One Step Coyotes for Adults with Disabilities Begins 2021-2022 Season The One Step Coyotes, the Valley's only adaptive hockey program for adults with intellectual disabilities, has begun the 2021-2022 hockey season, running through February 24. Carrie Weinberg is the owner of Desert Sage Bodywork. She opened her business in January 2017 and worked as a sole proprietor. Two years later, she began expanding by adding additional therapists. Weinberg moved Desert Sage Bodywork to its current location at 85th Avenue and Deer Valley Road in September 2020. Weinberg says that what sets Desert Sage apart from other day spas is the approach she and her therapists take. “We are very passionate about whole body healing,” she explains. “Every session is customized for that purpose.” We recently sat down with Weinberg and asked her about massage and why it is an important part of a whole body, wellness routine. TELL US A BIT ABOUT YOURSELF AND HOW YOU ENDED UP AS A MASSAGE THERAPIST. Right after high school, I attended community college as a fitness/health major. I was in a bad car accident and had to put school on hold. Part of my treatment to rehabilitate my injuries was massage therapy. I saw what a difference it made in my healing journey, so I decided to go back to school for massage. I hire therapists with an equal passion for wellness. Fit Body Boot Camp (AZFitBody.com) aims to make working out fun and welcoming for everyone. That is a vision Peoria resident Kelly Sullens fell in love with when she learned about the Fit Body Boot Camp model. At the time, she was living in Orange County, CA with her husband. She felt unfulfilled in her career so decided to open up her own Fit Body Boot Camp.
SULLENS MOVES TO NORTH PEORIA Various reasons kept Sullens from setting up shop in California, so she and her husband sold their home, quit their jobs and moved to Arizona. Five years ago they opened their first Fit Body Boot Camp franchise in the Arrowhead area. Three years later they opened a second Fit Body on Lake Pleasant Road. Before becoming proprietors in the fitness industry, Sullens worked in IT and her husband was a photojournalist at the OC Registrar. “This was a big leap but everything aligned to make it work, so we did it,” says Sullens.
WHAT IS FIT BODY BOOT CAMP? Fit Body Boot Camp offers members 30-minute circuit training sessions that are easily adaptable to every fitness level. The workout doesn’t include the use of machinery or equipment. Instead, it focuses on using the person’s own body weight for resistance. CONTINUED >

“It’s designed to be short, sweet, and always a good time,” explains Sullens. “There are different stations and it’s a different workout every day.” The Arrowhead and Lake Pleasant locations have seven trained coaches who rotate between locations. The facilities are co-ed, welcoming to all. “Our members love working out with us, they feel comfortable and never shamed,” says Sullens. “That’s what we hear the most, that people felt shamed or embarrassed at other gyms. That’s not the case here. We welcome everybody. We have someone who recently had a hip replacement and one who is 88 years old!”
SULLENS’ TIPS FOR HEALTH AND FITNESS 1. Eat more lean protein! Protein keeps the body satiated and helps burn fat. 2. Eat several small meals throughout the day. NORTH PEORIA HIKING TRAILS SOMETHING FOR EVERYONE ON THE PEORIA TRAILS
The City of Peoria (PeoriaAZ.gov) maintains more than 20 miles of multi-use trails. The trails take you up close to desert plants and wildlife. Watch for interesting things, but don’t disturb anything you find on your hike. Remember your sunscreen!
1. paloma community park loop The loop trail is a 1-mile moderately traveled smooth surface trail. It is suitable for all skills and abilities. The trail circles Paloma Community Park, passing picnic tables, playgrounds, ball fields, restrooms and a fishing lake.
2. calderwood butte trail Calderwood Butte Trail is a moderately difficult 1.5-mile mountain loop. It offers stunning views of the Northwest Valley and the Salt River. Be cautious of staghorn cacti at lower levels, which can snag bare legs and ankles.
3. westwing mountain trail Westwing Mountain is a 4-mile loop in Westwing Mountain Preserve. It is a more challenging trail with a steep, rocky climb. As with most mountain trails in Peoria, this one has loose rock. It is a good idea to wear strong-soled shoes with ankle support when hiking Westwing.

Gluten-Free Recipes REBECCA TAIG SHARES SIMPLE, DELICIOUS GLUTEN-FREE RECIPES
North Peoria resident Rebecca Taig (RebeccaTaig.com) was diagnosed with Graves’ disease in 2009. The autoimmune thyroid disorder caused more problems, leading to food allergies. Taig found she could no longer tolerate gluten, so went on a search for great tasting gluten-free dishes. She shares two of her recipes for delicious gluten-free dishes.
Z UP PA T O S C A N A S O UP INGREDIENTS • 1 medium yellow onion, diced • 1 Tbls oil • 1 lb ground spicy Italian sausage • 4 cups white sweet potatoes (peeled and chopped into 1/2” cubes) • 5 cups chicken broth • 1 can coconut milk • 4 cups kale (chopped and de-stemmed) • 1 tsp garlic powder • 1/2 tsp salt • 1/4 tsp pepper
DIRECTIONS 1. In a large frying pan on medium heat, add oil, onions, and splash of water. Cover and sauté until translucent, 5-8 minutes. 2. Add sausage and cook until browned, breaking into small crumbles. 3. When browned, drain fat. Pour onion and meat into large pot. Set aside. 4. Add chopped potatoes and remaining ingredients, except kale, to pot. 5. Bring to a boil over high heat. Reduce heat, cover, and simmer for 15 minutes. 6. Add kale and cook 5 minutes. 7. Serve or store in fridge up to 5 days.

LEMON LOAF WET INGREDIENTS • 2 large eggs • 3/4 cup sugar • 1/2 cup yogurt • 1/4 cup coconut oil or unsalted butter, melted • 3 Tbls lemon juice • 1 Tbls lemon extract • 1 tsp vanilla • finely grated zest of 1 lemon DRY INGREDIENTS • 1 cup gluten-free baking flour • 1 cup almond flour • 2 tsp baking powder • 1/2 tsp baking soda • 1/2 tsp salt
DIRECTIONS 1. Preheat oven to 350F. Grease an 8” x 4” or 9” x 5” loaf pan and set aside. 2. Add 2 eggs to a large mixing bowl and beat until frothy, 1-2 minutes. 3. Add remaining wet ingredients. Mix for 30 seconds. 4. Stir in dry ingredients and mix well. 5. Pour batter into prepared loaf pan. Bake 45-50 minutes. 6. Remove from oven and let sit in pan for 10 minutes. Remove from pan and cool on rack for 1-2 hours before glazing. GLAZE 1. In a small bowl, stir together 1 cup powdered sugar, 2-3 Tbls lemon juice, and 1/2 tsp lemon extract. Pour over loaf and spread. Let sit for 5 minutes. 2. Store in a sealed container at room temperature up to 3 days.
