Autumnal Musings on Food, Drink and More
ACCOUNT MANAGER
I will freely admit that October is my favorite month of the year and that I am a sucker for autumn. With the changing leaves, the cooling temperatures and the reflective quality of the season, I am in a positive state of mind. And with that, here at City Lifestyle OKC, I am pleased to share this month’s issue that is focusing on food and drink. In our Culinary Creations section this month we look at five different restaurants in Oklahoma City that we feel you, the reader, should know about this month, and beyond. Fancy a Hot Toddy? We know just the place to find one. Some high-end comfort food? We tell you about that as well. With a focus on healthy, locally-grown food, we visit Conscious Community Co-op and learn about their efforts to bring healthy, organic options to the public. Zero Tolerance Coffee & Chocolate introduces readers to Maura Baker’s efforts to introduce her customers to unadulterated chocolates and coffee in their Britton Road café. And while on the road, your humble correspondent spends time in Port Aransas, Texas at the Port Royal Ocean Resort, enjoying the enormous pool and the food and drink options that come along with it. We are so pleased you are joining City Lifestyle this month and accompanying us on our delicious journey in the realm of food and drink.

Seasonal offerings are in high demand at Conscious Community Co-op.
EDMOND – With the motto “Conscious of the Earth, Our Health and Our Community in All We Do,” the Conscious Community Co-op and Farmer’s Market is the place to go when looking for items that are locally grown, locally made and locally loved. Jennifer Webster is originally from Edmond and explained it was some years ago that she had a health scare that led to her embracing a lifestyle that included organic and locally-grown foods. Expanding from a backyard garden and ultimately to the current building Jennifer and Chris Webster own at 2900 E. Waterloo Road. “We’re about supporting the local food movement,” says Jennifer, who is very passionate about organically-grown food, which is in abundance in her store.
Conscious Community is designed to be welcoming and inviting. Where it is clear where items are located, just as they would be in a larger, chain-type grocery store. “I think people enjoy the simplicity of (Conscious Community Co-op),” Jennifer said. “We avoid the overstimulation (of the big stores) that offer empty space and empty calories.” While many farmer’s markets are open on Wednesdays and Saturdays, the co-op is open every day of the year, except for Thanksgiving and Christmas. “Corporate farming has taught us over the years that it is okay to bypass Mother Nature. That if you want strawberries in January, you should be able to get them,” she said. “We teach people to eat seasonally,” Jennifer noted.

STELLA MODERN ITALIAN CUISINE You will be thoroughly impressed with the offerings at Stella Modern Italian Cuisine. It was in Rome, when owner Lori Burson was a sophomore in college studying abroad that she learned about Italian cuisine. While there she spent a semester falling in love with Italian food and wine, and more importantly, the way the Italian people focused their lives around food. Rather than simply eat a hurried meal, Italian people gather with friends and family, and every meal is a celebration. Burson decided then that she wanted to bring that philosophy back home and embody it in her own restaurant. The Chicken Scallopini at Stella Modern Italian Cuisine, located at 1201 North Walker Avenue in Oklahoma City, is a great meal choice as the cool days increase this month.

LUDIVINE At Ludivine in OKC, the menu often features a pan-seared fish dish. In this case, it is sardine, garnished with fresh vegetables. But there is far more to tempt the palette while dining at this inviting establishment. Russ Johnson opened a small, unpretentious restaurant, serving exceptional food and drinks in a laid-back, relaxed atmosphere. From the very beginning, he committed Ludivine to the practice of real, scratch cooking, based on classical techniques, with a menu that changes daily.

The pool. The sun. And a tasty meal - all poolside - at Port Royal
PORT OF CALL EATING WELL WHILE AT PORT ROYAL OCEAN RESORT ARTICLE AND PHOTOGRAPHY BY ANDREW GRIFFIN

T R E N D SE T T E R | TR AVEL
PORT ARANSAS, TEXAS
Welcome to Port Royal!
When you first arrive at Port Royal, here on Mustang Island, near the city of Corpus Christi, you roll down the windows and inhale the salty, sea breeze and you feel your cares already melting away. Granted, the exterior is a little rough – following 2017’s Hurricane Harvey – but once you settle into your condo and walk out to the swimming pool, you know the journey here was worth all the effort. After all, when you stay at a resort on 25 acres, south of Port Aransas proper, that features the largest lagoon pool in in the Lone Star State, you can enter its depths on a hot and humid summer day. Also, there are water slides, a spray pad, and an Olympic-sized lap pool.
MONDO CONDOS The condominiums at Port Royal are decorated distinctly with open floor plans. This includes kitchens that flow into the main living space and dining area. The beds were very comfortable and the bathrooms were just what was required for a family of five. The kitchens were large enough for us to cook meals each night. One idea? A shrimp boil. Just be sure to bring a cooking pot along – and some corn-on-the-cob and, well, you know the rest.
FAMILY FARE AND FOOD FOR ONE AND ALL
Plenty of seating around the largest pool in South Texas!
Poolside cabanas serve drinks and snacks for Port Royal guests.
While my family was here we had a chance to enjoy both the Port Royal Strong food truck on the property – which offered delicious pizzas, eagerly devoured by my kids – and this was open all day. As for Restaurant 361, breakfast, lunch and dinner were all on hand and offered delicious options including Gulf seafood, lip-smacking hamburgers, Dagwood-minded sandwiches and a ribeye that was truly mouth-watering. And if you are in the cooling waters of the enormous Port Royal swimming pool, you can order alcoholic drinks at the Cabana Bar from signature pina coladas and Tequila sunrises to all sorts of beer and liquor options. Our favorite bartender, Ramsie Bartlet, moved to Port Aransas from Arizona and learned on the job. Now Ramsie, who is also a published author, talks to people from all over, serves fantastic drinks and frozen treats and writes novels in her spare time, inspired by the beach environment at Port Royal and the surrounding seaside community. “Whether serving a Pina Colada, a dirty monkey, an ice cream sandwich, a smoothie, a margarita or an iced coffee, I spend my days contributing to people’s experience and merriment,” Bartlet said. And there is also a Frozen Station, were cold treats are offered, to help beat the heat, for kids and kids-at-heart. And while we were there, at this desirable beachfront condo resort strictly to enjoy the pool, the beach and the sandy environs at Port Royal and in Port Aransas, Port Royal Ocean Resort also offers meeting space for office retreats, meetings and other events, including weddings. Sales staff Ruby Acuna and Sarah Perez are eager to help you organize your next even at Port Royal. As for my family and I, we will definitely be taking another trip sometime soon and staying at Port Royal. It’s the place to relax when you are down on the Texas Gulf Coast. TOLERATING ONLY THE BEST REAL COFFEE AND CHOCOLATE AT ZERO TOLERANCE
26
LOCA L’S CH OICE | FOOD + BE VE RAGE
When City Lifestyle OKC approached Zero Tolerance Coffee & Chocolate owner Maura Baker about why she decided to open this cozy and inviting shop in the Old Britton area of Oklahoma City - right along a spur of Route 66, no less – where they also roast fine cacao and coffees, “Why?” she replied with a chuckle. “Because we’re foolish?” But once you get talking to Maura about the real reasons she and her husband, Roy Baker, opened Zero Tolerance, you learn it is about the passion for serving the public something delicious, unique and important.
Maura Baker owns and operates Zero Tolerance Coffee & Chocolate.
ZERO TOLER ANCE COFFEE + CHOCOL ATE
Bags of coffee sold at Zero Tolerance.
As Baker notes on the Zero Tolerance website, “With 200-year-old roots in Indian Territory and Oklahoma, we are veteran owned and operated and take great pride in our community, city and state.” And they do. Our Zero Tolerance policy extends from the quality of our products and services to our trade practices. We source directly from independent farmers, ensuring they are properly compensated. The farmers, our community and our customers are our lifeblood, and we treat them with great care and respect. We developed our coffee roasts to complement our brew methods and the coffee brewing methods used by our customers.” This all started for the Bakers because when they met they both loved coffee, the slow-food movement and real food. “For me, loved making food, coffee, and learn to brew beer. He learned to keep bees. We liked food, you know, food from scratch. Real food.” With Zero Tolerance, it is all about the real. Baker would not tolerate anything less. And that is evident at Zero Tolerance. Oh, and the name? That comes from the 17th century when the King of England grew intolerant of the expansion of coffeehouses and the anti-monarch conversations they created. Recreations of the King’s anticafé posters are on the walls of Zero Tolerance. “Anything we make, we make from scratch,” Baker said, as calming, New Age music played over the store speakers and customers were sitting at tables featuring chessboards to encourage interaction and conversation. She is not a big fan of people being self-absorbed on their phones. “Coffee-wise, I learned to make coffee from a friend of mine from Ethiopia back in 1992. She taught me the coffee ceremony and how to pan roast and all that, which was really intriguing. I tucked that away and thought it was really cool.” In time, Baker says she purchased some coffee beans at a local market and tried roasting them and the results were less than stellar. But when the coffee house movement kicked off in earnest in the mid-1990s, throughout the United States, Baker says she began learning more and more about the bean and all of its amazing properties. She would learn more and more as the years went by. Years later, when her husband was serving in Kabul, Afghanistan with the Army National Guard, the coffee she sent him found a following amongst soldiers from around the world.

Zero Tolerance also sells coffee from the historic Owl Court building on Britton Road.
Zero Tolerance chocolate pairs well with their fresh coffee.
“The Italians loved his coffee … I mean, they came with espresso machines,” Baker says, chuckling. “They kept saying, ‘Why don’t you sell this?” Eventually, he returned to the U.S. and the coffee-selling idea seemed doable. And with their children growing up, Maura Baker said she and came to the conclusion that they could sell coffee. Sure, there are people who sell coffee out of a warehouse, online, or from their garage. Baker, however, wanted people to know about the process of coffee and where it comes from and how it can be utilized and crafted into what we have come to know and love. “We thought the legitimacy of it was to actually have a café, while harkening back to the traditional espresso values that the Italians had, from the 1930s. You know ‘express coffee,’ you drink it quickly and in a real cup. And if you’re going to add a syrup it’s because you want to add the flavor rather than you’re going to hide something that will diminish a good coffee.” “We don’t want to have fancy flavors because they sound cute. I want real coffee and real well-thought-of compounds that compliments the coffee.” That includes a medium roast chosen to make the espresso. “People are so used to the bitter and the dark that they’re dumping sugar in everything. And I see that in the American palette. They can’t taste real things anymore. “And coffee is good. It tastes good. And that’s part of the reason we decided to open the café and the coffeehouse like it is. We wanted people to experience coffee and to experience chocolate, because chocolate is really cool. “It’s one of those things, most adulterated products that “We have a 2,000-square-feet factory facility and manufacturing facility where we make chocolate and roast our coffee,”
28
LOCA L’S CH OICE | FOOD + BE VE RAGE
Baker said, noting that an Israeli company built a roaster from Baker that roasts both coffee and chocolate, helping to streamline the roasting process. “It helps with the dynamic range. Coffee roasts at a very high temperature and chocolate at a very low temperature,” Baker said Hand-dipped caramels with chocolate from Guatemala were brought out on a tray. And they were delicious. “It’s for people who like a little bitter edge to things,” she said, smiling. “And I have those people, they find us. It’s funny.” Maura described another treat – the Fubar – that is “like a Hershey’s Fifth Avenue bar or a Butterfinger …. like a toffee mixed with peanut butter, so it’s very crisp,” she said, adding, “We try to stay away from imitation flavors.”
HISTORIC OWL COURT BUILDING Zero Tolerance is not just the shop on Britton. A block or so east of the main café, along Britton Road, is the historic Owl Court motel, which was recently fixed up to the way it appeared when it was originally completed in 1930, along a spur of Route 66. It was in the former town of Britton, which was later annexed and absorbed into Oklahoma City. The distinctive, front office building of Owl Court was obtained – briefly – by a coffee business, before Baker later acquired it and made it to where people driving by – 20,000 cars a day along this particular stretch – can stop and order a cup of Zero Tolerance’s brews. “It’s a fun way to reach people,” Baker said, noting that it’s her children that work the Owl Court building location. And with cooler temperatures descending on Oklahoma City as autumn advances, Baker is hoping coffee consumption at Zero Tolerance increases. And as the word gets out, it most certainly will.

The Importance of Tracing Assets in a Divorce Case Tracing separate property or assets in a divorce can be an important issue for lots of individuals. Take a situation where somebody has a 401k or IRA before marriage. They have put money into this account before marriage. They then get married. After marriage, they continue to contribute to this 401k or IRA. At this point, pre-marital separate funds and marital funds are being mixed. The parties then file for divorce. In these situations, the one spouse is often asking that the entire 401k or IRA be divided in the divorce. The spouse who had funds in these accounts before marriage argues that the pre-marital portion should be set aside to them entirely. And they argue that
only the funds put in during the marriage should be divided through the divorce. The reality, however, is that the separate funds need to be traced out from the account. This often requires a forensic accountant reviewing statements and doing an analysis to determine the amount that was in these accounts during the marriage. At a minimum, parties may need to subpoena the statements from the date of the marriage to try to determine the amount that was in there. However, it can often be hard to obtain statements at the exact date of the marriage. In addition to 401ks or IRAs, tracing can be important for other assets like bank accounts, investment accounts, whole life insurance policies,
and other assets where a party might have built up cash value before marriage. In some instances, a party might consider having a prenuptial agreement drafted before getting married.
