FINDING A HOME After traveling the world, Rettig leads Northlake as mayor
As the son of missionaries and working in finance, David Rettig has lived around the world. But after all his travels, he’s found a home in Northlake and is striving as mayor to guide it into a bright future. “It’s truly a wonderful place,” Rettig said.

Rettig grew up far from the vast open spaces of Northlake and North Texas. He moved around more than 30 times but spent a significant portion of his childhood in Prague, the capital of the Czech Republic. “My parents were missionaries. They moved to Prague in 1994 and it’s coming upon 30 years there for them,” Rettig recalled. He came back stateside and attended Penn State. While at Penn State Mayor Rettig earned bachelor degrees in both business and information science as well as technology. He put his degrees to use, going into finance, working for Fidelity, with assignments across New England. As he worked his way up, he found himself traveling west to Denver. Soon after that, his family settled in the Metroplex in 2012. They moved to Northlake in 2015 and quickly settled in. While working on his MBA at UT-Arlington, the lessons he learned as a child by watching his parents serve others set him on a new path into public service.

“I started going to council meetings and listening. I wanted to make sure from a strategic perspective the debt being taken on was justified,” Rettig recalled. Less than six months later, he found himself on the ballot running unopposed for mayor. Now into his second term, Rettig has stayed zeroed in on helping the city focus on providing citizens with high-quality services — roads, utilities and police — at an affordable rate. His commitment to quality service for the public has him sometimes surprising citizens by responding to questions in the middle of the night on social media. “Direct answers are what you are going to get if you hit me up day or night. I just have a passion for quality service,” Rettig said. That commitment to quality service is shown in the investment in employees by the city, with added training and competitive salaries. “We have a vision for a professional, responsive government,” Rettig said. He doesn’t just represent the city at city hall. He is also an advocate on the regional level with the Metroport Chamber of Commerce and state level as a party chair. “Northlake is a regional player. We’re there with Denton, Flower Mound and other cities. We’re punching outside our weight class,” Rettig said. Northlake remains one of the fastest-growing cities in the state and region. Rettig welcomes the many newcomers to this wonderful city. “It’s a community where you can have a beautiful home and wonderful amenities, along with enjoying the best of what this region offers,” Rettig said. “It’s the new melting pot. A vast number of people moving here are from out of state. We’re close to the top five most economical cities from our home values and taxes standpoint. Truly there’s no where better.” He’s seen enough of the world to know.

Perfect pork sliders D E L I C I O U S S M O K E D T R E AT F O R FA M I LY, E N T E R TA I N M E N T
Pork sliders provide the perfect meal for the big game.
A juicy pulled pork slider is a near-perfect way to finish off a day after working around the house or entertaining. They are the perfect meal for game day or settling in to watch a movie. And with today’s pellet smokers, much of the guesswork or constantly checking temperatures of the grill and the meat is taken out. A couple of words of warning before you start. Don’t expect to eat right away. The process may take eight hours, but it will be worth it.

Start with an 8- to 10-pound pork butt and premium rubs.

8 to 10 pound pork butt Premium pork rubs Yellow mustard Apple juice 2 Sticks of non-salt butter 1 bag of brown sugar Package of Hawaiian rolls or brioche buns Cole slaw Barbecue sauce 2 deep foil roasters Bag of pellets, preferably apple, cherry or mesquite
prep time: 30 minutes
cook time: 8 to 9 hours
prepping: 1. Start with an eight to 10 pound pork butt. Use pork butt and not pork shoulder for more tender meat. The pork butt also generally has more marbling, which also translates to more flavor and juiciness. 2. Once you take it out of the packaging, you will need a sharp knife to cut some of the fat off the bottom. You will leave just a thin layer of fat. 3. After trimming the fat, comes the messy part. You will smother the full pork butt in yellow mustard. The mustard is the perfect binder, but it will not affect the flavor of the meat. 4. Now, you are ready to cover the pork butt in the rub. This is where you can’t skimp. A very quality rub is needed and luckily there are plenty of choices. 5. My favorite is a mixture of Meat Church’s Holy Gospel BBQ Rub and Honey Hog Hot BBQ. You really can’t go wrong with any of Meat Church’s rubs. 6. I generally like to let the pork rest overnight in the fridge to really soak in the rub. You can do it within an hour of going on the grill. You will need it in a deep roaster pan, and I suggest covering it in foil. CONTINUED > MAR CH 2 0 2 3 | C I TYL I FE STYL E . C OM/ N O RT HL A KE

Look to bring the smoked pork butt to a golden brown.
ready to smoke: Long and slow is the rule of thumb here. You want your grill or smoker to be around 275 degrees Fahrenheit for a good even smoke. Put in your probes. I suggest using probes that are connected to your phone or tablet via bluetooth. This will give you a little extra freedom. You can check the temperature of the meat while running around the house. Also if using pellets, try using pecan, hickory, apple or mesquite for a little extra bold flavoring. Once you hit that 275 temperature, put the pork butt directly on the grill and plug in the probes. Every 45 minutes or hour, you will need to go out and spritz the pork. I prefer to use apple juice for that extra sweetness. The moisture of the juice will soak in to keep the meat moist. Slowly over the hours, you will see the pork start to turn a perfect golden brown. As you wait, you can make your cole slaw to go on top of the sliders. It’s the perfect complement as a side dish also. Around hour four or five, you will see the internal temperature of the pork hit 165 degrees, it is fully cooked at this point, but it’s not ready. We’re just now ready for the second important phase.

secondary prep: Remove the pork butt from the smoker and put it in a foil deep roaster pan for the secondary prep. Once in the pan, it’s time to lather the pork butt in brown sugar. As with the rub in the first step, don’t be shy with the brown sugar. After covering the pork butt in brown sugar, take the two sticks of butter, cut squares and place them all over the pork butt. This will help add a little extra moisture. Add a little more apple juice into the pan. Cover the pan with foil before returning it to the smoker. Your temperature will stay at 275.
After bringing the internal temperature to 205, the pork with shred easily. Add a topping of Cole slaw for the perfect flavor.
getting to the right temperature: This is where your patience will be tested. You want to get the internal temperature to 205. This is where the tissues will break down and the pork will be juiciest and most tender to pull apart. When you reach the 205 temperature, you are ready to take the pork off the smoker. Put it on a cutting board and let it rest for up to 20 minutes. Once it’s had time to rest, you can start pulling the meat apart. The best tools for this task are meat claws, they will let you dice up the entire slab of pulled pork within minutes.
slider time: You have done the hard (or really easy) work and it’s time to enjoy. I pile a big helping of pulled pork on a Hawaiian roll and then top with cole slaw and barbecue sauce. Yum yum, it’s time to dig in. You will have plenty left over and best thing to do is to freeze the leftovers. Spencer Dupre witnessed early on the difference one can make in someone’s life, with belief and a willingness to work. One of his earliest memories at 3 years old, was with his mother in a hospital after she suffered a severe spinal cord injury. He recalled his mother's hard work and determination to overcome the odds and walk again. “The physical therapist didn’t have to take a chance to help my mom walk again. But they did and because she had a kid at home, she was willing to do everything in her power to walk again,” Dupre said. That lesson is at the heart of his practice, Empower Chiropractic. From his clinic at the Settlers Center in Argyle, he’s not only helping families and individuals with pain but serving children with developmental and sensory challenges thrive. “It’s amazing to sit across from a mom with a 2-yearold with autism and you help them thrive and add life to their days,” Dupre said. “My specialty is kids on the spectrum and sensory process disorders. I help them move around the world.” He specializes in working with infants, toddlers and kids to make sure they have a clear and functioning nervous system. He also works with new and expecting mothers. Dupre knew early in life that he wanted to help others. He acted on a suggestion to visit a chiropractor and ended up finding his calling. He spent his senior year of high school shadowing the local chiropractor in his small Louisiana town.
“I appreciated the fact I could impact people’s lives,” Dupre said. Dupre quickly pursued his education. Spencer studied kinesiology at the University of Louisiana at Lafayette before moving to the Metroplex to attend chiropractic school. He obtained his Doctor of Chiropractic degree, while subsequently completing a Bachelor of Science in Anatomy and another in Health and Wellness. “I moved with a purpose,” Dupre said. “I knew where I was going. I felt a calling and a purpose.” In his practice, he takes the time to listen to his patients, along with working with them to figure out what they are not telling him. “I wanted to be the doctor to say I hope I am able to help you,” Dupre said. “It doesn’t matter why they are coming in. The Barrel, a wine and whiskey restaurant, pairs an exquisite menu with a dash of whimsy for an inspired night out in North Texas. The Bartonville hot spot opened last summer serving guests dishes such as salmon wontons, Chilean sea bass and steak with ancho butter – a culinary surprise in what was once a sleepy small town. It's quickly turned into a destination watering hole and culinary find for local residents. The bar and restaurant evolved from owner Brandon Bohannan’s love of entertaining and keen business sense.
“I love being around people,” Bohannan said. “The main driver was to entertain and host. The original concept was a high-end wine and whiskey bar, but then we decided we needed food … and it had to be the best food. “One thing leads to another, and the next thing you know, we’re serving oysters and truffles.” To create an upscale experience with exceptional hospitality, Bohannan put together a rock-star management team with general manager Caitlyn Johnson and bartender Blake Smith, who complement each other's vast talents. “From my perspective, they’re the perfect yin and yang,” Bohannan said. “Blake is outgoing and buoyant, and Caitlyn is all business. We’re lucky to have them both.” Bohannan’s wife, Morgan, is the assistant general manager, and Chef Jorge Romero took over the kitchen in February, bringing time-tested skills and creativity. For more than eight years, he was the executive chef at Michaels Cuisine in Fort Worth, and prior to that he worked abroad in India and Dubai. Every dish at The Barrel is made from scratch using only the freshest ingredients. “The main thing is the way we source our products,” Bohannan said. “We buy the highest quality you can buy. Our fish is never frozen; it’s always flown in within two or three days of being caught, and we serve HeartBrand’s Certified Akaushi Beef exclusively.” The new American menu is influenced by various cultures, and it changes with the season and availability of ingredients. The spontaneity and constant cultivation not only maintain the restaurant’s relevance but also feeds the creativity of The Barrel team. The cocktail menu is also created seasonally by Smith, who spends hours perfecting every detail until it’s dialed into his satisfaction. “We have the best drinks around,” the award-winning bartender said. “It’s not an ego thing. They are objectively delicious drinks.” Smith said when he’s formulating a new menu, he’ll stay at the bar until the wee
hours of the morning, mixing drinks and fine-tuning the recipes. “I’ll make one, taste it, dump it out, and start again,” he said. “But if you taste it and your eyes go wide, then you write it down.” In addition to top-notch ingredients and beautiful garnishes, Smith gives each cocktail a kicky name, like Tinkle on the Blower or All Talk & No Trousers. “Tinkle on the Blower is an English idiom that means ‘Give me a call on the phone,’ but it’s so fun,” he said. “I found that the more risqué the name is, the more popular the drink.” Classic cocktails, mocktails and a wide selection of wine and whiskey round out the drink menu. Bohannan and Smith recently created Cork Club to provide patrons with an additional experience and give them access to the restaurant’s buying power. For a monthly membership fee, wine enthusiasts can buy fine wines at deep discounts, have exclusive access to wine tastings and pairing dinners and have specific wines sourced by The Barrel team. “You can order one bottle from me, and the savings will pay for your whole month’s membership,” Smith said. Bohannan and his team are constantly creating ways to enhance the experience and welcome everyone, from the most adventuresome foodies to the more traditional diners. The menu, décor, and even the playlist are always evolving, perfectly crafted to create an upscale, energetic vibe. CONTINUED >

“We want it to be nice for the neighborhood but approachable both from a price point and presence,” Smith said. The Barrel opens daily for happy hour at 2 p.m. with half-price drinks, followed by dinner service. Reservations are recommended and can be made online at thebarrelbars.com. “It takes at least a year to put your foot down and say with certainty ‘we’re here, and this is what we do,’” Smith said. “So, I’m really excited as we approach that year mark because I think it’s only going to get more special as time goes on.” The Barrel is at 2648 Farm to Market Road 407 East in Bartonville.
