s such an amazing spot,” says Dunham. This commitment to preserving the purity of their wines extends all the way back to the land where the grapes are grown, which was a major factor in Dunham’s decision to settle by the Chiricahua Mountains—a place he thought had never been planted on before. However, shortly after purchasing the property, he found out that they weren’t actually the first people who had found the land ideal for growing. P

hoenix is in the midst of a craft brewery boom, and Helio Basin Brewing Company is the latest arrival on the scene. Located on the corner of 40th and Thomas, Helio quietly opened in mid-July and has steadily been establishing a foothold in the area ever since. “We’re starting to give people a reason to come out this way,” says Dustin Hazer, Helio’s co-owner and brewmaster, referring to his own brewery and two others nearby—Helton Brewing Company and Wren House Brewing Company. When Hazer first checked out the venue—an 8,200–square-foot space that had been vacant for eight years—he was skeptical; until he stepped inside and saw the potential. In a short time, Hazer and his co-owner, Mike Conley, transformed the former pool hall into a light-filled space complete with garage door windows, a large dining room area, an elevated bar space and an enclosed space that holds the tanks where the beer is made. “Our motto is quality-crafted in Phoenix. Coming from a large brewing scale background, I’m very particular about things being clean and consistent,” says Hazer. Instead of a constantly rotating beer menu, Helio has six core beers, which includes the dark Robust Porter—one of the very first 24

beers Hazer and Conley ever brewed together—and the House Beer—a light, approachable offering intended to please craft beer novices and connoisseurs alike and spur conversation. “That’s what beer is all about: Bringing people together,” says Hazer. Helio also prides itself on serving stellar food, too. The menu features locally-sourced, native Arizona cuisine like tortillas loaded with mesquite honey chicken, goat cheese, apricot pepper compote and micro epazote, along with rotating specialty entrees like roasted duck and elk strip. Hazer also intends for his brewery to be as transparent as the glass where guests in the dining room can watch him brewing beer in gleaming silver tanks. “We want to involve people in it,” says Hazer. “There’s nothing to hide.” Helio has only been open for a few months, but Hazer says restaurants already have inquired about getting his suds on tap— Helton Brewing Company will serve Helio as a guest tap. And even though the craft brewery scene is competitive, the Helio team isn’t too worried about succeeding, with the future looking bright and promising for the brewery. ooking with wine is not only a great excuse to enjoy the remaining bottle not used in the recipe, but also has many nutritional benefits, making wine an excellent, healthy ingredient to add to your cooking. Wine also adds a great layer of flavor to any recipe, whether using red or white. The general rule is never cook with a wine you wouldn’t drink; however, even cheaper wines can enhance a recipe when used in

sauces and combined with other fresh ingredients. Simply use a wine in your recipe that you would pair with the meal, such as following the parameters of pairing red wine with beef and pasta dishes, and whites with poultry and seafood. Here, we suggest a full-bodied chardonnay to highlight the creaminess of the mushroom sauce, along with a generous glass on the side for the cook!Â


CHICKEN WITH WHITE WINE CREAM SAUCE

DIRECTIONS:

This recipe features a creamy mushroom sauce enhanced by chardonnay. Although impressive enough to serve at a dinner party, this complete meal can be quickly prepared in thirty minutes, also making it easy enough to be a family-friendly weekday dinner. Serve with a healthy spinach salad to create a fully nutritious meal!

Preheat oven to 400°F. Prepare a baking sheet by lining with parchment paper. Place each chicken breast between two sheets of plastic wrap. Pound chicken with cooking mallet or knife handle, to ¼ inch thick. In a shallow bowl, stir together flour and 1 teaspoon salt and pepper. In another small bowl, beat together egg and water. Place breadcrumbs in a third plate. Dip chicken first in flour mixture, shaking off excess, then in egg, then in breadcrumbs. In a large sauté pan, heat olive oil over medium heat. Add chicken; cook for 2 minutes on each side, until lightly browned. Remove chicken to prepared sheet pan. Bake for 7-10 minutes while you prepare the sauce.

INGREDIENTS:

2 split boneless, skinless chicken breasts (or chicken thighs, as preferred) ½ cup all-purpose flour 2 teaspoons salt, divided ½ teaspoon pepper 1 cup seasoned dry breadcrumbs 2 large eggs 1 tablespoon water 3 tablespoons olive oil 3 tablespoons unsalted butter, softened 1 cup Cremini mushrooms, halved or sliced ½ cup onion, sliced thin 1 clove garlic, chopped thin 1 cup white wine, such as chardonnay or pinot grigio ½ cup low-fat chicken broth 3 tablespoons reduced-fat cream cheese 1 tablespoon chopped tarragon leaves or basil leaves, for garnish

SAUCE:

To prepare sauce, wipe sauté pan with paper towel. Melt butter in pan, over medium heat. Cook onion and garlic, stirring occasionally, until tender, approximately 2 minutes. Stir in mushrooms and cook until tender, stirring frequently, about 2 more minutes. Add wine and 1 teaspoon salt; bring to a boil. Reduce heat and simmer, stirring occasionally, until sauce is thickened, about 3 minutes. For thicker sauce, cook additional 5-10 minutes. Add chicken stock and cook about 2 more minutes. Well, I’ve had two pervious careers. First, as an emergency room nurse, then after 10 to 12 years of that, I decided I needed a change of pace. I had always loved looking at homes, so I decided to sell real estate and became very good at what I did and enjoyed it very much. I had that career for over 35 years, but now writing has become my love and the third career of my life, so to speak.

Beth Scott is a 31-year-old divorce attorney living in New York City. She is very good at what she does, very strong-willed, very focused and very determined to do well for the clients she represents, most of whom are suffering from spousal abuse and wanting to divorce their husbands. She plows into every situation as if it were her own and works her tail off to defend her clients in the best way she feels is suited for them. She’s just a wonderful character that everybody falls in love with.

WHAT INITIALLY INSPIRED YOUR IDEA FOR THE SECONDARY TARGET?

Well, I love to read mysteries and I love to read romance, so if I can find them in one book that’s great. However, a lot of times a mystery is just a mystery and a romance is just a romance, so I wanted to do something different and combine the two genres into one book. That’s really what inspired me to write The Secondary Target. WILL YOU TELL A LITTLE ABOUT THE NOVEL AND HOW YOU INTERWEAVED ALL THE DIFFERENT ELEMENTS INTO IT?

The main character, Beth Scott, is beaten up in her apartment and left to die. Then she is brought into the trauma unit of the emergency room, where she is cared for until she is better. She then sets out on a mission to find her assailant. I knew where I was going with the novel when I sat down to write it. The story just naturally lent itself to include the mystery aspect, which was to find Beth’s assailant, and to romance aspect because it shows what young, single women get involved with when they’re dating. However, I did have to give a little thought to how I was going to write in the hospital scenes because I wanted the book to appeal to every reader, so I didn’t want them to be too gruesome. 30
