Blessed to be a father. FOR ME, BEING A MAN IS PRETTY EQUATABLE TO BEING A FATHER. So many of life’s lessons that teach you how to be a good man have come to me through caring for, worrying about, and being there for my children. Everything about being a father scares me. I’m scared every day—for their health and safety, their happiness. It started the day my oldest, Amanda, was born. I was the first family member to meet her, and with her entrance into this world, she ushered a tremendous amount of new love into my life. Holy cow, I’m your dad. And then that love doubled and then tripled when I became a father two more times to Dustyn and Jessica. All of that fear and love come with comic relief, a lot of it. My wife and I and the kids were enjoying our place in Maui a few years ago. We were there for a 10-day family vacation and on the second day, we went into town for a nice dinner. We stood outside the restaurant and a man, who looked quite a bit like Jesus, walked up to us. Judging by his appearance, it seemed as if life had roughed him up some. After he walked away, I mentioned to the kids, "You never know what someone has been through in their life," and then I realized that I’d

FOR MANY OF US, THE ONLY TIME WE NOTICE THE LIGHTING IN A ROOM IS THE MOMENT WHEN WE DON’T HAVE IT. You’ll notice these lighting designs. Jim Swanson got poked—not by the antlers he works with, but by the bug to do this. “One day I was in my shop building chandeliers and I thought, ‘I could do this,’” Jim recalled of the afternoon when the bug first poked. The thought lingered awhile, left, returned, left, returned, stayed. In 1996 the former full-time mechanic and life-long craftsman sold his automotive business to tinker fulltime with building antler chandeliers. This became Antler Chandeliers & Lighting Co. Let’s join Jim in his Bitterroot workshop:

Do you go for a walk when you need antlers? That’s how started: I would go out for a walk. Now a lot of people do a lot of walking, and I do a lot of buying. We buy by the pound, and every species and every grade of species has its own pound price. Grades? Please explain. There are three grades of antlers. Number 1, art grade, which is pretty much all of what you see in [my workshop]. There is number 2, which is white; it’s been weathered. And number 3 grade is white, cracked, and starting to crumble and getting lichen and stuff like that growing on it. Do you use all three grades? Yes, occasionally. Believe it or not, there are customers like Ralph Lauren who like it. Over the years, all the fixtures we’ve built for him and his wife Ricky—30 some chandeliers—have been spec’ed out to include some lichen. Sometimes, lichen is bright red, sometimes green. However, we only deal in art grade unless instructed otherwise. Antler Trivia: Female caribou have antlers; they are the sole deer species in which males and females grow antlers. About 3-5 percent of females do not grow them. “When I put my hands on an antler, I take it over to my build bench and I rough out a structure,” said Jim. “You see that,” CONTINUED >

FRIED CHICKEN SANDWICH WITH JALAPEÑO SLAW INGREDIENTS (SANDWICH) 1 cup all-purpose flour 1/2 teaspoon ground paprika 1/2 teaspoon garlic powder Cayenne pepper, to taste Boneless, skinless chicken breasts Vegetable oil (as needed) Sesame seed bun Pickles

DIRECTIONS 1. Mix the flour, paprika, garlic powder and cayenne pepper together in a shallow bowl. 2. Fill your skillet with oil to about 1-inch deep and heat to 350 degrees. 3. Coat your chicken breasts in the flour and seasoning mixture, then carefully place them into the heated oil. 4. Cook until golden brown with an internal temperature of 165 degrees. 5. Lightly toast your sesame seed bun, then top with pickles, fried chicken breast and slaw to taste.

FOR THE SLAW Combine mayo, hot sauce, garlic and dill pickle juice with shredded red cabbage, pickled onions and candied jalapeños.

CARNE ASADA STREET TACOS WITH AVOCADO RELISH INGREDIENTS (TACOS)

1/2 red onion, coarsely chopped 3 cloves garlic, peeled 2 tablespoons adobo sauce

MARINATE THE STEAK IN THE REFRIGERATOR FOR UP TO 24 HOURS FOR EXTRA FLAVOR.

2 tablespoons olive oil 2 teaspoons cumin 2 teaspoons dried oregano Salt and pepper, to taste Choice of steak Fresh flour or corn tortillas Lime, optional

DIRECTIONS 1. Blend the red onion, garlic, adobo sauce, olive oil and seasoning in a food processor or blender, adding water as needed until smooth. 2. Marinate the steak in the mixture for at least 30 minutes prior to grilling. 3. Heat 2 tablespoons of oil in a large grill pan and add the steak, cooking to desired doneness. Let rest in a foil tent for 10 minutes then chop into small pieces and assemble tacos as desired.
