October—Food & Drink Join us as we celebrate food this month with our October food and drink issue. Inside, you'll find some of our favorite restaurants and gathering spots in the West Valley. As a long-time food, wine and travel writer, food has helped create some of the best memories of my adult life. I have met incredible people worldwide by sharing a simple meal with them, whether in a small café in rural Southern Arizona, a Michelin-star restaurant in Sonoma, a sidewalk restaurant in Venice or a dive bar in Washington, DC. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent savoring a meal is priceless. As restaurateur Giada De Laurentiis says, "Food brings people together on many different levels. It's nourishment of the soul and body; it's truly love." We want to show you some places close to home—and afar—where you can enjoy delicious food and experience that sense of sharing over great meals. Around town, you might spot me at Mochilero Kitchen, where I adore the ceviche, or at Arrowhead Grill where I'm a sucker for the Delmonico or perhaps enjoying sushi at Harumi Sushi. Be sure to stop by and say hello! And have you checked out the new Turquoise Wine Bar? What a great new asset to our community. What are some of your favorite dining spots around town? We'd love to hear. But dining out isn't the only way to experience great food. There is an art to creating a flavorful dish that satisfies our taste buds and evokes memories. The aroma of certain spices and foods can bring us back to our childhood kitchen table, which can be incredibly powerful and comforting. In this issue, we offer you a few recipes you can try on your own to help create lasting memories. A special thanks to North Peoria resident Maria Kohayan for opening up her home for our cover photo. “As a teenager working with my uncle, a Louisianainfluenced chef, I found a passion for taking comfort food recipes, maintaining those flavors and refining them into an upscale dining experience.”
Chef Evon Profitt is a self-described farmer, husband, father and chef. As Culinary Director for Westside Concepts (WestsideConcepts.us), the Arizona native brings farm-to-table dining to the West Valley.
A CULINARY UPBRINGING Summers were long and hot growing up in Arizona, so Profitt spent the time learning how to cook with his family. He baked pies with his grandmother and prepared Southern comfort food with his mother. After working with his uncle, a chef, during high school, Profitt wanted more. He graduated from Le Cordon Bleu at Scottsdale Culinary Institute with a degree in Culinary Arts. His first position was with The Wigwam Resort in Litchfield Park, where he trained under some of the Valley’s most acclaimed chefs—Chris Knouse, Richard Hinojosa and Lenard Ruben. Profitt says he was influenced by some Arizona legends, including Chefs Michael Rusconi and Kevin Binkley. He quickly progressed to Sous Chef at Litchfield’s at Wigwam Resort. “I continued to grow and develop a knowledge of farmto-table dining,” explains Profitt. “We utilized local farms and ingredients from the restaurant’s garden.” Profitt loved the monthly wine dinners at Wigwam. “I could showcase my unique expertise while pairing multiple courses with the selected wines.” He reveled in going off-script and bringing in techniques and ingredients not often used in Westside cooking. “It became a new drive in my career.”
EMBARKING ON THE FARM JOURNEY In 2013, Profitt and his wife Jennifer—along with their five boys—purchased a farm. Profitt, from a

long line of ranchers and homesteaders, embraced returning to his roots. Dixie Rainbow Farm began with one pig. “Within a few weeks,” laughs Profitt, “we added chickens and goats. What started as a hobby soon became our new way of life. We teach our kids how to grow their own food and prepare it.” Profitt says the driving force was their children. “Our mission was no longer owning a hobby farm, but teaching sustainable living while providing fresh ingredients to friends, family and local Valley restaurants.” Today, Dixie Rainbow Farm specializes in eggs, pasture-raised chickens and goats’ milk along with a variety of seasonal produce and fruit from more than 60 fruit trees on the farm.
BECOMING A CULINARY LEADER Once the pupil, Profitt quickly emerged as a culinary leader in the Valley. After seven years at Wigwam Resort, he joined forces with fellow SCI alum Justin Woodward at Genuine Concepts in the East Valley. While at Genuine Concepts, Profitt was a James Beard finalist in the Blended Burger Project, utilizing mushrooms as a meat substitute.
HOME IN THE WEST VALLEY Profitt took over the position of Culinary Director of Westside Concepts in 2020. He enjoys creating menus for The Haymaker, Cantina Gueros and NW Coffee. Westside Concepts is the parent company founded by Joey Lucidi, who opened the first Haymaker Restaurant in Peoria in 2013. Today, Westside Concepts operates multiple West Valley eateries, each aiming to be your go-to neighborhood restaurant.

CHEF EVON’S TACOS BORRACHO (DRUNK TACOS) • 3 lbs brisket or chuck eye roll MARINADE: • 7 cloves peeled garlic • 2 cans (7 oz each) chipotle peppers (remove from adobo sauce) • 4 oz can diced green chiles • 7 dried pasilla chiles (stems and seeds removed) • 1 yellow onion, peeled and roughly chopped • 1 ½ tablespoons ground cumin • 1 ½ tablespoons dried Mexican oregano • 2 tablespoons kosher salt • ¼ teaspoon ground clove • 1 cup beef stock • 3 oz lime juice • 4 oz apple cider vinegar DIRECTIONS: 1. Add first ten marinade items in a medium pot. Simmer over medium heat for 15 minutes. Transfer to a blender. 2. Add vinegar and lime juice. Blend 2 minutes until smooth. Add salt to taste. 3. Trim fat off the top of the brisket and cut into 2” pieces and toss in marinade to cover. 4. Marinate for two hours. 5. Preheat the oven to 300F. Add brisket and marinade to a Dutch oven. Add water to cover. 6. Place over medium heat on stovetop and gently simmer. Cover and transfer to oven. Cook for 3 hours, until tender. ASSEMBLE TACOS: 1. Mix ¼ cup each of minced cilantro and onion. 2. Remove meat from sauce and shred. Keep marinade warm over low heat. 3. Place a skillet over medium heat. Dip the tortilla into fatty top of broth and add it to the skillet. Pan fry on one side for about 30 seconds and flip. Add some shredded meat and top with Oaxacan cheese. Fold over and pan-fry on both sides for about 1 minute. 4. Transfer to a plate and garnish with cilantro and onion. Serve with marinade for dunking.

Each fall, Arizonans start planning herb gardens, fire up the grills for patio dining and enjoy getting outdoors. Turning the outdoor space into a home garden is a great way to embrace Arizona winters. Growing fresh herbs is simple, even in the smallest spaces. Sweet Italian or purple Thai basil has a floral sweetness with a hint of pepper. Cilantro (or coriander leaf) is a love-it-or-hate-it kind of spice, great for chimichurri sauce. Rosemary is ideal for adding flavor to meats and potatoes. Thyme is a French staple.
Its tiny aromatic leaves add a beautiful floral note to dishes. Dill is tangy, ideal with salmon, yogurt and lemon. Oregano, used in most Italian dishes, offers a peppery, earthy flavor. If you prefer to purchase herbs, buy them close to the time you plan to use them. Wash them, wrap in a damp paper towel and place in a ziplock bag. Store on your refrigerator door or top shelf. GAR LIC HER B BUTTER This is a versatile butter and goes with just about anything. Use this on top of bread, popcorn, veggies, as a sandwich spread and more.
INGREDIENTS • ½ cup unsalted butter softened to room temperature • 4 tablespoons fresh parsley, chopped • 1 tablespoon herb of your choice (dill, basil or oregano are my go-to herbs)
• • • •
1 clove garlic, chopped 1 tablespoon fresh lemon juice ½ teaspoon salt Cracked pepper to taste
DIRECTIONS Add all ingredients to a food processor (or mix by hand in a bowl). Transfer butter mixture on parchment paper or plastic wrap. Cover butter tightly and roll into a log. Place in refrigerator until firm. Enjoy!
CHIMICHUR R I Chimichurri is a condiment you can use on endless things, and you can enjoy it as a sauce or dip. Serve over fish, chicken, vegetables or with crackers.
INGREDIENTS • ½ cup olive oil (or flax oil for added omega 3 nutrition) • 2 tablespoons red wine vinegar (or lemon juice as an alternative) • ½ to 1 cup fresh parsley, chopped finely • ¼ cup fresh basil or cilantro • 3-4 cloves garlic, minced
• 1 small red chili or 1 tablespoon red pepper flakes • ½ teaspoon dried oregano or Italian seasonings • 1 teaspoon salt • Pepper to taste
DIRECTIONS Finely chop fresh herbs and add to a bowl. Add remaining ingredients and mix. Chill for 1 to 2 hours and enjoy.

85 Local (85LocalAZ.com) is a new boutique in Peoria offering items from local artisans, maker's classes and gourmet goodies. Inspired by similar creative cooperative concepts in the East Valley, owner Misty Stachel opened 85 Local to bring local goods by local artisans to the community. “We just didn't have anything like it on this side of town,” she says. The fitness instructor at Mountainside Fitness and mom of three boys and three dogs started selling workout clothes and graphic tees online. She began selling them at various coops, but those were only in the East Valley. She knew it was time for something similar in the West Valley.
A SENSE OF COMMUNITY Stachel believed opening 85 Local would be a hit with Peoria residents, and she was right. "We've been very well received, and the community has been great to us." The 1100-square-foot shopping space on Lake Pleasant Parkway is home to 24 vendors, including five food vendors. Stachel explains that it took the community to make 85 Local a reality. Her husband, Joe, is President of RKS Plumbing & Mechanical. "He and his contractor friends helped with my build-out," explains Stachel. She says that RKS Executive Vice President Anthony Abbruzzio created the vision for the space and helped coordinate all the activities.

NORTH PEORIA CREATIVE CO-OP BRINGS LOCAL ARIZONA DELIGHTS TO THE COMMUNITY ARTICLE BY ANGEL FUCHS
Open since April, 85 Local is a true homage to the great state of Arizona, showcasing all things Arizona. Stachel, an Arizona native, explains that there are 11 native Arizonans showcased at 85 Local. Even the boutique's name is a nod to the 85 ZIP codes in Arizona. "We love Arizona!" exclaims Stachel.

SHOPPING There is a little something for everyone at 85 Local. Shoppers will find handmade candles, wall art, chunky knitted items, epoxy cups, handstamped keychains, baby items, jewelry and fun t-shirts. The inventory changes weekly. “Shoppers will find great, one-of-a-kind items at 85 Local, great gifts for just about everybody,” explains Stachel. “I am so proud of the variety of vendors you'll find here.”
Shoppers will also find culinary delights such as whole bean coffee, local honey and freshly baked sourdough bread. “We offer a variety of gourmet items that make great gifts for the holidays and other special occasions,” explains Stachel. Decorated sugar cookies from Rosette and Ruffles are big sellers. “Our cookie vendor is so good,” Stachel says. “Her work is absolutely beautiful. I love seeing what she brings every week.” 85 Local also sells fresh baked goods and pastries from The Duchess Pastry Kitchen. Items include sourdough bread loaves in a variety of flavors, as well as croissants, brownies and pies. Shoppers are encouraged to pre-order baked goods for the best selection. Every week, Stash Bakery brings out a variety of handmade French macarons. These include such unique flavors such as cake batter and cookies and cream. Other food items found at 85 Local include local honey from Honey Hive Farms and whole bean and ground coffee from Mis Raices Café.
ARTS & CRAFTS CLASSES Looking to perfect your own love of arts & crafts? 85 Local offers monthly classes. Rosette and Ruffles, the cookie vendor, holds cookie decorating classes where guests learn tips and techniques to create their own sugar cookie masterpieces. “Cookie decorating is one of the most popular classes we have,” Stachel says. “She is a great teacher, giving step-by-step instructions, and all supplies are included. It's a lot of fun.” Other classes include painting and macrame. 85 Local is located at 8271 West Lake Pleasant Parkway in Peoria.

Open nearly 15 years, Lakeside Bar & Grill (LakesideBarandGrillAZ.com) has become a neighborhood favorite for Northwest Valley folks. The establishment opened in 2008, hoping to provide residents in the area with a meeting spot serving good food and drink. The family-friendly restaurant and sports bar features two dog-friendly patios, daily happy hour, live music and wall-to-wall TVs to catch all the games, including NFL Sunday Ticket. Lakeside is known for delicious flamegrilled burgers, local brews and handcrafted American-Southwest lunch and dinner. There is also a favorite Sunday breakfast menu.
STAFF FAVORITES Director of Operations, Janeth Moore, loves the fajitas. “They arrive sizzling at the table, and I always get the three-item combo of chicken, steak and shrimp with a Lakeside Margarita, which is simply the best.” General Manager, Thomas Thome, usually starts his meal with some wings in desert heat sauce, followed by one of their fabulous halfpound burgers. “Usually, it’s a toss-up between the Arizona Burger with house-made jalapeño jam or the Black & Blue Burger with bacon, blue cheese crumbles and grilled onions. I enjoy a seasonal rotating draft beer from our local craft brews selection.” If burgers and wings aren’t your thing, there is also an “All You Can Eat Friday Fish Fry,” salads, sandwiches, full-size entrees and a kid’s menu for the younger customers.

The restaurant group that owns Lakeside, POV Foods, owns and operates several other Arizona spots, including 32 Shea, Rusty Spur Saloon, Red, White and Brew and Bill’s Grill in Prescott. Lakeside touts itself as a must-visit spot for locals. “We’ve been the Northwest Valley’s neighborhood anchor for years,” says Moore. “While we aren’t right near the Lake, our name is a nod to Lake Pleasant. The local clientele gets it. We were one of the first businesses at the Four Corners, and we are excited to see the continued growth and development of the area.”
