1-7: The 2023 Meridian Oktoberfest was an incredible hit, with over 12,000 attendees celebrating in downtown Meridian. Presented by First Federal Bank and supported by sponsors like Loose Screw Beer Co., 127 Saloon, and Heritage Hop Haus Meridian, the event was a resounding success. Attendees enjoyed a variety of activities, including a costume contest, keg toss, cornhole, stein hold, strudel eating, and beer pong. The competition was fierce, and the winners were crowned amid much applause. Julia Chacon was the fortunate recipient of the Chamber’s giveaway, adding an extra layer of excitement to the festivities. This festival is not just about fun; it's about bringing the Meridian community together, allowing locals to connect and providing visitors with a taste of what makes Meridian special.

During the pandemic, he successfully navigated supply chain challenges, ensuring efficient food distribution. Randy brings significant experience in organizational management and capacity building, having held key roles in Materne North America, Nurture Incorporated, St. Luke's Health System, and Micron. His leadership follows Karen Vauk's retirement after 14 years of notable service, during which The Foodbank expanded food distribution, initiated nutrition education programs, and established strategic community partnerships. The annual City Lifestyle Giving Campaign is in its 4th year. Last holiday season we gave away over $300,000 to help 116 individuals and families in need, but we need your help to make it happen again this year. With nominations flooding in from community members and leaders such as judges, police officers, teachers, nurses, social workers, mentors and readers like you, we were able to reach people who might otherwise go unnoticed. Perhaps you know of a single parent struggling to provide for their family, an elderly person who has experienced loss, someone enduring a health issue, a co-worker suffering a sudden, unexpected tragedy or a neighbor with a financial hardship who has fallen between the cracks of getting assistance. Above all, nothing triggers the emotions like the sights, sounds, smells and tastes of Christmas and especially Christmases long ago. It’s not easy to recall the wines of Christmases Past, with the exception maybe of Mogen David red wine, but much more has evolved since the mid-century in wine on the holiday table. As a kid, did you ever ask for seconds on the wine. “Please sir, may I have some more”. Silence at the table. Years ago, a beloved friend came at Christmas and brought several bottles of Chateauneuf du Pape from France and unabashedly declared that this was the best wine in the world. So, moments like this help fuel our curiosity about wine.

How, over time we develop our palate; our nose and taste for better wine, than we had years ago. Which brings us to the present.

THE PRESENT Present trends show more popularity in pairing food and wine and what better teacher than the internet to sharpen our skills at whatever level we desire. Old and traditional recipes are being replaced with healthier trends. Bad fats, preservatives and artificial tastes are disappearing. Locally sourced, organically grown foods are now abundant. Grandmother’s recipes are not gone, just

morphing into healthier versions. The culinary journey now is both traditional and multi-cultural and much more creativity is needed in picking out an accompanying wine. Beginning with appetizers, there will be lots of bubbly, which is timeless, like Champagne. Our new adventure this season, Petillant Naturel, or Pet Nat for short, is a sparkling Rose’ wine that goes well with salmon and shellfish appetizers. Our other choices for appetizers are lighter weight reds like Burgundy from France or Pinot Noir, Willamette Valley, Oregon, which sets the stage for fuller bodied reds later in the meal.

THE MAIN ATTRACTION THEN A glazed ham likes a lighter style, lower alcohol wines such as a German Riesling or a Beaujoulais from France. Turkey likes a crisp Sauvignon Blanc, aromatic Viognier or a Gewurtztraminier. This year, duck is surprisingly paired with a Roero Arneis, a white wine from Italy. Another new wine this year is a Picpoul, a white wine from Southern France called La Petite Frog. Three bottles in a box wine and quite good for larger groups, with fish and poultry. Will it survive the test and be here next year? We think yes. Prime Rib is a favorite with big reds. Bordeaux style, Cabernet Sauvignon, Malbec, some Carmenere and brand new for the feast this year is a Gigondas, a blend of Rhone Valley, French reds, Syrah, Grenache and Mourvedre. And finally, desserts! Heavy, mega sugary desserts are slipping away. How about locally sourced fruit for pies, cobblers and crisps that are easy to make for a crowd? For the specialty cheese course, try a Sauternes, Vin Santo or Tawny Port. A soul satisfying finish with the cheese — dried fruit, toasted hazelnuts, a drizzle of honey with fig jam. Happy Holidays! It was a bitterly cold winter on the ranch that year. The snow came fast and heavy which accelerated the cattle drive from fall to winter ground. The cowboys worked tirelessly for days to move the herd but were still out 40 head. The lost cattle were getting weaker by the day with their feed buried in the snow. Hope of travel to join family for the Christmas holiday was quickly lost…everyone understood the herd came first. The whole team banded together in extreme conditions and after many long hard hours and little sleep, the herd was finally located. A path was bulldozed through the snow and cowhands and their trusty horses trailed the weakened herd to safety just in time. Some have said the cowboy way is a dying way of life, but you wouldn’t believe it today. Today, in Owyhee County, there is a consistent moo in the corrals and branding irons warming on the fire. Young and not-so-young cowhands circle the pen waiting to throw their next loop.

Neighbors have come from miles around and little cowhands anxiously await their turn at a steer ride, while rocky mountain oysters cook on the fire. It’s branding season in rural Idaho. Visit a family ranch anywhere in our country and you will witness many stories like these. You will also see sons and daughters working alongside parents well before their feet can even reach the stirrups. It’s not uncommon to find an infant in a car seat riding shotgun in the tractor with mom or dad or an older child helping to fix fence or chase the cows out of the wrong pasture. At Arrow B Grass-fed, cowhands as young as five have responsibilities on horseback on the annual three-day cattle drive. At Thomas Cattle Company, young cowhands can also be found on horseback and helping in the office. To ranchers, this life is more than just a job, it is a way of life. A life that allows us to work the land we love with our children,

teaching them by example essential life skills of hard work, responsibility, and grit. Challenged with increased production costs and red tape, family ranches in the 21st century are evolving to sustain this lifestyle that they love. To a rancher, giving up is never an option. Many of today’s ranchers are instead rising to the challenge by meeting a growing demand for local and responsibly produced meat. Elizabeth Thomas of Thomas Cattle Company said they started selling Angus beef direct-to-consumer in 2020 because they wanted to diversify their operation. Thomas said, “As agriculture changes and becomes more complex with more red tape, we want to be sure we find ways to diversify our operation so it can be around for our kids and their kids if they so choose.” Clint McKague of Cabin Creek Ranch said they started selling their American Wagyu beef directly to consumers because of increased inquiries for locally sourced and healthy beef.

As the cowboy singer and songwriter Chris LeDoux once said, “But he’s still out there riding fences Still makes his livin’ with his rope As long as there’s a sunset, he’ll keep ridin’ for the brand You just can’t see him from the road.” You most likely will not see us from the road but we’ll always be out there riding fences and praying that the good Lord will continue to let us and our children live this life for generations to come. WARMTH: IN COATS AND HEARTS The Closet and Columbia Sportswear Team Up to Help Local Teens As winter temperatures bite deeper each day, a new winter coat can make a world of difference to a kid who needs one. For some Ada County kids, that’s where Kelly McMurry and The Closet come in. “I see boys and girls in sixth through twelfth grade living and going to school in Ada County,” she said.

“They get a private, one-hour appointment to come in and shop our store. All the clothing is gently used and there’s some new mixed in. To get something new is a big deal to them. They get to take 12 items home with them of their choice. A lot of them have lived with hand-me-downs their whole life.” The kids and teens come to McMurry’s attention for a visit to The Closet in a variety of ways. “We’re partnered with a number of resources in town,” she said. “School counselors, juvenile corrections, homeless shelters, mental health agencies, foster care, kids aging out of foster care. Sometimes just word of mouth. Somebody knows somebody who knows somebody who needs help.”

And since its founding, McMurry and The Closet have helped a lot of people. “We’ve seen well over 8,000 teens at The Closet,” she said. McMurry founded the organization back in 2010. “They’re invited to come back every season. I’ve seen some kids since they were in sixth grade, and now I’m seeing them graduate.” McMurry is also seeing another trend: a growing need for help. “My phone rings constantly,” she said. “There are times when my phone rings more, and it’s usually when the weather changes. It’s more than that now though. We have a larger population. We have people moving from other places and sometimes from situations that weren’t good. A lot of people losing their homes because rent is so high. Job losses. So many reasons that the calls are coming in stronger. But it’s big right now: the need. And it's hard when someone calls with a desperate need, and I can’t immediately help. If I did it 24 hours a day, I still don’t know if it would be enough. On the first day of Gowen Thunder, armed with my press pass and boundless enthusiasm, I embarked on my second airshow adventure featuring the U.S. Army Parachute Team, the Golden Knights. The Golden Knights are renowned Army ambassadors known for their international competitions and thrilling airshow performances. However, Gowen Thunder Airshow, the stage for their incredible feats, is not just an event; it's a celebration of aviation excellence and a salute to the men and women in uniform. Gowen Thunder Airshow is an annual extravaganza that takes place at Gowen Field in Boise, Idaho. This spectacular event serves multiple important purposes. First and foremost, it offers the public a unique opportunity to witness the precision, skill, and aerobatic prowess of military aviation teams like the Golden Knights, the F35 Demo team, and the USAF Thunderbirds. These performances are not only breathtaking but also a powerful demonstration of the capabilities of the U.S. military. As I explored the airshow grounds, the excitement and enthusiasm in the air were palpable. Families, aviation enthusiasts, and curious onlookers gathered to enjoy the thrilling displays, food trucks, informational booths, and captivating aerial performances. It was a day of shared experiences and unforgettable moments. My personal highlight of the airshow was the chance to join the Golden Knights on one of their parachute jumps. Today's jump would take us to six thousand feet, leaving us the choice of wearing jackets or not. I opted to go without. Everyone and everything was strapped in to avoid

unpleasant exits. I sat nearest to the open door, precisely where I wanted to be. It's where the team members gathered, peering out to assess conditions before the jump. The team leader, Robbins, prodded me for a joke, but none came. I'd been up with the Golden Knights before. Getting an invitation can be tricky. I met Ty Kettenhofen at a previous airshow down in Southern California. He was one of those guys who makes you feel like part of the team. Because of Ty, I was able to get around the red tape. Even though he barely knew me, he treated me like a friend. I was sad to learn this past spring that he was gone, in a training accident. I asked the other Gold Team members about Ty, and the question prompted contemplative responses. "We all know the risks," they emphasized, echoing the unique bond formed by their shared experiences. Experiencing that jump with the Golden Knights was nothing short of exhilarating. It gave me a newfound appreciation for their courage and precision. It was an adrenaline rush like no other and a testament to the exceptional skills of these military professionals. One of the unique aspects of airshows like Gowen Thunder is the opportunity to interact with military personnel. For many attendees, this is a chance to meet and express gratitude to those who serve our country. It fosters a sense of unity and reminds us of the sacrifices made by these brave men and women. The airshow is not just about showcasing military might; it's also about education. Many attendees, especially young aviation enthusiasts,

DIRECTIONS Place your favorite holiday cookie cutter on the board first. Fill the cookie cutter with mini marshmallows. Next, layer the large items first. Next add a variety of chocolate covered treats on opposite sides of each other between the mounds of berries. Be sure to add touches of berries around the edges. If space allows, place hot cocoa on board. Otherwise, set bowl full of hot cocoa mix and any additional hot cocoa fixings adjacent to the board.

Finish by layering cauliflower and sugar snap peas and garnish with fresh herbs if desired.

Using a spatula, smear peanut butter on one side of board using short, repetitive strokes. Do the same on the opposite side of the board using Nutella. Sprinkle mini chocolate chips on top of the peanut butter and Nutella. Drizzle caramel on top. Serve with sliced apples and graham crackers.

If you are using jars on the board, place those first. • Be sure to have enough to fill the space. it is best to overfill so that the board doesn't look sparse. Stack, stack and stack some more. • Use a variety of colors and textures when choosing the foods you want to use. Pick cheese with color and patterns, fruits and veggies that come in a variety of textures and colors and a protein that can make a statement. • Be sure to place similar colors away from each other to help give symmetry.

Nestled in the historic Pioneer Building's basement in downtown Boise lies a hidden treasure, the Old Boise Model Railroad. This remarkable club has been a hub for model railroading enthusiasts since 2001, showcasing an intricate and expansive display that depicts scenes from across the Western United States. A visit to this unique club, open year-round on Tuesday evenings and during their traditional Holiday Shows, is a journey through time and space, immersing visitors in the fascinating world of model railroading.

CAPTURING THE WESTERN U.S. IN MINIATURE The Old Boise Model Railroad is a labor of love and a testament to the dedication of its members. Their remarkable layout covers more than 1,800 square feet and features an astonishing 50 scale miles of track with 210 switches. This meticulously constructed model railroad portrays a diverse range of landscapes, from bustling industries to small towns, ports, plants, lumber mills, and mines, all inspired by the Western United States. As you explore this miniature world, you'll encounter a variety of rail equipment, including box cars, flat cars, hoppers, auto racks (rail cars for carrying automobiles), passenger cars, and modern container trains. The attention to detail is extraordinary, with the landscapes authentically reflecting the terrain and industries found in the region.

EXPANDING AND EVOLVING In 2015, the Old Boise Model Railroad Club relocated from the Mezzanine level to the basement of the Pioneer Building, allowing for an expansion of the layout

and membership. The club's dedication to authenticity is apparent in its continuous improvement of the display. They've added new scenery, industries, and trains, including an entirely new 'canyon' section featuring high bridges and an under-mountain tunnel. One of the distinctive features of the club's layout is its representation of different eras of railroading. Visitors can witness a mix of steam and transition-era equipment, right up to the most modern of diesel and container trains. This dynamic portrayal of changing times adds depth and historical context to the experience.

EXPLORING THE LAYOUT When you first enter the Old Boise Model Railroad Club, you find yourself at the end of Pioneer Yard, the largest yard on the layout. This is where most trains depart and return, as cars are sorted and placed in trains headed for specific industries or destinations. For visitors, the most engaging way to get to know the layout is to find a moving train and follow it around the track. While your guests enjoy a pre-dinner glass of wine or cocktail, set out a cheese board for them to nibble on. It is much simpler to assemble than a full-on charcuterie board. The basic rule is to offer three types of cheese—one blue (stilton, Roquefort, gorgonzola), one hard (cheddar, gruyere, manchego), and one soft (brie, camembert, Port Salut). Feel free to add olives, nuts, and grapes to the board, or just keep it simple like this one pictured with slices of artisan bread, crackers, and breadsticks.

ROASTED BEET SALAD

The dinner’s main event is a lovely piece of beef seasoned with a this spice rub. Use a steak of your choice grilled or seared in a cast iron skillet. • • • • • • • •

6 medium beets Olive oil, for drizzling Salt and pepper to taste 1 bag of salad greens 1/4 cup toasted pecans, coarsely chopped • 2 ounces of goat or feta cheese • 1/4 cup chopped dried apricots • Favorite vinaigrette dressing

3 parts brown sugar 3 parts smoked sea salt 1 part smoked paprika ½ part coriander ½ part chili powder ¼ part cayenne pepper ¼ part dried thyme ¼ part cracked pepper

Mix all spices and apply liberally to the beef. Place the seasoned meat in the refrigerator for 24 hours. Allow it to come to room temperature before grilling or searing.

Coat the beets with olive oil, salt, and pepper. Place on a baking sheet. Roast in a 400-degree oven for 45 minutes until fork tender. Cool for 10 minutes, and then rub with paper towels to peel. (Beet juice stains, so be careful.) Cut the beets and toss with the remaining ingredients.
