Rosemary and her husband, Hal, searched for just the right place to build their dream house (a log home) when Hal retired in 1991. They found it on a 112-acre farm near Clarksville, Ohio, where they lived for 20 years involved in farming, church and community.
Rosemary designated one of her bedrooms the “everything room,” where she reads, uses Wi-Fi, works on hobbies—and where she’ll soon plant seeds for spring gardening. Her guest bedroom provides a comfortable, welcoming space when children and grandchildren visit.
When Hal passed away in 2013, Rosemary decided to downsize. “I wanted to make the decision so my children didn’t have to make it for me,” she says. “And I wanted to do it while I’m still healthy and can meet other people.”
Just as busy as on the farm, her calendar is filled with volunteer projects, social activities with friends and church. She volunteers time visiting with residents in the transitional care unit, and at Clinton Massie Elementary where students call her “Grandma Rosemary.” An avid baseball fan, she takes Otterbein outings to Cincinnati Reds and Dayton Dragons games. She is also a member of Otterbein-Lebanon United Methodist Church.
She sought a welcoming place that offers several levels of care. “Because I have no family close by, I wanted a place with continuing care,” she says. The Orchards, Otterbein’s new ranch homes, was Rosemary's selection. Her roomy three-bedroom home has numerous features and an open floor plan easily accommodating the select furnishings she brought from her farm.
Making herself at home alongside Rosemary is Sheila, her rambunctious Australian Cattle dog mix, a stray she adopted. “There’s plenty of room here for Sheila to chase her ball,” says Rosemary, who lives life to the fullest thanks to her new ranch home and the amenities at Otterbein.

Scallops with peas, brussels sprouts, mushrooms, caramelized onion & prosciutto INGREDIENTS:
+ 3 U-10 dry packaged scallops + 1/4 cup fresh or frozen peas + 8-10 brussels sprouts + 2 oz. fresh oyster mushrooms + 1 medium Vidalia onion + 1/2 oz. prosciutto
+ 1/8 cup heavy cream + 1/4 cup dry white wine + 1 oz. unsalted butter + Grape seed oil + Kosher salt + Fresh cracked black pepper
1| BRUSSELS SPROUTS: Slice stems off sprouts, then slice in half lengthwise. Warm a sauté pan to medium heat, add grape seed oil to cover bottom and place sprouts cut-side down. Add 1 tsp. salt and 1/2 tsp. black pepper. When sprouts begin to caramelize on cut side, let cook for another 5-6 minutes. Add 1/2 oz. butter and toss sprouts in pan, then place on plate with paper towel.
2| OYSTER MUSHROOMS: Place mushrooms in pan after placing brussels sprouts aside. Add 1 Tbsp. grape seed oil, 1 tsp. salt and 1/2 tsp. black pepper. Let cook on medium heat for 2-3 minutes, then add white wine to deglaze. Let steam in wine for 20-30 seconds, then set aside with sprouts.
3| ENGLISH PEAS: Place peas in blender with approximately 1 tsp. salt and heavy cream. Blend on high until completely smooth. Set aside at room temperature.
4| CARAMELIZED ONION: Julienne onion and place in small sauce pot. Pour grape seed oil over onion until almost covered but not submerged. Place heat on medium until a slow simmer. Using a wooden spoon, stir onion once every 20 seconds to inhibit caramelization from burning at edges of the pan. Let simmer until deep golden brown. Strain off oil and reserve for other use(s). Put caramelized onion in food processor or blender and turn on medium. If needed, add 1-2 Tbsp. of reserved oil to encourage blending.
5| CRISPY PROSCIUTTO: Place thinly sliced prosciutto on parchment-lined pan in an oven set to 300 degrees. Let bake until crispy—30-35 minutes.
6| SCALLOPS Place sauté pan on high. Place scallops on one side of paper towel and fold over to cover the top. Pat until dry enough to stick to paper. Peel off paper and add a generous amount of salt. Cover bottom of sauté pan with grape seed oil and place scallops in pan. Leave to cook until bottom is golden brown. Flip each scallop over and turn heat off. Let them rest for 2-3 minutes. Combine all cooked ingredients and plate.
