Busy Bee Bakery Keeps Flying From Air Force One to Omaha Food Lovers, Jodi Jefferson loves to serve

When Jodi Jefferson retired from the Air Force in 2020, she had hopes to open a food truck. However, between the height of the COVID-19 pandemic shutdowns and rapid online popularity, she launched her from-home business, the Busy Bee Bakery. “At the time, people weren’t gathering,” Jodi said. “So, when Covid hit, I started using social media to post items—it really took off!” At first, Jodi was unsure why her posts of decorated cupcakes gained so much traction, some earning more than 30,000 views, and then she learned moderators and members of the Omaha Food Lovers Facebook group had spread the word. The word-of-mouth marketing reminded her of her father’s business growing up, which

similarly operated on delivering a solid service that customers were happy to share. The bakery offers customers options such as cupcakes, cookies, full-sized cakes, and more. Her weekly-themed cupcakes, like candy bars or tropical options, initially drew many in as it let people mix and match their choices. “Then I got inundated with cake orders.” One fan favorite, she said, is the strawberry crunch cheesecake cake. However, her carrot cake is the go-to option for Jodi and her family. This carrot cake, she said, was also a favorite of one of her past customers during her time serving on Air Force One. That customer was Former First Lady Laura Bush. Jodi began serving on Air Force One in 2005, serving leaders like Presidents

George W. Bush and Barack Obama. This is when the Former First Lady first tasted Jodi's carrot cake, a birthday favorite. "I would make a carrot cake for her (birthday,) and a little one she would take home to the president," Jodi said. Her time as a flight attendant for presidents and leaders differed greatly from that of a commercial flight attendant. She would design menus, source ingredients, and prepare pre-flight. Meanwhile, the name "Busy Bee" took root. Jodi met her husband, who also served on Air Force One, and the two were part of a group of friends. “Before we had children, we hung out with this really fun group,” she said. This group held a Halloween Party where the couple dressed as bees— including their dog, Killer. Jodi’s Queen Bee costume was often re-used on special occasions. This, along with her self-described inability to sit still for long, had her then coworkers encourage her to start a bakery with the name “Busy Bee.” “I also don’t sit still for very long, so it’s a perfect name!” she said. As her family grew and her husband was deployed to Korea, Jodi was relocated to Offutt Air Force Base, closer to her parents in Kearney, particularly her mother battling cancer. "When I got stationed back here, my mom basically moved here," Jodi said, with her dad visiting often. The family's closeness continues to influence the bakery, with her mom assisting in Busy Bee's annual charity bake sale each November. "She's had this cancer for almost ten years now. She's such a woman of faith, and being able to do something we look forward to every year, to give back," Jodi said. "God has blessed us with a talent, and He's blessed us with the means to do that." They've raised funds for various causes such as Calvary Christian Church, the Rainbow House, Mustaches for Kids, and 50 Mile March. This year's fundraiser will go toward Project Intentional, which is dedicated to restoring dignity to women and families. The bake sale, featuring five fall-themed menu items, has become a tradition of many. "My oven runs 23 hours a day for five days straight. That's how insane this bake sale gets," Jodi shared. TALUS ELEVATES THE DINING EXPERIENCE Like a mountain in the Midwest,

talus comes from the mountain term for the exposed slope of a mountain, often with exposed boulders, and this can be seen. Inspired by an alpine lodge, the restaurant has heavy wood, bronze, and other mountaineering themes, offering the Midwest a bit of the mountains. This mountain theme goes beyond the decor, however, and reaches into the food. As Mackevicius said, “Mountain ranges split up in different parts of the world.” The flavors of mountain ranges worldwide inspire Mackevicius’ menu when combined with comfort-style foods in what he called comfort fusion cuisine. Meal options experiences include the Coffee Dusted Salmon, Mt. Fuji Mushroom Risotto, or the Talus Fish Tacos. What’s not directly seen, but rather felt, in the menu is Mackevicius’ story.

It’s out of the norm, but that’s the point of Talus Spirits & Sustenance. “Trying to be different is the whole idea,” said co-owner and chef Aron Mackevicius. The word

Prior to opening in August of 2022, the Talus building had sat near-empty for two years due to Covid protocols and delays. Mackevicius shared how he was brought on as part-owner that February prior to opening. “I’ve always worked for someone else,” he said. Mackevicius has worked as a chef for more than 25 years, with ample experience with the Omaha food scene. Seeing the opportunity to bring a dining experience—“not a dining option,” in his words—to the Papillion community was one he wanted to take. And so, he was involved in almost every part of development. “If I’m going to do it, I’m doing it differently,” he said. For example, Mackevicius said that Talus bar will “always and forever” feature only Nebraska and Iowa breweries on its eight-tap handle. The spirits in the restaurant's from-scratch cocktails come from small, mom-and-pop distilleries. Mackevicius himself curates the wine list. The idea is to offer unique and affordable drinks that may be harder to find even in your local grocery store. The owner credits this practice to his belief that local supports local, and he will continue to search for local breweries and distilleries to continue this practice. Mackevicius showcases these local breweries with special beer dinners. While typically closed on Sundays, the restaurant hosts these special events to highlight local brews paired with available menu items. And while the menu may change seasonally, two “always and forever” items will be found. These come from a more personal inspiration for Mackevicius.

A father of two, Mackevicius shared how his daughters often helped in the kitchen and were excited to learn. His oldest, Taylor Tylkowski, even went on to compete on a culinary team in high school, earning a scholarship at the Metropolitan Community College's Institute for the Culinary Arts. Tragically, due to an accident, Taylor passed away before she could complete her education. She lives on, however, inside Talus. During her studies abroad in Peru, Taylor created a Peruvian Corn Chowder, whose flavors inspired Mackevicius' chowder of the same name. The other menu item that will always be found is the Buffalo Chicken Gouda Mac, which was Taylor's favorite combination when she and Mackevicius worked together in the Old Market's Twisted Fork. "It's one of the number one dishes we have ordered," Mackevicius said. He said his daughter's presence has been in the restaurant for as long as he has. "Every day, I come in, get to see that on the wall," he said, pointing to the large T-shaped logo. "From the second I walked in, I could feel the warmth and knew she was with me." Another way Taylor lives on is through community events and scholarships in her honor. "I continue to do what I can do for the community," Mackevicius said, and the Papillion community has reciprocated the support. "The support has been amazing," he said, citing some patrons are not just weekly regulars but even daily. "It's amazing to give to the people who've waited so long."

Falling For Neutrals SEASONAL DECOR TIPS FOR KEEPING IT SIMPLE I love decorating for the holiday season, but it gets tough if trying to keep a home decor airy, light and neutral. My home is full of neutrals, such as linen, khaki, white and gray, so decorating for the holidays can be tricky with the bright and bold themes on display at the stores. Here are tips regarding how to achieve a festive look without going overboard.

LESS IS MORE First, whenever decorating for the holiday season, I clear what's possible to make room for what's coming. I eliminate decor pieces that are displayed year-round to avoid adding clutter to rooms. Giving decor pieces or floral arrangements their own space to shine can pull the room together and make it feel very designed.

GO COZY Swapping out usual throw pillows and throw blankets for plushy, cuddly materials and seasonal prints are another simple way to add holiday spirit without being so literal. Opting for neutral plaids, cable knits, or sherpa materials add that feeling of fall and winter.

CATER TO ALL THE SENSES Don’t forget about the smell! Stocking up on candles that smell like the season is the last missing piece for a holiday vibe. The total sensory feeling of the holidays is what really brings a home to life, whether it's pumpkin spice burning for Thanksgiving or a fresh pine and cedar for Christmas.

STICK TO THE PALETTE As best as possible, I try to stick to each of the color palettes in my room. When it’s time to bring out pumpkins or holiday Santas, I stick to white and neutral or add in color pops of gold and silver to keep everything flowing. If I start to add too many primary colors, it ends up looking like a mash-up gone astray.

CELEBRATE MEMORIES The holidays are often bursting with family traditions and memories, and decor can reflect that, too. I have many items handed down over the years that I like admiring, but if they aren’t quite right for my room, there are options to bring the spirit of them to life. Framed holiday family photos in a black and white filter are an excellent way to tie in your history of celebrating in a subtle way.

LOOK TO NATURE Some of my favorite items to use for holiday decor come from a simple nature walk. Using actual items you find, or just getting inspiration from the outdoors is a great way to bring sights of the season indoors. For fall, elements such as branches, leaves and neutral gourds match with everything. For winter, I love using sticks with berries

Your next event, served alfresco Catering experts Chef Kyle and Hannah Williams, owners of Savor & Swirl culinary company, create an outdoor dinner party with chef-driven perennial dishes served in beautiful seasonal settings. For this alfresco dinner party, Chef Kyle draws on his favorite recipes updated for a modern palate and paired with wine selections to complement the bountiful feast.

Insider Tips for Hosting: • Build a menu around the season. Start with what produce is available locally based on the season for the most authentic meal experience. For instance, Chef Kyle says “In November, people crave turkey, sage stuffing and cranberry sauce,” but that meal served in the heat of Summer wouldn’t hit the same. In-season fruits and vegetables will always be of highest quality and best taste. • Always greet guests with a beverage and appetizers. “Offer champagne for wine-lovers or a sparkling drink or signature cocktail. It’s all about serving guests to the highest caliber,” Kyle says.

• Draw inspiration from the season’s colors and temperatures. For Spring and Summer, think flowers, fresh herbs and linens. For Fall, think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.” For Winter, head indoors to create a cozy environment for guests to connect. • “You can’t go wrong with fresh flowers,” Hannah says, “but keep bouquets low to not interfere with conversation flowing. For fall, I like richer, jewel-toned florals to mix and match and keep whimsical. I vary glass vases with bur - nished brass for warm fall vibes.” • An easy but thoughtful detail is to put a simple menu at each place setting, so guests know what to expect. “Add a pen, so guests can jot tasting notes, especially for wine pairings or multiple courses,” Hannah says. “Guests can share comments, then take the menu home as a sweet reminder of the event.” • Follow the French principle of mise en place or everything in place before your event. “This is actually our company’s name,” Kyle says. “It’s that important to us. Make sure the wines are all open, cocktails are pre-made, place settings are out, candles are lit and music is playing. When guests arrive, it gives that wow-factor and shows you intentionally made them feel special.” • To build confidence as a host, start small and practice. “Keep the menu and guest list small,” Kyle says. “Choose recipes you already have confidence in. If you make a great Beef Stroganoff, then go with that. People will love it!” •

As fun as it is to dine outside, always have an indoors back-up plan. “We’ve had to bring it indoors before,” Hannah says. “It’s still fun.” Insider Tips for Hosting: “Think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.”

Fresh Roasted Brussels Sprouts & Hardwood Smoked Bacon

Heirloom Root Vegetable Hash Yield: 6-10 servings

Yield: 6 servings • 4 cups Brussels sprouts, raw, halved • 1-2 tablespoons olive oil • ¼ cup yellow onion, sliced • 1 tablespoon garlic, sliced thin • 1-2 cups bacon, smoked, thick cut, large dice • Salt, pepper to taste • 2 tablespoons real butter, unsalted • Optional garnish: 1 tablespoon parsley, chopped

METHOD OF PREPARATION: 1. Preheat oven to 400 °F for convection setting, (425 °F conventional). 2. In mixing bowl, add oil and cut raw Brussels sprouts. Season with salt and pepper. 3. Place seasoned sprouts on baking sheet and bake in oven until done, about 20-40 minutes (soft yet still with good texture and crispy edges with some dark brown color). Remove from oven. 4. Place large sauté pan on medium heat and render bacon. Add a splash of olive oil to get it going, if needed. Cook until bacon is crispy and golden brown, 5-10 minutes. 5. Add onions to pan and cook until soft, 5-8 minutes. 6. Turn heat to high and add garlic and butter and cook for 1 minute. 7. Add roasted Brussels sprouts to pan and toss all together. Season to taste with salt and pepper. 8. For optional garnishes, add fresh chopped parsley. 9. Serve and enjoy!

CHEF NOTES: • If Brussels sprouts are large, cut in quarters. • Rendering bacon means extracting the bacon fat which adds a lot of flavor to the dish.

• 2 cups heirloom carrot, cubed • 2 cups heirloom rutabaga, peeled, cubed • 2 cups heirloom parsnip, cubed • 1 cup heirloom turnip, cubed • 2 cups heirloom marble potatoes, halved • 3 tablespoons rosemary, fresh, de-stemmed, chopped • 1 tablespoon thyme, fresh, de-stemmed, chopped • 4 tablespoons extra virgin olive oil • Salt – to taste • Pepper – to taste • Optional garnish: 1 tablespoon parsley, chopped

METHOD OF PREPARATION: 1. Pre-heat oven to 400°F on convection setting (425°F conventional). 2. In mixing bowl, add oil and raw cut vegetables. Season to taste with salt and pepper. 3. Place seasoned vegetables on oiled baking sheet and bake in oven until they are caramelized and tender, about 30-60 minutes. Will be soft yet still with good texture and crispy edges with some lightly charred areas. 4. Remove from oven once finished cooking. 5. Garnish with fresh chopped parsley. 6. Enjoy.

Lavender Vanilla Sugar Scrub This homemade sugar scrub is easy to make and leaves you with silk y soft skin INGREDIENTS: • 1 cup of granulated sugar • ½ cup of oil (almond oil or olive oil works best) • ½ teaspoon vitamin E oil • ½ teaspoon real vanilla extract • 15 drops lavender essential oil DIRECTIONS: Sugar scrubs are amazing for getting rid of dead skin and exfoliating to reveal soft skin. To make this Lavender Vanilla Sugar Scrub, mix all ingredients together and store in an airtight jar.

Papillion captures the small town feel that I was looking for when my wife and I bought our home here over seven years ago. We love being a part of this community and raising our children here. Here's a little inside look at my life beyond being the publisher of Papillion City Lifestyle. My faith and my family are the two most important things in my life.
