“The meal is an excuse to bring us together. Our lives are very busy, so when we do come together family meals are a nice chance to enjoy each other’s company.”

Palermo Trattoria Pizzeria is owned by Marianna Merki and her family whose history and food traditions are based in Sicily, Italy. Born just outside of Palermo in Sicily, a passion for good food has been ingrained in Marianna since birth. Food is the focus of every family gathering and celebration. It’s their way of showing their love for one another, so they always strive to make the best food possible. “The meal is an excuse to bring us together,” says Marianna. “Our lives are very busy, so when we do come together family meals are a nice chance to enjoy each other’s company.” Every year her family, all 20 of them, takes a weeklong vacation together. A different person makes the family dinner each night. Not only is there a new meal every night of the week, but “we try to outcompete one another,” laughs Marianna. She brought her love of good food and shared meals with her when her family immigrated to the US in 1969. Marianna has spent her whole life working in restaurants, starting out in her father’s restaurant with her three sisters. At 50 years old, she decided it was time to open her own restaurant and, thus, Palermo Trattoria Pizzeria was born! Palermo has been a family project since day one and continues to embody its values today. Despite opening in 2008 during the worst of the economic recession, Palermo has thrived thanks to their hard work, a shared commitment to high-quality food, and the family atmosphere they create for every customer. “My customers are like my family,” says Marianna. Cooking for her customers

and being a part of their lives brings her satisfaction and happiness. Even the menu at Palermo is a celebration of family with recipes passed down through the generations as well as Marianna’s own creations. “There are no measurements to my recipes,” says Marianna. “They are all done by memory.” Each time she makes Pappardelle Al Sugo, a dish her mother used to make before she passed, it brings her back to her mother and the many wonderful memories they shared together. Another dish, Costolette Di Agnello Alla Pietro, reminds her of her father, Pietro. “When we were in Italy, he was a sheep shepherd,” shared Marianna, “He used to take such pleasure in making this dish.” Marianna is no longer in the kitchen anymore. Instead, she runs the restaurant with her daughter, Gabriella Sill. Her nephew, Gaspare Cruciata, is the lead chef. He has taken over the role of making her original dishes and has expanded the menu with his own culinary creations. “So we have the old and the new,” Marianna says. Her son, Joseph Merki, makes their delicious pizzas including gluten-free options. They offer a dessert of the day, all of which are made by her sister, Luisa Piasentini, who also makes the salads. Marianna makes it a point to treat her front-of-house staff like family, too. How they run their restaurant and the food they cook is truly an expression of their love for one another and their customers. For authentic Sicilian food in a relaxed family atmosphere, book your reservation at: dineatpalermo.com

THE PICKELS FAMILY AUTHORS OF THE GLUTEN FREE SPOONIE

Midlothian family of four, Patrick and Becky Pickels and their two daughters are well acquainted with the life-altering challenges brought on by autoimmune diseases. Not wanting to be defined by their health problems, Patrick and Becky made the decision to rise up and take back control of their lives. Through their own self-education and a lot of trial and error, they discovered the power that food and lifestyle play in disease management and relief. “After a year of dedicated, challenging work, we created a new lifestyle and everyone is now in remission,” shares Becky. These experiences inspired them to open their nutrition and fitness-focused practice, Wellness Warriors. Through their online, app-driven program, they provide one-to-one coaching with customized nutrition, fitness, and mindset plans that are tailored to each client’s individual needs. Patrick and Becky encourage an 80/20 approach to nutrition that is geared towards making healthy choices while still having fun and enjoying food. Their clients’ testimonials celebrate healthy weight loss, increased muscle mass, and the knowledge they have gained to maintain their results long-term.

In addition to their more general coaching programs, Becky has added a women-only branch to their business called EmpowHer. The EmpowHer Project is geared toward women with unbalanced hormones, slowing metabolisms, and uncontrolled weight gain from peri- to post-menopause. Their results have been particularly effective in those with insulin resistance. Inspired by their love of cooking together, Patrick, Becky, and Patrick’s mom, Debbie Pickels, recently published their first cookbook, The Gluten Free Spoonie. “A Spoonie is someone who has been diagnosed with a chronic disease,” explains Patrick. “What people fail to realize is that just because we look healthy on the outside doesn't mean we are not having a battle on the inside.” Their collection of gluten-free, family-friendly recipes includes meals, snacks, and desserts, plus meal-planning tips to take the stress out of transitioning to a gluten-free diet. “Hopefully, this is just the start of raising awareness and helping people who may be in need of lifestyle changes,” says Patrick. The Gluten Free Spoonie is available for purchase in print or digital from Amazon, iTunes, and Barnes & Noble. Enjoy Elevated West Coast Dining in a Relaxed, Napa Valley-inspired Environment

H OT SP OT | FOOD + BEV E RAGE

Veteran restauranteur, Dennis Barbaro, wanted to create a go-to spot for lovers of great wine and food that was both elevated and fun. Inspired by the vineyards of Napa Valley, NAPA Kitchen and Wine does just that, bringing the laid-back vibes of California to Midlothian. From cloth napkins and cork accents incorporated into furniture to a wine wall and barrels from Napa Valley vineyards, NAPA Kitchen and Wine feels like you’ve just stepped into a Napa Valley vineyard oasis. With their friendly servers dressed in jeans and burlap-colored aprons, NAPA is not the fancy date spot. Instead, it’s the place to enjoy a Wine Dinner on a Monday night. The place to walk up to the wine bar for a tasting, no reservation required. The spot to enjoy the covered patio on a gorgeous afternoon. The place to have a business lunch that caters to each of your colleagues. Above all, it’s the elevated place to gather and celebrate with the great company of friends and family over excellent food and drinks. NAPA’s culinary team includes former restaurant owners Executive Chef Todd Johnson and Sous Chef Greg Smiley, along with Culinary Director Tyler Barbaro. With scratch-made recipes, the West Coast-driven menu features fresh seafood, sushi, hand-cut steaks, and local produce. Honoring the richness of high-quality, seasonal ingredients is paramount to their work. As Chef Johnson says, “Great food begins with great ingredients.” In addition to lunch and dinner, NAPA offers Brunch on Sundays from 10:30 a.m. to 2 p.m. Their extensive brunch menu, featuring eggs benedict, chicken and waffles, mochi donuts, and so much more, is a brunch lover’s dream! NAPA’s wine list boasts hundreds of California selections, as well as popular European and South American varieties. One great way to explore their many choices is to do a wine flight. During this particularly popular option, customers are led by their wine attendant who CONTINUED >

helps them choose their flight of six wines from NAPA’s rotating tasting menu. Guests are also encouraged to visit the self-serve wine bar. Using a card provided by their wine attendant, guests can taste and retaste to their palate’s delight! In addition to wine, Beverage Director Thomas Cleary has created a suite of craft cocktails that stem from prohibition classics and California favorites. The Cat’s Meow and the Gold Digger are just two of the many specialty cocktails crafted by Thomas. NAPA hosts monthly Wine Dinners and their Wine Education Series for those who want to expand their knowledge and enjoyment of good wine. During their Wine Dinners, guests are served a multicourse meal with a wine pairing for each course while that night’s speaker educates

them on white, red, rosé, and sparkling wines. The Wine Education Series delivers a fun, classroom-style tasting hosted by a certified wine specialist. Each month has a different theme revolving around a select region of the world. The whole team at NAPA shares a common goal of delivering quality at every level. The staff clearly look forward to coming to work and enjoy being part of this positive, fun-loving, professional team. In fact, much of NAPA’s staff is comprised of original hires from when they opened in Midlothian in January 2022. The management at NAPA believes in hospitality, quality, and taking great care of their people. To that end, NAPA provides its employees with numerous avenues for professional growth and other career opportunities.

Giving back to their local community is first and foremost at NAPA. For every one of their signature T2T Lemon Basil Martini purchased, $1 is donated to Tunnel to Towers Foundation which provides mortgage-free homes to 9/11 Gold Star and fallen first responder families. NAPA also supports local charitable organizations with benefit days and events, where a portion of sales benefits those in need. “Giving back to our communities has always been a cornerstone to our success and we look forward to expanding our reach as Sedona Taphouse grows, and with our new NAPA Kitchen and Wine concept,” says NAPA CEO and founder, Dennis Barbaro. Indulge Your

Senses An intimate Chef’s Table experience prepared by The Shaved Duck will delight your inner food critic.

The Shaved Duck is a family-friendly, New American restaurant and craft cocktail bar located in the Westchester Commons Shopping Center in Midlothian. The name was inspired by owner and Executive Chef Joe Kmetz’s grandfather who was an avid collector of hand-carved “shaved” ducks. Today, assorted shaved ducks are prominently displayed around the restaurant much to the delight of guests and staff.

Chef Joe’s upscale food and craft cocktails fuse traditional flavors and classic techniques with foreign cooking styles and elements. While duck is definitely the house specialty, their menu also features a seasonal variety of unique, yet approachable variations of familiar dishes that highlight fresh, local ingredients. They are a scratch kitchen with all of their breads, pastas, sauces, and desserts executed in-house. As a result, they are able to customize their offerings in order to accommodate diners with special dietary needs such as food allergies or gluten free. In addition to everyday dining, The Shaved Duck offers personalized, high-quality dining experiences for any special occasion or event. Their private dining room is perfect for date nights, anniversaries, family brunches, business happy hours, holiday parties, private Chef’s Tables, networking events, and more. They offer course-plated dinners, family-style meals, and buffet-style appetizer and brunch options. Whatever your style, The Shaved Duck has you covered! Chef Joe recently invited Midlothian Lifestyle and their partners to partake in an exclusive Chef’s Table experience. Each dish served in this multicourse tasting menu was paired with a purposely selected wine. All the dishes served at this event were part of Chef Joe’s test round as he plans many delicious additions to their fall menu. At the end of the night, guests were provided the opportunity to share their experiences during this multi-course tasting event. Let’s hear what they had to say. Up first was the complimentary bread and butter. “Homemade herb butter and slightly sweet bread were awesome to start!” said Steven. David agreed, “Fantastic butter and bread.” Deanna described them as “well balanced.” After that came a perfectly cooked duck breast amuse bouche. Navona shared, “Loved the chipotle blueberry sauce on the amuse bouche. The surprise small hint of spice was an awakening.” Deanna added, “The duck breast on the amuse bouche was perfection, ditto the chipotle blueberry heat was subtle on the tongue.” The Summer Agnolotti was served for their second course. Steven said, “Summer Agnolotti had a nice color contrast incorporating the squid ink into the pasta; paired well with the Sauvignon Blanc.” Navonna agreed, “The presentation was fantastic. My personal favorite was the Summer Agnolotti- what a great combo of flavors!”

36

C HE F ’S SE LE CT ION | LOCAL S E RVI CE S

Next came a watermelon sorbet palate cleanser. “Loved the Watermelon Sorbet for our ‘intermission,’” said Deanna. “The pickled watermelon rind added a great complementary flavor.” For their final course before dessert, guests were served a house specialty, duck pot pie. Deanna shared, “The Duck Pot Pie was hearty, great fall flavor and warming.” Steven described it as, “full of flavor, peppery.” They rounded out their evening with a delicious blueberry mousse cake and a sparkling limoncello toast. “I am not a big dessert eater, but the Blueberry Mousse Cake was a surprising change from the standard desserts. It was very tasty!” said Naylor. Gabrielle agreed, “Loved everything! Amazing experience! Looking forward to more events like this and seeing these items on the fall menu!” The Shaved Duck’s small yet mighty team is made up of a balance of seasoned restaurant workers and talented food and beverage artists. “Like our dishes, we are the sum of many parts,” said Chef Joe. Much of their staff have been with the restaurant for years. This helps create a familial vibe that is felt by their guests. “Great tag team by the chef and the server in explaining all the dishes and wine pairings! Very attentive and paid attention to allergies,” noted Deanna. “Made us feel like VIPs!” added Gabrielle. With rave reviews like these, we hope that each of these dishes will find its way onto The Shaved Duck’s menu this fall. “Highly recommend the chef's table experience with wine pairings,” shared Navona. “I would bring friends and family for a fun night out.” Get excited, Midlothian, because The Shaved Duck will be opening up the Chef’s Table experience to the public this fall! Now’s the perfect time to book your next event to truly make it a night to remember.

Get excited, wine lovers! October is Virginia Wine Month and what better way to celebrate than with a bottle of Ashton Creek Vineyards’ finest? The Thibault family bought the vineyard in 2006 and worked hard to build the facilities and cultivate their vineyards across 10 years. Ashton Creek Vineyard continues to be family owned and operated, serving the surrounding RVA communities. The Thibault’s son, Alan, got his training in viticulture and winemaking from Virginia Tech. Alan has become passionate about the process and preparations that go into winemaking. “Things we do in the vineyard really are not seen until the following season,” says Alan. “In the cellar, we are constantly monitoring the wines as they develop and guiding them in the right direction. This usually takes 6 to 24 months depending on the desired end product.” It truly is a labor of love. “The waiting game to see the results of our hard work can be tough but when it all comes together it’s worth it!” When it comes to the science of winemaking as well as the art of food and wine pairing, it’s all about finding that perfect balance.

42

LOCA L’S CH OICE | EV ENT PLANNI NG + S E RVI CE S

“We are looking for how the flavors react with your palate,” explains Alan. “Flavors should complement each other and balance out the extremes of both the wine and food.” So what’s the best way to start learning about wine? “Drink more wine!” laughs Alan. “It sounds simple, but it really is the best way to start learning what varieties, styles, and regions you like.” Every member of their team makes it a priority to make sure each of their guests feels like family every time they visit. The winery’s scenic lawn and patio are the perfect place for guests to enjoy a glass, flight, tasting, or carafe with one of the delicious savory or sweet options from Ashton Creek’s food menu. They also offer wine on tap as a sustainable way for their eco-minded clients to save money while satisfying their wine habits. Alan welcomes his customers to fill a growler to-go or enjoy a carafe onsite. They also offer a wine club that gives members huge discounts and early access to new wines and member-only events. Ashton Creek offers special events and live music throughout the year. Their next event will be a wine pairing dinner on October 20. Tickets may be purchased at: ashtoncreekvineyard.com
