WHEN TALKING TO TIMBER LODGE OWNER, RON LEVITT, ABOUT THE PAST, PRESENT AND FUTURE OF HIS RESTAURANT, YOU CAN HEAR AND SEE THE PASSION THAT HE PUTS INTO EVERY ASPECT OF THE MEDINABASED STEAKHOUSE. It should come as no surprise that Timber Lodge is continuously listed among the finest steak houses in the greater Cleveland area year after year. Levitt spares no expense when it comes to providing his customers with the highest quality meat, seafood, fresh produce, wine and, most importantly, service. Many of the servers that you see at the restaurant have been with Levitt for several years. He beams with pride and great satisfaction when he talks about the continuous training that his staff goes through and ensures that your server is an expert on everything that Timber Lodge has to offer. "I expect my staff to know everything about what we are doing here–where the cuts of meat come from and how to explain it to people, which wines pair with the food they ordered, everything," said Levitt. "That's why we're No. 1 on Trip Advisor out of all the restaurants around! We have over 780 reviews and we're No. 1...there's a reason for that; because we look at the details, and the details are where it's at." As Levitt gave me a tour of the restaurant, he was also proud to tell me that no expense is spared when it comes to putting money back into the restaurant as well. I noticed this before I even entered the building as I pulled into the parking lot. It was obvious to me that it had recently been repaved and all parking spots were freshly painted. "We've gone through so many updates in the building. Every year we go through great transitions to give our guests the very best and we are constantly reinventing ourselves and giving back to the public. I have all my wood floors resurfaced every three years. Our restrooms are spotless; we just remodeled them as well," he said. "That says something about who we are." Another thing that says something about who Timber Lodge is, obviously, the food. The restaurant was recently voted as winner of Best Steakhouse 2018 by Cleveland Hot List. "No one can touch us on our Prime Rib," Levitt said as he showed me the rotisserie oven that held two large and freshly-seasoned cuts of beef. I looked in to see the drippings from the standing rib roasts were basting one another as they revolved around inside. "The Prime Rib and our Filet are our mainstays and that's why people come." This time of year also gives locals another reason to come to Timber Lodge: Lobster season! "This year we're really doing something different... we're going with 2 lb. lobsters!" he proudly proclaimed. "Part of our whole thing with Timber Lodge is giving people the 'Oh, wow!' effect, and with a 2 lb. fresh Maine lobster, you can't help but get the 'Oh, wow!' effect." Along with the lobster feast entrees', Timber Lodge is also serving fresh clams along with their famous homemade lobster bisque and clam chowder. Other delicious seafood daily features will also available all season long. As we continued our conversation and made our way through the kitchen, I noticed several staff busily working on their own little projects. It's barely even noon and the kitchen is in full swing preparing for the Friday night dinner crowd. "Our prep guy comes in at 4 a.m. and our chef comes in at 7 a.m. When you're working with everything from scratch, that's what it takes." Just after he said this, he reached over to a box and opened it for me to look at. "Look at the size of these potatoes," he said as he pulled one out. "When you get this potato, it says, 'Oh, wow!' just like our cakes, just like our lobsters, just like our steaks."

It became the best steak house in the area because of one thing: Ron Levitt's commitment to excellence. "This area was hungry for a better steak house," Levitt said to me. And a better steak house is exactly what the people of Medina get when they come to Timber Lodge.

BEING A CHEF GET TO KNOW TRIV'S RESTAURANT AND LOUNGE HEAD CHEF MATT GILLOMBARDO
TRIV'S RESTAURANT AND LOUNGE IN STRONGSVILLE HAS BEEN A LOCAL FAVORITE SINCE IT OPENED IN 2008. Cleveland area residents have come to love dining at Triv's because they can enjoy a high-end, quality meal in a relaxed, yet chic atmosphere. Chef Matt Gillombardo, 37, has been at Triv's since the early days (9 years now) and he has been committed to making Triv's one of the finest restaurants around since day one. "I don't own this restaurant...but I feel like I do. I love this place as much as Mike, our owner, himself, and I put my heart and soul into it,” Gillombardo said to me when we sat down for this interview. Gillombardo has a very close relationship with many of them and said that they are like family to him. As you will soon read, Gillombardo's schedule is quite busy, and I was very fortunate to sit down with him. Take a moment with me to get to know the man in the chef's hat.

MATT GILLOMBARDO HI MATT, NICE TO MEET YOU FINALLY. I'D LOVE TO LET OUR READERS LEARN A LITTLE ABOUT YOU SINCE YOU ARE A DRIVING FORCE BEHIND THE SUCCESS HERE AT TRIV'S. TRIV'S DIDN'T GET THE REPUTATION IT HAS WITHOUT HAVING A GREAT CHEF BEHIND THE SCENES. SO FIRST, LET ME ASK: ARE YOU FROM THE CLEVELAND AREA? Yes, actually. I grew up in Parma. WHO OR WHAT INSPIRED YOU TO GET INTO THE CULINARY FIELD? WHEN DID YOU KNOW THAT YOU WANTED TO BE A CHEF? My family has been in the food business for years. My father owned Gillombardo's Giant Eagle and my grandfather started the business a long, long time ago as a little food stand at West Side Market. I've been around the food industry my entire life. I started cooking with my mom when I was four or five years old. She's the best cook. She's Polish so she cooks all those great Polish dishes; and she has an Italian flair that comes from my dad's side of the family. When I was 16, I started in a culinary vocational program in high school and as soon as I graduated I attended The Le Cordon Bleu Institute of Culinary Arts in Pittsburgh. DO YOU HAVE ANY SPECIFIC FOOD OR RESTAURANT MEMORIES FROM YOUR CHILDHOOD? Absolutely! Every Sunday after church my entire family–my cousins, my aunts and uncles and my grandparents would meet at Sammy G's in Seven Hills. Chef Sam Gambetta had a fantastic place with amazing food and we would eat there every single Sunday as I was growing up. Definitely a great childhood memory that is stuck in my head. DO YOU HAVE CHILDREN TO CONTINUE THIS TRADITION ON WITH? Yes, I have a son who is seven and a daughter who is 12. AND DO THEY HAVE A FAVORITE MEAL THAT THEY REQUEST FROM THEIR DAD, THE CHEF? IT'S COMMON FOR YOUR KIDS TO REQUEST THAT ON, SAY, A WEDNESDAY EVENING IN THE MIDDLE OF JUNE? Oh, yeah. That’s just normal life in my house. They love it. WITH SO MANY GREAT RESTAURANTS LIKE TRIV'S AROUND TO CHOOSE FROM, I'M INTERESTED TO KNOW: WHAT'S YOUR FAVORITE RESTAURANT TO EAT AT WHEN YOU HAVE FREE TIME TO GO OUT AND ENJOY A GOOD MEAL? I enjoy going to restaurants that are family-owned versus corporate or chain. When you're in an independently owned restaurant, you know you're going to get quality and an experience more like being a guest in someone’s home rather than just a customer. There are several that I like to support, but some of the local places like Don’s Pomeroy House, Square 22 and J Bella are great. I NOTICE A LOT OF ACTION BACK IN THE KITCHEN AS WE SIT HERE AND TALK AND IT'S SEVERAL HOURS BEFORE DINNER STILL. I DON'T THINK PEOPLE REALIZE THE KIND OF HOURS THAT CHEFS PUT IN. WHAT TIME DOES YOUR DAY TYPICALLY BEGIN AND END? I’m usually here at 8:30 a.m. and typically don’t leave until at least 10:30 p.m. We are open for lunch as well and are lucky to have a good crowd daily. The amount of hours we put in is insane. You have to really love what you do to be in this business and my staff and I really do. IS THERE A SIGNATURE DISH THAT PEOPLE ASSOCIATE WITH TRIV'S? We have a few: The coffee-crusted strip steak and the caramelized salmon are fan favorites. They sell all year long. If we ever took them off the menu, we would actually lose business because people would be very upset. Also, our C.A.B. Prime Rib on Monday nights is popular as well. LASTLY, DO YOU HAVE A FAVORITE TIME OF THE YEAR TO COOK AND PREPARE DISHES? Without a doubt, it's fall. Cooking in the fall is great. There are so many great flavors that you can use for fall-oriented dishes. You can go a little bit heartier as you start to get into the colder months. And you can make so many fantastic soups too. Our French Onion soup is a staple here. People love it. 26
