And the memories of being in the kitchen with mom, staring into a pot of almost-boiled water before cracking the egg on Mother's Day is priceless. The Eggs Benedict recipe on page 30 awakens a memory of my teenage years, dressing up for a big brunch outing with mom and my siblings, laughing and breaking bread around a huge table in the sunlight of some fancy restaurant. The step-by-step recipe and the go-for-it attitude sets the tone for this entire issue. As editor, I often get asked, "Don't you run out of things to cover?" And I'm embarrassed to say that during my time as a freelance writer, I feared this on a regular basis.

Skin Deep SKIN CHIC REFLECTS ON A HUMBLE HISTORY CINDY DUNCAN AND JENNIFER CLOUSE DON’T BELIEVE THE RUMOR THAT BEAUTY IS SOLELY SKIN DEEP, DESPITE THEIR DEVOTION TO DERMAL AESTHETICS AND CARE. As co-owners of Skin Chic, located in the Southgate Mall, Cindy and Jennifer have made it their life’s work to help bring a person’s natural radiant glow to the epidermal surface. From its early days, Skin Chic’s mission was to create a space where anyone could get honest advice on how to take care of their skin. In 2001, Cindy founded Skin Chic with the unique ambition of creating a “living beauty magazine.” Her vision took the shape of a walk-in boutique spa that doubled as a hub for trustworthy information on skincare, a professional space to consult before seeking a prescription. “You go to the bookstore and you read twelve different beauty magazines telling you twelve different things,” explained Cindy. “I wanted Skin Chic to be an accessible place for everyone to get education on skincare without sacrificing our quality.” Skin Chic’s initial downtown location covered the living beauty magazine concept in every way aside from accessibility. Located in the Hammond building’s interior L-shaped shopping arcade, Skin Chic was a windowless, 400 square-foot boutique that lacked the foot-traffic exposure granted to Higgins’ street-side shops. So, Cindy got creative. While the current Southgate Mall location is known for walk-ins, Cindy had to take Skin Chic to the CONTINUED >

streets to get the word out in the early days. By applying Iron Horse waitresses’ makeup and offering makeovers at Runner’s Edge marathons, Cindy elevated her small business’ organic word-of-mouth status, allowing her to eventually move across Hammond’s hallway to a larger space, roughly 1,800 square feet, overlooking Higgins, the current location for Mary’s Mountain Cookies. From Hammond’s hidden building hallway to Higgins street-side, Skin Chic’s own inner beauty emerged, attracting Skin Chic’s current co-owner Jennifer Clouse. “When I moved to Missoula from Spokane in 2007,” Jennifer explained, “I looked for esthetic work, and I saw the only boutique that had ‘skin’ in its name.” “She walked in and I stole her immediately,” Cindy added with a laugh. Soon after, Cindy and Jennifer moved the boutique’s location to the Southgate Mall, introduced medical services to Skin Chic, involved staff nurses and trained estheticians, and opened the Montana Skin Academy, a much-needed esthetic school in Missoula that would give aspiring aestheticians a place to get a hands-on education locally. Having worked with local models, photographers, and florists, such as Jennifer Horsley of Habitat, Skin Chic has become a staple of the Missoula community since opening eighteen years ago. And now here we are. In retelling Skin Chic’s history, Cindy spoke in what she playfully referred to as “Cindy Lou-Lou” language—a joyful verbiage that revealed her breezy, fun, Florida origins. “I’m always two streets over, never right on,” Cindy jokingly self-deprecated. Jokes aside, Cindy has found her most rewarding moments to be ones that have led to a change in perspective, not necessarily a person’s appearance. It takes strength to have confidence and confidence to have beauty. Jennifer shared Cindy’s enthusiasm, especially when discussing the nature of her work. “I know that people need their alone time to recharge from work,” Jennifer explained, “but coming here is my ‘alone time,’ so to speak.” Cindy and Jennifer liken their staff to a “big family,” and they prefer to work together than compete for clients. This has a splash effect on the Missoula community at large. AT ANY NUMBER OF MISSOULA’S OUTDOOR EVENTS, YOU MAY FIND A GRACEFUL WOMAN DANCING IN MID-AIR WITH A GIANT RIBBON OF CRIMSON FABRIC. Entwined with the cloth, she twirls and unfurls from one shape to another. You crane your neck, both worrying and watching for what she’ll do next. This is the graceful art and athleticism of Raven Summer, aerial acrobat and owner/head coach of Aerial Alchemy. “Alchemy is about changing the mundane into gold,” explained Raven. Born and raised in Missoula, Raven specializes in aerial silks. However, she’ll joke that she performs with "aerial polyester." Her mix of humor and humility found a voice when Raven discovered the welcoming community of circus. “Circus is a place where marginalized people can celebrate their weirdness,” explained Raven. “You may be a freak in normal society, but you are celebrated in circus.” Bearded ladies aside, Raven advocates for "Social Circus," a growing movement which aims to reach beyond entertainment by fostering personal, social, and community development. Raven traveled to Atlanta, Georgia, for extensive teacher training from Carrie Heller, founder and Executive Director of Circus Arts Institute. There, she learned how to weave aerial skills into an educational template for all sorts of ability levels. “We teach for any ability or disability but always in a non-judgmental way. There is a saying: "Circus Works." Circus Art Therapy is an amazing tool for kids with special needs, and Social Circus is a vehicle for social, economic, and community advancement. " Raven teaches all sorts of ages and abilities, in both private and semi-private lessons. She especially enjoys working with bored, rebellious kids who need an outlet. “I know because I was a troubled kid, too,” she said. Raven has also witnessed the transformative power in children with special needs. “For kids who have limitations, like spatial awareness, get them up on a trapeze and, suddenly, they know exactly where their body is in space,” she beamed. Raven discovered aerial acrobat work when she needed her own safe space to heal from deep struggles. Since then, she's trained for fourteen years in the female-dominated sport. “Quite literally, the pain and sorrow I’ve experienced has been transformed through aerial and circus. It’s made me who I am. It’s about taking what is our problems or pain and turning it into our power.” Not many Missoulians dance in midair with a piece of fabric, but that doesn’t deter Raven from getting people up there. She strives to create an accepting space for anyone to discover and express themselves. That’s exactly where Raven wants to be— performing, coaching, and watching people transform. SIDEBAR:

LOCAL CYBERSECURITY EXPERT FORGES HER OWN PATH

MISSOULA-BASED AUTHOR JEREMY SMITH PROVIDES A FUNNY AND TELLING ANECDOTE ABOUT HOW HE CAME TO KNOW CYBERSECURITY EXPERT

Sherri is a professional hacker who is hired to break into security systems in order to find their weaknesses and prevent future malicious hackers from easily stealing information.

SHERRI DAVIDOFF. A few years ago, they ran into each other at a playground in Missoula and realized they’d met briefly 15 years earlier, when Jeremy was a student at Harvard and Sherri was at MIT. On the playground that day, they laughed about what a small world it is as their two preschoolers made friends on the swings. Jeremy recalls with a certain amount of self-deprecation that he went into great detail with Sherri about his life as a writer before finally asking her what she was up to these days. He says that she smiled and very matter-of-factly answered, “Well, tomorrow I have to break into a bank.” Sherri is a professional hacker who is hired to break into security systems in order to find their weaknesses and prevent future malicious hackers from easily stealing information. She is the CEO and founder of LMG Security, a cybersecurity and digital forensic services company based in Missoula that is hired to do these penetration tests for various organizations and companies across the world. These cases of stolen data can have enormous impact with harrowing consequences. There are high-profile examples, like the 2016 Panama Papers where 11.5 million leaked documents detailed financial and attorney-client information about more than 214,000 offshore entities. But even on a smaller-scale, everyday people’s medical and financial data might be being laundered on the dark web only to appear somewhere public without a trace of who was responsible for the leak.

In many ways, it feels like a superhero origin story. On her first day at MIT Sherri finds a note in her backpack: “Meet in the East Campus courtyard tonight at midnight for the real tour of MIT.” That night she is introduced to a crew of hackers who spend their time seamlessly breaking into locked buildings, scaling the insides of elevator shafts, accessing underground tunnel systems, without leaving a trace. Sherry dubs herself “Alien” (all hackers have nicknames) and learns the ways of hacking both physical and digital spaces. It’s a story that uses Sherri’s coming-of-age as a hacker to reveal an underground culture that embodies all the drama of an action-thriller, where good guys and bad guys battle it out in the shadows, outside the periphery of the bustling and oblivious everyday life the rest of us lead. “Who are you? EGGS BENEDICT INGREDIENTS + English Muffin, halved and toasted + 1 Slice of Canadian Bacon or Ham + 2 Eggs + Hollandaise Sauce (recipe below) METHOD FOR POACHING EGGS: Heat two pots of water. One will need 1 tsp of salt and 1 tablespoon of vinegar per quart of water. The other will just be fresh water. Bring them to a bare simmer, between 180 and 185 degrees. Crack eggs individually in a small container and submerge part of the container in the vinegar water first to gently allow the egg to enter the water. Do the same with the other egg. If the egg looks like its sticking to the bottom of the pot, gently swirl the water to help release. Allow eggs to cook until mostly done. When almost finished, transfer eggs with a slotted spoon to the other pot to finish cooking and then rinse the vinegar flavor from eggs. *Note: eggs can be poached ahead of time, stored in cool water, and reheated in simmering water when ready to serve. 30

INGREDIENTS + 2 cups Melted Butter or Ghee + 1/8 tsp Crushed Black Peppercorns + 1/8 tsp Salt

+ 1 – 2 tbsp Fresh Lemon Juice + Salt, to taste

+ Cayenne, to taste DIRECTIONS Combine

Add reduced vinegar solution to a mixing bowl with egg yolks and beat until eggs are frothy and bright yellow. Place bowl over a pot of simmering water (Note: you can use your egg poaching water here) and begin whisking to cook the eggs. To help control the temperature and not overcook the eggs, you can remove the bowl every so often and allow it to cool down and return it back to the pot. Once the eggs begin to ribbon or separate at the bottom of the bowl, remove from heat and begin slowly incorporating the butter. Once the butter is completely incorporated, add in lemon juice, salt, and cayenne. Strain and keep warm but not hot. If the sauce becomes too think, you can thin in out with lemon juice or a small amount of water.

But the recipes that make this luxurious and simple dish are just food; they are techniques and chemical reactions that create the silky butter sauce that veils the smooth poached eggs. Sure, it may be a pound of butter and all the strength you can muster from your forearm, which feels like an hour of whisking, but if you’re not afraid to break it, to learn from it, and most importantly, to attempt it, you will be rewarded with the most decadent egg dish that can be modified to any taste and flavor profile.

BEFORE YOU BEGIN, SOME THINGS TO REMEMBER: + Your butter needs to be warm but not hot. It should be liquid in consistency but not hot enough that it will cook your eggs (over 145 degrees). On the opposite end, it shouldn’t be cold, which will also break the sauce. A good indication is if you’re using ghee or clarified butter, it should be transparent and warmer than body temperature (around 110 to 120 degrees). + For all water, it should only be at a simmer, never at a boil. For poaching the eggs, it should be right around 180 degrees. + Whisk the eggs with the reduced vinegar prior to putting them over the water bath until lemon-yellow and frothy. This will help during the initial cooking process. + Always take the eggs off the heat when adding the butter. If you keep them on the heat, it will continue to cook and the sauce will break. + Too much butter can break your sauce. I always go by flavor rather than amount. The end result of the hollandaise should taste like butter and not egg. If you’re tasting and notice the shift in flavor, don’t be afraid to stop. + If at all possible, always use fresh lemon juice. + The vinegar in the poaching water will help tremendously. Do not omit. + Always poach an extra egg just in case one doesn’t turn out.

Andrea and her now-husband, Foster Caffrey, were in the midst of riding their bikes from Portland to San Francisco. She had recently quit her job at a basic in-and-out salon where her vision for style was limited, discouraging her spirit and passion to embrace someone’s identity. Until Katt came along and offered her an opportunity. Upon hiring Andrea, Katt mentored her and helped her see a grander future for herself. Katt has a chronic illness, and when she got debilitatingly sick, she tasked Andrea with taking care of the shop. In November of 2018 Katt started talking with Andrea about selling the shop to her and in January, they sealed the deal. Being the new torchbearer to a studio that was already dubbed cutting-edge and hip, Andrea let her vision expand past the walls of the studio, reaching the Missoula community in a new way. Andrea changed her haircuts to “trim” and “haircut” so that non-binary people didn’t have to pick “men” or “women” cuts. “Hair doesn’t have a gender,” Andrea said, laughing. “I find out what someone’s self identity is and create that in their hair.” Recently, she got all the Canvas hair stylists Deva Curl certifications, which means they know how to cut super curly hair for a more diverse clientele, including Missoula’s new population of refugees. Andrea plans on holding bi-monthly community workshops such as how to curl hair with a flat
