Although you probably can’t singlehandedly change the environmental toll of the amount of plastic pollution that comes from that kind of number, we’ve rounded up a few simple ways you can curb your consumption and do your part toward a healthier environment.

We had the absolute pleasure of spending some time recently with Paige Healy and Gregorio Spinzo, the husband and wife team behind the Dinner in the Field concept, to learn more about the most sought-after summertime culinary experience in RVA. Their warmth, knowledge and incredible passion for Southern Italian cuisine, as well as their dedication and support of local farmers, will endear you to their incredible story. HOW DID THE TWO OF YOU MEET? Paige: My dad is Kevin Healy, the founder of HOUSEpitality Group [Boathouse, Casa Del Barco, Island Shrimp Co.] so I grew up in the restaurant business and developed a passion for Italian cuisine. I went to Southern Italy in Calabria to complete my master's in regional Italian cooking. At the end of the course, I decided to spend some more time in Italy to immerse myself in the area, language and food. In Calabria, almost every family member takes ownership in the kitchen and are the star chefs making fresh, rustic cuisine in their homes, and I wanted to experience more of that side of authentic cooking. truly is the best food I have ever had. I met Gregorio on the boardwalk where he was walking with his cousin, who happened to be a friend of mine. Gregorio: When we met, I did not know that much English, and Paige only knew a little bit of Italian. I am an Italian homegrown chef, so of course, we fell in love cooking and eating together! We decided to start our life in the U.S. and now live full-time in Midlothian, but we visit Italy, my family and our friends, on two extended trips each year. WHAT WAS YOUR INSPIRATION FOR THE DINNER IN THE FIELD CONCEPT? Gregorio: We were in Southern Italy in the summer of 2014, and we had just started dating. I introduced Paige to my huge family. I am one of eight children, and I have about 35 first cousins who all live in the same area. During the summer, family and friends gather together for dinner

middle of the eggplant, tomato, basil and cucumber plants. Paige loved the atmosphere, the sense of family and the food that was made with the freshest ingredients. Paige: I loved these relaxed, alfresco family dinners gathered around a huge table with 20-plus people, loving the laughter and aroma wafting through the summer air, sharing a meal created with food grown right on his family’s farms—orange juice from his orange trees, eggs from his aunt’s chickens, milk from his cousin’s cows and vegetables from his sister’s garden. I knew there was nothing like this in Richmond, and we were inspired to return to my hometown and share our experience with the people of Virginia. DESCRIBE THE PROCESS OF CHOOSING EACH LOCATION FOR A DINNER IN THE FIELD EVENT. Paige: Each Dinner in the Field event is unique to its location and the food that is grown there. We choose locations that are really energetic, breathtaking and run by unique individuals who are putting their blood, sweat and tears into their farms and craft. These are hidden gems where we get to celebrate their beauty through the food that we create. Gregorio: We have a partnership with our farmers and love to shine a spotlight on the fresh ingredients, beautiful landscape and wonderful individuals that encompass our locations. HOW DO YOU DETERMINE THE MENU FOR EACH EVENT? Gregorio: Paige and I brainstorm on how to put together the menu as people from Italy would do; we decide the menu only a few days before each event. We consult with our farmers to see what is in season and what they have available for us. For example, in July, we love using tomatoes, basil and eggplant because they are in season; and by adding some provolone and Parmigiano cheese, we make a great “Parmigiana Eggplant,” which people love. Paige: Our style is mostly Southern Italian rustic cuisine, combining only a few ingredients together that complement each other. We use all local and fresh produce (and what is not local comes from Italy), and using Gregorio’s great-grandmother’s recipes with a few twists, we build our five-course menu for the night. BESIDES THE AMAZING CULINARY EXPERIENCE, DESCRIBE OTHER ASPECTS OF A DINNER IN THE FIELD EVENT. Paige: We spend a lot of time setting up so the scene is gorgeous and welcoming to our guests upon arrival. We like to have fun and build comradery with everyone, so we chat with them as they arrive and welcome them to walk around the farm. We talk about what makes the farm unique to the area and how we have tied that unique characteristic into the meal. We always have at least one interactive experience during the evening…whether it is harvesting the tomatoes for your salad or the basil to go on top of your fresh pasta. We talk about how food is weeks off the vine before finally arriving in the grocery store, and the differences in flavor and nutrients 28

HOME IN THE HEART OF RICHMOND. They spent the next several years commuting between the city and their sedate country home but ultimately found the property so pleasant they took up permanent residence at Pinifer Park in 1912. Fast forward more than 100 years later and developer and home builder Dutch Goddard had a vision for this property when it came on the market. He wanted to preserve the beauty and history of Pinifer Park while developing the adjacent acreage for a select few lots to form an intimate neighborhood of luxurious, unique homes that would pay homage to its historic past. Pinifer Park is an oasis surrounded by convenience, with dining, shopping and entertainment options less than a five-minute drive away. He describes it as "building a community in a park." Dutch painstakingly renovated the original 4,700-square-foot home, which was the Richmond Symphony House in 2012. It quickly sold, and since then, an additional seven families also call Pinifer Park home. The eight completed homes range from $950,000 to more than $2 million. There are currently just five lots varying from 1 to 6 acres as well as the stunning 5,000-square-foot model home available for sale. Sitting atop a high Midlothian hill, Pinifer Park's home designs will transport you back in time as Dutch's inspirations are found in the Revival styles of the 1920s and 1930s.
