A Bucket List

A good friend of mine recently shared with me what she calls “The List.” It is a carefully curated log of all the fun restaurants in the Twin Cities that she has yet to visit. When she shared it, she got me thinking about my own personal Bucket List. After the past two years, I think a lot of us are missing things in life we had to put on hold - including visiting restaurants, taking trips, family outings, and activities with friends. Recently, I have started to curate my own list of things I would really love to see and do in the very near future. Now, more than ever, it is about living and experiencing. As we kick off the summer, the Minneapolis Lakes team hopes to bring you some new and fun ideas of businesses to support and ways to connect to community. Inside this issue, we spoke with Max Winders of BetterFed Beef to learn more about their sustainable model, which includes working with local farmers to bring a quality and affordable product right to your doorstep. While you’re out and about in the neighborhood, you’ll notice a new kid on the block. Associated Skin Care has renovated and opened a new practice in Linden Hills. Both Dr. Lee and Dr. Luxenberg are thrilled to be able to provide care so close to their own backyards. And if you have been thinking about switching banks, the Gateway team has you covered. Quality Meat Right to Your Doorstep BETTERFED BEEF IS A SUSTAINABLE ALTERNATIVE

“BetterFed Beef is an experiment,” says Max Winders, co-founder of the startup venture striving “to bring the best beef into the world” and sell it directly to consumers online; an idea that is certainly revolutionary. For more than 100 years, the American meatpacking industry has been dominated by an oligopoly of four companies that now process more than 85% of beef in the country. BetterFed Beef sidesteps that “red ocean of traditionally processed beef” says Max, in order to produce the highest quality beef while simultaneously creating a sustainable model for generations to come. BetterFed Beef was created by Max Winders and Dr. Tom Peters, both more than 30-year veterans of the agriculture industry, in response to several frustrations within that industry. The first was, “How do you get premium value for a premium product

because the marketplace is distorted to such a level that it isn’t possible?” says Max. The second was an inability to “communicate directly with the consumer,” due to the sheer distance between most people and the food they eat. Lastly, Max, Tom, and the families that raise these cattle wanted to “build a business where they all share ownership in it,” says Max. These frustrations, coupled with growing trends in online shopping and interest in food, especially sustainable meat, led to the creation of BetterFed Beef, a directto-consumer beef business that ships their specialty beef directly to homes across the US. The company is comprised of 17 independent, cattle-producing families across the Midwest who specialize in producing premium Certified ONYA® beef. Certified ONYA® is an internal standard that guides both how cattle are raised as well as for tenderness of the beef itself. The tenderness of Certified ONYA® beef was recently compared in a university study against that of American Wagyu beef. “Sure enough, our beef was found to be just as tender, at a fraction of the price,” says Max.

The term ‘onya’ harkens back to Max’s roots in New Zealand. “It’s an affectionate word of encouragement and recognition,” says Max, shortened from the phrase “good on’ya.” “We created the Certified ONYA® brand because we want to educate the consumer under our own registered trademark that this brand is something special, it’s distinctly different, distinctly better, and you can trust it,” says Max. To create a ‘distinctly better’ product, BetterFed Beef relies on the high standards of the “right genetics, right nutrition, right environment, and the right management” for each of their farms and each animal. Despite breaking from the traditional marketing channels of the large meat packer, Max sees the unique value in the critical role the giant meat packers play. “They serve a tremendous purpose and they’re super-efficient at what they do in processing beef and distributing it to supermarkets and wholesalers across the country. However, as a consequence of such massive packer consolidation, there is very little price competition in the market when it comes to purchasing

beef from ranchers. Because of their size, there’s also very little room for niche quality products or anything different to emerge,” says Max. And therein lies the experiment of BetterFed Beef, and what Max calls “creating a blue ocean where we can tell our story and deliver our differentiated product directly to consumers and build trust. We see building a brand and relationship directly with the customer, based on trust and transparency, as the only future for cattlemen who want to leave the commodity market.” At the heart of BetterFed Beef’s authenticity are the cattle-producing families featured prominently on BetterFedBeef. com. Each family has several generations of experience in raising cattle, and they love what they do, with younger generations eager to continue their family’s farming legacy. “These families have children and grandchildren, and that’s really

at the heart of it all,” says Max. “The ultimate measure of sustainability is whether or not the next generation can have a viable life producing food on this farm.” That family focus shifts BetterFed Beef to look to the future of meat packing, agriculture, and sustainability. “One of the things we hope is that others could follow and start up as well. That would give us a great sense of accomplishment that other cattlemen families can emulate what we are doing and be successful,” says Max. Since the beginning, BetterFed Beef has worked to “break the paradigm” of how cattle are raised and brought to consumers. It is a stark shift from the century-long history of oligopoly but more personally, it’s about the families. It’s an experiment about creating a business that can be passed down through the generations, and at the end of the day, create a new path for cattle producers into the future. A GREAT FAMILY ROAD TRIP EXPLORE THE GREAT LAKES ALL IN ONE PLACE

Located about two and a half hours from Minneapolis, Great Lakes Aquarium in Duluth is a perfect destination for a road trip. With its 32,000 square feet of amazing lake, ocean and land animals, the Aquarium had a record 190,000 visitors last year alone. “Duluth itself is a small city, but it’s a pretty popular tourist destination because of its position on Lake Superior,” says the Director of Operations, Jay Walker. “A lot of people love to come visit the North Shore and then hang out in Duluth.” Visitors to the Aquarium come from all over, including Wisconsin, North Dakota, South Dakota, Iowa and even from Canada,
but a majority, he says, are from the Twin Cities. There’s so much to see, and while some people may spend an hour or two walking around, others stay for the day and take advantage of the different experiences and tours offered throughout. “We focus our energy on using Lake Superior as our lens to the world,” says Jay. “We have a 9,000 gallon exhibit called Unsalted Seas, which is a gallery all about large lakes, the animals that live in and around them, and their importance as a global freshwater resource. There are sturgeons from around the Caspian Sea region as well as sturgeons from the Great Lakes themselves.” It’s actually the largest sturgeon touch pool in North America.” Another popular exhibit, H2O: Watersheds at Work, just opened last year. It’s a hands-on, splash zone, showcasing the properties of water, how it moves through a community, and how it connects us to the world. “We’ve always had a Great Lakes water table, but it was over 20 years old,” he says. “We completely redid it and made it more accessible by putting it a little bit lower to the ground so younger kids and people in wheelchairs can interact with it.” The water table is in the shape of all five of the Great Lakes and features working lock and dam systems operating to the St. Lawrence Seaway. Children and adults alike, can navigate boats and view other interactive displays on the water. “We also redid our Raptor Ridge exhibit, where we have two birds of prey - a bald eagle named Bogey and a turkey vulture named Horus. They’re both very connected to Lake Superior.” The two birds, after being rehabilitated, were not able to be released back into the wild. At the Aquarium, they get the enrichment and care they need to thrive. Another big hit at the Aquarium is Otter Cove, which is modeled after the real Otter Cove on the Eastern shore of Lake Superior in Canada’s Pukaskwa Provincial Park. All visitors, young and old, love watching the antics of otters Agate and Ore. Since North American river otters tend to sleep twelve to sixteen hours a day, the best time to see them is usually around 11 a.m. and 3 p.m.

Yet a different exhibit, Critter Corner, showcases the diversity of the animal kingdom from turtles to moon jellies. This exhibit has two touch pools housing marine invertebrates – jellies, anemones, sea stars, and much more. Reptiles living in this exhibit often come out and say hello during the hands-on interpretive programs. “People really enjoy the jellyfish,” says Jay. “Although they are not found in Lake Superior today, they were many, many years ago. Jellyfish were some of the first structured organisms in this region.” Over the last 10 years, he explains, they’ve really focused on trying to do more interactive hands-on type of displays where visitors can manipulate something and touch a living creature. “It’s just so much more fun to learn when you can have that physical connection.” They’ve also been working on making the aquarium more inclusive, such as lowering the water table for wheelchairs, having tactile exhibits for those with visual impairments, and having sensory-friendly days for those who find bright lights and loud noises upsetting. “We want to make sure that we can engage everybody and that means trying to remove as many barriers as possible,” says Jay. “We want to connect people to this lake and to the world and we want to make sure it’s accessible.” Great Lakes Aquarium also offers camps over the summer, which are very popular. “We have animal care camps where children can help and learn all about what it takes to care for our animals,” he says. “They prep food and feed some of the fish and other animals. We also have a SCUBA camp so students can learn how to dive, which is super fun.” For adults, they also have a beer garden which usually opens in June. “We have an open courtyard next to the Aquarium where we do a lot of events, and every Thursday throughout the summer, we partner with Earth Rider Brewery, which is in Superior, Wisconsin, and sell their beer. We also partner with the Duluth Symphony Orchestra and have a quartet that comes and plays. We have food trucks as well - it’s a lot of fun.”

No ticket is needed for the beer garden, so everyone can come and enjoy the waterfront view, the music, and some great food and beverages. This was something the Aquarium started during the pandemic. “We were closed and people were looking for outdoor things to do,” says Jay. “It was such a hit that we are continuing to offer it.” People can also host their own personal events at the aquarium. “Anything from a meeting to a wedding to birthday parties and class reunions,” he says. “We have one space in particular that’s part of the aquarium that we rent out during the day.” They also host evening events once the museum closes, and people can rent the whole space to enjoy with their guests. It’s really a unique venue in which to hold a party. “We even have overnight stays, and experiencing the aquarium in the evening is really different,” he says. From starting in a double-wide trailer almost two decades ago, Gateway Bank has come a long way. I sat down with Gateway Bank President Bruce Downey and Market President Brian Maxwell to discuss that journey, and some influences along the way. Before the founding of Gateway Bank, both men worked at another community bank called Signal Bank that was acquired in 2001. And it was after Signal Bank was purchased, that Bruce decided, “If I could, it might be better to control my own destiny” and start his own bank, rather than join another community bank. “It was probably insanity to quit your job and start a bank, but it worked out great,” says Bruce. And so, Bruce met with his future partner and CEO of the Bank, John Schreier for, “Breakfast at Perkins,” and the two men decided to team up and start what would later be Gateway Bank. Bruce laughed when talking about those early days of rented offices and double-wide trailers: “Quite honestly, that first day we had a folding table from home, a laptop and a phone. We went to OfficeMax and bought a stapler and probably some scotch tape.” But during that period of raising money, applying to the Federal Reserve Bank, the FDIC and State of Minnesota, Bruce and John came to a philosophical understanding about the organization they were launching: ‘If we make it a great place to work, it will be a great place to bank.’ And in January of 2004, from the inside of that double-wide trailer, Gateway Bank opened its doors in Mendota Heights with six associates, including Brian. A focus on culture was always at the heart of Gateway Bank. When talking about where that ideology came from, both men cited their time at Signal Bank as inspiration. “It was like a case study on how you have a successful business that just happens to be a bank,” says Brian.
Signal Bank’s strong culture and ethics directly flowed into Gateway Bank’s focus on creating a strong culture. And when it comes to creating comradery at Gateway Bank, it’s the simple things that both men work at: “It is really folks getting together to celebrate, whether it’s a birthday or a promotion or a goal getting met,” says Brian. Bruce adding, “It seems a little corny, but it gets people out of their offices.” Another aspect of creating a company that is great to work at and therefore to bank at, is its associates. “It really comes down to the collective group of people you have,” says Brian. A key aspect of the bank’s hiring practice consists of peer interviews where candidates meet their potential co-workers to see if they would be a good fit. “It’s as important for you to choose us as for us to chose you. We want people to look at our bank and look at our philosophy and say, ‘that’s where I want to be and that’s where I want to make my career,’” says Bruce. For potential associates, character always comes first: “If you got the right person who’s motivated, you can hopefully turn them into really good bankers,” says Bruce. Beyond Signal Bank and business influences, Bruce cited his father, an Edina schoolteacher and swim coach of 62 years as foundation for his, “Worth ethic and moral compass in terms of how you treat people and how you go about your life.” Brian similarly cited his own father, an Administrator at Fairview Hospital, for “How he handled himself and how he interacted with his co-workers,” as well as his high school coach Jerry Webber for his, “Preparation and how he handled problems.” All those influences “bleed over into business,” says Bruce affecting how Gateway is structured, operates day to day, and treats every client. But at the end of the day, Gateway Bank is just that, a bank. For Bruce, the goal is simple: “Our product is the CONTINUED >

dollar bill, and every bank has the same product. It’s just how they deliver it, and what we can do to differentiate ourselves. So that’s what we strive to do.” For Brian, “It really is the personal touch,” that separates Gateway Bank. He strives to make banking less intimidating: “Whether you’re looking at borrowing money or trying to open an
account for your kids, it shouldn’t be difficult to do, and we do our best to make all of those things easy.” So as Gateway Bank approaches its twentieth year in business, they still strive to do right by their associates, and to give the best experience to their clients, even if they’ve outgrown their double-wide trailer in the process.

ARTICLE BY SUE BALDANI PHOTOGRAPHY BY LUCY HAWTHORNE Associated Skin Care Specialists, a long-established and trusted dermatology practice with offices in and around Minneapolis, has now opened a new location in Linden Hills. The new team is led by Dr. Bailey Lee, a board-certified dermatologist who has been with the practice for 10 years and Dr. Erin Luxenberg, also a board-certified dermatologist, who has recently joined Associated Skin Care Specialists after practicing in the community for 9 years. “This location has been my special, pet project as I have been dreaming of a Minneapolis location for years,” shares Dr. Lee. “The bonus is - I live right in the neighborhood. Since I have been practicing in our Maple Grove location for several years, being closer to home now is a delightful

change. My four kids are getting older and the value of community and being close to that community has become more and more important to us.” One of Dr. Lee’s overall goals with the space is to make it feel welcoming. “I didn’t want it to necessarily feel like you were walking into a medical office. It’s very bright with tall ceilings, and there’s a lot of soft textures that make the space comfortable. There are a bunch of small seating areas where patients can kind of settle in, grab a coffee and relax.” One of the best compliments she has received so far was from a patient who said she just wanted to come and hang out there, even without an appointment. The medical treatment rooms have a lot of great, natural light and everything is crisp and clean, yet warm and charming. There are also patient rooms
where aestheticians, Courtney and Shayla, provide their expertise in medical aesthetics. “I have two aspects of my practice,” says Dr. Lee. “My medical practice, and my aesthetic practice. On the medical side, skin checks are far and away the things I do the most, so skin cancer screenings and mole checks, and then any follow up procedures related to those.” She says it’s important for everyone to get a baseline skin check. Part of that skin check is about educating patients on what they should look for, and sometimes it’s not always obvious. Treating acne is the next most common thing that she does, followed by treatments for psoriasis and eczema. In the cosmetic side of the practice, Dr. Lee says that injectables, especially Botox, are the most commonly requested treatments. “I also do a lot of CONTINUED >

laser surgery, including resurfacing and rejuvenation, and also treatment of vascular lesions, redness, and brown spots. The practice also offers Body Contouring, which includes CoolSculpting® , CoolTone, and QWO. CoolSculpting is an FDA-cleared, non-surgical, non-invasive fat-reduction system used to contour the body by freezing fat cells that your body later eliminates. QWO is the first and only FDA-approved injectable that treats moderate to severe cellulite. CoolTone is an FDA-cleared, non-invasive muscle toning technology for abs, buttocks, and thighs.” Since technology in the skincare industry continues to change and improve, she says it’s really important to stay on top of it all. “We have to stay ahead of trends and also recognize what’s a trend and what’s going to be a long-term treatment, something that’s here to stay and will give patients a lot of benefits.” She adds, “We’ve always had a tradition of excellence and have been a strong referral base for other doctors and other practices. We strongly believe that when you come in to see a dermatologist for your skincare, you’re looking for an expert, so you’re going to see a board-certified dermatologist every time. Patients will also find many top-of-the-line skin care products in the office. “These are chosen specifically with evidence-based data to back up their claims and safety in mind,” says Dr. Lee. “There’s a very rigorous process. They’re all vetted carefully by three different physicians and our senior aestheticians.” An overwhelming majority of her patients are repeat patients and many come from word of mouth references. “But now that we’re in a new area, I

think it’s important patients know we’re finally here. I’m confident that once they come in and see our services and what we offer they’re going to become repeat patients.” Dr. Lee takes special pride in her staff as well. “We have two wonderful receptionists, Suzy and Sierrah. They always have a smile on their faces and really go above and beyond to be helpful to patients. Our nursing team, Megan, Rachel, and Ashley have an amazing ability to connect with patients and anticipate their needs.” Associated Skin Care Specialists now has 15 dermatologists, and in addition to Dr. Lee, Dr. Erin
Luxenberg is also delighted to practice at the new Linden Hills office. Since both live in the nieghborhood, it is a perfect fit. “We feel pretty lucky to be in this neighborhood and in this space,” says Dr. Lee. “It’s just been so fun to become part of this community.
