CT Provisions, located in downtown McKinney at 205 W. Louisiana St., has defied odds since opening during the COVID-19 pandemic. Given that the National Restaurant Association estimates a 30% failure rate in the restaurant industry, that means one in three restaurants won’t survive their first year. CT Provisions has not only been surviving, but its team is also thriving. “Despite all the reasons why we should not be, here we are,” says Steven Terry, CT Provisions owner and general manager. “We did not receive any PPP or COVID assistance money, we do not have a wealthy financial backer, although Jeff Taylor, proprietor, has stood behind us every step of the way. We have survived and succeeded on a nickel and dime budget, and a lot of luck, sweat and hard work.” As the nation emerges from the pandemic, there are new obstacles facing restaurants. It's estimated that restaurants with a price point between $25 and $35 business are down 35%. Steven equates shifting business to face this new hurdle to being in a band. “CT Provisions is like my little band that can. I am always having to be creative and think of different ways to make things work. Sometimes you just have to go out there and keep playing your song over and over until someone hears it,” he says. Hard work has paid off. CT Provisions recently was given love by Eater Magazine, being listed as one of the 38 Essential Restaurants in the Dallas area and 11 Essential McKinney Restaurants. Culture Maps listed CT Provisions as a place to go in the 18 most livable cities in the United States.

From its décor to its menu, everything at CT Provisions is handcrafted. The menu is inspired by the idea of simple and honest cooking where guests will enjoy a dining experience featuring fresh and sustainable ingredients. Each dish is mouthwatering and unforgettable, giving guests a dining experience like no other. Guests come from all over the Metroplex to eat the restaurant’s PEI (Prince Edward Island Seafood) oysters. Equal to the food, CT Provisions is also making a name for itself for its creative vision behind the bar, headed by bar manager and owner Matt Walker. From Japanese whiskey and fine wine to carefully crafted drinks that complement each dish, the menu behind the bar is incredible. “Matt Walker is like a walking encyclopedia behind the bar,” says Steven. “Everything he crafts will knock your socks off.” CT Provisions highlights an aperitif and oyster hour Tuesday through Friday from 2-5 p.m. and dinner Tuesday through Saturday from 5-10 p.m., in addition to a Sunday brunch from 10:30 a.m. to 3 p.m. Three nights a week the restaurant has special bar offerings from open to close. Each Tuesday is $8 classic cocktails and first responder night. Whiskey Wednesdays give $5 off any whiskey, and Thursdays are half-priced bottle wine night. palms and garden center When Leo and Caroline Yruegas launched North Texas Palms & Pottery in 2006, they rented a permanent spot on the McKinney Trade Days property. For more than 15 years, this location served them well. However, because the property was sold in 2021, the couple needed to find a new location. They bought an 8-acre lot in McKinney at 3565 FM1461 that previously was a horse farm, and during October, are celebrating their one-year location anniversary. Their retail and wholesale nursery provides cold hardy palms, Bermuda sod, fruit trees, Homeowners Association-approved shrubs, shade and ornamental trees, flowers, drought-tolerant plants, firewood, chemical products, eye-catching pottery and holiday/Christmas decorations. "The new property enables us to have more greenhouses and grow our own annuals and perennials,” Leo says.

Various types of palm trees, all suited for North Texas weather conditions, are available, confirms Caroline. Routinely, they carry the following unique cold hardy palms: California Fan; Florida Sabal; Mediterranean/ European Fan; Pindo; Texas Sabal; and Windmill. The palms range from 1 foot to 16 feet tall and are priced from $45 to $1,500. She says they also carry Live Oaks, Red Oaks and other traditional landscape items. Fun Fact: Texas has two native palm trees that grow in the wild, the Mexican palmetto (Sabal Mexicana) and the dwarf palmetto (Sabal minor).

Jackie Lyles, the nursery's general manager, says their fall anniversary special will be a free pumpkin with every three, 10-inch mum plants purchased. "We'll be transitioning into Christmas lawn art repairs and winterization of trees and plants. We'll also have expanded Mexican pottery selections, fountains and bird baths," she says. A significant announcement is that the nursery team is introducing its own brand of palm food. "We worked all summer on creating a specially formulated food, with the assistance of fertilizing experts at Nelson Plant Food," Jackie reveals. North Texas Palms & Pottery staffers also repair Christmas mini-light yard decorations and holiday lights for homeowners. "Light up your yard with an array of beautiful Christmas décor. From light-up nativity scenes to trains to reindeer, we can do it all," proclaims Leo. Since opening its doors in October 2015, Hugs Cafe has been employing adults with special needs and developmental disabilities. The nonprofit has recently launched the Hugs Training Academy, an initiative aimed at helping adults with special needs join the workforce. “The Hugs Training Academy is a concept that we created because no one that we were directly employing was leaving either our café or greenhouse programs, and as we all know the restaurant industry is struggling with retaining talent during and post-pandemic,” says Lauren Smith, director of development for Hugs Café Inc. “The Texas Restaurant Association was aware of our skills and talent in special needs directly and they asked us if it was possible to package what we do into a program that could support other employment locations.” CONTINUED >

Hugs Café staff started working with several special education teachers with over 125 years of combined education experience to build a 12-week culinary curriculum. The curriculum is focused on providing entry-level skills to students, so they are ready to enter the workforce in the culinary or hospitality fields. Some of these skills include food prep, knife handling, baking, customer service, communication, personal responsibility, and other industry and work-specific skills. Upon completion of the program, individuals will receive their food handler certification and be paired with a Hugs Cafe employment partner, such as Jason’s Deli, Marriott, Sweetwaters Coffee & Tea, and Snooze Eatery. Betsy Leal is the lead teacher for the training academy. She has over 15 years of adaptive learning experience working in public and private school special education programs. She is supported by two teacher assistants, allowing for a 4:1 teacher ratio. Volunteers also assist in the classroom allowing for more one-on-one instruction during challenging lessons. Classes have a maximum capacity of 12 students. The training academy is open to anyone at least 18 years old, interested in the culinary or hospitality fields,

has a desire to be employed, and has an intellectual or developmental disability. The cost to attend the Hugs Training Academy is $2,750 per semester. Tuition fees can be covered in multiple ways, including self-pay, scholarships, business-sponsored, and soon through the Texas Workforce Commission. Future plans include a permanent training academy facility in downtown McKinney, just east of the Hugs Café complex. Classes are currently held at Trinity Presbyterian Church in McKinney until funds are raised to build the new facility. “It is such a blessing for us to have an opportunity to bring people things that they’re interested in and really break down barriers and change lives in a new way,” says Smith. “This is a game changer for us. This is just the beginning of how we can impact lives and continue to provide quality, supportive services to the special needs community.” To donate funds to support the training academy, volunteer in the classroom, or for more information on Hugs Training Academy visit hugscafe.org.

On June 7, nearly 19 months after breaking ground, Community Garden Kitchen officially opened its doors. Community Garden Kitchen serves freshly prepared, healthy meals with the goal to eliminate hunger in the community. In 2014, a group of women was sitting around a kitchen table for a Bible study when they started talking about food insecurity in the community. The statistics they discovered were astounding. According to a study done in 2020 by Feeding America, there are approximately 110,000 food insecure people in Collin County, which is 11% of the population. Of those food insecure people, 28% of them are under the age of 18. From this discussion, Community Garden Kitchen was born. Community Garden Kitchen serves freshly prepared meals for free in a restaurant-style setting. An executive chef selects a different menu each day. Walking into Community Garden Kitchen is warm and inviting. Small tables are used to help reduce guest anxiety. Guests are seated and served by a waitstaff. Meals are presented on real plates with real silverware. The meal ends with a tray of assorted desserts from which the diner can select. “We have worked hard to create a space that is comfortable and friendly,” says founder and president Angela Poen. “We serve beautiful food in a beautiful place, allowing people to dine with dignity.” Diners do not need to show any identification or fill out paperwork to eat at Community Garden Kitchen. Angela says there is a wide variety of diners, from individuals to families with children to senior citizens just looking to break the loneliness cycle. She says almost 75 percent of diners live in their car. Each evening a different nonprofit will have a space in the restaurant at a designated table where representatives from that organization may discuss and distribute literature to interested parties about the services which are available. There is also access to mental health personnel if wanted. Community Garden Kitchen is run purely on volunteers and donations. The only paid employee is the executive chef. On the property is a quarter-acre garden, which is used to help supply some of the fresh produce used in preparing the meals. Other food used in meal preparation is donated from local grocery stores and organizations. Funds come from individual donations, corporate sponsors, grants, and events. Dinner on Me is a new fundraising campaign, allowing individuals and groups to sponsor the evening meal for $500. Community Garden Kitchen is located at 501 Howard Street in McKinney. The kitchen is currently open Monday through Thursday from 6-8 p.m. CommunityGardenKitchen.org

Since 2012, the Crescent Moon Lodge and Retreat Center has served as a sanctuary for those desiring to get away from the fast-paced hustle and bustle of life. Located just outside of Rattan across the Texas-Oklahoma border, the Crescent Moon Lodge and Retreat Center provides comfort and quiet reflection amid natural beauty in the wooded hills of the Kiamichi Wilderness. The Crescent Moon Lodge and Retreat Center was founded by Dr. Suzanne Hales, a licensed professional counselor, certified Imago therapist, and a Swiss-trained Jungian analyst who owns and operates Counseling and Consulting Associates of North Texas in McKinney. She desired to have a place where people could come and heal and achieve internal peace. “There is an old belief that one cannot enter into a sacred place and leave the same as he was before he entered,” says Dr. Hales. “My hope for all of our visitors is that they leave renewed and restored after relaxing and spending time among nature in this place of comfort and refuge.” The 160-acre property has been Hales’ family since 1941. In 2005 LaVerne Ewing, Dr. Hales’ mother, built a 5,000-squarefoot log cabin. In fall 2020 Ewing died and shortly after Dr. Hales opened the retreat center as a place of respite. The name is symbolic as one experiences the crescent moon rise above the tree line, it shines enough light for one to see the next step, but it does not show the whole journey. The journey is often mysterious and mystical as often are our lives, just able to sometimes see the next step, hopefully experiencing a glimpse of solace to find oneself under the light of the crescent moon.
The Crescent Moon Lodge and Retreat Center amenities make for an upscale stay. The 5,000-square-foot lodge features an open f loor plan and sleeps over 24 people with six bedrooms and five bathrooms. The great room showcases panoramic views from the large windows and an oversized fireplace with enough space for guests to relax. Guests can cook their meals in a completely stocked gourmet kitchen. Groups larger than 10 can request a chef-prepared farm-to-table meal option made with fresh, locally sourced ingredients. An outdoor hot tub provides relaxation and guests can enjoy the outside sounds on the patio or the large wraparound porch. The landscape features a river, which runs through the property, a large pond, and a natural spring-fed lake that is stocked for the interest of people who enjoy fishing. Guests can often watch the deer, eagles, turkeys, and numerous other birds and wildlife that call the property their home. There is a handmade stone labyrinth for walking meditation. The Crescent Moon Lodge and Retreat Center is the ultimate getaway, one which will bring peace and solitude to its guests, whether it be corporations or personal getaways, family reunions, weddings, and retreats -- all seeking a breath of relaxation and fresh air among the stillness and quiet solitude of the Kiaamischi wilderness of Southeast Oklahoma.

These pumpkin dessert bars are so easy! A yellow cake mix makes this a fast, simple, and totally addicting alternative to pumpkin pie.
P UMP K IN B A R S INGREDIENTS • 1 can pumpkin (15 oz) • 1 can evaporated milk (12 oz) • 1 cup white sugar • 1/2 cup brown sugar • 4 beaten eggs • 1 tsp. cinnamon • 1/4 tsp. salt • 1/4 tsp. ginger • 1/2 tsp. cloves • 1 15-ounce box yellow cake mix with pudding • 2 sticks butter, melted
DIRECTIONS 1. Preheat the oven to 375 degrees. Mix the pumpkin, evaporated milk, white sugar, brown sugar, eggs, cinnamon, salt, ginger, and cloves in a large mixing bowl. Pour mixture into a 9 X 13 pan. 2. Sprinkle dry cake mix over top and pour melted butter evenly over the top. 3. Bake for about 1 1/2 hours or until the middle is set.

HEALTHY MAPLE GLAZED PUMPKIN MUFFINS These Healthy Maple Glazed Pumpkin Muffins use whole grains, less oil, and less sugar to make a jumbo fall muffin. Yummm. INGREDIENTS For the Muffins • 2 cups whole wheat flour • 1 1/2 cups all-purpose flour • 2 teaspoons baking soda • 1 teaspoon baking powder • 1 teaspoon each cloves, cinnamon, and nutmeg • 1/2 teaspoon salt • 3/4 cup granulated sugar • 2 cups pumpkin puree • 1/2 cup olive oil • 1/4 cup real maple syrup • 3 tablespoons milk • 3 eggs For the Glaze • 2 tablespoons butter • 1 1/4 cups powdered sugar • 1 teaspoons vanilla • 1 tbs. maple syrup • 1–2 tablespoons water
DIRECTIONS 1. Preheat the oven to 350 F. Mix the dry ingredients (flours, baking soda, baking powder, cloves, cinnamon, nutmeg, salt, and sugar). In a separate bowl, mix the wet ingredients (pumpkin, oil, maple syrup, milk, and eggs). 2. Combine the dry and wet ingredients in a large mixing bowl, stirring until just combined. Fill each muffin tin almost to the top with a scoop of batter – I like to use an old-fashioned ice cream scoop with the little thumb press to get a nice rounded top. 3. Bake for 20 minutes or until tops are puffy and spring back when you press them. Remove from the muffin pan and let cool before glazing. 4. For the glaze, melt butter in saucepan. BEST EVER WHOLE WHEAT PUMPKIN PANCAKES These whole wheat pumpkin pancakes are truly the best ever. Light and fluffy and full of whole wheat pumpkin goodness. Yum! Once you’ve experienced a plate full of these hot, syrup-soaked fluffy whole wheat pumpkin pancakes it’s hard to get your mind to go anywhere else. They have the perfect tiny amount of cinnamon and nutmeg
INGREDIENTS • 3 eggs • 1/3 cup brown sugar • 1/3 cup olive oil • 1 1/2 cups buttermilk • 1/2 cup pumpkin puree • 2 teaspoon vanilla • 1/2 teaspoon cinnamon + a dash of nutmeg and ground cloves • 2 cups whole wheat flour • 2 tablespoons (yep) baking powder • 1/2 teaspoon salt • 1/4 cup water
DIRECTIONS 1. Whisk the eggs, brown sugar, and olive oil together. Add the buttermilk, pumpkin puree, and vanilla and whisk until smooth. 2. Stir in the cinnamon, nutmeg, cloves, flour, baking powder, and salt gently until just incorporated. Add the water and stir until smooth. 3. Pour onto a medium hot griddle and cook for 3-5 minutes per side, until the edges start to look dry and a little more firm. Flip the pancakes and finish cooking for 1-2 minutes on the other side. Serve hot with butter, syrup and any other toppings in the world. I like banana and flax. You can’t go wrong!

PUMPKIN ENERGY BITES! The BEST easy fall snack. Naturally sweet and super healthy! It has pumpkin, oats, maple, chia seeds, almond butter, pumpkin seeds, sea salt, and cinnamon all packed together in a densely-textured nutritional powerhouse bomb. It’s just sweet enough, and it slightly resembles cookie dough, but with more of a fall cookie flavor and more of a feel-good healthy body buzz.
INGREDIENTS • 2 cups oats • 1/2 cup canned pumpkin puree • 1/4 cup almond butter or peanut butter • 1/4 cup chia seeds • 1/4 cup pumpkin seeds • 1 teaspoon vanilla extract • 1/2 teaspoon cinnamon (optional, see notes) • 1/2 cup maple syrup or honey • generous pinch of salt • 1/2 cup dark chocolate chips
DIRECTIONS 1. Pulse all ingredients (except chocolate chips) in a food processor until well-mixed. 2. Add chocolate chips and pulse a few more times until they are in small pieces. 3. Scoop mixture and roll into balls. Freeze until solid and store in the freezer or refrigerator.

Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
