This year marks 52 years since Earth Day was founded. What was a day of environmental education now is a global observation. We'd like to encourage us all to consider the following three ways to keep the benefits of ecofriendly practices going year-round: 1. Really do plant a tree, because a single one can absorb 10 pounds of air pollutants a year, and produces nearly 260 pounds of oxygen during that period. 2. Recycle all reusable materials, because the average person generates more than 4 pounds of trash every day and about 1.5 tons of solid waste per year, according to industry sources. 3. Reduce personal energy use by unplugging electronics when you're not using them. In the average home, 75 percent of the electricity used to power home electronics is consumed while the products are turned off, according to the Center for Climate and Energy Solutions. The theme of this month's edition is "Explore." So, please join us in exploring new local foods, lawn care options, a variety of book recommendations from the Newtown Bookshop staff, beneficial financial planning and predictions in our regional real estate market. One might assume heading to New Orleans is the best way to indulge in luscious, lighter-than-air beignets. However, there’s a new, compelling treat that’s winning local taste buds.

One might assume heading to New Orleans is the best way to indulge in luscious, lighter-than-air beignets. However, there's a new, compelling treat that's winning local taste buds. River House at Odette’s in New Hope now features these fluffy, little pastry pillows as a signature dessert on the restaurant's recently revamped food and beverage menu. Newtown City Lifestyle was invited to try this new item, and the results were impressive. Crispy on the outside and ethereal on the inside, they are light yet satisfyingly substantial. Guests can enjoy Odette’s beignets the traditional way, sprinkled with a dusting of powdered sugar, or they can take the beignet experience up a notch with a limited-edition seasonal version, in sync with the new menu’s theme of highlighting locally sourced seasonal ingredients. Autumn’s beignets were apple cider-infused and drizzled with bourbon caramel. For our winter visit, we were treated to Meyer lemon and ricotta beignets accompanied by a thick, jammy blueberry compote, with the hint of tart lemon a perfect balance to the sweetness of the berries. Crafted in-house by Odette’s Pastry Chef Alexis Ramos, this celebrated French pastry is the perfect way to pay homage to the River House’s namesake personality, French-American actress Odette Myrtil. Odette reportedly began her career as a violinist on the vaudeville stage in Paris at the age of 14. She was featured in 28 films; the majority of which were made from the mid-1930s through the mid1950s. She then resided in New Hope during most of her later life. From 1955 to 1958, she managed The Playhouse Inn, located next door to the Bucks County Playhouse. From 1961 to 1976, she operated the New Hope restaurant Chez Odette, which later became Odette's Restaurant, a different restaurant under new ownership. Beignets also are called fritters or fried doughnuts. Even the word (ben-YAY) is fun to say. Crafted in-house by Odette’s Pastry Chef Alexis Ramos, this celebrated French pastry is the perfect way to pay homage to the River House’s namesake personality, French-American actress Odette Myrtil.

Odette’s new beignets also are available as the hotel’s first take-out option, perfect for a “grab and go” treat to enjoy while strolling around scenic New Hope. In addition, overnight hotel guests will receive an order of beignets as a unique, turndown amenity, and they also will be offered as a menu option for special events. This new food and beverage program features many other updated menu items, fusing traditional classics, such as meatloaf and cornbread with specialty items, such as cioppino. On our visit, we were led to a romantic, dimly lit table while a violinist played soft background music in the lounge. Our waiter, Anthony, was courteous and thoughtful with plenty of food and drink recommendations. We kicked off our meal with bowls of steamy soup. The Jersey red tomato soup was smoothly thick with an essence of thyme and smoked basil, topped with homemade cheese curds. The creamy New England clam chowder was generously studded with clams and bacon. Appetizers included iron skillet baked cornbread, presented in a mini skillet and bathed in honey maple poblano butter, giving it a deliciously moist and flavorful cake-like consistency. An order of deviled eggs yielded five egg halves filled with a golden horseradish crème fraiche, featuring hints of Dijon mustard and a sliver of pickled ginger. For main dishes, the blackened cauliflower “steak” was a contrast of textures – a crispy slice of cauliflower atop creamy cauliflower puree drizzled with tomato vinaigrette.

However, for both looks and taste, the star of the evening was the cioppino – chock-full of scallops, shrimp, clams, mussels, squid and roasted tomatoes in a rich and fragrant rosé champagne cream broth. Like several other dishes on the menu, Executive Chef Adam Sheff says it's currently being tested with different flavor combinations for future menu options, such as fennel and garlic. The food preparation “tweaking” of Odette's sophisticated kitchen staff is a fantastic way to highlight what’s in season, introduce guests to new flavors and keep them coming back to see what’s been updated. ECOlifestyle pioneer Marci Zaroff is transforming the world one cotton boll at a time, and she hopes more people will join her in driving positive steps to bolster future sustainability. In fact, she coined the term “ECOfashion" in 1995, and is an internationally recognized expert, educator, innovator, author and self-professed serial ecopreneur. This Newtown resident says social and environmental accountability is in everyone's DNA. "Our ecosystem is affected every day by the choices we make. We can drink, eat and wear the change we wish to see," she proclaims. Marci's desire to "start a philosophical movement" was sparked when she was 16 years old, she says, after reading the book, Living In The Light, whose author, personal growth pioneer Shakti Gawain, stated she wrote it to be a clear, practical guide for developing one's intuition. "The book centered on the fact the world is about more than what we see. I embraced that concept, and followed a more conscious lifestyle afterward. Then, when I completed a business degree, I pursued ideas that would make positive differences for the planet," she recalls.

True to her mission in her own life, Marci has devoted her career to launching companies that support noble, global causes. In 1990, Marci co-founded a health and environmental educational center with an organic café, AVEDA concept salon and national magazine. Now known as The Institute for Integrative Nutrition, she says it has graduates in 175 countries with approximately 150,000 certified health coaches around the world. Currently, she's the founder and CEO of ECOfashion Corp. Under her "Greenhouse of Brands" initiative falls several product verticals: • MetaWear, a business-to-business private label line with sustainable, turnkey manufacturing platform that involves tribal cotton growers in India, as well as traceable, regenerative farming practices. • Farm to Home, certified organic bath and bedding collections sold through QVC and to the hospitality industry. • Seed to Style, the first certified, size-inclusive sustainable apparel line sold exclusively through QVC. • Yes And, a co-creation platform offering contemporary, fair trade apparel available on Shopify for conscious, fashion-forward consumers -- which soon will add new sustainable lifestyle categories, such as lingerie. In 1996, she also founded Under The Canopy, a pioneering lifestyle brand with inspirational collections of contemporary home fashion, spa/hotel textiles, amenities and loungewear. She sold the company in 2009, and again in 2018 after rejoining in 2013. She says her goal is to always combine modern style with substance while leveraging the power of fashion. "Through the lens of design, we can change the world. We're democratizing sustainable fashion, by making it very accessible and affordable," she says. "I believe 1+1 = 11. We're stronger together than apart." From her Newtown residence, Marci often can be found Skyping nationwide live on QVC, Zoom conferencing into podcasts or hosting branded photo shoots. Additionally, Marci co-founded Good Catch Foods, which she says creates plant-based, chef-mastered delicacies with rich flavors and flaky textures of seafood — from fish-free tuna and burgers to crab-free cakes — all made with nutritious, sustainable ingredients. She adds that the mission is to preserve the ocean’s natural resources while introducing delicious 'seafood' choices. Along with her husband and longtime Newtown resident, Eric Schnell, in 2016 she co-founded BeyondBrands, a conscious-driven marketing firm that supports and promotes natural foods, beverages and supplements. Marci also published a book in 2018, titled ECOrenaissance: A Lifestyle Guide for Cocreating a Stylish, Sexy, and Sustainable World, to define the rebirth of humanity and the movement for positive change. She says she believes the world's inhabitants are entering a consciousness revolution where creativity, collaboration, community and connection are transforming popular culture. "The next generation of consumers are seeking transparency and accountability," she adds. She says her first business mentor and founder of Aveda, Horst Rechelbacher, reminded her she could do well by doing good in the world, and that's why she focuses on empowering others to be able to make holistically wise choices in life. SELLING HOUSES IS FAMILY BUSINESS MEET THE COLLETTIS A stress-free real estate process from initial listing through closing is the promise of an innovative, local mother/son team. Jane Colletti is a Realtor who's been moving domicile merchandise successfully for more than 25 years. She recently opened up shop in the heart of Newtown borough, where she operates a branch of Realty One Group Legacy. She specifically references her business as “The Colletti Team," with one of the members hitting close to home. Vinny Colletti, a young, inspirational and driven professional, is one of the key cogs of the Colletti team -- and also is Jane’s son. Vinny says he grew up around the industry of housing and construction where he spent many years of his youth helping build homes around the greater Newtown area. Though Vinny enjoyed the labor of building, he says he felt that a more desirable path would be to sell the finished product, thus joining his mother in the realty business. It, of course, goes a bit further than that, as Vinny’s boss during his years in construction was Glenn Colletti, who didn’t by happenstance have the same last name. Glenn is Vinny’s father. It’s not often that one gets the experience of bonding professionally with both parents in different sides of the same business. Glenn operates G.A.C builders, though Vinny traded in his toolbelt a while back for the opportunity to sell.

The Realty One family business operates out of the Whitehall building on State street, a property which has been in use dating back to at least 1796. Though the building has aged, the realty office is modern in every respect and a bright and inviting place to do business. It’s sort of the combination of tried-andtrue with new, which often turns out to be a well-working mix. Jane says she's a well-seasoned Realtor who handles business in a best of breed battle-tested manner, delivering great local feel and personalized service to clients. Vinny says he provides the same top-notch service through a more modernized ethic, using social media and technology-based tools to drive business and deliver results. "We see more buyers motivated to search for new homes, despite today's limited options, and we're here to still help in finding those dream homes," Vinny adds. Jane predicts a supply-demand mismatch will create a strong sellers' market, but not as intense as the peak of 2021. She adds that home prices are expected to continue rising, but at a slower pace than last year, and with a lower likelihood of bidding wars driving up sale prices. LOCAL PROFESSIONAL IS PASSIONATE ABOUT HEALTHY LAWNS — AND HEALTHY ENVIRONMENT FOR LOCAL BUSINESS

For the past six years, Matthew Peters has helped Newtown-area residents enjoy lush, beautiful lawns. He started Weed Man and Mosquito Hero of Bucks and Montgomery Counties with a single truck, and says he plans to have six on the road this season. Still, he’s not content just to grow his own business. He’s planting deep roots in the community by exploring groups, such as the Newtown Business Association (NBA), Lower Bucks Chamber of Commerce, LeTip of Lower Bucks County and Newtown Rotary Next Gen, as well as volunteering for the Newtown Township Economic Development Committee. “I always encourage any small business owner that I meet in person or online to consider joining groups like these, because I know they can have value for local business people or people who are newer to business through the connections they’ll make, the friendships, and experts they’ll be able to interact with,” he says. Matt grew up in nearby West Chester. During middle and high school, he says he always tried to make extra money by selling candy or gum and shoveling driveways. At 16 years old, he got a job as a neighborhood canvasser for Weed Man Lawn Care, an international network of locally owned and operated lawn care businesses that started in 1970. He says he was good at it, and was given other opportunities: inside sales, lawn care technician and administrative positions. Eventually, he was promoted to sales manager of one office and general manager of another. In 2016, he moved to Bucks County to open a franchise of his own. He also started to network, joining the Lower Bucks Chamber of Commerce and NBA.

Last year, he was elected to the NBA board of directors. He now chairs NBA’s Emerging Leaders committee. In 2020, in response to COVID-19-related shutdowns, the committee members launched the All Around Newtown video series, which Matt hosts. Those videos feature association members sharing their special expertise; topics range from local history and current events to health and wellness. All Around Newtown airs live monthly on NBA’s Facebook page and is available on YouTube and the association’s website. Among community benefits, the All Around project gives Matt a chance to explore other skills and talents. “I used to have an interest in broadcasting and communications. It was one of the things I wanted to do careerwise and always wanted to try my hand at," he says. Matt attends monthly networking events and gets involved in area special events, such as the NBA Business Expo, Welcome Day and the Easter egg hunt, which he says give him an economical way to promote his business to area residents. He also has sponsored business card exchanges and breakfast meetings. In recognition of his volunteerism, he received the 2020 NBA Community Service Award. “It provides me an opportunity to get my name out there, get my business out there and build personal and professional relationships,” he says of the sponsorships. “It’s a way to give back to an organization that has helped my business and to provide a foundation for a strong business community in Newtown.” Matt is happy to offer tips for a healthy lawn. Most importantly, he says, “You need to apply the right

Another thing would be to make sure your lawn is being mowed at the right height with a sharp mower blade.” Although Weed Man staffers don't cut grass, they do offer control for grass weeds, such as crabgrass, and broadleaf weeds such as dandelions, in addition to nutsedge, a rapidly-growing weed that’s in a class of its own. “It’s hard to eradicate using do-it-yourself products. It needs in-depth treatment,” Matt says of nutsedge. Grubs, which eat grass at the roots, are another problem that requires treatment, he adds. The area’s soil also can make it tough to maintain a beautiful lawn. “Soils in the Delaware Valley have a lot more clay in them. Over the summer, it gets hard and compacted,” Matt explains. "Aerating the lawn can help. If you aerate regularly, it’s going to strengthen the root system, and allow the fertilizer, seed and all that good stuff to get down to the roots easier.
