Trinidaddy Island Grill Food Truck Amit and Kerrie Sumair, husband and wife team and owners of Trinidaddy Island Grill Food Truck moved to Tennessee from New York, and immediately realized that Trini cuisine was scarce here. While they were coming up with the concept for a food truck, they felt like it would be awesome to bring the flavors of Trinidad and the Caribbean to Middle Tennessee! When you go to try Trinidaddy out, you must try Doubles. It is the ultimate favorite here in middle Tennessee. Taste of Cuba Jamie, with Taste of Cuba, has had the dream to own a food truck since she was 16, when COVID hit, she lost her job and knew it was time to pursue her dream. Jamie’s husband, Ulises, and her mom, Barbara also help tremendously with the food truck. When you try out Taste of Cuba, it is a must to try the traditional Cuban, served on authentic Cuban Bread flown in from Tampa Fl. Also, the guava and cheese pastelitos made by Barbara, fresh every day! Yum! You can find out where they will be next by following them on their Facebook page, The Table of Cuba.
Rickenbacher Pizza Neil and Michelle Overholt are the proud owners of Rickenbacher Pizza. What started out as an experiment, quickly became a reality. When the pandemic hit, they saw their window of opportunity and took it. The pizza that really put them on the map was the Pulled Pork pizza, it’s slow-roasted pork butt, a little tomato sauce, white cheddar, red onion, & bacon. After it comes out of the oven, it is finished with homemade BBQ sauce, Alabama White Sauce, and green onions. All of their upcoming events can be found on their Facebook page. THE TOMATO PIE IS A GREAT SOUTHERN STAPLE DURING THE SUMMER. It is a way to use fresh garden tomatoes especially, the really ripe ones. Laura, the owner of Tasty Table says “I love a good southern tomato pie for any meal.” Laura’s grandmother made these for her with her fresh garden tomatoes when she was little. Laura took her recipe and made it her own by using basil out of her garden, added fresh ricotta and organic brown eggs. This is a recipe that can be made with or without a crust so it meets the gluten-free needs as well. Serving it with a fresh salad is a perfect summer meal.

Tomato Pie + 3 lbs sliced heirloom tomatoes + 1 pie crust + 1/2 cup ricotta cheese + 1/2 cup cheddar cheese + 1/2 cup smoked gouda + 1/4 cup diced white onion + 1/3 cup plain greek yogurt + 2 eggs beaten + Pinch of salt + 1/4 tsp black pepper + Fresh basil torn Directions: Preheat the oven to 350 degrees Slice tomato & pat dry with a paper towel. Layer tomato in the crust leaving three to four slices for the top, sprinkle with salt and pepper, add basil. Spread cheeses on top of the tomato. Mix egg with greek yogurt and whip until combined. Pour egg mixture into pie crust. Lay remaining tomato slices on top and sprinkle a little more basil for color. Slice & Serve.
