Romance is in the Air!

I

always like February and the celebration of Valentine's Day. I know there are criticisms of it becoming too commercialized, but I still like it. I know it helps that I'm married to a wonderful man (for 48 years, I might add) and through the years we've celebrated Valentine's Day in any manner of ways. After all is said and done, however, it seems the cards we give each other are the highpoint of the celebration for us. It's never one card, mind you. Always a bunch - it's a tradition we established in the early years of our marriage. I guess it's safe to say Hallmark loves us!

A couple who I admire for their 51 years of marriage is our feature story–Susan and Tim Strader. They feel that Divine Providence brought them together, and that is very much how my husband Doug and I feel as well. You know when it's right, and we both had similar experiences when we met. The Strader's journey has blessed a community with their giving, and they are so proud of their children, their spouses and 11 grandchildren for their accomplishments and contributions. Through it all, their love sustains them. For, as Tim says, "We were in love when we met and we're still in love." Chef Pascal Olhats surprised his wife Chris with a visit to an elephant sanctuary in Thailand and came away committed to raise funds and awareness to protect the gentle giants through Save the Elephants Foundation. Lauri Burns of The Teen Project and Joan McKinney of Vocational Visions continue to give their all to help foster youth who have aged out of the system to drug addiction, prostitution and homelessness for Burns and to develop the talents of adults with intellectual/developmental disabilities for McKinney. Both women are extraordinary!

SLEEPY HOLLOW REVISITED The inaugural Haunted Halloween Costume Gala to benefit the new Heroes Hall Veterans Museum at the OC Fair & Event Center drew nearly 400 guests for a night of revelry. used to think that watching people riding atop elephants looked like great fun. I once saw an elephant painting with his trunk and was astounded at his dexterity. But then I became involved in a philanthropic project with local chef Pascal Olhats and I had to wrap my head around a whole new way of thinking. What we may think of as entertaining or fun actually inflicts great pain and torture on the part of the elephants. And, as Pascal explained, the poachers often kill the adults to steal the baby elephants. It breaks my heart to think of these gentle giants being treated this way. Pascal’s wife Chris has always been fond of elephants. So, for a special birthday surprise, Pascal took Chris to Thailand to spend a week volunteering at an elephant sanctuary. It was a magical week and every day they went to sleep tired but invigorated at what they had accomplished with the special creatures they were caring for. (Guests can go there for the day or the week for a fee.)

WITH A LOVE AND RESPECT FOR HER COUNTRY’S NATIONAL SYMBOL AND THE KNOWLEDGE THAT THEY WERE BECOMING ENDANGERED, LEK BEGAN ADVOCATING FOR THE RIGHTS AND WELFARE OF THE ASIAN ELEPHANTS IN THAILAND. Recently, I had the extreme pleasure to meet Sangdeaun Chailert, founder of Elephant Nature Park in Chiang Mai, Thailand. She was here to participate in Chef Pascal’s charity event to help raise funds for her sanctuary. The funds raised helped pay for purchasing elephants, young and old, from harmful situations, much needed medicine and doctor’s services (as many are injured) and for food and staffing the nature park. Sangdeaun Chailert was born in the small village of Baan Lao, two hours north of Chiang Mai. Her nickname is “Lek,” which means “little.” The name is so befitting! She is a petite, gracious lady with a warm smile and a huge heart. During her childhood, she had the opportunity to spend much of her time among many animals. Her grandfather was a shaman (a traditional healer), who not only helped people of his community, but also sick and injured animals that were brought to him for help. She discovered that all animals strive to live well, and Lek became determined to rescue and care for animals that needed help.

It is remarkable to think that exactly one century ago, the very first Girl Scout cookies were homemade in the kitchens of scout moms and were available to locals only in the community of Muskogee, Oklahoma.

aiting eagerly outside your local grocery, or strolling through your neighborhood, red wagons in tow, it’s Girl Scout Cookie season, and our local scouts are looking forward to selling these

toothsome treats. This year, more than 1 million Girl Scouts will gain valuable life and business experience through the Girl Scout Cookie Program, and 50 million households will purchase their cookies. It is remarkable to think that exactly one century ago, the very first Girl Scout cookies were homemade in the kitchens of scout moms and were available to locals only in the community of Muskogee, Oklahoma. Yes, in 1917, just five years after Girl Scouts was founded, the members of the Mistletoe Troop in Muskogee envisioned this efficient plan of selling sugar cookies in their town’s high school cafeteria to finance troop activities. Other troops took note of Mistletoe Troop’s successful business strategy, and the concept of Girl Scouts selling cookies took off. In light of the nation-wide growth of Girl Scouts, an article in Girl Scout Magazine, “The American Girl,” shared both a scrumptious cookie recipe and smart business plan in 1922. At the time, the cost of baking six dozen cookies was around 26 to 36 cents, and it was suggested

that girls sell one dozen for 25 or 30 cents. By 1936, the homemade cookies had gained so much popularity that the Girl Scout organization began licensing commercial bakers to produce these special treats. The step was a risky one, but it paid off. Come 1937, cookie sales stretched coast to coast and would continue to thrive for decades to come. One of the Cookie’s great challenges was ceasing production during World War II, due to sugar, flour and butter shortages. Despite this hardship, Girl Scouts only became more innovative: the first Girl Scout calendars were sold in 1944 in place of cookies. And, when the war ended, cookie growth increased more than ever before. Much to the nation’s delight, three varieties emerged in the early

1950s, including “Sandwich,” “Shortbread,” and the original “Thin Mints,” known then as “Chocolate Mints.” Today, Thin Mints are the number one Girl Scout Cookie sold. Here in Orange County, Girl Scouts sell cookies from ABC Bakers, a company that has been baking Girl Scout Cookies for more than 75 years. A whopping nine varieties will be available this upcoming season, with the addition of the chocolate-covered “S’mores Cookie,” created in honor of Girl Scouts Cookies’ 100th Anniversary.

Preheat oven to 375°F. Line two mini-muffin pans (12-cavity each) with cupcake liners (or one standard 12-cavity cupcake tin); set aside. In a small bowl, sift together flour, cocoa and salt; set aside. In a large mixing bowl, combine butter and sugar; beat on medium until light and well mixed, about 2 minutes. Turn mixer to low; add egg, red food coloring and vanilla. Then, add small portion of flour (about a third), alternating with portions of buttermilk, mixing slightly after each addition. Gently stir in baking soda and vinegar. Divide half the batter among the cupcake tins. Then, place a chocolate ball in center of each cupcake. Top evenly with remaining batter. Bake until tops spring back when touched lightly (do not overbake), about 13-17 minutes. Serve warm, or let cool completely, then frost. Store covered, in airtight container for up to 3 days.

he heart is often referred to as the symbol of love. While love is vital to a fulfilling life, a healthy heart is crucial to it.

A healthy heart functions without us having to even think

about it. It beats about 100,000 times per day and pumps 1.5 gallons of blood through the body per minute. The more in shape the heart is, the lower the heart rate because a stronger heart can pump more volume per beat. Made up of its own specialized cells that are not found anywhere else in the body, the heart pumps nutrient-and-oxygen-rich blood through the cardiovascular system. The blood is essentially a delivery system and a garbage truck. It first nourishes us, and then transports toxins and metabolic waste to the kidneys and liver for disposal. Without this vital system, we would all cease to exist. Unless we develop a problem, we don’t pay much attention to what our heart does for us 24 hours a day. Kind of makes you want to give it a bit more respect, right? That’s especially true when you hear the statistics that say ARTICLE CORIE GOODSON

heart disease and diseases of the cardiovascular system remain the number one reason lives are cut short. Heart disease can go undetected and be asymptomatic for decades before an incident occurs. No one gets critically ill overnight, which means heart issues cannot be reversed overnight either. The good news is that we can often help change destiny. While heart disease can be hereditary, it may not necessarily have to dominate one’s landscape. We do have a lot of control over how healthy we are by taking some simple steps. Small changes can add up to big results over time, especially if there isn’t a major defect that cannot be altered by lifestyle alone. Most of us know now that the traditional food pyramid we grew up with is completely upside down and antiquated. It has long been thought that reducing fat in the diet was the primary way to reduce heart disease. When it comes to convenience and fast food, I would agree. The more modern contention is that we should eat food that doesn’t come with labels. Fruit, veggies, nuts and seeds, eggs, meat and fish should dominate your grocery cart. Single-ingredient, nature-made food eliminates the often confusing list of ingredients. Avoiding the inner aisles of the grocery store as much as possible makes this easier. Cardiovascular exercise is as important to keeping the heart

I

t’s that wonderful time of the year when romance blossoms, boxes of fine chocolates abound and restaurant reservations are in full swing. However, for me, romance is all about three things: being with the person I love, discovering a unique setting to enjoy some alone time, and making it all a big surprise. Since we live in one of the most beautiful spots around, here are some of my favorite places to spend an afternoon or an evening with my special someone. Who knows, this may give you an idea or two. And, it really is not about the expense of it. These suggestions are more about the experience and just being together.

ROMANCE ON THE BAY

Taking a gondola ride in Newport Harbor is a very unique adventure. I had no idea that there have been gondolas on this bay since the early 1900s! With some recent consolidations, there are now two companies offering this service. Gondola Adventures, Inc. offers two different styles of boats–the authentic Venetian (imported from Italy) and a mahogany, canopy-covered electric boat. There are various cruise options from casual cruises to complete lunch and dinner cruises, with food presented on china served in the gondola. All cruises come with a non-alcoholic beverage and either food or gourmet chocolates. Wine and champagne are available for purchase and always served in stemware. And, they love to customize a cruise for a proposal or anniversary and have some really creative ideas, such as placing a message in a bottle, rose petals, or my favorite brand of chardonnay! (Gondola Adventures, Inc. at Gondola.com) And, for a more casual “on and off” outing, the Gondola Company of Newport in Lido Marina Village is the spot. Their cruises depart on the hour and half hour and are easily bookable online. These are rowing gondolas and each cruise is 50 minutes long. Another outing that signals romance is to enjoy a one-night “stay-cation.” I prefer a spot that has a nice restaurant and a spa so everything is just steps away. The Hyatt Regency Newport is lovely, as is the Newport Beach Marriott Hotel & Spa. One of my favorites is the Island Hotel. It is an elegant, boutique-style enclave right in the heart of Fashion Island. The suites are sweet. They have four luxury suites with panoramic coastal views and are appointed with flair and sophistication. There are also junior suites offering lovely coastal views. The Spa is lovely and secluded. The pool is nestled in a tropical setting, with comfy burgundy cabanas. Oak Grill Restaurant is wonderful with Californiainspired cuisine and offers terrace seating. We also enjoy a happy hour cocktail by the fire pit to toast the evening, and we like to park the car and never leave the hotel. (Island Hotel at IslandHotel.com) PICNICKING WITH A VIEW

With a nod to my “back to nature” side, I also enjoy a good old fashioned picnic. The perfect spot to do just that is Lookout Point along Ocean Avenue at Heliotrope Avenue in Corona del Mar. Here is the ideal vantage point to capture a glistening sunset, perched high above the harbor. I never forget my selfie stick. Another spot down on the sand is Pirate’s Cove. This secret spot is located at the opening of the harbor. It is best to enter via Corona del Mar State Beach. We climb over some hefty rocks; however, it is well worth the effort. The reward is calm waters and small caves for exploring. The opening scene of Gilligan’s Island was filmed there, so what’s not to love? So whether it is a picnic in a park, a ferris wheel ride in Balboa Village, or a walk on the beach at Crystal Cove, I hope you enjoy a romantic outing with a dash of spontaneity. A “surprise outing” is my favorite one of all!
