Prosper’s own, singer/ songwriter Tanner Usrey’s train is leaving the station (AND HE’S TAKING TEXAS RED DIRT, AND SOME GRASS ROOTS WITH HIM)

Four years ago I had the opportunity to sit down with a kid from Prosper, Texas. He was fresh out of High School and adamant about the fact that he was going places. Where? Like many of us, at that age, he wasn’t certain. Despite that fact, I noticed the twinkle in his eye before I saw his talent, and in that twinkle there was courage, intention and determination. It’s the kind of will that a person only recognizes from having it within themselves. Tanner Usrey is every kid that ever played music in his parents living room and dreamed of a responsive crowd that included more than his friends, parents and grandparents. Like any baby of the family, he sought attention early on. He was always the rambunctious, clown of the family, a natural entertainer running around, singing everything from Alan Jackson to Eminem to Cross Canadian Ragweed songs in his home and was often told to sit down and shut up” which brings a smile and laugh to his jovial face when he recalls it. Playing music has never not been an option to him and his decision to do so full time came in a moment of surrender in what was an 8-5 office job. Usrey tells of his palms sweating and his nerves surrendering to panic being inside at a desk for hours on end and the foreign feeling of being trapped in a position that was the absolute farthest from him being his authentic self. It was at that very moment when he said to himself,”if you don’t love me now,

you won’t ever love me again.” He pushed himself away from the desk and walked out to the beat of a song with the same lyrics. He was adamant that he would either succeed or fall on his face with pride in his heart having been true to himself and his destiny. He never looked back. SInce that decision, Usrey says that the journey hasn’t been an easy one, having played gigs with few listeners, paying his dues without missing a step in the process of becoming who he is. He says that despite it all, its been worth every second and I’m certain that’s true considering that in a van with his band whose members he calls brothers he’s played in 25 states since August of 2021. Shows that were once crowds of only a few have become wild, sold out crowds in his favorite venues, like Cain’s Ballroom of Tulsa, Oklahoma, The Tumbleweed in Stillwater, and Hanks in McKinney, Texas. He has made his mark on the Red Dirt- Grass Roots movement of Texas music and despite being young and having his own soulful sound, he not only sings with the heart of old school country crooners, he writes his own songs that resurrect an authentic, backwoods country vibe that has been missing from country music for some time. HIs voice is like an old friend reminding one generation of its history while totally introducing the style to another, less familiar with the honkytonk generation. of understanding the nostalgia his style brings back to loyal country fans and yet doesn’t fall short of bringing other, newer country fans onboard as well. When asked about his fan base, he’s grateful. As we sit at The Gin, in Prosper, Texas he looks up several times to say hello to familiar faces that he’s known since growing up in the area. The beauty in Tanner’s success is that he hasn’t sacrificed his authenticity like Hollywood made musicians. He is still the same kid I met with when he was just starting out and he is hell bent on staying true to himself and his music and “anyone that isn’t onboard with that can get off the train, he says.” That’s a lesson that only someone that owns who they are and has learned to appreciate their own talent despite what others have contributed from an opinion standpoint. Tanner’s approach has proven successful as his talents have now reached a different level of recognition. He tells the story of how as an insomniac he was up playing video games one early morning when he got an e-mail from Andrea von Foester asking if he’d be interested in having his song “The Light” in an episode of Season Four of what would be and has become the ever popular drama series Yellowstone, written and produced by Texas’ own Taylor Sheridan. That’s right, Tanner Usrey’s music can now be found on the Yellowstone Soundtrack alongside the company of other talents from the South including Whiskey Myers from Palestine, TX, Ryan Bingham, Tyler Sturgess and Jason Isbell. If you’re into the current country music scene, or any aspect of the entertainment industry you know that’s not a bad list to be on. When asked what his favorite song to play is, he doesn’t mention one of the songs that he’s written although there isn’t a more rewarding feeling to an artist when fans respond to your craft. He thinks of the crowd and how excited they get at the beat of “The Chain” by Fleetwood Mac and if you know the lyrics you’ll smile when you figure out why. There’s not a soul out there telling Tanner Usrey to sit down and shut up, these days. Only, stand up and sing, and if you don’t love him now you may never. He’s okay with that and hIs train of fans is leaving town regardless

AS THE INDUSTRY HAS EVOLVED, HOW HAVE YOU HAD TO ADJUST YOUR BUSINESS? Twenty years ago, building materials were relatively cheap, labor was plentiful, and clients had disposable income. However, over the last five years, especially with the pandemic, prices of materials have skyrocketed, the ability to get parts and materials elongated, and there is a shortage of skilled labor. So, I have simplified my business and downsized from doing remodeling and building jobs that may take days and weeks, to doing handyman projects that take a day or less. I have little overhead. I do not have an office or a big truck.

WHAT DO YOU THINK SETS YOU APART FROM OTHER HANDYMEN? I think there are two things. First, I spent so much time in the corporate world that I understand the mindset of a customer. I know the importance of showing up on time and good communication. The second is experience. There used to be a wider pool of skilled labor, but that number is rapidly declining. I have been working in the industry since I was a small boy learning from my father. I know how to fix and correct mistakes. I have the experience and skill set that is becoming hard to find. I like to say, “A jack of all trades is a master of none but oftentimes better than a master of one.”

WHAT PLANS DO YOU HAVE FOR THE FUTURE? My goal would be to mentor young men to learn how to do trades. I am involved in my church and volunteer locally and hope to be able to start a job program for young men ages 16-years-old to 24-years-old. How do we thank someone who has given the ultimate sacrifice? That was the question McKinney orthodontist Dr. Jennifer Buchanan asked herself back in 1999. The answer was simple- make them smile. “There is such a need. Veterans are used to being independent and do not usually ask for help. In fact, veterans are so humble that when you offer help, they always feel someone else deserves it more than they do,” states Dr. Buchanan. “Smiles Charity helps takes away the burden of paying for their home and gives them one less thing to worry about.” The concept for Smiles Charity goes back to 1999 when Dr. Buchanan and a collection of dentists would host “Smiles” skating parties for patients and funds raised went to Habitat for Humanity. After the skating rink closed, they started hosting “Smiles” karaoke parties. In 2008 Dr. Buchanan moved her orthodontic practice to Adriatica, which allowed space for an annual community-centered concert. In 2010 after one of Dr. Buchanan’s first patients was killed while serving our nation in Afghanistan, Smiles Charity was formed, with all funds raised being used to build mortgage-free homes for wounded veterans. Since the pandemic, Smiles Charity has pivoted direction once again and now secures funds at an annual sponsorship event and smaller local partnership events rather than the community-centered concert. Smiles Charity has built 16 mortgage-free homes for deserving families in Collin County. With ongoing supply chain issues stemming from the pandemic, the organization has shifted from building mortgage-free homes to paying off mortgages of the recipients. Everyone involved with Smiles Charity is on a volunteer basis so 100 percent of its net proceeds go to helping wounded veterans.

A committee comprised of mostly retired veterans helps select the yearly recipients. Dr. Buchanan describes the members as people with loving and giving hearts who are involved within the veteran circle and know who is in need. Recipients must live in Collin County and the committee uses a very thorough process when making their selection. For 2022, funds raised allowed the committee to select two mortgage recipients. • Sgt. Jay Liske joined the Army in 2004. His disabilities include three herniated lumbar discs, TBI, and PTSD. He has honorably discharged in March 2010. He was diagnosed with chronic myeloid leukemia in 2018 and now is in remission. Jay lives with his wife and two young sons, one of whom was born with brain defects and seizures, in Frisco. • GYSGT Russell Cosner enlisted in the Marines in 1972. He received numerous commendations during his service. During Desert Shield, GYSGT Cosner suffered a traumatic brain injury and was honorably discharged in 1991. Since then, GYSGY Cosner has suffered several TIAs and strokes, has loss of vision, and is 100 percent disabled. He and his wife live in McKinney. Dr. Buchanan wants to continue to provide homes for our veterans as long as the need is there. You know that spark of joy someone has in their eyes when they’ve found their purpose in life and are doing what they love? Dr. Suzanne Hales has that joyful spark. She’s the founder and owner of Counseling and Consulting Associates of North Texas, located in McKinney. For more than 36 years, she’s built a thriving and diverse practice that serves those in need of counseling and psychiatric care. When discussing her practice, it’s obvious how much she loves what she does. She shares, “Counseling provides people with tools they can use to navigate life’s happenings. All of us need support, information, and a caring relationship that invites growth.” Dr. Hales discovered her love of psychology while attending Dallas Baptist University on a basketball scholarship. Her guidance counselor told her she needed to choose an elective to complete her schedule. She randomly chose a psychology class and found herself on a path of curiosity and a lifetime of learning, resulting in her eventually becoming a Licensed Marriage and Family Therapist, Licensed Professional Counselor, earning her Ed.D. in Counseling Psychology, becoming a Certified Imago Therapist, and also a Swiss-trained Diplomate Jungian Analyst. After graduating with her BS in Psychology from DBU, Dr. Hales and her husband moved to McKinney in 1976, where she worked as a coach and started the local girls athletic program. She considered becoming a sports psychologist after observing first-hand the psychology that went into motivating the young athletes. “A child learns to see themself how they’re seen,” she says, looking back.

That insight then took her educational pursuits from sports psychology to marriage and family systems, earning a Masters degree in counseling. Still interested in the ultimate goal of a PhD, she then double-majored in marriage and family and counseling psychology. Anxious to start her own practice, her father reminded her that at her young age she may have trouble getting clients who trusted her counseling expertise. He encouraged her to get more life experience first. She remembers him saying, ‘You can’t hang a shingle out and expect people to come without you having some life experience. No one will pay a 22-year-old to tell them how to live life.’ So, she lived more of her life, while also attending higher education classes in psychology on the weekends. Dr. Hales wanted to create a safe place for healing, first focusing only on women, but then quickly expanding her practice to include children, adolescents, men, and grandparents. The needs of the community were the driving force that led the gathering of expertise and specialists which resulted in the formation of CCA. Today, there are more than twenty-four highly qualified team members, including licensed psychologists, counselors, social workers, therapists, and psychiatrists with a variety of specializations and backgrounds equipped to meet the needs of a vast array of patients. Dr. Hales is the only Jungian Analyst in McKinney after completing her training in Zurich Switzerland in 2018. CCA even has two service dogs as part of their team to help with those patients who may feel apprehensive about the therapy experience. In addition to having a skilled staff with diverse professional skills, the CCA of North Texas staff is also very diverse culturally, with many different backgrounds, religions and languages represented. The CCA of North Texas facility has four separate wings, each focusing on a different type of patient:

children, adolescents, adults, and psychiatry. Within the wings, many different therapies are offered: adolescent counseling, art therapy, child therapy, couples counseling, family counseling, group counseling, hypnotherapy, individual counseling, mediation, premarital counseling, retreats, sand tray therapy, play therapy, along with bilingual and American Sign Language counseling. CCA also offers four specialized group therapies: Personal Growth Group for Men and Women, Personal Growth Group for Women, Lose Your Mind and Come to Your Senses, and Passion and Intimacy: A Small Group Experience for Couples. Dr. Hales is pleased with the practice she and her team have built while sharing their vision of healing. The expertise these providers offer in this practice is highly diverse and unique. She takes a moment to make sure to also brag on her front office staff. “They are the backbone of our operation and a really heartfelt group of people,” she says. “It’s so important when patients call the office that they talk to a human voice. They make such a difference here.” When Dr. Hales isn’t working at her practice, she enjoys spending time with her husband, two grown daughters and four grandchildren. She also founded Crescent Moon Lodge and Retreat Center in the Kiamichi Wilderness in Oklahoma, where she leads workshops, trainings, and retreats. In addition, she is the author of “Jungian Psychotherapy with Medical Professionals: Healing the Healer.” It was originally written as her doctoral dissertation, but she was encouraged to publish it as a book. The last two years have been full of ups and downs for most business owners. No one knows this better than an event and catering company. Coming out of the pandemic, Five Star Event Services not only made it through the challenges and difficult times, but it has come up thriving. Jason Lewis founded Five Star Event Services back in November of 2009. Located in The Mill District of historical downtown McKinney, it is a one-stop shop for all event services, including wedding and event planning, catering, staffing and rentals. Soon they will be offering wedding accommodations in McKinney. Like most businesses, Lewis was forced to close his doors when the pandemic first hit. He and his staff went back to work in June 2020, unsure of what lay ahead. “We had worked so hard over the years to get to the position that we were at, and it felt like we lost everything overnight,” says Lewis. “Just like everybody else we were scared to go back to work as we weren't sure what we were up against.” Lewis says at first, he had to adapt his business, continuing to offer the same services but in a different way. He and his team offered curbside essential grocery baskets and food trays to the community and delivered food to front-line workers in local emergency rooms. Then as mandates started to lift, he and his team transitioned back into event and catering services.

“Things were a little slow to start in the beginning and then it just exploded,” says Lewis. “We have ended up being busier than ever. Business has tripled.” There are multiple reasons for the quick growth over the last year. Many of the restaurants that had been offering catering for weddings and other events were no longer able to handle these services. People whose events had been canceled due to the pandemic have been rescheduled. More people and companies are choosing to get out and host events again. All of these have driven business to Five Star Event Services. Lewis said he took what he learned during the pandemic to do business differently. Bookings are now done remotely to help save time and make meetings more efficient. All orders and payments have moved from paper-based to electronic-based. A second location was opened to store and process rental items, allowing for an expanded offering to clients. Lewis also stepped into the role of sales manager, making himself the first contact with all potential clients. “No one sells a business better than yourself,” says Lewis. “I am excited about our story and the creative leadership here within our company.” Up next, Lewis will be taking his services and expanding into Wylie. He is working with Wylie’s EDC department on a five-acre project, which will include gardens with a new event center, community exchange, and restaurant complete with coffee baristas and wine sommeliers. “I am so excited that now my followers will be able to join me on this new adventure,” says Lewis. “I think it speaks a lot to the business that I’ve built here in McKinney.” For more information or to discuss your next event visit www.fseventservices.com.

USING WINE IN COOKING INTENSIFIES FLAVOR AND ADDS ANOTHER LEVEL OF UNIQUENESS TO YOUR RECIPE. It gives a dish that extra something special to turn great-grandma's pasta sauce recipe into your own (and make your sister-in-law jealous). So grab that secret ingredient from the wine cellar and head to the kitchen. As Julia Child says, "I enjoy cooking with wine; sometimes I even put it in the food I'm cooking." Wine should be added to food early enough in the cooking process that it has time to simmer. As wine cooks down, the alcohol evaporates away and the flavors begin to concentrate. Use a light hand at first until you get familiar with cooking with wine. Typically, white wines impart their delicate flavor to seafood and dishes like chicken piccata and vegetable risotto. Red wine adds depth to bolder dishes like beef bourguignon, mushroom steak sauce, and of course, great-grandma's famous pasta sauce. Using wine in a reduction or to deglaze a pan creates an intense and complex sauce. It easily picks up those coveted brown bits that elevate the flavor of any dish. But be careful—light and overly fruity wines can ruin a sauce. The fruitiness is lost during the cooking process and will leave the sauce too acidic, ensuring those lovely brown bits have gone to waste.

AS JULIA CHILD SAYS, "I ENJOY COOKING WITH WINE; SOMETIMES I EVEN PUT IT IN THE FOOD I'M COOKING." RED OR WHITE? Let's be clear about what is considered a good cooking wine. The so-called "cooking wine" found in your local grocery store next to the fancy vinegars and Worcestershire sauce is a poor excuse for a cooking ingredient. They are low in alcohol content, highly acidic and contain a massive amount of salt. Instead, choose a wine you would pair with the meal. Use one that is fruity, medium or full-bodied, and with little or no oak flavor. Wine aged in oak barrels tends to turn bitter and harsh when cooked in food. For red wines, pinot noir and blends such as Côtes du Rhône will produce consistent results. Again, avoid wines aged in oak such as the robust cabernet sauvignon. White wines should also be dry and full-bodied. Try a sauvignon blanc, unoaked chardonnay, or even a French vermouth. LET'S TALK PRICE Does an expensive wine produce a better sauce than a wine picked from the bargain bin? Well, maybe. America's Test Kitchen tested sauces made from similar wines in the $5, $10, $20 and $30 price points. They discovered that the $5 wines cooked down to sweet, syrupy sauces, while the $10, $20 and $30 bottles were smoother, making sauces with multiple layers of flavor. Although tasters favored wines in the two more expensive price ranges, none thought the difference justified spending an extra $10 or $20. They found that limiting the price to $10 left cooks with plenty of good shopping options.

COOKING TIPS

+ Add a light, dry white wine to melted butter and baste grilled, broiled or baked fish.

+ Mix wine with different herbs and olive oil to make a delicious salad dressing.

+ Stir in a couple tablespoons of red wine into brown gravy. Slowly simmer to create a luscious sauce for beef.

+ Freeze leftover drinking wine in ice cube trays for future cooking use.

+ Use a wine-based marinade to help keep meat, poultry or seafood moist while it cooks.

RED WINE REDUCTION FOR SAUCES Two tablespoons of this potent wine reduction can be substituted in a recipe, such as a pan sauce, tomato sauce or roast beef jus, that calls for one-half to three-quarters cup of wine. Add this reduction near the end of the cooking time—the way you might finish a sauce by swirling in some butter. The reduction can be kept for up to two weeks in an airtight container in the refrigerator. Makes about 2 tablespoons INGREDIENTS

+ 1 small carrot, chopped fine (about 2 tablespoons)

+ 1 medium shallot, minced (about 2 tablespoons)

+ 2 button mushrooms, chopped fine (about 3 tablespoons)

+ 1 small bay leaf + 3 sprigs fresh parsley + 1 cup fruity, smooth, medium-bodied red wine blend

INSTRUCTIONS Heat all ingredients in 12-inch nonstick skillet over low heat; cook, without simmering (liquid should be steaming but not bubbling), until mixture reduces to 1 cup, 15 to 20 minutes. Pour through strainer and return liquid (about 1/2 cup) to clean skillet. Continue to cook over low heat, without simmering, until liquid is reduced to 2 tablespoons, 15 to 20 minutes.
