CHEESECAKE IS A DESSERT STAPLE IN MANY HOUSEHOLDS, SPECIFICALLY A NEW YORK STYLE CHEESECAKE, AND SUZANNE’S RECIPE IS ONE THAT YOU WILL NOT WANT TO MISS. The first cheesecakes she made were called company cheesecakes. They were a simple cheesecake, light and delicious, but it was not the most beautiful presentation. In the last 10 years, she has switched to a more hearty cheesecake adapted from Cook’s Illustrated. She adjusted the new recipe to be decorated with a homemade mixed berry jam. Made from her own fruiting bushes, Suzanne makes a strawberry, blackberry, and raspberry jam to adorn the cheesecakes with. The presentation holds up beautifully compared to the original cheesecake she made. For those that are chocolate lovers, she has also added a ganache topping.

SERVES: 16 TIME: 120 MINUTES
NE W YORK ST YLE CHEESECAKE
+ Preheat oven to 350° + Finely crush graham crackers sleeve.
Recipe provided by: Suzanne Scott
+ Mix 2 tbsp sugar and 5 1/2 tbsp butter with fork until crumbly (save remaining butter). + Press crumbs in bottom of prepared pan, bake 13 minutes, cool on rack.
+ 1 sleeve cinnamon graham crackers
+ Brush sides of springform pan with remaining melted butter after crust cools.
+ 6 tbsp melted butter
+ Turn oven to 500°
+ 2 tbsp sugar
+ In large bowl, beat cream cheese with salt for about 2 minutes,
+ 2 1/2 lbs. (5 packages) cream cheese, at room temperature
to remove lumps. Add sugar in thirds. Beat about one minute after each addition.

+ 1/8 tsp salt
+ Add sour cream, lemon juice, and vanilla. Mix well.
+ 1 1/2 cups sugar
+ Add eggs and yolks, two at a time, beating after each addition
+ 2 teaspoons real
+ Pour into cooled crust and place onto lipped baking sheet in
vanilla extract + 2 teaspoons fresh lemon juice
case of spillover. + Bake at 500° for 10 minutes. Reduce heat to 200° (Do not open oven door).
+ 1/3 cup sour cream
+ Bake 90 minutes at 200°.
+ 6 eggs
+ Remove from oven, cool for five minutes on wire rack.
+ 2 egg yolks
+ Run knife around edge. + Cool 3 hours at room temperature + Cover with plastic wrap. Refrigerate at least 3 hours. Best served 30 minutes out of refrigerator.

BEAUTY IN DINING
SUZANNE SCOTT HAS BEEN A FIXTURE IN MURFREESBORO FOR OVER THIRTY YEARS. In the early 80’s she created Heritage Custom Caterers after discovering that there was a need in the fine dining and entertainment industry in the Middle Tennessee area. Suzanne is highly regarded for her decorating skills, specifically her ability to create beautiful tablescapes and centerpieces. Her love of creating these came from visiting her grandmother, where the table was always set with pressed linens, the finest crystal, and fresh flowers. Martha Stewart was also an inspiration with the standard of beauty she set when presenting food. Suzanne modeled her business after the same standard, the motto being, “If we wouldn’t serve it at our table, we wouldn’t serve it at anybody else’s.” she said. Suzanne now writes a recipe column for her son, Jonathan’s, company newsletter, which has become a fan favorite publication. She is also hoping to write a cookbook to include devotionals, favorite memories, menus, and recipes for holidays and special occasions. The Scotts also take special orders for cakes, cookies, and candies, including flourless chocolate cakes, for all of our gluten-free readers, and Suzanne’s famous NY style cheesecake featured in this issue. After twenty years, the catering company closed its doors, but Suzanne and her husband, Thom, have not lost their love of entertaining others. They both continue to enjoy cooking and entertaining family and friends in their home, and Suzanne still gets to show off her tablescape design during family events and holidays. In addition to continuing to host family and friends, the couple also continues to serve others in the community through World Outreach Church. For the last fifteen years, the couple has headed up the church’s Character Quest Camp kitchen each June. Everyone at the summer camp looks forward to the hot fresh muffins served each morning and the fresh-baked brownies and cupcakes served with lunch. The couple feels called to continue to serve their community after so many years of feeling blessed in their own lives. This year, with about thirty volunteers, they cooked for and served a record number of meals to nearly one thousand campers and counselors every day. “The thing that makes you good at doing food, is knowing good food. It is a joy, and spiritual, really - feeding people.” Suzanne states.

We’ve had wakes, celebrations of life, weddings, baby showers, bridal showers,” says Vice President of Experience Ariana Vandenburgh. “There were some guys that came over from the church and they had a baby shower here. It was just a guy baby shower and they only brought diapers,” she adds with a laugh. “It was so cute.” Mayday was opened in 2012 by owner Ozzy Nelson, a rock’n’roll enthusiast from Florida who dreamed of starting his own business since 1984, when he worked one of his very first jobs at the Captain D’s on Broad Street. “That’s when I decided that when I opened my business, it would be in the Boro. It only took 28 years to make it happen,” he said, wearing a grey fedora and genial smile on the Tuesday afternoon we first met. “ Located just off of Old Salem Road, the walls of Mayday Brewery are covered with murals, local art, and photos of Ozzy’s family. “It kinda just makes you more vulnerable, I think, to have family pictures out there. People get to know me better, know where I come from.” It turns out that family plays a huge role in the business; the brewery’s name came from Nelson’s father -- an electrician and construction worker who had a habit of saying the word anytime something went wrong – while his two daughters have taken on their own respective positions brewing the beer and running the office.

A customer and talented graphic designer from San Diego who wandered in several years ago. “I feel like I can spot out someone who is new to town and knows no one from 10 miles away and they always end up here,” Russell says, noting two customers in particular off the top of her head. “And they go from not knowing anybody to being like, so well integrated into Mayday that one of them works here and the other one helps can. However, Prescott thought to himself, “I KNOW good food because I have literally traveled all over America, all over Canada, and into Europe with my music, eating great food and learning what I like.”

Flash forward and Dennis’ first dinner-hosting experiment was made up of twenty people from the music studio, all sitting in camping chairs with beer koozies and makeshift tables in his apartment. “I remember at the time this moment of, okay, the food is on the table, it’s a stressful thing, and then everybody tucks in and they take their first bite, and there’s a moment of hush that kind of came over everyone; it got really quiet just for a second, and then everyone started talking and getting into it and I fell in love with food right there at that moment. I didn’t realize that you can create these beautiful experiential moments at the table in the same way that I did playing someone’s favorite love song. Knowing that that was a thing to me was the most fascinating thing in the world.” Dennis even got to the point where he was cooking so much that he started to forget what recipes he had successfully made, so he began a photo journal and started taking photos of all his completed dishes. And so it began like it does for most; Dennis began posting food photos to Instagram for the next few years. “All of that was initially with no agenda, no intentionality; I just loved it and I wanted to share. I fell in love with feeding people.” Regarding social media, Dennis’s professional advice is to check

“Slovenia borders Italy and Croatia, which is to say there are a lot of shared values in and around food; they have really great cheese, dairy, beef, pasta, but very few tourists, hardly any. So if you love Italy, that kind of specific travel and food experience, particularly Northern Italy, because you can see the Alps from where they are. It’s picture perfect, a beautiful place, and also where orange wine is from.” Dennis also highly recommends Costa Rica, Hawaii and Finland. “Most people love the idea of travel, but we tend to pick the same places when we travel, and there is nothing wrong with that, they are amazing for a reason, but when you get off the beaten path a little bit, you learn the difference between vacation and travel.” One of the most common fears Dennis hears from people cooking and/or grilling at home is, ‘where do I start? I don’t know how to get going, so I just don’t.’ Rather than overcomplicating it, Dennis recommends cooking the things that bring you joy — things that are on a restaurant menu you can’t NOT order because you’re so pumped that those dishes are on there. “Find the things that you love. Take the stress out of food. Feed people because all they really care about is spending time with you. Bring joy back into the kitchen.”
