Pacific Symphony Gala Celebrates its Carnegie Hall Debut

In celebration of Pacific Symphony’s Carnegie Hall debut, a 1940s New York theme drew 400 guests to the Hotel Irvine for its “On the Town” gala. Vignettes of iconic New York scenes and cuisine greeted guests, and a sumptuous ballroom dazzled. Mary Roosevelt lost her beloved husband of 25 years, James Roosevelt, the eldest son of President Franklin Delano Roosevelt, in 1991. In 1992, Jim Doti, president of Chapman College (later University), and the Chapman board renamed Founder’s Hall the James and Mary Roosevelt Hall. Mary, still grieving, was asked for a photo of the couple to create a portrait to hang in the hall’s lobby. She has always wished she had given the school another photo. A new photo now hangs in Roosevelt Hall, thanks to Women of Chapman Past President Kathy Hamilton, who asked Mary for a photo she preferred and had it created. The portrait, along with important memorabilia that Mary gave the school of James’ service in the Marine Corps as one of Carlson’s Raiders and as a U.S. Congressman, completes the focus on one of America’s heroes. INGREDIENTS ›› 1 ½ pounds peeled, grated Russet potatoes (about 3 1/2 cups)

›› ½ cup sour cream, room temperature ›› 12 slices of smoked salmon

›› 1 large grated onion

›› 2 tablespoons capers

›› 3 tablespoons all-purpose flour

›› ¼ cup chopped scallions

›› ½ teaspoon kosher salt

›› 1 cup small heirloom tomatoes

›› ¼ teaspoon black pepper

›› 1 teaspoon white balsamic vinegar

›› 1 large egg, slightly beaten
