Becoming Financially Well January is a great time for people to assess their financials to maximize savings, ensure a solid start to the new year, and stay on track to accomplish overall goals. The first step to being financially well, begins with a thorough financial education. This is where Natalie and WealthWave, a financial education company, can help. Natalie says she believes if people know what is available to them and how it works, they can confidently create financial freedom for themselves. She works closely with her clients for the long term. “I always tell clients that it’s not about where you are now that matters, it’s about where you want

to be,” says Natalie. “Together we can forge a path to get you to your dreams. I’m not here to tell you what to do, I’m here to educate and show you options to reach your goals so that you can confidently make decisions.” Natalie believes people knowing that they are covered for emergencies, on track for retirement and anything else in-between is the most freeing feeling. In the current economic climate, Natalie says it’s important to set goals to protect oneself financially. She recommends the following steps: 1. Become financially literate. 2. Make sure you have a budget in place. Update it as needed and hold yourself accountable for sticking to the budget. 3. Create an emergency fund as well as a debt reduction plan. These can both be done at the same time with good habits. In a dual-income family keep three to six months of accessible savings. In a single-income family keep six to 12 months of accessible savings. 4. Make sure your family is properly protected. Put plans into place to make sure if you or a spouse were to pass away that your family would be able to maintain the lifestyle to which they are accustomed. In addition, these plans can make life insurance funds accessible for use if you or your spouse are diagnosed with a critical, chronic or terminal disease. 5. Look for opportunities to increase income by reducing expenses, adding a second job, asking for a promotion, or starting a side business. 6. Have a plan for building your legacy. Health care experts indicate that mental health is just as important as physical health, because it affects how people handle day-to-day life, decision-making, stress and relationships with others. Furthermore, U.S. government statistics show one in five American adults has experienced a mental health issue. Dr. Lucy Underwood, owner and licensed professional counselor at Underwood Counseling & Consultation, PLLC, says to be mentally well suggests that people use adaptive coping skills to manage the full range of emotions. Adaptive coping skills allow humans to use mental flexibility rather than rigid adherence to some defined standards. Mental wellness means living within healthy parameters. As a registered dietitian, writer and public speaker who's passionate about educating people on nutrition, Claudia Martin-Ayoade says most people think a plant-based diet is strictly for just vegan and vegetarian types. However, she asserts plant-based eating is more of a lifestyle than a diet. Claudia shares the following personal, helpful tips with McKinney & Prosper Lifestyle readers because she believes there's no debating the overwhelming evidence showing the benefits of improved health for those who make that diet choice. "You're simply eating more foods that are closer to their harvested state with minimal processing," she reminds. For starters, Claudia says meatless diets improve health outcomes by lowering the risk of developing heart disease, diabetes, high blood pressure, inflammation and some cancers. "It also improves gut health because of added fiber to your diet."

A plant-based diet still allows people to consume carbohydrates, protein, fats, minerals and vitamins necessary for good health, with added benefits of being higher in fiber and phytonutrients, she adds. "You don't have to give up meat entirely, and there are labels to identify where you fall in your plant-eating journey. Do what is comfortable for you, so you will stick with it," Claudia suggests. This dietitian reminds that everyone can opt to be a "flexitarian," which means occasionally eating meat but choosing plants as the primary foods eaten. She adds, "You have some flexibility with your diet. If you choose to be a vegetarian, then you don't eat meat but you still eat eggs and dairy products, as opposed to being a vegan who eats no animal products." Adding more fruits and vegetables to daily food intake is also better for the environment. The industries that produce dairy and meats are said to account for a third of the world’s water usage in addition to producing greenhouse gas emissions. CONTINUED >

There’s a risk of being overwhelmed if you suddenly stop eating meat altogether, and it’ll be harder to stick to your choice long-term. Increase consumption of plant foods you already like. 2. Plant-based diet doesn’t mean boring. Create a variety of dishes, including ethnic meals. This is a great time to try new spices to add punch to vegetables. Add green leafy vegetables to smoothies. 3. Use whole plants because there are nutrients in every plant part, including stems and leaves. Use leaves from celery, radishes, beets, carrots and spinach. Don’t throw away vital nutrients, such as potassium, vitamin C and fiber. You’re also reducing waste. 4. Eat the rainbow! Choose different colored fruits and vegetables to get a variety of nutrients. The color of plant-based foods often indicates the vitamins and minerals they contain. So, more colors mean more nutrients. 5. If consuming no animal products, you’ll need to take a B12, and possibly an iron, supplement. Vitamin B12 is an essential vitamin available only in animal products. Low B12 can cause anemia and damage to nervous systems. 6. A meat-free diet doesn’t automatically mean healthy if you replace the meat with highly processed junk food and meat substitutes. Eat good, fresh quality fruits, vegetables and grains to get health benefits that can add years to your life.


FRESH PLEASING PESTO

Ingredients • • • • • • • •

3/4 cup raw cashews, pine nuts, slivered almonds, sunflower seeds or pepitas 3 tablespoons chives 2 cups fresh basil, packed 4 tablespoons nutritional yeast 2 tablespoons fresh lemon juice 1/2 teaspoon black pepper 1/4 cup olive oil; omit for oil-free 1/4 cup water, plus more as needed

Instructions 1.

To food processor, add cashews (or other nuts or seeds), chives, basil, yeast, lemon juice, pepper, olive oil (if using) and 1/4 cup water. Process until smooth, adding water as needed for thinner consistency. If not using oil, an extra 1/4 cup water may be needed. TIP: For brighter green pesto, blend basil leaves last. Top with Parmesan cheese, if desired.

Store in refrigerator for up to one week. Pesto also freezes well for up to six months; can freeze in an ice cube tray, then pop cubes out and preserve them in a freezer bag or airtight container.

Apple Cider Mule Mocktail

ingredients: • 3 cups apple cider (apple juice isn't the best substitute, but pear cider can be applied for a different twist) • 1½ cups ginger ale • 1½ cups plain seltzer water (or orange-flavored seltzer) • 2 large apples, thinly sliced (or pears if going that route) • ½ cup pomegranate arils • ½ cup frozen cranberries

directions: 1. In a pitcher or punch bowl, stir together the apple cider, ginger ale and seltzer. It’s best if all ingredients are chilled ahead of time. 2. Add in sliced apples or pears and pomegranate arils. Refrigerate until ready to serve 3. Just before serving, add the frozen cranberries or garnish with fresh or dried apple slices and cinnamon sticks (not ground cinnamon). 4. Serve in glasses with ice or slightly warmed in mugs. Bonus: Apple and pear slices also become delicious flavor bombs to eat at the end of the drink.

Pom-Pom Spritz ingredients: • 2 ounces 100% pomegranate juice • 1 ounce freshly squeezed orange juice or high-quality orange juice • 1/2 ounce fresh lime juice • 2 ounces sparkling water or seltzer • Ice, for serving • Garnishes (Optional): pomegranate arils, lime or orange slices, frozen cranberries, fresh mint, or fresh rosemary

directions for a single serving: 1. Fill an 8-10 ounce glass halfway full with ice. Add pomegranate juice, orange juice and lime juice to glass. Stir well to combine. 2. Pour seltzer/sparkling water over the juice mixture and top with any desired garnishes.

The Miss Texas Scholarship Organization, Inc. has been empowering young women to achieve their dreams and goals since 1937. That’s 84 years and countless lives that have been enriched as one of the largest providers of scholarship funds to young women throughout Texas. Participation in this program provides young women the opportunity to promote initiatives regarding community service while using their talents, intelligence and positive values to serve as role models throughout their communities. The Miss Texas Scholarship Organization operates within the guidelines of the Miss America Organization while stressing individuality, personal development, communication skills and physical fitness. As a competitor in the pageant many, many moons ago, I walked away with a sense of confidence, perspective and the best friends a

girl could ever ask for, who have become lifelong friends. It is true that the traditions of The Miss Texas Pageant, now called the Miss Texas Organization, are as solid as the state it represents, but there are a few changes that have taken place over the years that are worth mentioning. McKinney & Prosper Lifestyle recently had the opportunity to ask Miss Texas 2022, Averie Jenkins, a few questions about her experiences as a competitor and title holder. As a graduate of Prosper High School, Averie made history last June when she became the first Asian American woman to be crowned Miss Texas America. At press time, she was scheduled to compete on Dec. 15 in Connecticut for the title of Miss America, the long-running national scholarship pageant. This 25-year-old is a first-generation law school graduate and boasts a TikTok following of more than 850,000 fans. Averie competed in the Miss Texas competition for three years before winning the coveted crown and title, a dream that she says she had from the early age of 6. One of her many duties as Miss Texas is to promote her social impact initiative “Y’all Means All.” It’s a diversity and inclusion effort that the titleholder expands in multiple ways; one is through school programs. Averie teaches students about what it means to respect everyone by using a metaphor about growing one’s own garden. She also promotes the initiative

through her own nonprofit where she raises scholarships for first-generation students in Texas and SouthEast Asia. “I’m hoping that by simply existing as Miss Texas and being the first Asian-American woman, I’m inspiring and empowering other young women and individuals to take that step to do what it is they want to do, and to help them convince themselves they deserve to take up space as well,” Averie says. She adds that she’s enthused to take her wisdom, experiences and knowledge to the Miss America competition. In all phases of competition, Averie says her mission is to show others that their dreams are possible.

The Joy of Living a Beautiful Life It is not the years in your life but the life in your years that counts.”- Adlai Stevenson The point Stevenson illustrates is a reminder of how it’s easy to lose sight of living a meaningful life. It’s an interesting phenomenon the amount of time, energy, and money we invest in living healthier, longer, and happier lives. Yet, we often still feel unsatisfied and that our lives are devoid of meaning. When it comes to living a meaningful life, there’s no one size fits all solution. What makes life meaningful is unique to each and every person. So to find meaning, you may need to do some exploration to discover what speaks to you. Meaning can come from many different avenues. Unlike happiness, which stems from receiving or doing things for yourself, meaning comes from giving or doing for others. Perhaps for you, it comes from fostering a close family relationship. For some, it’s about choosing a fulfilling career path that involves helping others through teaching, nursing, counseling, or coaching. Others find meaning by giving back to their community by joining the Kiwanis or volunteering as a Big Brother or Big Sister. Purpose can also come from forming an organization for a national cause you’re passionate about. Or perhaps taking up a hobby you enjoy, such as gardening, then donating your excess produce to a soup kitchen. But before you begin your journey to explore new

avenues for meaning, evaluate what you’re doing with your life right now. Maybe you’re already giving in a way you don’t even realize and aren’t giving yourself enough credit. If so, you may just need to reframe in your mind what you’re already doing and understand what you do really does matter. If it still isn’t enough to satisfy your quest for a meaningful life, explore other options that are important to you. After you’ve determined what would bring meaning to your life is often where the challenge lies. You must now make a conscious decision and concerted effort to follow through. If you’ve chosen a challenging path, only you can decide if the sacrifice and risk are worth the reward of a meaningful life. Often, we blow our sacrifices and risks way out of proportion. The most significant risk may merely be an unrealistic fear of failure. The greatest sacrifice may be little more than stepping outside your comfort zone or setting aside a little

happiness in exchange for something more fulfilling, uplifting, and meaningful. If these are the things holding you back, work toward changing your frame of mind. Schedule 20 minutes a day to sit in solitude with your eyes closed envisioning your meaningful life. Allow yourself to build excitement and desire for that which would bring meaning to you and others. Also, spend some time each day reading or listening to audiobooks and watching online videos relevant to the activity that would bring meaning. If you find you’re still holding yourself back, talk to supportive family and friends, and ask them to hold you to it. A counselor or coach can also lend support to help you move toward your goals. Whatever path you choose, and regardless of its outcome, give yourself credit for your efforts. Remember, having a meaningful life is often as much about how you perceive what you do as it is about what you do.
